What could be fun about chopping? you may ask. Well, ‘mebat’ is more than just chopping – it’s chopping and chatting… and often drinking, too. Groups of guys will get together to finely chop the meat and spices needed to make lawar, have a few beers or glasses of arak, and generally have a good time. Lawar (finely chopped meat and spices) is one of Bali’s most famous dishes. There are hundreds of different recipes for lawar made from any different kind of meat you can imagine. This is a really simple lawar recipe that you can adapt to use with whichever kind of meat you prefer. To make lawar, you will need a good knife for chopping and a strong wrist!. In Bali, we use a knife called ‘belakas’ (see pictures) which is a very heavy chopper – somewhere between a cleaver and an axe. If you don’t have a belakas to hand, a chinese cleaver will do fine. This recipe will make enough lawar to feed 6 hungry people. fine ly  chop the meat and spices needed to make lawar, have a few beers or glasses of arak, and

genera lly  have a good time.

Lawar (f ine ly  chopped meat and spices) is one of Bali’s  most famous dishes. There are hundreds of

different recipes for  lawar made from any different k ind of meat you can imagine. This  is a rea lly

s imple lawar recipe that you can adapt to use with whichever k ind of meat you prefer.

To make lawar, you will need a good knife  for chopping and a strong wrist!. In Bali, we use a knife

ca lled ‘be lakas’ (see pictures) which is a very  heavy chopper – somewhere between a c leaver and an

axe. I f you don’t have a be lakas to hand, a chinese c leaver will do f ine.

This recipe will make enough lawar to feed 6 hungry people.

Ingredients:

500gr pork  be lly

200gr pork  liver

2 can green jackfruit

½ a coconut

1 bay leaf

4 kaff ir   lime leafs ( f ine ly  s liced)

½ a cube of veg stock blended with a cup of water

For Base Genep (spice paste – grind with a pestle and mortar or use a food processor to blend):

A 5cm piece of ga langal

A 5cm piece of tumeric

A 3cm piece of ginger

A 5cm piece of kencur (lesser ga langal)

1 tsp corr iander seeds

1 tsp sesame seeds

½ tsp black pepper seeds

½ tsp white  pepper seeds

2 cloves

2 candlenuts

shr imp paste

Method:

Slice  the pork, separate the sk in from the meat and then boil the the sk in until tender,  leave to cool and

then slice . For the meat – chop fine ly  until  it has a consistency like mince and add the bay leaf, a  little

bit of vegetable  o il. Put in a wok and stir  fry  for a few minutes then add a cup of water and boil until the

meat is cooked. Gr iddle  or gr ill the pork  liver until cooked, leave to cool and then chop fine ly .

Boil the green jackfruit  for just a few minutes and then dra in leave to cool then cut f ine ly .

For base Genep, stir  fry  with vegetable  o il until cooked.

Grill the coconut until brown then cut the brown sk in off, crush it, and stir  fry  it. Fine ly  chop (or grate)

the remaining white  part of the coconut.

For sambal embe, deep fry  the shallots until cooked, put in a bowl and then fry  the gar lic, remove it

when cooked an put in the bowl with the shallots. Repeat the  process with the chill i and the last the

shr imp paste then add the fry ing oil to the bowl with with the shallots, gar lic, chill i and shr imp paste.

Mix  the meat, pork  sk in, pork  liver and coconuts with base genep, sk in coconut fr ied and sambal embe

until mixture and then add the f ine ly  jack fruit, s lices of kaff ir   lime leafs, sa lt and toss well.

Serve with r ice  and sayur urab.

Hi Andy,

Sure, a lot of supermarkets do fresh turmeric now. I f not, an Indian supermarket or shops in Chinatown

should have it.

Lesser ga langal  is a bit more diff icult to f ind. We ca ll  it  ‘kencur ’ but sometimes people  ca ll  it white

ginger. You can normally  get that at Eastwest food which is upsta irs at 57 Char ing Cross Road. Just go in

the front then upsta irs and they have a little  sta ll near the back with a ll the Indonesian ingredients you

might need. The tempe is good, too.

I   love lawar but I  eat non­pork  lawar when I  v is ited Bali  last time.

Actually  the name of  lesser ga langal has been misled to kencur for so long. Kencur and lesser ga langal

are from the same family  and quite  s imilar taste/flavour. The proper name for kencur is kaempfer ia

galangal or kencur itse lf. However it  is a lso known as sand ginger. In Canada where I   live  now, sand

ginger is common to be found at Chinese markets in dr ied forms.

Hi Pepy, thanks for the tip. I ’ve seen it ca lled white  ginger and sand ginger here, too. We

normally  just ca ll  it kencur beacuse we order it  in Indonesian or Balinese.

You can make lawar out of  loads of k inds of meat. We’ll have a veggie  version up soon, too. Actually , I

could probably  write  a whole  post about a ll the different k inds of  lawar I ’ve tr ied – everything from duck

to snake!
