During the last City Council meeting, Tuesday past, Steve Borleske,presented an update of the State’s Bayshore initiative and the newly launched Delaware Bayshore Byway including the new Branding program.The Delaware Bayshore, extending along the Delaware River and Bay from New Castle to Lewes, is widely recognized as an area of global ecological significance. Its expansive coastal marshes, sandy shoreline, forests, fields, and agricultural lands provide habitat for more than 400 species of birds and other wildlife. The Nature Conservancy has called the Delaware Bayshore, “one of the earth’s most important stopovers for migratory birds.” Nearly 120,000 acres of Bayshore lands are already protected as national wildlife refuges, state wildlife areas, state parks, national estuarine research reserves, private conservation areas, agricultural preserves and cultural heritage sites throughout the area.The newly launched Bayshore Byway, which starts in New Castle and ends just south of Dover ( with plans for an extension to Lewes), serves as the gateway to the Bayshore area. on your counter ya need1 quart beef stockFour 6 to 8-ounce filet mignons1 tsp kosher salt1 tsp freshly cracked black pepper4 tbsps butter2 tbsps extra-virgin olive oil3 cups thinly sliced cremini mushrooms2 shallots, sliced4 cloves garlic, minced1/2 cup brandy1/2 cup dry red wine1 tbsp Dijon mustard1 tbsp Worcestershire sauce
here’s how to doAdd the beef stock to a saucepan and reduce over medium-high heat to 1/2 cup, about 1 hour.Sprinkle the steaks on both sides with the salt and pepper. In a large skillet or cast-iron pan over medium-high heat, heat 2 tbsps of the butter and the olive oil. When the butter has melted and the oil
shimmers, add the steaks. Brown the steaks on both sides, 3 minutes per side. Transfer the steaks to a plate and set aside, lightly covered with foil.Add the mushrooms and shallots to the pan and cook for 2 minutes, stirring frequently, adding oil if needed. Add the garlic. When the garlic is lightly colored, add the brandy (be careful, it can ignite). Add the wine, mustard, Worcestershire and the reduced beef stock. Simmer for 2 to 3 minutes more. Return the steaks to the pan and finish cooking them to the desired temperature, 2 to 4 minutes, depending upon the size of the filets and desired temperature/doneness. For medium-rare, cook to 135 degrees F on an instant-read thermometer. Add the remaining 2 tbsps butter to the sauce to melt.To serve, place a steak on each plate and pour the sauce over the steak. ~ courtesy of Guy Fieri

or pounded filet mignon in butter and then flambeing and
basting it in a rich Cognac sauce.
Cinnamon • Sugar 1.5 oz Hennessy V.S. Cognac
.5 oz Lemon juice 1 tsp Cranberry sauce (heaping tsp) 1 dash Fee Brothers Cranberry Bitters
Garnish: 1 Orange twist Let’s make one
Coat the rim of a Martini or coupe glass with a mixture of equal parts cinnamon and sugar,
and set aside.Add the remaining ingredients to a shaker and
fill with ice.Shake, and strain into the prepared glass.
Garnish with an orange twist.

popular "Look What $20 Will Buy" table.The festivities conclude at 5:00 p.m., with the town's annual tree
lighting ceremony and caroling in the Market Square.Shops and restaurants throughout Olde New Castle will be open as
well, welcoming visitors with special discounts.Proceeds generated by the New Castle Presbyterian Church will be donated to support the
Friendship House, Inc. of Wilmington, Delaware, ministry to the homelessnewcastlepreschurch.org/spirit.
