Introduction

Welcome to your new Kitchen Display Screen (KDS)! While a KDS isn’t used by all kitchens, it’s a useful tool to help manage the kitchen workflow and ensure that food is prepared quickly and correctly.

With a KDS, orders that are sent to the kitchen will cause a ticket to appear on the screen and can be managed straight from the prep station or expo screens. When the order is ready, a ticket can print for runners.

By now you have already purchased the device that will be used for your KDS. Congrats! We’re excited to help you get your KDS setup and customized to fit your restaurant’s needs.

Setting up your KDS

In order to use your device as a KDS, it must be configured to the Kitchen Display Screen. To do this, first log into the terminal with your Manager swipe card or pin number. From the Main Menu Dashboard select Kitchen Display Screen. Noted that if you don’t have KDS permissions then you will not see the Kitchen Display Screen mode.

Once the Kitchen Display Screen is selected, you will see a blank gray screen. Don’t panic! You’ve set your KDS up correctly, however, it appears blank since no orders have been sent to the kitchen yet.

When an order is sent to the kitchen, a ticket will populate on the KDS. For example, the image below shows tickets for two recent orders.

In the upper right corner of the KDS header you’ll find quick access buttons.

The quick access buttons perform the following tasks:1. Show All Day View: This button combines all like items on open tickets to expedite prep stations in high-

volumes. This feature will be further discussed later in this guide.2. Show Recently Fulfilled: Use this button displays recently fulfilled tickets.3. Recall: Use this feature to recall previously fulfilled tickets.4. Overflow Menu: This gives you access to Device Status, Text Size, Device Setup, and Switch User.5. Device Status: This button can be used to show the status of the device, such as Connectivity and

Services, as well as Queues and specific device information like the IP address or Device ID.6. Text Size: Use this button can be used to quickly adjust the text size on the KDS.7. Device Setup: The use of this feature will take you to the Device Setup screen of the Main Menu

Dashboard.8. Switch User: This button brings you back to the login screen.

In the next section, we’ll dive into KDS tickets!

KDS Tickets When an order is sent to the kitchen, a ticket will populate on the expediter screen.

At the top of the ticket you’ll find the order number and how much time has passed since the order was sent to the kitchen.

Under the ticket number and time passed you’ll find a list of items that are included with the order. The menu item will be listed in black while any and all modifiers will be listed in red.

While this is the default settings for KDS tickets, they can be fully customized to satisfy your kitchen’s needs.

Customizing your KDS tickets

To help prep stations easily read their screens, the background color of ticket items and modifiers can be customized. For example, if you want to be able to quickly make the correct sized order by having large orders appear in blue and small orders appear in orange, you can do so!

The tickets would appear on the KDS as:

Customizing your item, modifier, or premodifier color

Changing the color of items can be done in the Toast back-end.

1. Navigate to Advanced Properties under the Menu section.

2. Select the item, modifier or premodifier that you want to add a color to. In this example, we’re assigning the Al Pastor Taco Plate the color green.

3. Select KDS Color.

4. You will be given several color options to choose from. Select the color you wish your item, modifier or premodifier to appear.

5. Select the Save and Publish Now buttons to save your work.

Now when a guest orders the Al Pastor Taco Plate, it will appear on the KDS ticket as the following:

This process can be repeated to assign each menu item or modifier a custom color. For example, you may want to have all vegetable options in green, all meat options in brown, and all cheese options in yellow.

This would result in your KDS tickets appearing as the following:

You can further use this to alert your kitchen staff of any allergies by building an allergy option into your menu and then customizing the color. In this example, a guest has a dairy allergy which is set up to alert the kitchen in red:

Emphasizing the table or check number

Your KDS tickets can also be customized to emphasize the table or check number that appears in the upper left corner of the ticket. Kitchens that are in a full service restaurant may prefer having the table number emphasized on the ticket to avoid confusing it with a check number for another table. On the other hand, a quick service restaurant may prefer emphasizing the check number on the ticket since table numbers may not be as important to know.

Configuring this setting can be done in the Toast back-end.

1. Navigate to Kitchen Setup under the Kitchen/Dining Room section.

2. Within Kitchen Setup locate the KDS Ticket Headers section.

3. When Check Number is selected, the check number in the top left corner will appear in a larger font with the table number directly under it in a smaller font.

4. If Table Number is selected then the table number in the top left corner will appear in a larger font with the check number directly under it in a smaller font.

