Section 1 - Important Safety Instructions

Safety Conventions Must be followed carefully to avoid personal injury or damage to the product.

Must be followed for product to work properly.

Helpful hints and tips to facilitate installation and service.

Operate this appliance only as specified in this manual or the Wall Oven Use and Care Manual.

Only a qualified installer should install this appliance.

Other than performing procedures specified in the Wall Oven Use and Care Manual, only a qualified servicetechnician should service this appliance. To obtain the name of your closest Dacor service representative, call(800) 772-7778. A list of service representatives is also available at www.dacor.com.

Before attempting to service or connect this appliance to electrical power, turn off the electrical power supply.Failure to disconnect the power supply during installation or service may result in electrical shock or fire hazard.

This appliance must be properly grounded whenever electrical power is applied.

This appliance must be connected to a grounded, metallic, permanent wiring system. The grounding connectorsmust be connected to the grounding terminal or lead on the appliance. Failure to do so may result in anelectrical shock hazard.

Do not ground this appliance to a gas supply pipe or hot water pipe.

A ground connection to a cold water pipe must have a metal continuity to electrical ground and must not beinterrupted by insulating materials. Any insulating materials must be jumped as shown in the installationinstructions.

Use only connectors specially designed and certified for joining copper and aluminum to splice the appliancecopper wire to the aluminum house wiring.

Do not install a fuse in the neutral or ground circuit during installation. A fuse in the neutral or ground circuitmay result in an electrical shock hazard.

Do not install this appliance if the electrical service provided does not meet the product specifications on themodel and serial number plate (see page 2-2). The electrical service must be installed or changed only by alicensed electrician.

Do not install this appliance if it is damaged. Contact the dealer immediately if it is damaged.

Do not operate this appliance if it has a damaged electrical cord.

Do not store or use this appliance outdoors. Do not install or use this product near water, for example, near akitchen sink, in a wet basement, or near a swimming pool.

Install or locate this appliance only in accordance with the installation instructions.

Failure to install the mounting screws as specified in the installation instructions may result in movement ortipping of the oven during use and may result in personal injury.

Use an appliance dolly to move the appliance or when installing it or removing it from the wall for service. Useof an appliance dolly will minimize the risk of personal injury as a result of the oven tipping.

The control panel, power supply, and relay board assemblies in this wall oven contain electronic componentsthat are sensitive to electrostatic discharge or ESD. Wear a properly grounded antistatic wrist strap whenhandling or servicing the printed circuit assemblies. Insert ESD sensitive circuit boards into anti-static bagsbefore placing them on any surface other than the oven chassis.

Use the oven only for cooking tasks expected of a home appliance as outlined in this manual. Do not usecorrosive chemicals or vapors in this appliance. This type of oven is specifically designed to heat food. It is notdesigned for industrial or laboratory use.

Some products, such as whole eggs, and sealed containers, such as closed glass jars, may explode and shouldnot be heated in this oven.

To reduce the risk of fire in the oven cavity, do not overcook food. Monitor the appliance if paper, plastic, orother combustible materials are placed inside the oven to facilitate cooking.

Do not touch the interior surfaces of the oven during or immediately after use. Do not allow clothing or otherflammable materials to contact interior surfaces of the oven until they have had sufficient time to cool.

Do not wear loose or hanging apparel while using the oven.

Position the oven racks in desired locations when the oven is cool. If racks must be repositioned after the ovenis already hot, use potholders.

Use only dry potholders when removing food, cookware, and racks from the oven. Wet potholders can causesteam burns.

Do not use towels or bulky cloth as potholders.

Exercise caution when opening the oven door. Let hot air or steam escape before looking or reaching into theoven.

Do not store combustible, flammable, or explosive materials in the oven or in adjacent cabinets.

Do not use water on grease fires. A violent steam explosion may result. Smother any flames with a lid, cookiesheet, or flat tray. Use baking soda or a foam extinguisher to extinguish flaming grease.

Use extreme caution if adding water to food in a hot oven. The steam can cause serious burns or scalds.

To prevent the possibility of burns, connect and unplug the meat probe using potholders only.

Do not leave the oven unattended when cooking with oils or fats. They can be a fire hazard if overheated.

Do not touch the outside surfaces of the oven during the self-clean cycle. They will be hot.

Do not attempt to disengage the oven door’s hinge locks with the door removed from the oven. The hingesprings could release and cause personal injury.

For your safety, do not use the oven without the convection filter(s) installed. When the filter is not installed,the spinning fan blades at the back of the oven are exposed.

Make sure that individuals who use the oven are able to operate it properly.

Do not leave children alone or unattended in the area around the oven. Do not allow children to play with thecontrols or any other part of the oven.

Never allow anyone, including children, to sit or stand on any part of the oven. Stepping or sitting on the ovenmay result in tipping, door breakage, and serious injury.

Do not store items of interest to children above the oven. Children could be burned or injured while climbing onthe appliance.

Do not use the oven for warming or heating the room.

Do not lift or carry the oven door by the door handle.

Do not line the oven with aluminum foil or other materials. These items can melt or burn up during self-cleaning and cause permanent damage to the oven.

Do not allow acids (citrus juices, tomato sauces, etc.) to remain on the oven surfaces inside or outside theoven. The porcelain finish may stain.

Do not use a steam cleaner to clean the oven. Steam could penetrate electrical components and cause a shortcircuit.

Do not leave metal objects, such as aluminum foil, the meat probe, or cookie sheets, on the floor of the oven.Objects left on the bottom of the oven could trap heat in the bottom, damaging the bake element. In addition,the objects themselves could be damaged.

Do not allow the glass panels in the top and bottom of the oven to become covered up by cookie sheets,aluminum foil, pots, pans, etc. Some of the ovens heating elements are behind the glass panels. Covering themcould cause the heating elements behind them to over-heat, damaging the oven.

To prevent damage, remove the meat probe from the oven when it is not being used.

Do not allow the cool air intake or exhaust slots, located below the bottom of the oven door(s) to becomeobstructed at any time. Do not operate the oven if the exhaust deflector below the oven door is bent.

Do not allow the cool air slots located inside the door(s) to become obstructed at any time.

The oven automatically locks the oven door during self-cleaning. Do not try to force the door open after it islocked. Damage to the door and the door latch may result.

Before self-cleaning the oven, remove the broiler pan grill and pan, oven racks, convection filter, meat probe,and any other utensils.

Properly clean and maintain the oven as outlined in the cleaning section of this manual.

Clean only those parts listed in this manual.

Use only the cleaning solutions specified in this manual to clean the inside or outside of the oven. Othercleaning solutions could produce hazardous fumes, cause corrosion of the metal parts, and could permanentlydamage the finishes.

Take extreme caution when cleaning the door gasket. Rubbing, moving, or in any way damaging the doorgasket may eliminate the required tight door seal. Clean the gasket only as specified in this manual.

Use of meat probes other than the one provided with the oven may result in damage to the meat probe and/orthe oven.

DACOR WALL OVENS WITHIN THE FIFTY STATES OF THE U.S.A., THE DISTRICT OF COLUMBIA AND CANADA*:

FULL ONE-YEAR WARRANTY

If your DACOR product fails to function within one year of the original date of purchase, due to a defect in material or workmanship, DACOR will remedy the defect without charge to you or subsequent users. The owner must provide proof of purchase upon request and have the appliance accessible for service.

* Warranty is null and void if non-CUL approved product is transported from the U.S.

OUTSIDE THE FIFTY STATES OF THE U.S.A., THE DISTRICT OF COLUMBIA AND CANADA:

LIMITED FIRST YEAR WARRANTY

If your DACOR product fails to function within one year of the original date of purchase, due to a defect in material or workmanship, DACOR will furnish a new part, F.O.B. factory, to replace the defective part. All delivery, installation and labor costs are the responsibility of the purchaser. The owner must provide proof of purchase upon request and have the appliance accessible for service.

What is Not Covered:

• Failure of the product caused by faulty installation, improper usage, or neglect of required maintenance.

• Service calls to educate the customer in the proper use and care of the product.

• Failure of the product when used for commercial, business, rental or any application other than for residential consumer use.

• Replacement of house fuses or fuse boxes, or resetting of circuit breakers.

• Damage to the product caused by accident, fire, flood or other acts of God.

• Breakage, discoloration or damage to glass, metal surfaces, plastic components, trim, paint, porcelain or other cosmetic finish, caused byimproper usage or care, abuse, or neglect.

THE REMEDIES PROVIDED FOR THE ABOVE EXPRESS WARRANTIES ARE THE SOLE AND EXCLUSIVE REMEDIES. Exposing the Model/Serial Number Plate: The plate is located inside the oven door, in the slot above the left hinge (inside the lower door on a double oven).

To read the model and serial number:

• Push the serial number tab.

• Pull the model/serial number plate up.

Push the model/serial number plate back into place before closing the door.

Section 3 - Installation Instructions

Planning the Installation Read these installation instructions completely before installing this appliance. Install or locate the appliance only in accordance with these installation instructions.

Do not install or use this product near water or outdoors, for example, near a kitchen sink, in a wet basement, or near a swimming pool.

A qualified installation technician must complete the installation of this built-in appliance.

Selecting the Location Carefully check the location where the oven is to be installed. The oven should be placed for convenient access, but away from drafts that may be caused by doors, windows, and heating, ventilation, and air conditioning outlets. Make certain that electrical power can be provided in the selected location. Be certain that proper clearance is provided for the oven door when it is in the open position.

Protrusion From Wall

The front panel depth is the distance that the front of the oven protrudes from the front of the cabinet when the oven is installed. The handle depth is the additional clearance required to allow for the handle protrusion from the front of the wall. The door depth is the distance that the open oven door protrudes from the front of the cabinet when the oven is installed.

Plan the installation so that all minimum clearances are met or exceeded. Cutout dimensions shown provide minimum clearances, unless otherwise noted. The specified minimum cabinet depth and width must be provided. The cabinet depth and width must completely enclose the recessed portion of the oven.

Cabinet cutout dimensions must be used as indicated.

Support Platform

Provide a platform within the cabinet to support the oven. A properly supported piece of 3/4” (19mm) thick plywood is recommended.

The top surface of the support platform must be installed flush with the cutout in the front of the cabinet or wall and any trim. Failure to install the platform properly may cause the exhaust vent to deform and/or become obstructed. An obstructed exhaust area may cause the oven to malfunction. See Figure 3-4.

All contact surfaces between the appliance and the cabinet, including the support platform, must be sturdy, straight, and level. The oven cannot be leveled after it has been installed.

Electrical Specifications If the electrical service provided does not meet the product specifications, do not proceed with the installation. Call a licensed electrician to install adequate electrical service.

The four (4) leads supplied with this appliance are UL recognized for connection to larger gauge household wiring. The insulation of these leads is rated at temperatures much higher than the temperature rating of household wiring. The current carrying capacity of the conductor is governed by the temperature rating of the insulation around the wire, rather than the wire gauge alone.

Electrical Service Installation Electrical service for this appliance should be installed or modified only by a licensed electrician.

Do not turn on power to the appliance until the oven is permanently grounded.

Do not install a fuse in the neutral or ground circuit. A fuse in the neutral or ground circuit may result in an electrical shock hazard.

Electrical Service Preparation

Be certain to locate the junction box such that the electrical supply may be easily disconnected in the event that service becomes necessary.

Electrical Connection

Before attempting to connect the appliance to power, turn off the electrical power supply. Failure to disconnect power may result in electrical shock or fire hazard.

The appliance must be connected to the power supply with copper wire only. The use of aluminum wire may result in unsatisfactory connections.

Flexible armored or non-metallic, sheathed copper cable (with grounding wire) should be used to connect the appliance to the junction box. An UL-listed connector must be used to directly connect the cable to the junction box. Use only connectors specially designed and certified for joining copper and aluminum to splice the appliance copper wire to aluminum house wiring.

Failure to connect the appliance to a proper ground may result in an electrical shock hazard. To be properly grounded, this appliance must be connected to: A grounded metallic, permanent wiring system.

OR A grounding conductor connected to the grounding terminal or lead on the appliance.

Provide extra slack in the cable to allow the oven to slide forward for servicing.

With the oven positioned directly in front of the cabinet cutout, feed the appliance conduit to the electrical junction box. Depending upon local codes, utilize one of the techniques on the following pages to connect the appliance to the electrical power supply.

3 Wire Electrical System, Grounded to External Ground

Do not connect the green appliance wire to the junction box or to a cold water pipe unless local building codes permit.

Do not ground the appliance to a gas supply pipe or hot water pipe.

