DARK OR WHiTE CHOCOLATE BROWNiES Courtesy of the Miromar Lakes Culinary Teamingredients:8 ounces chocolate (use your favorite type: dark, milk, or white)12 ounces unsalted butter11 eggs (or 12 ounces liquid egg substitute)24 ounces granulated sugar8 ounces walnuts (or Macadamia nuts if using white chocolate)1 ½ teaspoons baking powder8 ounces all-purpose flour

Directions: Preheat oven to 350 degrees. Melt chocolate over double boiler and reserve. Cream butter and sugar together until smooth in a mixer. Add melted chocolate to butter and sugar mixture; stir on low speed to incorporate. Add eggs in a steady stream with mixer on very low speed. Mix together baking powder and flour; add to mixer in 4 equal parts, mixing well each time. Add nuts and mix on low for a couple minutes, or until well incorporated. Pour batter into buttered sheet pan (approximately 1 x 8 x 12), or baking dish (approximately 3 x 9 x 12) making sure not to fill beyond half the depth as brownies will double in volume during baking. Bake for 30 minutes, or until toothpick inserted in center is clean. Cool on a cookie rack before serving.

Special Note: At times due to altitude variations, or improperly calibrated ovens the brownies may begin to darken during the cooking process. Should this happen, simply reduce oven temperature to 325 degrees and continue cooking.

eveRY QuilT haS a SToRY

Kathleen Coyle of Churchville, PA, visits family at

Miromar a few times a year. You will find Kathleen

sitting by the pool quilting. Kathleen says every

quilt has a story and this is the story of the quilt that

she has been working on for the past four years.

While visiting her son-in-law’s mother, Debbie

Morton, Kathleen was asked if she could give

her some advice on an incomplete quilt Debbie’s

mother had worked on for ten years before she died. Kathleen was shown a

magnificent piece of artwork. After she caught her breath from viewing this

treasure, Kathleen said: “If you trust me, I will finish it for you.” She felt this

quilt was the finest piece of artwork that she had ever seen and was honored to

work on it for the family. Kathleen has been quilting for 25 years. Although she

never met the quilt’s originator, Kathleen said the precise stitching taught her

to be a better quilter. “All I had to do was follow her lead. This is a magnificent

quilt that should be cherished by the family for generations to come.” Now

complete, it will be returned to the Morton family.
