Yellow 8 Ball Zucchini Even better than than their cousin the long skinny zucchini. I liked its brother the green stripped 8 Ball, it makes great PIZZA with NO crust. But this YUMMY yellow has got to be my #1for firmness, moisture and TASTE. 8 Ball Zucchini
So QUICK and E-Z . . . Saute in a skillet with a lid until tender:
• Pinch coarse ground black pepper, I like a really large restaurant or salad grind
• 1 T olive oil
• 1 med sweet onion, halved and sliced 1/4" thick
• a TINY pinch coarse salt on the onions to help them sweatWhen translucent add:
• 1/4 C LOW-sodium and NO sugar chicken broth
• 1-2 yellow ball zucchini, sliced in rounds 1/4' thick and rounds cut in half
Cover and simmer 10 min or until tender.
That's it . . . so sweet so delicious as a side with chicken, fish, beef or pork or go vegan with more veggies. DOES NOT need additional salt as it has so much flavor. Enjoy and be healthy. Remember no more than 1,500 mg of salt per day.