When a cold water pipe is used for grounding, it must have metal continuity to electrical ground and must not be interrupted by insulating materials. Improper grounding in this or any other manner may result in an electrical shock hazard.

• Separate the green and white appliance wires.

• Connect the white appliance wire to the neutral (white) supply wire in the junction box.

• Connect the black appliance wire to the black (L1) power supply wire in the junction box.

• Connect the red appliance wire to the red (L2) power supply wire in the junction box.

• Connect the green appliance wire to a grounded wire in the junction box or to a grounded cold water pipe.

• If connecting to a grounded cold water pipe, a separate copper grounding wire (No. 10 minimum) must be connected to the pipe by means of a clamp and then to an external grounding connector screw. Jump insulating materials as shown below with a length of No. 4 copper wire securely clamped to bare metal at both ends.

Removing the Door(s) On double ovens: Remove the lower door first. Otherwise, damage to the top of the lower door may occur when the upper door is removed.

Do not attempt to disengage the hinge locks on the door while it is removed from the oven. The hinge springs could release, causing personal injury.

Do not lift or carry the oven door by the door handle.

Due to the weight of this appliance, remove the door(s) to reduce the lifting load. Removing the door(s) will also provide a place to grip the oven when lifting it into place.

• Open the oven door completely.

• Pull the hinge locks forward on both hinges, until they stop.

• Raise the door so that it is at a 15° angle from the front of the oven. Hold the door with one hand on each side. Lift the door up and out.

Oven Installation Mounting the Oven

Use an appliance dolly to move the appliance when installing it or removing it from the wall for service. Use of an appliance dolly will minimize the risk of personal injury as a result of the oven tipping.

Failure to install the mounting screws may result in movement or tipping of the oven during use, or personal injury.

Do not block the oven air exhaust and intake located at the bottom of the oven door(s). Blocking the airflow may cause cabinet damage and poor baking performance.

Remove the oven door(s) to reduce the weight of the oven when lifting it into place (see page 3-9).

• Lift the wall oven up to the cabinet cutout using the handles and gripping points shown in Figure 3-12. Use extreme caution when lifting the appliance, because it is heavy. Support the oven at all times until it is secured into the cabinet. Be certain to take all necessary safety precautions.

• Resting the oven on the cabinet support platform, slide the oven into the recessed area until the rear edge of the oven trim post is flush with the cabinet face and the oven is centered within the cutout. Ensure that the electrical conduit slides through the opening in the cabinet platform or coils above the oven chassis as the oven is slid into place. Do not trap the appliance cable between the oven case back and the rear wall.

When installing the mounting screws into composite cabinets, install them into the sides of the cabinet only. Mounting screws installed into the front of composite cabinets will have a tendency to pull loose.

• Locate the mounting hole locations in the front and side of the oventrim posts. Drill 1/16” pilot holes in the cabinet through the front orside of the trim posts. Single oven models require four (4) holes,while double oven models require six (6). Install the #6 x 3/4”screws provided in the instructions envelope. Do not over-tighten.

Exhaust Deflector Installation

Install the exhaust deflector before installing the oven door(s).

• Attach the exhaust deflector to front of the oven. It attaches to theoven just below the oven chamber in the door jam. On a double oven, the exhaust deflector is mounted below the bottom ovenchamber. Line up the mounting holes on the exhaust deflector withthe screw holes on the front of the oven. Install it using the three(3) screws provided.

Door InstallationBe sure that the notch on the bottom of each hinge rests on top of the lower lip of each hinge receptacle before attempting to open the oven door. Failure to do so may cause the door to fall off its hinges, resulting in personal injury or damage to the door.

Rotate the hinge locks toward front of the oven immediately after installation of the door. Failure to do so may cause the door to fall off its hinges, resulting in personal injury or damage to the door.

On double ovens: Install the upper door first. Otherwise, damage to the top of the lower door may occur.

• Grasp the oven door on opposite sides and hold it at a 15° angle from the front of the oven. Slide the hinges intothe hinge openings, resting the bottom of the hinge arms on the hinge receptacles (see Figure 3-15). Continue tohold the door at a 15° angle with one hand while pushing in on the each of the bottom corners of the door. Pushuntil the notch on the bottom of each hinge slips over the lower lip of each hinge receptacle.

• Lower the door to the fully opened position.

• Rotate the two hinge locks toward the oven.

• Open and close the door completely to ensure that it is properly installed.

• Remove any protective plastic from the front of the oven and any packaging from inside the oven.

Verifying Oven Operation • Slide the oven racks onto the support racks in the oven chamber(s) as instructed on page 5-4.

• Turn on the power supply to the oven. Set the clock as instructed on page 5-1.

• Set the oven to bake mode as instructed in the Quick Start Guide on page 5-6.

• If the oven does not operate properly, follow these troubleshooting steps: Verify that power is being supplied to the oven. Check to make sure that the oven has been properly connected to the power supply. Repeat the above bake test. If the appliance still does not work, contact Dacor at (800) 772-7778 or visit www.dacor.com to locate the

nearest service company. Only a qualified service technician should service the oven. Dacor is not responsiblefor service required to correct a faulty installation.

Section 4 - Parts of the Oven

Exterior

Electro-mechanical 1 Control panel: The control panel keys and display are used to control all of the oven’s functions or

modes.

2 Exhaust deflector/slot: The exhaust slot is the outlet for the air drawn through the oven that is used to cool it. It is located at the very bottom of the oven below the cool air intake. The exhaust deflector plate mounts near the bottom of the oven and separates the exhaust slot from the cool air intake.

3 Cool air intake(s): Located just below the oven door(s). It is the intake for cool air drawn into the oven that is used to cool it. Double ovens have a cool air intake below each door.

4 Electrical conduit: Protects the power wiring between the oven and the electrical junction box. The rotating elbow at the end nearest the oven allows the power cable to be rotated to the optimal installation position.

5 Access panel: Allows access to the some of the oven components that are located behind the control panel.

6 Top cover: Allows access to the oven components behind the control panel that cannot be reached through the access panel. Covers the chassis assembly.

7 Side panel(s): Allows access to the light fixture and meat probe socket wiring.

8 Back cover: Allows access to the fan motors on the back of the oven and components located between the oven chambers on a double oven.

Control Panel Control panel display: Provides programming and operation information for the oven. When power is first

applied to the oven, or when CANCEL/SECURE is pressed, the home screen will be displayed.

Variable function keys: The variable function keys are right below the display. The name of each key appears above it on the display and changes based on the display screen. They are used to select the many different operating modes of the oven. The names of the keys change based on the function selected. For example, when the user presses the MAIN MENU key from the home screen, the display and the variable function keys will change to the MAIN MENU configuration.

key: Used to turn the oven lights on or off when the oven door is closed.

Permanent Function Keys

Oven selection keys: The UPPER ON/OFF and LOWER ON/OFF keys appear on the control panel of double ovens only. They are used to turn the upper and lower ovens ON and OFF.

key: On single ovens: Used to turn off the oven, return all settings back to zero, and turn off any features (except the timer) that are currently in use. On double ovens: Used to turn both ovens off at the same time and return all settings for both ovens back to zero. Also activates the lock-out feature for both types of ovens (see page 5-7).

key: Used to access the oven’s two (2) timers. The timers operate separately from each other. They do not turn the oven on or off. They can be used whether or not the oven is in use.

key: Used to start the oven after the desired feature is selected.

key: Use this key to return to the previous screen on the display, or to view time settings once the oven is set.

Interior 1 Oven racks: The single oven comes with two (2) adjustable standard oven racks. Double ovens

come with five (5) standard oven racks. Both ovens types come with one GlideRack™. See page 5-4 for detailed descriptions.

2 Rack supports: There are six (6) sets of rack supports inside each oven chamber.

3 Meat probe socket: Both single and double ovens come standard with one meat probe. It plugs into the meat probe socket on the wall of the oven. See page 5-12 for a detailed description.

4 Oven lights: There are two (2) oven lights inside the oven chamber. They come on automatically when the oven door is opened when the light key is pressed. The door switch can be disabled from the control panel so that the lights do not come on when the door is opened, see page 5-3.

5 Bake elements: Located below the glass panel on the floor of the oven chamber.

6 Broil elements: Located above the glass panel in the ceiling of the oven chamber.

7 Convection fan: Located behind the convection baffle and filter. It blows the hot air generated by the convection element into the oven chamber during the convection cooking process.

8 Convection element: Located behind the convection baffle. The convection element heats the air that is blown into the oven chamber by the convection fan during the convection cooking process.

9 Convection filter: The convection filter covers the convection fan. It helps prevent the transfer of taste from one food to another when cooking a whole meal. It also helps keep the oven cleaner during roasting and broiling. In addition, it covers the moving fan blades for safety purposes.

10 Convection baffle: Covers the convection element fan and element. Helps create the proper airflow for the convection cooking process.

11 Door gasket: Prevents heat from escaping when the door is closed during cooking and the self-clean process.

12 Self-clean latch: Mounted behind the panel between the cool air intake slots. Automatically locks the oven door during the self-clean process. It does not unlock until the oven temperature drops below 475°F.

13 Cool air intake slots: Draws cool air into the chassis assembly behind the control panel for the purpose of cooling the printed circuit board assemblies and other components.

14 Smoke eliminator: Reduces the amount of smoke inside the oven chamber during cooking and self-clean. Located in the ceiling, behind broil element, toward the back of the oven.

15 Door handle: The door of the oven must be removed to replace the door handle. See page 8-9.

16 Door air exhaust slots: Outlet for the air drawn through the oven door that is used to cool it. Located at the top of the oven door(s).

17 Temperature sensors: The temperature sensors monitor the temperature inside the oven. The oven controller (control panel) uses the temperature information provided by the temperature sensors to adjust oven operation.

Control Panel Settings The home screen is the information seen on the display when the oven is first turned on or the CANCEL/SECURE key is pressed. It is the starting point for accessing all of the various functions and modes of the oven.

Clock Setting the Time and Date

• Press the CANCEL/SECURE key on the control panel to return to the home screen.

• Press the MAIN MENU key.

• Press ADDITIONAL SETTINGS.

• Press CLOCK.

• The clock menu will appear. Press SET CLOCK.

• Enter the current time on the keypad. Press the AM-PM key if necessary.

• Press MONTH. Enter the current month on the keypad (for example: for June, press 0, then 6).

• Press DAY. Enter the current day of the month on the keypad (for example: enter 08 for the 8th day of the month).

• Press YEAR. Enter the current year (all 4 numbers) on the keypad.

• Press the SAVE CLK/DATE key.

• The time the clock has been set to should appear on the display.

Changing the Clock Number Size

• With the clock menu displayed (see Setting the Time and Date), press LARGE FONT or SMALL FONT.

Military (24 Hour) Time

To switch to military time (24 hour time):

• With the clock menu displayed (see Setting the Time and Date), press the 24/12-HOUR key.

To switch to standard time (12 hour time) from military time (24 hour time):

• With the clock menu displayed (see Setting the Time and Date), press the 24/12-HOUR key.

Example of military time: 1:36 PM standard time = 13:36 military time.

Removing the Clock from Display

The oven control panel has the ability to remove the clock from the control panel display. To disable (remove) the clock from the display:

• With the clock menu displayed (see Setting the Time and Date), press the DISABLE CLOCK key.

Restoring the Clock to Display

To restore the clock to the display, if it has been disabled:

• With the clock menu displayed (see Setting the Time and Date), press the ENABLE CLOCK key.

Press CANCEL/SECURE to save the changes the clock settings and to return to the home screen.

Temperature Scale (°F/°C) The oven allows selection of the type of temperature scale that it uses to show the cooking temperature. The oven is preset at the factory to Fahrenheit.

To change the temperature scale:

• Press the CANCEL/SECURE key on the control panel to return to the home screen.

• Press the MAIN MENU key.

• Press ADDITIONAL SETTINGS.

• Press TEMP °F/°C.

• Press CELSIUS or FAHRENHEIT, then press OK.

Press CANCEL/SECURE to return to the home screen, when done setting the temperature scale.

Display Colors The colors for the display are preset to SILVER/GRAY at the factory. To change the display colors:

• Press the CANCEL/SECURE key on the control panel to return to the home screen.

• Press the MAIN MENU key.

• Press ADDITIONAL SETTINGS.

• Press DISPLAY COLOR.

• Press the AMBER, BLUE/GREEN, or SILVER/GRAY key. Press REVERSE COLOR to switch the background color with the text color.

Custom Display Color Settings

To select a color other than standard display color settings:

• Press the CUSTOM COLOR key.

