Downtown’s gourmet doughnut shop Donut Bar has just debuted a brand expansion, including a new beer bar and evening service on weekends, Ian Anderson reports. The shop—usually only open from 7 or 8 a.m. to when it sells out before noon— is now open on Friday and Saturdays at 5 p.m. with fresh donuts and 20+ local
beers to choose from. Yes, donut and beer pairings await you. There are some 20 beers to choose from, including a signature donut porter from Resident Brewing, as well as beer floats including this insanely decadent version made with Mission Brewery Hard Root Beer, soft serve ice ream and a doughnut on top. There is also mention of a
savory, calzone-like doughnut for the adventurous. The Donut Bar is located at 631 B Street. Donut and Beer tastings are held at 5 PM on Fridays and Saturdays. Enjoy!

How to Get a Mortgage

With all the people, paperwork and
time-intensive steps involved, getting
a mortgage can be a harrowing
proposition. But if you take the time
to understand the homebuying
process and come to it with a strong
sense of your own finances, you can
run the mortgage obstacle course
without a scratch.
Get ready to go from homebuyer
to homeowner. Here’s how to get a
mortage:
Get ready financially
Before you set off to get a mortgage,
make sure you’re financially prepared
for homeownership. Do you have a lot
of debt? Do you have plenty saved for
a down payment? What about closing
costs?
Get preapproved
When you’re at the starting line, get
preapproved for a mortgage, even
before you begin looking at homes.
Getting preapproved gives you a leg
up once you begin looking, because
it shows sellers that you can make a
solid offer up to a specific price.
Choose the right mortgage
Do you want a conventional or
government-backed loan? Do you
want a fixed- or adjustable-rate
mortgage? What about the mortgage
term? Remember, Don’t borrow more
than you can handle.
Submit the application
If you’re using the same lender that
preapproved you, you’ll have to
submit your most recent financial
information. Within three days of
receiving your application, your
lender will give you a loan estimate,
which is how much the loan will cost,
including all the fees and closing
costs. Keep an eye on interest rates. If
they start going up, lock in quickly. If
they go down, consider waiting.
The underwriting process
This part can be the most
nerve-wracking, even if you’ve been
preapproved. It’s more waiting, this
time to get officially approved for
the loan. During the underwriting
process, you’ll want to avoid making
changes such as switching jobs or
taking out another line of credit.
Avoid large purchases that increase
your debt.
After You’re Approved
Finally, your loan is approved. But
you’ve got a few more steps to take
before the process is complete.
1. Do you want to pay an upfront fee
— known as points — to lower your
interest rate? This is a good option if
you plan on staying in your home for
at least seven years.
2. Purchase homeowners insurance.
Your lender will require you to do this.
3. You’ll purchase a lender’s title
insurance policy. And while it’s not
required, it’s wise to also purchase
owner’s title insurance.
4. Do a final walkthrough of the home
to make sure nothing has changed —
or to make sure the repairs have been
made — since the home inspection.
5. You’ll receive a closing disclosure
three days before the scheduled
closing date, which lists all the closing
costs.
6. Get a cashier’s check from your
bank to cover closing costs.

Recipe of the Month:Orange-SesameSalmon with Quinoa & Broccolini

1 cup quinoa
1/2 cup orange juice plus 1/2 divided
2 scallions, sliced
1 bunch broccolini, trimmed
1 tablespoon extra-virgin olive oil
1/2 teaspoon ground pepper, divided
1/4 teaspoon garlic powder
4 4-ounce portions wild salmon
3 teaspoons toasted sesame oil
1 teaspoon black sesame seeds
1 tablespoon minced fresh ginger
1 tablespoon reduced-sodium tamari
1 teaspoon cornstarch
INGREDIENTS:
PREPARATION:
Prepare quinoa according to package directions, substituting 1/2 cup orange juice for ½ cup water. Remove from heat and stir in scallions. Cover to keep warm.
Preheat oven to 450°F. Line a rimmed
baking sheet with foil.
Toss broccolini with oil and 1/4 teaspoon
each salt and pepper in a large bowl.
Transfer to the prepared baking sheet.
Roast for 8 minutes.
Meanwhile, combine 2 teaspoons
sesame oil, garlic powder and the
remaining ¼ teaspoon each salt and
pepper in a small bowl. Brush the mixture
on salmon.
Push the broccolini to one side of the pan
and place the salmon on the other side.
Bake until the salmon is just cooked through,
5 to 8 minutes. Sprinkle the salmon with
sesame seeds.
Whisk the remaining 1/3 cup orange juice,
1 teaspoon sesame oil, ginger, tamari and
cornstarch in a small microwave-safe bowl.
Microwave on High for 1 minute. Divide the
quinoa, broccolini and salmon among 4
plates. Drizzle with 2 tablespoons sauce each.

The Midnight Snowstorm adds a little mint to your adult hot chocolate routine.
The Midnight Snowstorm is very similar to a Hot Peppermint Patty, using crème de menthe in place of the harsher peppermint schnapps. This substitution leaves the minty chocolate flavor but does so in a very smooth and creamy way. Use white crème de menthe inside the drink and add green crème de menthe on top of the whipped cream for a little color.

1/2 ounce green crème de menthe

I recently took a trip to the island in Fiji called Tavarua with friends. A total of 26 of us went. Tavrua is mainly know for its world class surf breaks which attracts surfers from all over the world. However, even those that don’t surf should pay the island a visit. There are so many amazing activities to do including sport fishing, scuba diving, snorkeling and kayaking. The island is surrounded by coral reef so there is plently of sea life. In addition, it’s always fun to mingle with the other guests on the island, hang with
the local fijians and enjoy all the beautiful scenery from the beach. This was one of the most amazing places that I have ever been to. I would recommend this to anyone that wants to get away, relax and just be in paradise. You can walk around the island in fifteen minutes and if you are feeling adventeruous, you can swim around the island in about thirty.

hightlights was visiting a local village, hanging with the locals
and playing with the Fijian kids.

Preheat oven to 350 F.
Line cookie sheet with parchment paper.
Combine ingredients ina bowl and mix
until it’s clumpy and not sticky.
Lay down a sheet of parchment on your
work surface and place the dough on
the parchment sheet.
Place the cookies on the sheet and bake for
8-10 minutes.
Let the cookies cool completely.

Once it is to your thickness liking, peel
