Sake presents unique characteristics at different temperatures. Each sake has its own optimum temperature, and this will vary, with the quality of the sake, the season, as well as the consumer’s personnal preference. Chilling sake which is refreshing and aromatic will maintain its delicate flavours and aromas. Warming a robust and rich sake will increase the softness and umami fragrance.

Rihaku “Dreamy Clouds” Junmai Nigori 13/ 39/ --Shimane prefecture. This is a cloudy, ‘country-style’ sake that has nutty aromas,a nigori sake which means it contains rice particles. It is full-bodied and textured.

KEIGETSU Aikawahomare Tokubetsu-Junmai 15/ 45/ 67Kochi prefecture. Made of rice from the mountain. The nose leads with honeydew melon and sweet chestnut paste. The palate is round and silky with yellow peach on the finish.

Kochi prefecture: For 138 years since our founding in 1877 , we have manu-factured high quality sake, provided with abundant water and clean air from mountains in nothern Kochi-prefecture (called “Tosa-Reihoku region”). Tosa-cho, where our brewery exists is surrounded with a serene natural environment near the Sameura Lake . We handmake a small amount of sake which consumers will be satisfied with, using high-quality soft water in this region.

Aikawahomare Tokubetsu-Junmai The nose leads with honeydew melon and sweet chestnut paste.

Gin-no-Yume Junmai-Daiginjo 45 Aromas of lychee and rose. Dry on the palate and has great purity on the finish.

Yuzu Sake A versatile style of sake infused with Yuzu and Japanese honey.

Hakurakusei Junmai Ginjo 720ml 69 Miyagi prefecture. Made of local rice. Subtle aromas grapefruit, green banana and nashi-pear. Lightly viscous on the palate, dry but not bone dry in style.

Shichida Junmai Ginjo 720ml 79 Saga prefecture. Notes of white flowers and white peaches. The peaches linger on the palate , followed by a refreshing acidity and a sweet savoury flavours

Kameizumi Cel-24 Junmai Ginjo Nama Genshu 720ml 95Kochi prefecture. Fresh unpasturised sake, Green on the nose with apple and grapes. Rich and ripe fruits such as pineapple, refreshing and light.

Tosatsuru Azure Ginjo 720ml 95Kochi prefecture. A smooth sake with a clean finish. Made with deep sea water, purest natural spring water which has travelled for 2,000 years at the very bottom of the sea. The water has an exeptionally well balanced mineral content, making this Sake beautiful and unique.

Koshi no Kanbai “Tokusen” Vanishing Point 500ml 97 Niigata prefecture. The light, clean Niigata style of sake-brewing first defined by Koshi no Kanbai in the early ‘70s has been emulated by other breweries, but none come close to its definitive expression of the classic Niigata ginjo style.

ENTER Sake Sookuu 720ml 120Kyoto Prefecture. This weighty sake is made with clear spring water. On the palate it has clean fleshy rice notes tinged with sweet Asian pear. It has exceptional mouthfeel with a silky weight and texture. It has an umami finish with lingering acidity. It pairs well with grilled meat, fish, or savory dishes.

Usually produced from a blend of Pinot Noir, Pinot Meunier and Chardonnay grapes. The exceptions are ‘Blanc de Noirs’ which is made only from red grapes and ‘Blanc de Blancs’ which is only pro-duced from white grapes. ‘NV’ stands for a multi vintage blend. Champagne producers blend vintages and wines from different villages of the region to produce every year, a Champagne that is consistant in flavour profile and outstanding quality.