• Press the RED, GREEN, or BLUE key.

• Press INCREASE or DECREASE to change the hue of the color selected.

• Select each of the 3 colors and INCREASE or DECREASE each color. There are 10 settings (0 to 9) for each of the 3 colors. It may take a few seconds for the colors to settle on the screen, after INCREASE or DECREASE is pressed.

Do not set all three colors to 0. The display will be unlit and difficult to read.

Press CANCEL/SECURE to save the changes and to return to the home screen.

Keypad Tones To change the tone or volume of the beeps that are heard when operating the oven control panel and when the timer expires:

• Press the CANCEL/SECURE key to return to the home screen.

• Press the MAIN MENU key.

• Press ADDITIONAL SETTINGS.

• Press TONE SETTINGS.

• Press the VOLUME (LO/HI) key. The display will indicate the volume level, LOW, MEDIUM, or HIGH.

• Continue to press VOLUME (LO/HI) until the volume level is acceptable. Test each volume level by pressing the key just to the left of the VOLUME (LO/HI) key.

To change the tone’s pitch:

• Press TONE.

• The TONE (LO/HI) option will appear.

• Press the TONE (LO/HI) key. The display will indicate the pitch of the tone, LOW, MEDIUM, or HIGH.

• Continue to press TONE (LO/HI) until the pitch is acceptable. Test the tone by pressing the key just to the left of the TONE (LO/HI) key.

Press CANCEL/SECURE to save the changes and to return to the home screen.

Door Light Settings The oven can be set to prevent the oven lights from coming on when the oven door is open.

Disabling the Oven Door Light

• Press the CANCEL/SECURE key on the control panel to return to the home screen.

• Press the MAIN MENU key.

• Press ADDITIONAL SETTINGS.

• Press DISABLE DOOR LITE.

• Press CANCEL/SECURE to save the setting and return to the home screen.

The lights will continue to come on when the light key on the control panel is pressed, unless the oven is in Sabbath mode.

Enabling the Oven Door Light

If the oven door light is disabled:

• Press the CANCEL/SECURE key on the control panel to return to the home screen.

• Press the MAIN MENU key.

• Press ADDITIONAL SETTINGS.

• Press ENABLE DOOR LITE.

• Press CANCEL/SECURE to save the setting and return to the home screen.

Standard Oven Racks When the oven is warm, use a potholder to rearrange the oven racks.

Inserting Standard Oven Racks • Insert the end of the rack A with the safety notches B into the oven first. Attach both sides of the rack to the

rack supports C in the oven as shown in Figure 5-1. Begin to slide the rack in, and then, lift up so that the safetynotches clear the ends of the rack supports. Push the rack all the way in with both hands.

Removing Standard Oven Racks To remove an oven rack, grasp it with both hands and pull gently straight out toward you until it stops. To remove the rack completely, lift the front of the rack up about six (6) inches and continue to pull out. Lifting the rack releases the safety notches B . GlideRacks™ When the oven is warm, use a potholder to rearrange the oven racks.

The GlideRack™ can be pulled out further than the standard racks and still support heavy pots and pans full of food.

Inserting GlideRacks™ • Hold the GlideRack™ with the guides D fully extended away from you (see Figure 5-2).

• Align both sets of rear safety clips E (right and left) on the back of the guides D with the oven rack supports F as shown.

• Begin to slide the rack in, lifting the front safety clips H over the front of the oven rack supports F .

• Push the rack all the way to the back.

• Grasp the rack in the center of the front G and pull. The rack should come forward while the guides remain in place.

Removing GlideRacks™ To remove a GlideRack™, grasp it with both hands and pull gently straight out toward you until it stops. Using the Oven

Quick Start Guide Important Things to Know

Sleep mode: If the oven has not been used for about five minutes. the display will go into “sleep” mode. In sleep mode, the display is not lit. To wake the display, press any of the keys on the control panel or open the oven door.

Home screen: The home screen is the information seen on the display when the oven is first turned on or the CANCEL/SECURE key is pressed. It is the starting point for accessing all of the various functions and modes of the oven.

Preheating: The oven automatically preheats itself before baking or roasting. The preheat cycle rapidly brings the oven chamber up to the proper cooking temperature. It usually takes 7 to 14 minutes to preheat the oven, depending on the temperature settings. Pre-heat times may be longer depending on the type of electrical supply in the community. There is no preheat cycle for any of the broil modes.

The four most commonly used modes are on the home screen for quick access:

Bake

Bake mode uses a bottom heat source. It is used for basic recipes.

Pure Convection/Sear

Pure Convection/Sear is the same as Pure Convection, but runs 75°F hotter than the set temperature for the first 15 minutes to sear in the juices.

Pure Convection

Pure Convection uses a rear heat source along with a fan to even the heat in the oven. It is excellent for baked goods and multiple rack cooking.

Max Broil

Top heat source. Used for grilling meats or toasting breads.

For a description of all oven modes, see Main Menu Functions on page 5-8.

Starting the Oven(s)

• Position the racks to the appropriate level.

• Double ovens: Press the UPPER ON/OFF or LOWER ON/OFF key to select the upper or lower oven. Single ovens: Go to the next step.

• Press the appropriate key (for example: BAKE).

• The display will show the “jump-in” temperature (350°F for BAKE). If acceptable, press START. If you want to cook at a different temperature, enter the temperature on the keypad, then press START.

• If the oven is in BAKE or PURE CONVECTION modes, “PREHEATING” will appear on the display until the oven reaches the set temperature. Once the set temperature is reached, the oven will beep and “PREHEATING” will disappear from the display.

Turning Off the Oven(s)

• To turn the oven off: Double ovens: Press the UPPER ON/OFF or LOWER ON/OFF key. Press the CANCEL/SECURE key to

turn off both oven chambers at once. Single ovens: press the CANCEL/SECURE key.

After the oven is turned off, the cooling fans will continue to run until the oven’s internal components have cooled down. The amount of time the fans will run depends on the type of installation and cabinets surounding the oven.

Changing the Oven Temperature While Cooking

• Press EDIT (on a double oven, press the EDIT key below the word UPPER or LOWER on the display).

• Enter the temperature on the keypad, then press START.

Locking the Control Panel

• To disable the keys on the control panel when the oven is not in use, press and hold the CANCEL/SECURE key for five (5) seconds. The control panel will lock. Only the CANCEL/SECURE key will remain functional. To reactivate the control panel, press and hold the CANCEL/SECURE key for five (5) seconds.

Dacor Guide This oven is equipped with the Dacor Guide Cooking System. The user can select the type of food, and the oven will set the temperature, mode, and display the amount of time required to cook it.

How to Use Dacor Guide: • Position the racks before turning on the oven.

• Double ovens only: Press the UPPER ON/OFF or LOWER ON/OFF key to select the upper or lower oven.

• Press the DACOR GUIDE key.

• Select the category of food to be cooked. For example: MEAT.

• If the BAKERY or MEAT options are selected, the control panel display will prompt the user to pick a bakery or meat category. For example: BEEF/VEAL.

• Select the specific type of food to be cooked by pressing the correct number on the keypad.

• Press the HELP key for detailed instructions on how to prepare the food.

• If cooking meat or poultry, press the WEIGHT key and enter the weight of the meat being cooked on the keypad.

• If it is necessary to change the meat probe temperature, press the appropriate key and enter the changes on the keypad.

• Press the START key.

Important Facts About Dacor Guide In some cases the display may instruct the user to place the food in the oven and then press START. In other

cases the oven will preheat when START is pressed and instruct the user to place the food in the oven after the preheat tone (“WAIT FOR PRE-HEAT TONE” will appear on the display).

If the display instructs the user to “INSERT MEAT PROBE”, the user should insert the meat probe into the meat prior to putting the food into the oven. See the page 5-12 for complete instructions on how to use the meat probe.

When using the timer, place the food in the oven before pressing START.

If the Dacor Guide instructions read “COOK UNTIL…” or “SET TIMER FOR…” the user needs to check the food for doneness.

When using the meat probe, the oven will automatically stop cooking when the meat has reached the desired temperature. The oven will then reduce the temperature to a level that will keep the meat warm for up to two (2) hours (“HOLD” will appear on the display).

In all other instances, the oven will cook the food for the amount of time shown on the Dacor Guide display. When the oven is through cooking for the amount of time indicated, it will beep and reduce the temperature to a level that will keep the food warm for up to two (2) hours (“HOLD” will appear on the display).

Main Menu Functions The main menu allows the user to access the oven’s deluxe features and cooking modes.

• To access the main menu, press the MAIN MENU key on the home screen.

• The main menu will appear.

The three basic styles of cooking for an oven are:

Baking

Baking is the gentle cooking of dry goods such as cookies, cakes, soufflés, etc.

Roasting

Roasting is the cooking of meats over a period of time.

Broiling

Broiling is cooking with an intense heat for a short amount of time.

When one of these three (3) keys is pressed, the mode options available for that style of cooking appear on the screen. When selecting a mode option for a particular cooking style, the “jump-in” temperature is shown for that mode. This is the temperature that will automatically come up when the selecting the mode. To change the temperature, enter the desired temperature on the keypad and press START.

Baking

When you press the BAKING key on the main menu, the BAKING menu appears.

Baking Modes: Description:

BAKE Uses only a heat source from below the food. This mode is the stand-by, non-convection mode. All baked items will turn out nicely in this mode.

PURE CONVECTION™ Uses only convection heat.

SURROUND BAKE Uses heat sources that are above and below the food.

CONVECTION BAKE Uses a combination of convection cooking and a heat source below the food.

SURROUND CONVECTION BAKE

Roasting

When you press the ROASTING key on the main menu, the ROASTING menu appears.

Roasting Modes: Description:

PURE CONVECTION™ SEAR

The browning process sears the surface of the meat to keep the natural juices from escaping. In Pure Convection™ Sear mode, the oven cooks the meat 75°F higher than the set temperature for the first 15 minutes.

PURE CONVECTION™ Uses only convection heat. No other heat sources are used.

SURROUND ROAST Uses heat sources that are above and below the food.

CONVECTION ROAST Uses a combination of convection cooking and a heat source below the food at the same time.

SURROUND CONVECTION ROAST

Uses a combination of convection cooking and heat sources above and below the food. This mode provides the quickest sear and is best for individual, portion cut items that need browning on the top and to cook quickly.

Broiling

When you press the BROILING key on the main menu, the BROILING menu appears.

Broiling Modes: Description:

BROIL Uses a heat source from above the food. Best for broiling smaller amounts of food.

MAX BROIL Uses two (2) heat sources from above the food. Best for broiling larger quantities of food.

CONVECTION BROIL Uses a combination of convection cooking and a heat source from above the food. Best for items that do not need to be flipped.

Saved Guide, Saving Oven Settings

The save feature allows the user to save the oven settings for up to 100 recipes. Once the settings have been saved, the oven remembers them and can use them to automatically set the temperature, meat probe, and cooking time.

How to Save the Oven Settings for Your Favorite Recipe

• Settings are saved after the user selects the feature to be used, but just before pressing the START key.

• To use the save feature, start by setting up the oven the according to the cooking, dehydrate, defrost, and proof sections of this manual.

• Before pressing the START key, press the SAVE key.

• Use the keys below the display and on the keypad to enter the name of the recipe. To enter letters, press the key with the letter on it repeatedly until that letter appears on the display. Pause for 5 seconds before entering a new letter or number.

• Press the SAVE FILE key.

• The display will indicate that the file has been successfully saved.

• Press the OK key.

• Press START to start cooking, or press BACK/RECALL repeatedly to return to the home screen.

Saved recipes will NOT be lost in the event of a power outage.

How to Use the Saved Settings

• Press the MAIN MENU key.

• Press SAVED GUIDE.

• Press the number on the keypad for the appropriate recipe. If there are more than 10 recipe settings saved, press the NEXT key until the appropriate recipe appears on the display.

• Press START.

Sabbath Mode

The Sabbath mode complies with Jewish laws for use on the Sabbath and Holy Days. This feature allows the oven to perform two (2) types of cooking, BAKE and PURE CONVECTION™. The settings the oven will run during the Sabbath or Holy Day can be set in advance using the DELAY OPTIONS feature.

• When the oven is set to Sabbath mode, it disables the following features: The oven lights The meat probe The number keypad, including the light switch The TIMER key The BACK/RECALL key The START key The variable function keys The sleep feature is turned off so that the display is always visible.

Setting Up the Sabbath Feature

• Double ovens: Press the UPPER ON/OFF or LOWER ON/OFF key to select the upper or lower oven.

