We are halfway through our summer as the many choose to visit Gozo during August. Everybody is doing there best to utilise their vacation leave and why not consider a brief or even lengthy visit to the sister island? It’s getting hot-hot-hot and make sure you protect yourself from any unnecessary UV rays. The sea is now warmer and Gozo spoils you with plenty of bathing options with wonderful bays and beaches all around the island. Gozo will be celebrating Santa Marija this week as the festa season moves to Victoria. Make sure you visit the Gozo Cathedral while it is an annual must to experience the grand fireworks

display at the end of the procession on 15th August. Arkadia will be open only in the morning on Sunday, 15th August. Therefore all retail outlets excluding McDonalds will be closed in the afternoon and evening. To compensate we are closing later than usual on Fridays with closing time set at 8PM. As SALES start to fizzle out, make sure to check out the new arrivals pouring in within our fashion department. Autumn is still a bit far away but certainly there are some new late summer options which you can take into consideration. A splendid mid-Summer visit to all.

THE VOTING PROCESS

The 14 finalists will be those photo submissions with the most ‘LIKES’ captured through the

competition website and Facebook. Participants can submit more than one photo. The top 14

submissions with the most ‘LIKES’ will then be judged by a panel of technical experts to decide the final ranking and eventual winner. The main

criteries for judging the final photos will be related to (1) relevance to the competitition subject ‘Gotta go to Gozo, (2) How original and

creative the photos is, and (3) proof of ownership of the photo.

END OF COMPETITION

Voting will cease on Monday, 13 September 2010. Final judging of the 14 finalists will be carried out immediately and the winners will be announced on Monday, 20 September, 2010.

11Th AuGuST9:30pm: Band march by the Leone (Victoria) and Visitation (Għarb) bands from Capuchin’s Street – the main road to Marsalforn, to central Victoria, during which a Sta Marija statue is carried shoulder high until it is raised on a plinth in front of the band club house in Republic Street. 12Th AuGuST9:30pm: Band march by the Leone (Victoria) and the Prekursur (Xewkija) bands along Republic Street up to Savina Square and the surrounding streets. The event is finished off with traditional ground fireworks in Savina Square. 13Th AuGuST9:30pm: Band march by the Leone (Victoria) and the Mount Carmel (Gżira) bands around the historic centre of Victoria. The Sta Marija statue leaves St James’ Church (Independence Square), shoulder high and is carried all the way round

the city until it is raised on a plinth in Independence Square to spectacular rooftop fireworks. 14Th AuGuST10:30Am: The Leone Band (Victoria) accompanies a children’s parade from the Cathedral Square down Republic Street during which the children drag the large festive flag that flies on the Leone Band club house.9:30pm: A grand festive march leaves the Leone Band Club and goes all the way up Republic Street to Savina Square. 15Th AuGuST9Am: High Mass inside the Gozo Cathedral led by H.E. Ingredients

4 large chicken breasts, about 170-200g each 8 sage leaves5 heaped tbsp ricottaSea salt and black pepper8 Parma ham slices1 ½ tsp oliv oilhandful of thyme springs

Dinner

Ricotta Stuffed Chicken Breast

Method

Cut a deep slit along one side of each chicken breast, without slicing right through, then open it out like a book. On a clean chopping board, finely chop 4 sage leaves, then mix into the ricotta and season with salt and pepper to taste.

Lay two Parma ham slices on the board, overlapping them slightly. Put a sage leaf in the middle and lay an open chicken breast on top. Spoon a quarter of the ricotta mixture onto the middle of the chicken, then fold the sides together again, to enclose the filling. Now wrap the Parma ham slices around the stuffed chicken breast. Wrap in cling film. Repeat with the rest of the chicken breasts and chill for 1 – 2 hrs to firm up slightly.

Heat the oven to 180c (gas mark 4) and place a roasting pan in the oven to heat up. Heat a heavy based frying pan and add the olive oil. When hot, fry the Parma wrapped chicken, in batches if necessary, for 2 mins on each side until browned. Lay a few thyme sprigs on each chicken breast, then place in the hot roasting pan. Cook in the oven for 12 – 15 mins, depending on size, or until the meat feels just firm when lightly pressed.

about 1/2 medium-sized watermelonflesh cubed or cut into slices and seeds removed300g good-quality feta, crumbled100g pine nuts, toasted handful fresh basil leaves, torn into piecesa few spoonfuls of extra-virgin olive oilfreshly-ground black pepper

Method

Combine the watermelon, feta, pine nuts and basil leaves in a large bowl or platter. Drizzle with some extra-virgin olive oil and sprinkle with pepper. Eat immediately.

Breakfast

Best Scone Recipes Fruit Scones

Ingredients (Serves 4)

500g self-raising flour125g slightly salted butter125g caster sugar250ml milk 150g sultanas (or raisins)12g baking powderLarge pinch salt

Method

Sieve the flour, baking powder and salt into a bowl. Rub in the butter until very fine crumbs. Make a well in the centre of the mixture. Dissolve the sugar in the mile and add to the mixture. Mix the flour with the milky sugar. Add the sultanas and ensure the ingredients are thoroughly mixed. Place dough on a floured board. Make a round roughly ¾ in / 2cm thick. Using a cutter (about 2in / 5 cm) cut into rounds and place on a lightly greased baking sheet. Lightly knead together the rest of the dough and continue cutting more scones to use up all the dough.Brush the tops of the scones with a little milk. Bake for 12-15 minutes in pre-heated oven 220C until well risen and golden. Cool on a wire rack and serve with butter, jam or cream if you wish
