Five-year sustainability plan for the U of RThe University of Re-

gina has launched its first Strategic Plan for Sus-tainability, with the goal to become more green.

Over the next five-years this plan will help the campus become a leader in environmental responsibility.

University of Regina president and vice-chan-cellor Dr. Vianne Tim-mons said that with this plan the University has taken a bold step forward in its commitment to sus-tainability.

“Our new plan for a more sustainable campus came together through the work o f many people,” says Timmons.

“It’s a bold plan that puts sustainability at the core of our teaching, re-search, and campus life, ensuring that we embrace emerging opportunities in sustainability and take into account the econom-ic, cultural, social, and personal wellbeing of our campus community.”

Five areas of focus are out l ined in the plan: leadership, waste, energy, transportation, and communication and engagement. Also pro-vided are steps towards sustainability, such as ex-panding the university’s recycling programs and working with the City of Regina to improve transit service.

Sustainability is al-ready a part of campus life, from classes such as Psychology and Environ-mental Change, to water bottle filling stations de-signed to reduce waste from disposable plastic water bottles. This plan is to further motivate the university community to engage in sustainable in-itiatives and actions that will elicit real and posi-tive changes.

“At a time of shrinking resources and challenges, we need to focus on sus-tainability in many ways and some of it is going to require resources for us to invest,” said Timmons.

“I don’t think you’ll see anything dramatic, but you’ll see incre-mental changes over the next five years that will change the face of the campus.” The strat-egy took three years to come together. During that time, the university gathered input from more than 1,400 staff and stu-dents.

For Nwakaku Okere, an environmental en-gineering student who helped work on the plan as part of her Co-oper-ative Education work term, working on the plan itself was inspirational. “I wouldn’t hesitate to call my working on this plan transformative.”

“During my time as

the Sustainability In-tern I was exposed to so many different people, from so many differ-ent backgrounds, all of

whom made me question my definition of sustain-ability and helped me to grow both as a future en-gineer and as a person.”

2 tablespoons coarse salt

(canned or dried)1 cup tomato juice1 cup orange juiceFor tacos, add: corn

tortillas, salsa, sour cream, cilantro, avocado, lime, onion

Trim excess fat from the meat and discard. Place all ingredients in the slow-cooker. Set to cook on LOW for 8 hours. Meat is done when it literally falls off the bone. When cool enough to handle, lift the meat from the juices and place in a large bowl. Remove the bone, then shred the meat.

Skim the fat from the juices and keep as a medium for re-heating the meat. For carnitas tacos, reheat the meat and serve in corn tortillas with sour cream, cilan-tro, chopped red onion and lime wedges.