• From the main menu, press the MORE key.

• Press SABBATH.

• Press BAKE or PURE CONVECTION™. Set the temperature as desired.

• To start or stop the oven at a later time, press the DELAY OPTIONS key and set the oven according to the delay options section of this manual.

• Press the START key.

• The oven will start at the time entered.

• When the oven is cooking, the 25° HOTTER and 25° COOLER keys tell the oven to raise or lower the temperature by 25°F (15°C). In compliance with Jewish law, the bake elements will be adjusted randomly when these keys are pressed and no changes will be seen on the display.

The CANCEL/SECURE key on your oven remains active so that the oven can be turned off.

Double ovens: The UPPER ON/OFF and LOWER ON/OFF keys remain active so that the ovens can be turned off independently.

For Double Ovens: Setting Up the Second Oven Chamber to Cook on the Sabbath

• Press the ON/OFF key for the oven that is not already set to cook on the Sabbath.

• The BAKE/PURE CONVECTION™ display will appear.

• Press BAKE or PURE CONVECTION™. Set the temperature as desired.

• To start or stop the oven at a later time, press the DELAY OPTIONS key and set the oven according to the delay options section of this manual.

• Press the START key.

Dehydrate Mode

Dehydration is the process of preserving food by removing water. The oven can dehydrate fruits, vegetables, or meats.

• Position the racks before turning on the oven.

• Place the food into the oven.

• Double ovens: Press the UPPER ON/OFF or LOWER ON/OFF key to select the upper or lower oven.

• From the main menu, press MORE.

• Press DEHYDRATE.

• Select the type of food. For example: press FRUITS. The oven will set itself to the best combination of settings for the type of food selected.

• Press START.

Proof Mode

Proofing is the process of allowing dough to rise. The oven’s proof mode is best for yeast breads that require rise time in a warm, draft-free environment. In this mode, the oven maintains the ideal temperature for best dough fermentation.

• Position the racks before turning on the oven.

• Place the yeast dough in a clean bowl, place a damp towel over the top, and put it in the oven.

• Double ovens: Press the UPPER ON/OFF or LOWER ON/OFF key to select the upper or lower chamber.

• From the main menu, press the MORE key.

• Press PROOF.

• Leave the dough in the oven for about 1-2 hours (different yeasts require different rise times, so follow your original recipe). The dough should double in size. Some recipes require a second proof after you shape the dough.

Defrost Mode

• Position the racks before turning on the oven.

• Place the food in the oven on rack #3 (counting from the bottom).

• Double ovens: Press the UPPER ON/OFF or LOWER ON/OFF key to select the upper or lower oven.

• From the main menu, press MORE.

• Press DEFROST.

• The oven will turn on and the display will indicate the defrosting temperature.

• Periodically check the food to see how well it is defrosting.

Meat Probe The meat probe that comes with the oven takes the guesswork out of roasting. Use the meat probe to cook food to the exact temperature desired. The temperature range at which the probe can be set is from 100°F to 200°F.

To prevent the possibility of burns, connect and unplug the meat probe using potholders only.

Use of meat probes other than the one provided with the oven may result in damage to the meat probe and/or the oven.

Use the handle to insert and remove the meat probe skewer. Also, use the handle on the meat probe plug to insert and disconnect it. Pushing or pulling on either end of the cable could damage the meat probe.

To avoid breaking the meat probe, make sure the food is completely defrosted before inserting the skewer.

Never leave the meat probe inside the oven, especially during the self-clean cycle.

How to Use the Meat Probe

• Prepare the meat for cooking prior to setting the oven. Insert the skewer of the meat probe into the center of the meat. Make sure that the skewer is not inside any fatty portions of the meat and does not touch any bones. The point should rest in the thickest part of the meat. When cooking fowl, the tip of the skewer should rest toward the center of the bird.

• Select one of the roasting modes on page 5-9.

• Before pressing START, press the MEAT PROBE key.

• The preset meat probe temperature will appear on the display. Consult the Internal Cooking Temperature Chart in the Wall Oven Use and Care Manual. If the correct meat probe temperature already appears on the display, press START. Otherwise, enter the correct meat probe temperature on the keypad, then press START.

• “INSERT MEAT PROBE” will flash on the display when it is time to put the food in the oven and connect the meat probe. Use a potholder to insert the plug on the end of the meat probe into the meat probe socket inside the oven.

• Close the oven door.

• The oven will automatically cook the meat until it is done. When the meat is done, the oven will beep and reduce the temperature to a level that will keep it warm and safe for serving for up to two (2) hours (“HOLD” will appear on the display).

If you connect the meat probe before the display indicates it is time to connect it, the display will flash “REMOVE MEAT PROBE”.

Delay Options (Timed Cooking) To set the oven to automatically turn itself on or off at a later time or day, use the delay options feature. The delay options can be used with all of the various cook modes (except broil) and special features, including Dacor Guide and self-clean. The user can set the oven to turn on up to a week later.

Delay/Timed Cooking Options

Delay/timed cooking options:

Start the oven immediately and turn it off at a certain time of day (stop time).

Start the oven immediately and turn it off after a set amount of time (duration time).

Start the oven at a later time (delay start) with no turn off time.

For the self-clean feature only: The user may only use the delay options feature to set the start time and day for the self-clean feature. The user cannot change the stop time or duration of the self-clean cycle. The duration time for self-cleaning is set automatically when selecting light, medium, or heavy cleaning.

Food safety is an important consideration when using the delay options feature. To avoid potential sickness, take steps to avoid food spoilage while waiting for the oven to start cooking. Consult the Use and Care Manual for further details.

The user may run the timers at the same time as the delay options feature. The timers do not have an effect on any of the delay options settings.

Accessing the Delay Options

• The delay options are set after selecting the appropriate oven feature, but just before pressing the START key.

• To use the delay options feature, start by selecting the oven’s operating mode according to the cooking, dehydrate, defrost, proof, and self-clean sections of this manual (do not press START). If using the meat probe, make sure to enter the meat probe settings before you set the delay options.

• Press the DELAY OPTIONS key.

• The DELAY OPTIONS screen will appear on the display. There are three (3) settings available: DELAY START DURATION TIME STOP TIME

• Setting 2 of the 3 will cause the control panel (oven controller) to automatically calculate the third.

• If you want the oven to start immediately and only control the time at which it turns off, skip to Setting the Length of Time Oven is On, on page 5-13.

Setting Start Time and Day

• Press the DELAY START key.

• Enter the start time on the keypad. Press the AM-PM key if necessary to get the correct time of day. The new start time will appear on the display.

• To start cooking on a different day, press the START DAY key repeatedly until the correct day appears just above the key itself.

Pressing START after setting up the start time and start day, but without setting the stop time or duration time will make the oven start at the specified time and continue to run until manually turned off.

Setting the Length of Time Oven is On

Turning the Oven Off Using Duration Time

• Press DURATION TIME (cook time).

• Enter the amount of time you want the oven to be on using the keypad.

• The duration time will appear on the display.

• Press the START key.

• If a start time was not entered, the oven will start immediately and stop after the amount of duration timeentered has elapsed. • If using one of the cook settings, after the duration time expires, the oven will beep and go into “HOLD” mode fortwo (2) hours. The oven will reduce the temperature to about 150°F in hold mode.

Turning the Oven Off Using Stop Time

• After setting the start time, press the STOP TIME key.

• Enter the time of day the oven will turn off using the keypad.

• To turn off the oven on a different day, press the STOP DAY key repeatedly until the correct day appears justabove the key itself.

• The stop time and day will appear on the display.

• Press the START key. If a start time was not entered, the oven will start immediately and stop at the appropriatetime and day. If a start time was entered, “WAITING TO START” will appear on the display. The oven will turnon at the start time that was entered and stop cooking at the appropriate time and day.

• If you are using one of the cook settings, when the stop time is reached, the oven will beep and go into “HOLD”mode for two (2) hours. The oven will reduce the temperature to about 150°F in hold mode. At the end of thehold cycle, the oven will turn off and “CYCLE COMPLETE” will appear on the display. Touch CANCEL/SECUREto clear the control panel.

Turning the Oven Off or Making Changes While the Oven is “WAITING TO START”.

• To change the temperature, meat probe, or delay settings while the oven is waiting to start: Press EDIT (on a double oven press the EDIT key below the word UPPER or LOWER on the display). Change the settings that need to be changed, then press START.

Timers The timers do not turn the oven on or off. They are only for timing purposes. To turn the oven on or off automatically, use the delay options.

Pressing the CANCEL/SECURE key does NOT turn off the timers.

The wall oven is equipped with two (2) built-in timers:

Both of them can be used at the same time.

They have distinctive alarm tones.

To Use the Timers:

• Press the TIMER key.

• The timer screen appears.

• The time entered appears just above the TIMER 1 (or TIMER 2) key.

• Set the timer to count up or count down. For example: when set for 01:30:00 counting down, the timer will start at 01:30:00, count down to 00:00:00, then beep. When set for 01:30:00 counting up, the timer will start at 00:00:00, count up to 01:30:00, then beep. Press the DIRECTION key until the desired direction is displayed.

• Press START. The amount of time the timer is set for will continue to appear just above the TIMER 1 (or TIMER 2) key. The amount of time left on the timer will appear above the DIRECTION key for that timer.

• If the oven is on when the timer is set, the display will return to the oven mode screen a few moments after the timer is started.

• If the oven is not on, press BACK/RECALL to return to the regular cooking display.

• To stop a timer before it has beeped, press the TIMER key, then press CANCEL TIMER 1 or CANCEL TIMER 2 as appropriate.

Self-Cleaning

Do not leave the racks, the meat probe, pots, pans, utensils, foil, or any other items in the oven in during self-cleaning. The convection filter must also be removed. Items left in the oven during self-cleaning may be damaged.

The control panel (oven controller) automatically locks the oven door during self-cleaning. Do not try to force the door open after it is locked. Damage to the door latch may result.

Do not touch the outside surfaces of the oven during the self-clean cycle. They will be hot.

Do not line the oven with aluminum foil or other materials. These items can melt or burn during self-cleaning and cause permanent damage to the oven.

Take extreme caution when cleaning the door gasket. Rubbing, moving or in any way damaging the door gasket may eliminate the required tight door seal. See page 6-3 for cleaning instructions.

Always remove excess grease and soil from the oven interior and door prior to using the self-clean cycle. See page 6-3 for proper cleaning instructions.

About the Self-Clean Cycle The oven will run better and produce better baked goods if it is clean.

During self-cleaning, the oven is heated to a very high temperature to burn off any deposits on the surfaces inside the oven. Self-cleaning eliminates the need for manual scrubbing of interior surfaces. The length of time for self-cleaning is based on the amount of soil. The three (3) settings are light (2 hours), medium (3 hours), and heavy (4 hours).

The level of self-cleaning required depends on the amount of time the oven is used.

It is normal for the oven to emit smoke during the first few self-clean cycles.

It is normal for the oven to emit popping sounds during self-cleaning. These sounds are caused by the expansion and contraction of metal surfaces when the oven heats up and cools down.

Following self-clean, there may be a powder ash residue left in the bottom of the oven. This is normal. Sponge the residue up after the oven completely cools.

Double ovens: When one oven chamber is being self-cleaned, the control panel (oven controller) shuts off power to the other oven chamber due to the amount of power consumed.

Press the CANCEL/SECURE key to stop the self-clean cycle. The oven door will remain locked until it is safe enough to open. Exercise caution when the door lock is released because the inside of the oven will still be hot.

Using the Self-Cleaning Feature Remove the racks, broiler pan, convection filter, trays, foil, and all other utensils from the oven chamber. See page 6-4 for instructions on how to remove and clean the filter.

• Clean soil from the front of the oven and the oven door outside of the door gasket. Clean heavily soiled areas with a non-scratching scouring pad.

• Rinse all exterior surfaces. See page 6-3 for instructions.

• Wipe up excess grease and other food spills with a damp cloth. Doing so will minimize smoke and increase the efficiency of the self-clean cycle.

• Turn on kitchen fans or vents to help remove odors generated during the self-clean cycle.

• Double oven: Use the UPPER ON/OFF and LOWER ON/OFF keys to select the oven chamber to be cleaned.

• Press the MAIN MENU key.

• Press MORE.

• Press SELF-CLEAN.

• The oven will display a warning message regarding removing oven utensils from the oven.

• Remove all utensils, racks, foil, and the convection filter, then press OK.

• Select one of the three (3) self-clean options on the display.

• Press START.

