• Gin can be produced by any spirit-alcohol made from agriculture

product.

• The neutral alcohol must be distilled to a minimum of 96%abv and the

residues must not exceed those stated in the neutral alcohol.

• Best raw materials are grains such as barley or maize and the best

neutral alcohol has no taste at all.

• Gin is flavoured by neutral ingredients (according to the distiller’s

recipe) called “botanics” but their common main ingredient is Juniper

Berries.

• Most gins contain from 6 to 10 botanicals.

• Gin was found in Holland. It’s main use was as medicine. Founded by

a Dutch scientist who used Juniper berry oil mixed with distilled

alcohol.

• Gin was spreader all over the world during the Dutch invention.

English soldiers were surprised by the courage of the Dutch’s in the

battle, which was because of the “Gin”.

• When the English soldiers returned back home said the “news” to

everyone. Based on that, the Dutch exported gin all over the world.

• 1800s because of “malaria” the British empire used carbonated water

with quinine to create tonic which was perfectly accompanied with gin.

So here is the “gin & tonic” invention - the antimalarial drink.

(Muir, 2016)

months (2016)

40.000.000 bottles

of gin in England.

• Last year 35 new

distilleries were

created in UK.

• A spirit in order to be called “Gin” must have the main

flavour of Juniper berries and be bottled at not less

than 80% proof.

• Gin is produced by the original distillation or by

redistillation. (The purification of a liquid by means of

multiple distillations).

M A K I N G P R O C E S S1. Distill the base spirit

2. Distill the spirit again with the botanicals

• Lower quality versions

- typically produced by soaking the botanical and juniper berries in the

base spirit and distilling the mixture a second time.

• High quality versions

- the alcohol vapor is passed through a chamber that holds the

botanicals and juniper berries. This vapor will extract the essential oils

and aromatics from the botanicals as it passed through the chamber

and to the condenser.

3. Add water and bottle

• Pure water is added to bring the strength down to the legal requirement

before the final product is bottled.

• Gin is ready to be bottles straight from the still.

• Gin doesn’t need a time for maturation.

Page 13: Wine , Beverage & Mixology: Gin

• Pot Distilled Gin - the earliest gins

It is made by distilling “mash” (fermented malted wine) and

redistilling with botanicals to produce flavor by extracting the

aromatic compounds.

• Column Distilled Gin - the modern way

A concentrated spirit that redistilled with the other botanicals

called “gin basket” that is suspended in pot distillation. As the

heat from the vapor rises, it extracts flavors and give a lighter

flavor such as London Dry Gin.

• Compound Gin

Flavored with essences or natural flavors without redistilling. It

is often added other flavors such as citruses and spices mix.
