I am reaching out to you on behalf of Fisk & Co., with some tips and recipes from Executive Chef Ashlee Aubin on how to make the perfect homemade pasta. While Chef Ashlee is an expert, his tips and tricks can help any beginner make an at home pasta dish they will never forget.

With his past experience making homemade pasta dishes at Alinea, Chef Ashlee knows the best process in curating the perfect comfort food. Pasta is a dish where improvising and trying new things is encouraged! A kitchen aid type stand mixer is the first secret if making pasta by hand seems too time consuming.

Chef Ashlee suggests to first gently cook aromatics, like onion, ginger, garlic, and fennel in olive oil. Then add flavor enhancers such as anchovy, bacon, or crushed red pepper. Next comes the main ingredients, mussels, sausage, crab meat, or corn for vegetarians. Chef Ashlee believes in layering in the liquids next, start with wine or milk and reduce it down to almost dry before adding in cream or stock. Then don’t forget to add in a pinch of salt every step of the way for some extra flavor. Lastly, Chef Ashlee loves to finish the sauce with as much cheese, butter, or olive oil as you think is safe!

With the Chicago Pride Parade just around the corner, I wanted to share details on a colorful themed cocktail that Fisk & Co. will be serving up now through the end of the month.

Fisk & Co. is offering the specialty cocktail in honor of Pride month and the impact LGBTQ people have had in the world! Crafted by the head bartender, Melissa Carroll, the “Rainbow Connection” cocktail is modeled after the diversity in the LGBTQ community.

Priced at $12, it contains white sangria with a multi-colored fruit kabob. For every cocktail purchased this month, Fisk & Co. will donate $1 to the Trevor Project, an organization providing crisis intervention and suicide prevention services to LGBTQ young people under 25.