• Shortly after pressing START, the oven door will automatically lock. The oven will keep the door locked until it has cooled down enough to open.

The automatic door latch will not close if the oven door is not completely shut. If the phrase “CLOSE OVEN DOOR” appears on the display, press the CANCEL/SECURE key twice and wait approximately one (1) minute. When the door is properly closed, start the self-clean process again.

• When the oven has completed the self-clean cycle and has finished cooling down, it will release the door latch. The display will indicate that the self-clean cycle is complete. Exercise caution because the oven will still be hot at the time the door lock is released.

• Press CANCEL/SECURE to return to the home screen.

• Once the oven chamber has COMPLETELY cooled down, use a damp cloth or sponge to wipe out any powder residue found in the bottom of the oven.

• Reinstall the convection filter and oven racks before using the oven.

• To stop the self-clean cycle, press CANCEL/SECURE.

Cleaning Oven Surfaces To avoid electrical shock or burns, turn off the oven and be sure that it is cool before cleaning.

Use only the cleaning solutions specified in this manual to clean the inside or outside of the oven. Other cleaning solutions could produce hazardous fumes, cause corrosion of the metal parts, and could permanently damage the finishes.

Take extreme caution when cleaning the door gasket. Rubbing, moving, or in any way damaging the door gasket may eliminate the required tight door seal for self-cleaning.

Always wipe stainless steel (silver colored) surfaces with the grain.

To avoid accidentally turning the oven on while cleaning the control panel, activate the lock-out feature on the oven. See page 5-7.

The oven’s self-clean feature eliminates the need for manual scrubbing of interior surfaces. The steps below are for cleaning surfaces and items that are not covered by the self-clean process.

Glass and Porcelain Surfaces • To clean the glass and porcelain surfaces on the oven, use a non-abrasive sponge with warm, soapy water. Dry

the surfaces of the oven completely with a soft, lint-free cloth. Scrub the oven light lens with the rough side of a sponge and warm, soapy water. Be careful not to scratch the lens.

• Glass surfaces may also be cleaned with Dacor Cook Top Cleaning Creme (Part No. A-300).

Stainless Steel Surfaces • Ovens with stainless steel surfaces on the outside should be cleaned with a solution of mild detergent, and warm

water. Rinse and dry with a soft, lint-free cloth.

• Stainless steel surfaces may also be cleaned with Dacor Stainless Steel Cleaner (Part No. A-302).

Door Gasket (Seal) • Clean the door seal by dabbing it with a solution of water and mild soap. Do not scrub, as it will become

damaged.

Cleaning the Convection Filter The convection filter A is located in the back of the oven chamber B . A double oven has two (2) convection filters, one in the back of each oven chamber. The control panel reminds the user to clean the filter based on the amount of use the oven receives. Remove the filter from the oven during the self-clean cycle.

Remove the filter(s) only when the oven is cool.

In the interest of safety, reinstall the filter(s) before using the oven to cook. Otherwise, the spinning fan blades at the back of the oven will be exposed.

The convection filter must be cleaned at regular intervals for the oven to operate properly.

Removing the oven’s filter(s):

• Put your fingers around the edges of the filter A and gently push up.

To clean the filter(s):

• Soak the filter in hot, soapy water and rinse well, or place it in a dishwasher on the top rack. Dry the filter before reinstalling it.

Installing the oven’s filter(s):

• The metal clips C on the back of the filter A hook over the metal bar D across the fan hole E . Place the filter flat against the back of oven B above the hole with the clips on the back of the filter pointing down. Be careful not to push the filter too hard against the back wall because the clips can scratch the interior surface. Gently push the filter straight down over the hole until the clips catch on the metal bar.

Clearing the “Clean Convection Fan Filter” Message: • You may either choose to ignore the message and continue baking, or reset the reminder function. You will have

approximately 15 hours of use in this mode before you receive this message again.

• When the “Clean Convection Fan Filter” message appears on the screen, the variable function keys will be labeled OK, RESET UPR and/or RESET LWR. When you clean the filter(s) and want to reset the message and counter, touch the variable function key with the appropriate RESET label, then OK. RESET UPR will reset the upper or a single oven, RESET LWR will reset the lower oven on units equipped with two ovens. Touch OK alone to clear the screen and continue using oven without cleaning the filter. Doing so does not clear the warning. Next time the home screen is displayed, the message will reappear. Touching OK allows you to leave the message as a reminder if you are not ready to clean the filter, but still want to cook.

Cleaning Components and Accessories Remove all accessories from the oven during the self-clean cycle. Accessories left in the oven during self-cleaning will become permanently discolored and/or damaged. Racks will become difficult to slide. Foil will melt.

Oven Racks • To clean the oven racks, apply a solution of detergent and hot water. When cleaning heavy soil, use a scouring

pad such as steel wool with plenty of water. A solution of 1 cup of ammonia to 2 gallons of water may also be used.

Meat Probe Do not immerse the meat probe in water. It will become damaged.

• The meat probe is constructed of vinyl handles, a wire, a plug, and a stainless steel skewer. To clean the skewer, use a scouring pad and hot, soapy water. When cleaning the handles, wipe with a soft sponge soaked with a solution of detergent and warm water.

Broil Pan • The broil pan has a porcelain enamel finish. When cleaning it, use a solution of detergent and hot water. If the

broil pan is heavily soiled, use a scouring pad with plenty of water. Rinse it well after cleaning.

Optional Roast/Broil Pan with V-shaped Rack • The roast/broil pan has a porcelain enamel finish. When cleaning it, use a solution of detergent and hot water. If

the roast/broil pan is heavily soiled, use a scouring pad and plenty of water. Rinse it well after cleaning.

• The optional V-shaped rack is finished with an Excalibur non-stick coating. When cleaning it, use a solution of mild detergent and warm water. Use the soft side of a sponge to scrub it and dry it with a lint-free cloth.

Optional Baking Stone • Wash the optional baking stone with hot water and scrub it clean before using it for the first time. Do not use any

soap or detergents to wash the stone. The stone is porous and soap will get trapped inside. The trapped soap will affect the flavor of the food cooked on it. It is normal for the stone to be stained after it is used for a while. Stains do not affect the stone's ability to bake properly.

• To remove large food particles from the baking stone, use warm water and a scrub brush. If there is a lot of oil build-up, it may smoke and create odors. To remove the oily build up, use a scouring pad and brush to remove it or use a paste of baking soda and water.

Optional Cookie Sheets • Clean aluminum cookie sheets with a solution of detergent and warm water. Since aluminum can scratch, use the

soft side of a sponge.

Section 7 - Oven Components and How They Function

Overview On double ovens, both oven chambers have identical components, with two exceptions:

The upper and lower cooling fans (blowers) are electrically identical, but mount different mechanically. The upper chamber of a double oven has only one smoke eliminator.

Oven Controller

The oven controller, or logic controller, is the heart of the Dacor oven. It is connected directly to the keypad on the front of the control panel. The keypad is used to set the oven controller for the desired function. The oven controller manages the operation of the relay board(s) and the various components so that the oven performs as desired. It also receives data from the relay board(s) regarding the operating conditions of the various components inside the oven. The controller uses the information from the relay board to maintain the proper component operating conditions.

Relay Board

The relay board takes the commands sent from the oven controller and regulates power to the various components of the oven. It controls the output of the components so that the oven performs the task that the user has requested. It also receives information from all of the various oven components and converts the information into data that the oven controller can understand.

Double ovens have two relay boards, one relay board for the upper oven chamber and one relay board for the lower oven chamber. The two (2) relay boards are identical. The switch on the top of each relay board configures it to control the appropriate oven chamber.

The relay board on a single oven is set to “UPPER”.

Power Supply

Some of the components in the oven use low-voltage DC power as opposed to high-voltage AC power. The power supply converts high-voltage AC power (240VAC nominal) to low-voltage DC power (12VDC nominal) for those components that require it. It supplies power to the oven controller, the relay boards, and the various components controlled by the relay board.

Convection Element

The convection element is located at the back of the oven behind the convection baffle. It is a single heating element that heats the air that is blown into the oven chamber by the convection fan. The convection element is turned on and off by oven controller and the relay board as necessary to keep the oven at the desired temperature. See the Power Cycling Charts in Appendix C to determine the cooking functions for which the convection element is used.

Convection Fan

The convection fan blows the hot air generated by the convection element into the oven. It is controlled by oven controller and the relay board. See the Power Cycling Charts in Appendix C to determine the cooking functions for which the convection fan is used.

Bake and Broil Elements

The bake element assembly is mounted on the floor of the oven chamber. The broil element assembly is mounted on the ceiling of the oven chamber. Each element assembly contains two elements. The oven controller and the relay board control them. See the Power Cycling Charts in Appendix C to determine the cooking functions for which the various elements are used.

Cooling Fan

The cooling fan keeps the various components of the oven from over-heating. The speed of the fan varies with the temperature of the oven. The fan is equipped with a tachometer that is used by the relay board and oven controller to monitor and control the speed at which it runs. See the Power Cycling Charts in Appendix C to determine the speed parameters for the cooling fan.

Temperature Sensors

Each oven chamber is equipped with three (3) temperature sensors. The temperature sensors are monitored by the relay board and oven controller so that the desired oven temperature can be maintained.

High Limit Switch

The high limit switch is located on top of the oven chamber. It is a safety feature that prevents the oven from overheating by disconnecting the heating elements. It acts independently from the relay board and the oven controller in case of malfunction. The high limit switch must be manually reset using the button located on top.

Oven Lights

The oven lights are controlled by the relay board. The relay board will turn on the oven lights when the door switch is actuated or when prompted by the oven controller. See the Basic Operating Instructions section for information on using the control panel to turn the lights on or off.

Door Switch

The door switch is magnetically actuated (closed) by the magnet mounted to the door assembly. The door switch is connected to the relay board, which turns the oven lights on when the switch is closed.

Door Lock Assembly

The door lock assembly consists of the lock motor and two (2) switches (called the lock switch and the cam switch). The door lock assembly holds the oven door shut during self-cleaning. The relay board and oven controller use the switches to determine whether the latch is open or closed. The latch and latch switches are connected to the relay board. The oven is designed to release the latch when the oven temperature drops below 475°F.

Meat Probe Socket

The meat probe socket is connected to the relay board. When the meat probe is connected to the meat probe socket, the oven controller monitors the internal temperature of cooking meat through the relay board.

Smoke Eliminator

The oven is equipped with smoke eliminators that reduce smoke from the air that passes from the oven out into the room. They are mounted either to the ceiling of the oven chamber or inside the chassis, directly above the one in the ceiling. Please see Table 7-1 for the location and type.

Basic Troubleshooting Instructions 1. If the oven does not function properly, check for obvious problems first, such as the main power switch being

turned off, or the control panel being locked.

2. If the problem is not immediately obvious, consult the Physical Symptom Troubleshooting Guide in Appendix A.

3. If prompted by the troubleshooting guide to use the on-line diagnostics, follow the instructions below to access the on-line diagnostics menu.

Using the On-line Diagnostics Accessing the Diagnostics Home Screen

Surfaces inside the oven will become hot when certain diagnostics are running.

• With the main power supply to the oven turned on, press and hold the CANCEL/SECURE and # keys at the same time.

• When the diagnostic password screen appears, release the CANCEL/SECURE key (first) then the # key.

• Press the 7 key on the keypad repeatedly until the letter S appears just below the words SERVICE ID NUMBER.

• Wait three (3) seconds.

• Enter your service ID number. It is a minimum of four digits long. Press ENTER.

• The FACTORY AND SERVICE DIAGNOSTIC HOME SCREEN appears.

• The FACTORY AND SERVICE DIAGNOSTIC HOME SCREEN has five (5) options: VERSION: Use this option to access

information about the software versions programmed into the oven’s printed circuit boards.

MANUAL DIAGNOSTIC: Use this option to diagnose problems with individual components and cooking modes.

SERVICE TEMP: Use this option to modify calibration of the various components in the oven.

FACTORY TEMP: The base calibration settings made at the factory. Dacor does not recommend modifying these settings. Use the SERVICE TEMP settings to modify the calibration of the various cooking modes. The SERVICE TEMP menu modifies the component calibrations based on the FACTORY TEMP settings. If the FACTORY TEMP settings are not tampered with, a service technician can return the oven to the factory settings by setting all the SERVICE TEMP parameters to zero (0).

ERROR CODES: Use this option to view the last twenty (20) error codes stored in the oven controller.

See the appropriate section on the following pages for a detailed description on how to use the above diagnostic screens.

Version Screen

Overview

• The center column contains information about the software loaded into the oven controller (LOGIC VERSION).

