In large non stick pan add 2 table spoon of oil and add in eggplant, season with salt and pepper. Cook until brown. Repeat process for other vegetables except tomatoes. After prepping all the vegetables except the tomoatoes. Add in 2 table spoon of oil and add in the tomatoes. Stir occasionally and do not let it brown. Once the tomatoes becomes paste like add in previous vegetables. Sprinkle with thyme and bayleaf and season to taste.
