1 Make a list of factors that might affect the enzyme catalyzed fermentation process.
2 Predict how each factor will affect the rate of fermentation.
3 Propose a solution to making the break light by adding more bubbles to your bread recipe.
CH 9 CELLULAR RESPIRATION AND FERMENTATION
9.3 Fermentation
Fermentation
Process of releasing energy from food in the absence of oxygen.
Fermentation
NADH is converted back to NAD+
Allows glycolysis to continue producing ATP.
Alcoholic Fermentation
Pyruvic acid + NADH Alcohol + CO2 + NAD+
Yeast and other microorganisms Produces alcoholic beverages and causes bread
dough to rise.
Lactic Acid Fermentation
Pyruvic acid + NADH Lactic acid + NAD+
Humans and most organisms.
Quick Energy
Cells have enough ATP for a few seconds of intense activity
Lactic acid fermentation can supply enough ATP to last about 90 seconds
Extra oxygen is required to get rid of the lactic acid produced.
Long-Term Energy
Cellular respiration is required to continue production of ATP for exercise longer than 90 seconds
Body uses glycogen stores for the first 15-20 minutes
Body then will break down other stored molecules, including fats.
How does exercise affect cellular respiration
1. Label two teat tube A and B. Put 10 mL of water and a few drops of bromthymol blue solution in each test tube. CO2 will turn it yellow or green.
2. Your partner will time you. When your partner says go, slowly blow air through the straw into the bottom of test tube A.
3. When the solution changes color, your partner will say stop and then record how long the color change took.

4. Jog in place for 2 minutes. Caution do not do this if you have a medical condition that would interfere.
5. Repeat steps 2 and 3 using test tube B6. Trade Roles with your partner and repeat steps
1-5.