The versions and checksums for the upper and lower relay boards on a double oven must match for the oven to work properly.

Manual Diagnostic Screen

The diagnostic screen offers four (4) options for exercising the oven components in a manner that will allow diagnosis of various types of failures:

Outputs

This diagnostic mode allows the service technician to turn each output component in the oven on by itself while leaving all other output components off. To turn one of the output components on:

• Press the OUTPUTS key.

• If servicing a double oven, select the upper or lower oven (press UPPER ON/OFF or LOWER ON/OFF) when prompted to do so.

• The OUTPUTS diagnostic screen will appear.

• To turn on a particular component, press the appropriate number on the keypad. The display will indicate the component that has been turned on. Check to make sure the appropriate component is functioning normally. Only one (1) output component may be turned on at a time.

• To turn off an output component that is on, press the appropriate number on the keypad.

Temperature Sensor

• A hexadecimal number appears after each of the temperature sensor entries. These numbers represent the temperature detected by the sensor. To determine if the temperature sensors are working correctly: Close the oven door. From the OUTPUTS screen, turn on the bake

element. Press the INPUTS key. The hexadecimal

numbers after the probe 1, 2, and 3 entries on the display should change in value to indicate a rise in temperature. Probe #4 is not used.

Turn off the bake element.

Meat Probe

numbers after the MEAT PROBE entry on the display should change in value to indicate a rise in temperature.

Turn off the bake element.

Hall Effect Sensor (Cooling Fan Tachometer)

• A number appears after the hall effect sensor entry on the INPUTS screen. It is a read out of the cooling fan speed. To determine if the cooling fan is operating at the proper speed and that the hall effect sensor is working: From the OUTPUTS screen, turn on the cooling

fan at the LO setting. Press the INPUTS key. Take note of the number after the hall effect

sensor entry on the INPUTS screen. Go to the OUTPUTS screen and change the

cooling fan speed to HI.

Press the INPUTS key. The hall effect sensor reading should be at least

50 units higher than when the fan is on LO.

Cam and Lock Switches

The oven controller uses the cam and lock switches to determine the position of the door latch during the self-clean process. To test the cam and lock switches:

Open the oven door. From the OUTPUTS screen, select the latch

motor. Go to the INPUTS screen. Observe the door

latch while monitoring the cam or lock switch entries.

The cam switch should be closed only when the door latch is completely retracted.

The lock switch should be closed only when the door latch is in the latched position.

Turn off the latch motor when the latch is completely retracted.

Do not close the oven door unless the door latch is completely retracted.

Modes (1 and 2)

This diagnostic mode allows the service technician to set the oven to a cooking mode without having to exit the diagnostics to the home screen. To turn on one of the oven cooking modes from the FACTORY AND SERVICE DIAGNOSTICS HOME SCREEN:

• Press the MODE 1 or MODE 2 key.

• If servicing a double oven, select the upper or lower oven.

• The MODE diagnostics screen will appear. If the desired oven mode does not appear on the display, press the other mode key.

FRUITS OFF, VEGGIES OFF, and MEATS OFF refer to the three (3) dehydrate modes.

• Press the appropriate number on the keypad to select the desired mode of operation.

• Check the oven operation according to the cycling chart in Appendix C or the INPUTS screen.

• To turn off the oven cooking mode, press the appropriate number on the keypad.

Service Temp Screen

The service temp screen allows the service technician to modify the calibration of the various oven cooking modes. The settings on the SERVICE TEMP screen indicate the amount by which the factory calibration settings (see the FACTORY TEMP screen) are raised or lowered. If the FACTORY TEMP calibration settings are not tampered with, a service technician can return the oven to the factory settings by changing all the SERVICE TEMP settings back to zero.

To set the SERVICE TEMP settings:

• From the FACTORY AND SERVICE DIAGNOSTIC HOME SCREEN, press the SERVICE TEMP key.

• If a double oven is being serviced, select the upper or lower oven (press UPPER ON/OFF or LOWER ON/OFF) when prompted to do so.

• A warning screen will appear. Press OK.

• The SERVICE TEMP screen will appear. Additional cooking mode settings can be viewed by pressing the NEXT key.

Two (2) temperature settings appear at the end of each cooking mode entry. For example [1] BAKE +10/+20. The first number is the previous SERVICE TEMP setting. The second number is the current SERVICE TEMP setting. The current temperature setting becomes the previous temperature setting when a new temperature setting is entered. Press the RESET key, to return all the current settings to the values of the previous settings.

To change the current setting for a particular mode:

• Press mode number on the keypad.

• Press the +5°F or -5°F keys repeatedly until the desired temperature shift appears on the display. The setting can be varied by up to +/- 35°F.

• To make changes to additional cooking modes, press the appropriate number on the keypad and enter the temperature change in the same manner.

• Press OK when done changing the temperature settings. The temperature values entered will offset the values in the FACTORY TEMP menu.

Factory Temp Screen

These are the base calibration settings made at the factory. Dacor does not recommend modifying these settings. If the FACTORY TEMP settings must be changed, they are changed in the same manner as the SERVICE TEMP settings.

Component Access and Disassembly Turn off the electrical power supply to the appliance prior to servicing it. Failure to disconnect the power supply during service may result in an electrical shock or fire hazard.

Door Removal On double ovens: Remove the lower door first. Otherwise, damage to the top of the lower door may occur when the upper door is removed.

Do not attempt to disengage the hinge locks on the door while it is removed from the oven. The hinge springs could release, causing personal injury.

Do not lift or carry the oven door by the door handle.

• Open the oven door completely.

• Pull the hinge locks forward on both hinges, until they stop.

• Raise the door so that it is at a 15° angle from the front of the oven. Hold the door with one hand on each side. Lift the door up and out.

See page 8-20 for door disassembly and repair instructions.

Door Installation Be sure that the notch on the bottom of each hinge rests on top of the lower lip of EACH hinge receptacle before attempting to open the oven door. Failure to do so may cause the door to fall off its hinges, resulting in personal injury or damage to the door.

Rotate the hinge locks toward front of the oven immediately after installation of the door. Failure to do so may cause the door to fall off its hinges, resulting in personal injury or damage to the door.

On double ovens: Install the upper door first. Otherwise, damage to the top of the lower door may occur.

• Grasp the oven door on opposite sides and hold it at a 15° angle from the front of the oven. Slide the hinges A into the hinge openings B , resting the bottom of the hinge arms C on the lower lip D of the hinge receptacles. Continue to hold the door at a 15° angle with one hand while pushing in on the each of the bottom corners of the door. Push until the notch E on the bottom of each hinge slips over the lower lip D of each hinge receptacle.

• Lower the door to the fully opened position.

• Rotate the two hinge locks toward the oven.

• Open and close the door completely to ensure that it is properly installed.

• Remove any protective plastic from the front of the oven and any packaging from inside the oven.

Removing the Oven from the Wall Use an appliance dolly to move the appliance when installing it or removing it from the wall for service. Use of an appliance dolly will minimize the risk of personal injury as a result of the oven tipping.

Hold the oven steady when removing it from the wall. Otherwise, the oven will have a tendency to tip forward, increasing the risk of personal injury.

Do not use the door or the door handles to lift, carry, or move the oven. Personal injury may result.

Not all service procedures require that the oven be removed from the wall. See the appropriate procedure to determine if removal from the wall is necessary.

• Remove the oven door(s) as described on page 8-9. Due to the weight of this appliance, removing the door(s) will significantly reduce the lifting load. Removing the door(s) will also providing the technician with a place to grip the oven when removing it from the wall.

• Remove the mounting screws that hold the oven in place. The screws are located inside the door jams of oven on the trim posts on both sides of the oven. There are two possible locations F for the mounting screws on the trim post G : facing the front of the oven or facing in toward the oven chamber. Single ovens are held in place by four (4) screws. Double ovens are held in place by six (6) screws.

• Remove the oven racks from the oven.

• Pull the oven out of the wall toward you, using the gripping points and side handles. Hold it steady as you pull. Some service procedures only require that you pull the oven out the few inches. Other service procedures require that the oven be pulled completely out of the wall. See the appropriate part replacement procedure to determine how far to remove the oven from the wall.

• To reinstall the oven, see the installation procedure on page 3-13.

Oven Chamber Components Smoke Eliminator

Turn off the electrical power supply to the appliance prior to servicing it. Failure to disconnect the power supply during service may result in an electrical shock or fire hazard.

Each oven chamber is equipped with two smoke eliminators. One is accessible from inside the oven chamber, the other is located inside the chassis directly above the one inside the oven chamber*. The smoke eliminator(s) located inside the oven chamber(s) can be replaced without removing the oven from the wall. The chassis smoke eliminator(s) require that the oven be removed from the wall to be replaced.

* There is one exception. There is no chassis smoke eliminator for the upper chamber of a double oven.

• Remove the oven door(s) as described on page 8-9.

• Remove the oven racks from the oven chamber.

• The oven chamber smoke eliminator A is located on the ceiling of the oven chamber behind the broil element, above the convection fan B .

• Remove the three (3) screws that hold the smoke eliminator in place. Be careful not to scratch the back of the oven with the screwdriver during removal and installation.

• To install the smoke eliminator, fasten it in place with the three (3) existing screws.

• Reinstall the oven door(s) as described on page 8-10.

Convection Element and Fan

Turn off the electrical power supply to the appliance prior to servicing it. Failure to disconnect the power supply during service may result in an electrical shock or fire hazard.

Convection Baffle Removal

• Remove the oven door(s) as described on page 8-9.

• Remove the oven racks from the oven chamber.

• Remove the convection filter by lifting it up and out.

• Remove the four (4) screws that hold the convection baffle in place. The screws are located near the four corners of the baffle at the back of the oven.

• Remove the convection baffle.

Convection Element Disassembly

• Remove the three (3) screws holding the convection element in place.

• Grasp the convection element at the base and pull it out slowly with a gentle, rocking motion. Do not pull the convection element out too quickly because the wires that connect to the element could pull free inside the oven wall.

• Disconnect the wires from the terminals of the element and remove it from the oven.

• To replace the convection element: Place the convection element in the oven and

attach the wires to the terminals. Grasp the convection element at the base and

push it slowly back into place with a gentle rocking motion.

the convection element in place.

Convection Fan Removal

• To remove the convection fan, hold it with one hand and turn the nut clockwise with a wrench.

• When replacing the fan, make sure that the washer is installed behind the fan blade before replacing the fan. Use a wrench to tighten the nut counterclockwise.

Convection Baffle Installation

• Install the convection baffle against the back wall of the oven with the large square hole C located on the bottom left.

• Replace the four (4) mounting screws that hold the baffle in place.

• Replace the convection filter.

• Reinstall the oven door(s) as described on page 8-10.

• Test the oven to ensure that repairs were properly completed.

Bake Element Assembly Removal

Turn off the electrical power supply to the appliance prior to servicing it. Failure to disconnect the power supply during service may result in an electrical shock or fire hazard.

The bake element wires must be properly labeled so that they can be connected to the same terminal when the element is replaced. If the wires are not properly connected, the oven will not function properly.

When removing it from the oven, do not hold the bake element assembly by the wires. Damage to the bake element terminals may result.

Exercise caution when handling the bake element when it is removed from the oven. The insulation around the edge of the bake element is fragile and can be damaged easily.

• Remove the oven door(s) as described on page 8-9.

• Remove the oven racks from the oven chamber.

• Remove the eight (8) screws that hold the bake element frame D in place on the floor of the oven.

• Remove the bake element frame and glass E .

• If replacing the bake element F , pull it up and out of the floor of the oven. Label the wires that connect to the bake element terminals G . When reconnecting the wires, make sure that the wires are connected to the proper terminal.

• If replacing the bake element glass, make sure that the smooth side of the glass is facing up when placing it in the oven.

• When reassembling the bake element in the floor of the oven, place the bake element glass inside the bake element frame and place it over the top of the bake element in the floor of the oven.

• Hold the bake element frame in place with one hand while replacing the eight (8) existing screws that hold it in place.

• Reinstall the oven door(s) as described on page 8-10.

• Test the oven to ensure that repairs were properly completed.

Broil Element Assembly Removal

The broil element wires must be properly labeled so that they can be connected to the same terminal when the element is replaced. If the wires are not properly connected, the oven will not function properly.

• Place the broil element assembly on a flat, padded surface and remove the screws from each of the four (4) corners.

• The broil element assembly separates into three (3) components, the broil element H , the broil element frame D , and the broil element glass J .

• To reassemble the broil element assembly, use the four (4) existing screws. The smooth side of the broil element glass should face away from the broil element. During reassembly, make sure that the broil element terminals K and the smoke eliminator cutout L are on the same side.

• Place the broil element into the oven chamber with the glass facing down and the terminals toward the back of the oven.

• Lift the back of the element up and reconnect the broil element wires to the terminals on the broil element assembly. Make sure that the wires are connected to the proper terminals.

• Insert the broil element assembly into the hole in the oven ceiling while pushing the broil element wires into the access hole toward the back.

• Hold the broil element assembly in place with one hand while replacing the eight (8) existing screws that hold it in place.

• Reinstall the oven door(s) as described on page 8-10.

• Test the oven to ensure that repairs were properly completed.

• Remove the oven door(s) as described on page 8-9.

• Remove the oven racks from the oven chamber.

Rack Support Removal

• Remove the four (4) screws that hold the rack support (on the appropriate side) in place. Be careful not to scratch the inside surface of the oven when removing it.

Temperature sensor removal

• Remove the two (2) screws that hold the temperature sensor M in place.

• When removing the temperature sensor, pull the wires attached to the sensor gently toward you through the hole in the back of the oven to expose the connector. Do not pull hard on the wires because the connector may come loose inside the oven wall. Use a screwdriver, if necessary, to move the insulation around behind the hole to allow the connector to slide out into the oven chamber.

• Disconnect the temperature sensor wires at the connector N and remove the temperature sensor.

• When reinstalling the temperature sensor, gently push the connector and excess wire through the access hole and insulation at the back of the oven.

• Tighten the temperature sensor into place with the two (2) existing mounting screws.

Rack Support Installation

To prevent scratching of the oven and wall, replace the rack support only in the manner specified below.

• Insert the end of the rack support with the two (2) vertical bars O first. Insert the rack support into the oven at a 45° angle to the sidewall, placing the two vertical bars behind the temperature sensor P .

• Rotate the rack support into place, matching the four (4) protruding pins Q on the rack support to the holes R in the oven wall.

• Mount the rack support in place using the four (4) existing screws.

• Reinstall the oven door(s) as described on page 8-10.

• Test the oven to ensure that repairs were properly completed.

Door Components Door Gasket (seal)

• Remove the oven door(s) as described on page 8-9.

• Lay the door on a flat, padded surface with the door gasket A facing up.

• Remove the gasket by grasping sections of it and pulling up.

• Insert the self-locking tabs on the replacement gasket into the holes on the oven door. Check to make sure that all of the self-locking tabs are firmly in place by pulling gently on the gasket.

• Reinstall the oven door(s) as described on page 8-10.

Door Handle

• Remove the oven door(s) as described on page 8-9.

• Lay the door on a flat, padded surface with the door gasket facing up.

• Remove the two (2) screws B in the top corners of the door.

• Grasp the door with one hand and pull up. Pull the door handle out from underneath.

• To reinstall the door handle, grasp the door with one hand and pull up. Hold the handle in position on the front. Lower the door onto the padded surface.

• Replace the two (2) screws in the top corners of the door and tighten into place. Do not over-tighten the screws, because the front door glass could crack.

• Reinstall the oven door(s) as described on page 8-10.

Front Door Glass Assembly

To prevent personal injury, use gloves when handling glass components that are broken or shattered.

• Remove the oven door(s) as described on page 8-9.

• Lay the door on a flat, padded surface with the door gasket facing up.

• Remove the two (2) screws B in the top corners of the door and the two (2) inner screws C on the bottom of the door.

The outer screws D on the bottom of the door are part of the hinge assembly.

• Grasp the top end of the door with one hand and pull up. Pull the door handle out from underneath.

• Holding the door tightly with both hands, turn it over and place it on the flat, padded surface with the front door glass facing up. Be careful to hold the door assembly tightly while turning it over, since the screws that hold it together have been removed.

• Grab the front door glass assembly with both hands and remove it.

• If the silicone door gaskets E require replacement, replace them while the front door glass is removed.

• Make sure that the door spacers F in the top corners of the door are still in place before putting the front door glass back into in place.

• When replacing the front door glass assembly G , the tabs on the bottom should rest inside of the tabs on the door liner H .

• Holding the door tightly with both hands, turn it over and place it on the flat, padded surface with the door gasket facing up.

• To reinstall the door handle, grasp the top end of the door with one hand and pull up. Hold the handle in position on the front. Lower the door onto the padded surface.

• Replace the four (4) screws in the top corners and bottom and of the door and tighten into place. Do not over-tighten the screws because the door glass could crack.

• Reinstall the oven door(s) as described on page 8-10.

• Lay the door on a flat, padded surface with the door gasket facing up.

• Remove the two (2) screws B in the top corners of the door and the two (2) inner screws C on the bottom of the door.

The two outer screws D on the bottom of the door are part of the hinge assembly.

• Grasp the top end of the door with one hand and pull up. Pull the door handle out from underneath.

• Holding the door tightly with both hands, turn it over and place it on the flat, padded surface with the front door glass facing up. Be careful to hold the door assembly tightly while turning it over, since the screws that hold it together have been removed.

• Grab the front door glass assembly with both hands and remove it.

• If you are replacing the door magnet I (located in the top right corner below the door spacer F ), use a screwdriver to break the plastic tabs on the side of the magnet that hold it in place. Push the old door magnet assembly out through the back of the door assembly. Insert the replacement door magnet into the door magnet mounting hole and push it in until it locks firmly into place.

• If you are replacing one of the hinges, remove the three (3) screws J that hold the hinge cover plate K and the hinge L in place.

• With the hinge cover plate removed, pry up the hinge L with a screwdriver. Insert the replacement hinge into place and install using the two (2) existing screws that hold it in place. Replace the hinge cover plate and the three (3) existing screws that hold it in place.

• Make sure that the door spacers F in the top corners of the door are in place before replacing the front door glass assembly.

• When replacing the front door glass assembly G , the tabs on the bottom should rest inside of the tabs on the door liner H .

• Holding the door tightly with both hands, turn it over and place it on the padded surface with the door gasket facing up.

• To reinstall the door handle, grasp the top end of the door with one hand and pull up. Hold the handle in position on the front. Lower the door onto the padded surface.

• Replace the four (4) screws in the top corners and bottom and of the door and tighten into place. Do not over-tighten the screws, because the door glass could crack.

• Reinstall the oven door(s) as described on page 8-10.

Inner Door and Window Assembly

To prevent personal injury, use gloves when handling glass components that are broken or shattered.

• Remove the oven door(s) as described on page 8-9.

• Lay the door on a flat, padded surface with the door gasket facing up.

• Remove the two (2) screws B in the top corners of the door and the two (2) inner screws C on the bottom of the door.

• Push the glass window assembly out of the door liner from the bottom and lift it out.

• Replace the window glass assembly. The seam R in the metal rim around the glass must be put toward the top of the door.

• Replace the upper outer heat shield and tighten into place using the five (5) existing screws.

• Replace the lower outer heat shield and tighten into place using the three (3) existing screws.

• Replace the inner heat shield and tighten into place using the six (6) existing screws.

• Make sure that the door spacers F in the top corners of the door are in place before putting the replacement door glass in place.

• When replacing the front door glass assembly G , the tabs on the bottom should rest inside of the tabs on the door liner H .

• Holding the door tightly with both hands, turn it over and place it on the flat, padded surface with the door gasket facing up.

• To reinstall the door handle, grasp the top end of the door with one hand and pull up. Hold the handle in position on the front. Lower the door onto the padded surface.

• Replace the four (4) screws in the top corners and bottom and of the door and tighten into place. Do not over-tighten the screws, because the door glass could crack.

• Disconnect the wires A from the back of the control panel printed circuit board assembly.

• When replacing the control panel, connect the wires from the oven to the printed circuit board assembly on the back of the control panel. Match the location marked to on the connectors to the locations marked on the printed circuit board. Single ovens have two (2) connections, while double oven models have three (3).

LED Board Removal

• Remove the four (4) screws that hold the LED board on the back of the touch panel.

• Remove the LED board from the back of the touch panel.

LCD Display Removal

The LCD display is mounted to the back of the LED board.

• Pull out gently on the display while prying the six (6) display retention clips loose on the other side of the LED board.

• Remove the display from the back of the LED board.

To reinstall the control panel:

• Reassemble the control panel in the reverse order.

• To release the relay board or power supply, pinch the end of the stand-offs with a pair of needle nose pliers while gently pulling up on the printed circuit board.

The switch on the top of the relay board must be set to the correct position for the oven to work properly.

• If replacing a relay board, set the switch (SW1) on top of the board to “LOWER” or “UPPER” as appropriate. On single ovens, set SW1 to “UPPER”. Place the board in the same orientation as the board that was removed.

• If replacing the power supply board, install it in the same orientation as the power supply that was removed.

• Reconnect the wiring harness according to the wiring diagram (Error! Reference source not found.). Make sure that all wires are properly held in place by the wire clips inside the access panel.

• Holding the access panel with both hands, insert the lip of the access panel underneath the back edge of the access panel hole. Be careful not to pinch any of the wires.

• Secure the access panel in place with the four (4) existing screws.

• Reinstall the oven door(s) as described on page 8-10.

• Test the oven to ensure that repairs were properly completed.

• Reinstall the oven as a shown in the installation section of this manual (see page 3-13).

Door Latch and High Limit Switch

Accessing the door latch and high limit switch requires that oven's top panel be removed. When the top panel is removed, the oven’s printed circuit assemblies are exposed. The printed circuit assemblies contain electronic components that are sensitive to electrostatic discharge or ESD. Wear a properly grounded anti-static wrist strap when touching or servicing the printed circuit assemblies.

To replace the door latch or high limit switch on the bottom chamber of a double oven, see page 8-49.

• Remove the oven completely from the wall as specified on page 8-10.

• Remove the four (4) screws that hold the access panel on the top of the oven in place and remove it (reference page 8-29).

• Remove the three (3) screws E that hold the door latch access panel F in place. The door latch access panel is located directly behind the control panel D .

• Remove the door latch access panel and the wiring harness G from one side of the door latch access panel to allow access to the door latch and the high limit switch.

• If replacing the door latch: Remove the two (2) screws that hold the door

latch in place just below the front of the control panel.

Pull the door latch out of the door latch access hole.

Label the wires and disconnect them from the door latch.

Connect the replacement door latch to the wiring harness, as labeled.

Insert the door latch back into the access hole and line up the screws holes on the latch with the mounting holes below the control panel.

Replace the two (2) screws that hold the door latch in place on the front of the oven.

If replacing the high limit switch: Remove the two (2) screws that hold the high

limit switch H in place. They removed through access holes J next to the door latch access hole I .

Pull the high limit switch out of the access hole. Label and disconnect the wires. Connect the replacement high limit switch to the

wiring harness as labeled. Insert the replacement high limit switch into the

access hole and install it using the two (2) existing screws.

• Reattach the wiring harness to the door latch access panel F . Make sure that the cable bushing is in place.

• Attach the door latch access panel using the existing three (3) screws.

• Holding the access panel with both hands, insert the lip of the access panel underneath the back edge of the access panel hole. Be careful not to pinch any of the wires.

• Secure the access panel in place with the four (4) existing screws.

• Reinstall the oven door(s) as described on page 8-10.

• Test the oven to ensure that repairs were properly completed.

• Reinstall the oven as a shown in the installation section of this manual (see page 3-13).

• Hold the printed circuit chassis N up from the back of the oven and reach underneath to disconnect the door switch O from the wiring harness.

• Use a screwdriver to break off the plastic tabs that hold the switch in place.

• Push the switch out through the front of the oven.

• Insert the replacement switch, wires first, through the front of the oven. Push in on the switch until it locks firmly into place.

• From the back side of the oven, reconnect the door switch to the wiring harness.

• Replace the four (4) screws that hold the chassis to the top of the oven.

• Replace the two (2) screws that connect the trim posts to the control panel.

• Replace the top cover.

• Reinstall the oven door(s) as described on page 8-10.

Light Fixtures

To prevent electrical shock and/or personal injury, make certain that the oven and light bulb(s) are cool and that power to the oven has been turned off at the main power supply before replacing the light bulb(s).

Always ensure that the lens cover is in place when using the oven. The lens cover protects the bulbs from breakage that can be caused by high temperatures or being bumped.

Accessing the light fixture wiring requires that oven's top panel be removed. When the top panel is removed, the oven’s printed circuit assemblies are exposed. The printed circuit assemblies contain electronic components that are sensitive to electrostatic discharge or ESD. Wear a properly grounded antistatic wrist strap when touching or servicing the printed circuit assemblies.

Do not touch the halogen light bulbs with your fingers. Hand oils will stick to the bulb and cause it to burn out faster than normal. Use a glove when handling them.

Light bulb replacement is considered to be a homeowner maintenance operation.

• Remove the oven completely from the wall as specified on page 8-10.

• Remove the trim post from the same side of the oven as the light fixture requiring service: Remove the screw that attaches the top of the

trim post to the bottom of the control panel.

The wires for the light fixtures (and the meat probe socket) run up the side of the oven chamber behind the case side covers.

Single ovens and upper double oven: Expose the connector for the light fixture by

pushing the connector through the floor of the chassis and pulling the wires out through the access hole in the side of the oven chamber. Remove the bushing on the floor of the oven to make it easier to push the connector out of the chassis.

Lower double oven: Expose the connector for the light fixture by

pulling the wires out through the access hole in the side of the oven chamber.

• Remove the four (4) screws that hold the rack support in place in front of the light fixture being serviced. Be careful not to scratch the inside surface of the oven when removing the rack support.

Use the lens stick with caution. Do not cause uneven stress on the lens.

• Gently insert the pointed end of the lens pry stick (Dacor Part No. 62974), supplied with the oven, under the center edge of the lens. Hold your hand under the lens for support, then pull it straight out.

• Using a glove, pull the light bulb straight out of the light socket (do not turn).

• Using a glove, insert the bulb into the replacement light fixture socket. If replacing the bulb, use only Dacor light bulb Part No. 92317.

• Using a screwdriver, pry the locking tabs toward the back of the old light fixture forward. Prying the tabs forward will allow the fixture to be removed from the oven wall.

• Pull the light fixture out of the hole in the side of the oven, pulling the wire and connector with it. Use a screwdriver, if necessary, to move the insulation around behind the hole to allow the connector to slide out of the wall into the oven chamber.

• Gently push the connector and wire attached to the replacement light fixture through the hole and insulation in the wall of the oven. Use a screwdriver, if necessary, to move the insulation around behind the hole to allow the connector to pass through to the outside of the oven chamber.

• Reconnect the light fixture wiring to the connector on the side of the oven. Push the light fixture connector back into the access hole.

Single ovens and upper double oven: Pull the light fixture connector up into the chassis.

If necessary, reposition the meat probe connector in the same way. Replace the wire bushing.

On single and upper double ovens, the light fixture (and meat probe) connectors must be pulled up into the chassis to prevent restriction of airflow.

opening and gently pressing it into its original position. Be sure that the side of the lens cover with the cutout is toward the front of the oven, by the light socket.

To prevent scratching of the oven and wall, replace the rack support only in the manner specified below.

• Insert the end of the rack support with the two (2) vertical bars first C . Insert the rack support into the oven at a 45° angle to the sidewall, placing the two (2) vertical bars behind the temperature sensor D .

• Rotate the rack support into place, matching the four (4) protruding pins E on the rack support to the holes F on the side of the oven wall.

• Mount the rack support in place using the four (4) existing screws.

• Reinstall the side panel using the ten (10) existing screws.

• Replace the top cover.

• Reinstall the oven door(s) as described on page 8-10.

• Test the oven to ensure that repairs were properly completed.

• Replace the trim post using the existing screws. One of the screws is inserted through the top of the trim post into the control panel. • Using a 3/8” nut driver, remove the nut that holds the meat probe socket in place.

• Push the meat probe socket through the insulation and wire access hole in the wall of the oven. Use a screwdriver, if necessary, to move the insulation around behind the hole to allow the socket to pass through to the outside of the oven chamber.

• From the outside of the oven, push the replacement meat probe socket through the wire access hole and insulation in the wall of the oven. Guide the threaded end of the socket into the meat probe socket mounting hole. Use a screwdriver, if necessary, to move the insulation around behind the hole to allow the socket through from the outside of the oven chamber.

• Reconnect the meat probe wiring to the connector on the side of the oven. Push the meat probe connector back into the access hole.

Single ovens and upper double oven: Pull the meat probe connector up into the chassis.

Reposition the light fixture connector in the same way. Replace the wire bushing.

Convection Fan (motor)

• Remove the convection fan blade from inside the oven. See convection fan (blade) removal on page 8-13.

• With the convection fan and back cover removed (see page 8-45), disconnect the three (3) power wires connected to the fan motor C .

• Remove the three (3) screws D that hold the convection fan motor in place.

• To reinstall the convection fan assembly: Place the convection fan against the back wall of

the oven with the electrical terminals E facing up. Attach the fan motor to the back of the oven using

the three (3) existing screws. Attach the fan motor wires to the three (3)

terminals on the fan motor according to Table 8-4. Reinstall the convection fan and reinstall the

convection baffle. Be sure that the convection baffle is in the correct orientation (large square hole on the bottom left, see page 8-14).

• Replace the back cover.

• Reinstall the oven door(s) as described on page 8-10.

• Test the oven to ensure that repairs were properly completed.

• Reinstall the oven as a shown in the installation section of this manual (see page 3-13).

Cooling Fan (blower)

Accessing the cooling fan for a single oven or upper double oven requires that oven's top panel be removed. When the top panel is removed, the oven’s printed circuit assemblies are exposed. The printed circuit assemblies contain electronic components that are sensitive to electrostatic discharge or ESD. Wear a properly grounded antistatic wrist strap when touching or servicing the printed circuit assemblies.

The following steps do not apply to the lower cooling fan on a double oven. For removal of the lower cooling fan on a double oven, see page 8-48.

• Remove the top panel F by removing the eighteen (18) screws that hold it in place. It is NOT necessary to remove the access panel G in the center of the top panel.

With the back cover removed (see page 8-45), disconnect the tachometer connector H and the three (3) power wires I that are connected to the motor.

Table 8-5 Cooling Fan Wiring

• Remove the four (4) screws J at the base of the blower. Remove the cooling fan assembly.

• To reinstall the cooling fan assembly: Inspect the fan first. Make sure the fan spins

freely. The fan blades must be straight and not dented, so that there is no vibration when spinning.

Line up the four (4) screw holes on the blower with the mounting holes in the exhaust ducts that hold the cooling fan assembly in place. The motor should be on the left side, as you face the back of the oven. Insert the four (4) existing screws into the holes and tighten into place.

Plug the tachometer connector into the tachometer receptacle on the motor.

Connect the three (3) power wires to the terminals on the cooling fan assembly according to Table 8-5.

• Replace the back and top covers.

• Reinstall the oven door(s) as described on page 8-10.

• Test the oven to ensure that repairs were properly completed.

Lower Cooling Fan (blower)

The following procedure applies only to the removal of the lower cooling fan on a double oven.

• With the back cover removed (see page 8-45), disconnect the tachometer connector H and the three (3) power wires I from the motor.

• Remove the two (2) screws that hold the lower left exhaust duct K and the four (4) screws that hold the lower right exhaust duct L in place.

• Grasp the lower cooling fan assembly M with both hands. Push the assembly to the left, then pull out to remove.

• If replacing the cooling fan assembly, remove the screws N that attach the exhaust ducts to the blower assembly and install them on the replacement cooling fan assembly.

• To reinstall the cooling fan assembly: Inspect the fan first. Make sure the fan spins

freely. The fan blades must be straight and not dented, so that there is no vibration when spinning.

Line up the six (6) mounting holes on the exhaust ducts with the screw holes on the back of the oven.

Secure the cooling fan assembly in place, using the existing screws to re-attach the exhaust ducts to the back of the oven.

Plug the tachometer connector into the tachometer receptacle on the motor.

Connect the three (3) power wires to the terminals on the cooling fan assembly according to Table 8-6.

• Replace the back cover.

• Reinstall the oven door(s) as described on page 8-10.

• Test the oven to ensure that repairs were properly completed.

• Reinstall the oven as a shown in the installation section of this manual (see page 3-13).

High Limit Switch, Double Oven, Bottom

To replace the high limit switch on a single oven or the upper chamber of a double oven see page 8-31.

• After removing the oven’s back cover, remove the lower cooling fan (see page 8-48).

• Using a ratchet and a T-20 Torx head, reach into the space between the upper and lower oven chambers and remove the two (2) screws hold the high limit switch O in place.

• Using the wiring harness attached to the high limit switch, pull the high limit switch out of the back of the oven.

• Disconnect the wires from the high limit switch.

• To reinstall high limit switch: Connect the wires on the wiring harness to the

high limit switch. Use the wiring harness to push the high limit

switch into place between the oven chambers. Line the mounting holes on the high limit switch

up with the screw holes in the oven chamber.

• Using a ratchet and a T-20 Torx head, install the two (2) screws hold the high limit switch in place.

• Replace the lower cooling fan.

• Replace the back cover.

• Reinstall the oven door(s) as described on page 8-10.

• Test the oven to ensure that repairs were properly completed.

• Reinstall the oven as a shown in the installation section of this manual (see page 3-13).

Bottom Door Latch, Double Oven

To remove the door latch on a single oven or the upper chamber of a double oven, see page 8-31.

• After removing the oven’s back cover, remove the lower cooling fan assembly (see page 8-48).

• Remove the two (2) screws that hold the lower door latch in place. The screws are located just above the lower oven chamber on either side of the door latch slot.

• From the back side of the oven, use the wiring harness attached to the door latch P to pull it out of the back of the oven.

• Label and disconnect the wires from the door latch. Connect the wiring harness to the replacement door latch.

• When reinstalling the door latch: Push the door latch into position through the back

of the oven using the wiring harness to maneuver it into place. Line the screw holes up with the mounting holes on the front of the oven above the lower oven chamber.

Replace the two (2) screws that hold the door latch in place.

Reinstall the lower cooling fan.

• Replace the back cover.

• Reinstall the oven door(s) as described on page 8-10.

• Test the oven to ensure that repairs were properly completed.

• Reinstall the oven as a shown in the installation section of this manual (see page 3-13).

Door Switch, Lower, Double Oven

To remove the door switch on a single oven or the upper chamber of a double oven, see page 8-33.

• After removing the oven’s back cover, remove the lower cooling fan assembly (see page 8-48).

• Reaching in through the back of the oven, disconnect the door switch Q from the wiring harness.

• Reaching in through the back of the oven, use a screwdriver to break off the plastic tabs that hold the switch in place.

• Push the switch out through the front of the oven.

• Insert the replacement switch, wires first, through the front of the oven. Push in on the switch until it locks firmly into place.

• From the back side of the oven, reconnect the door switch to the wiring harness.

• Reinstall the lower cooling fan.

• Replace the back cover.

Smoke Eliminator, Chassis, Lower Double Oven

The oven chamber smoke eliminator for single and both chambers of a double oven are replaced though the front of the oven. See page 8-12. There is no chassis smoke eliminator for the upper chamber of a double oven.

• The chassis smoke eliminator for a double oven is located between the floor of the top oven and the roof of the bottom oven.

• After removing the oven’s back cover, remove the lower cooling fan assembly (see page 8-48).

• Remove the two (2) screws that hold the smoke eliminator duct (cover) R in place.

• Remove the three (3) screws that hold the smoke eliminator S in place.

• Install the replacement smoke eliminator using the three (3) existing screws.

• Replace the smoke eliminator duct (cover) using the existing screws.

• Replace the back cover.

• Reinstall the oven door(s) as described on page 8-10.

• Test the oven to ensure that repairs were properly completed.

Component Power Cycling Chart The oven controller and relay board software determine the power cycling parameters of the various oven components. The cycle times will vary based on the software versions loaded.

The following pages list the various oven modes, oven components, and the approximate power on times in seconds.

Fan Speeds:

• LO: Fan runs at low speed all the time when oven is in that particular mode.

• HI: Fan runs at high speed all the time when oven is that particular mode.

• TEMPERATURE DEPENDENT: Fan is off when oven temperature is between 0°F to 300°F. Fan runs at low speed when oven temperature is between 300°F to 525°F. Fan runs at high speed when oven temperature is above 525°F.

Additional Notes:

• PRE-HEAT: Elements will stay on continuously in most modes until cooking temperature has been reached unless specified otherwise.

• SELF-CLEAN: elements will stay on until 850°F has been reached.

• DOUBLE LINE BREAK RELAY: Active during modes when heating elements are being cycled.

• HIGH LIMIT CUTOUT SWITCH: A manual reset component.

• LOCK MOTOR: Used actively during self-clean only. The motor will latch at the start of the cycle. It will not unlatch until the cycle iscomplete or canceled and the oven cools to 375°F.