Note that changing this setting will only impact KDS tickets. Printed kitchen tickets will not be impacted by this customization.

How tickets appear with levels and colors

With Toast, it’s possible to have your KDS tickets automatically change colors after a certain time. For example, after 5 minutes of being unfulfilled the ticket header can turn yellow, after 10 minutes it can turn orange and after 15 minutes the ticket can turn pink. This is a useful tool for your kitchen staff to see how much time has passed since the order was placed. Use the following steps to configure this setting.

1. Navigate to Kitchen Setup under the Kitchen/Dining Room section of the Toast back-end.

2. Locate the Ticket Screens header and select Enabled under the Warning Colors section.

3. Decide how many levels you would like to enable and the time limit, or threshold, for each level.

4. Choose a color to correspond to the different thresholds.

On the KDS, the time of each ticket will be shown in the upper right corner which will dictate what color the ticket turns. Having tickets segmented by color can easily help your kitchen staff identify how long each ticket has been on the KDS.

Enable Individual KDS Tickets per Item

Your KDS can also be configured to show individual tickets for each item. This feature is commonly used at tapas restaurants where food runners bring individual dishes to guests as they are ready instead of bringing the entire order to the table at once.

To have individual tickets appear for each item, navigate to the Toast back-end.

1. Select Kitchen Setup under the Kitchen/Dining Room section.

2. Navigate to the Individual Tickets for Every Item in an Order header and select Print and show individual tickets on the kitchen display screen. Once selected save and publish your work.

3. In the Toast back-end, navigate to Meal Pacing under the Kitchen/Dining Room section.

4. Locate the Course Pacing header and disable the Enable course pacing feature. If left on, unnecessary clutter and numbers will appear on your KDS tickets.

Once the Print and show individual tickets on the kitchen display screen feature is enabled and Course Pacing is disabled, individual items will appear on the KDS with their own tickets.

For example, check #9 is an order of three desserts that appear as individual orders. Now when each individual dessert is fulfilled it can go straight to the guest instead of waiting for all three to be done at the same time.

Filtering tickets

You can further customize the way you filter kitchen tickets shown on both your Prep and Expediter Kitchen Display Screens by either Dining Options, such as Dine In, Take Out, or Delivery, as well as by Courses, such as Appetizers, Entree, or Dessert.

Filtering by Dining Option on KDS

To filter tickets to specific devices based on dining options, navigate to the Main Menu Dashboard. Note that this set up is device-specific and must be configured on each device. If you need to make adjustments to your prep station routing, see page 45 of this guide.

1. Selecting Device Setup under the Setup section.

2. Next, scroll down to the Kitchen Setup section and select Ticket Display Options.

3. From here, select the Dining Options that you would like to display on the KDS. It’s important to note that if no dining options are selected then all of the options will be displayed on the device.

Once your desired dining options have been selected, select Continue.

Filtering by Course on KDS

1. In order to filter your kitchen tickets by course, start by selecting Device Setup under the Setup section on the Main Menu Dashboard of your KDS.

2. From here, scroll down and select the Ticket Display Options section.

From the Ticket Display Options section, select the courses that you would like displayed on the KDS. Note that if no courses are selected then all of the options will be displayed on the device. If courses haven’t been configured then this section will disappear completely.

Once your desired courses have been selected, select Continue.

Fulfilling and Unfulfilling Tickets on KDS

An entire ticket order can be fulfilled on the KDS by simply double tapping anywhere on the ticket. However, your kitchen may prefer to fulfill individual items on a ticket as they are ready. To enable this feature, navigate to Kitchen Setup in the Toast back-end and set the Fulfill Items section to Enable individual item fulfillment.

Fulfill a Ticket on the KDS

Once this option is enabled, individual menu items that you wish to fulfill on the KDS ticket can be selected.1. Select the ticket with menu items that you wish to fulfill.

2. Select the item that needs to be fulfilled.

3. Select the Fulfill button.

4. You will be able to see which items that have been fulfilled as they will appear with a green checkmark next to them.

Unfulfill a Ticket on the KDS

If a ticket has accidentally been fulfilled, then it will need to be unfulfilled. To unfulfill a ticket, select the Show Recently Fulfilled button in the upper right corner of the KDS.

When the Show Recently Fulfilled button is turned on, fulfilled tickets will appear in green. Select the ticket with the items that you need to unfulfill.

In this example, we’ll unfulfill the Sweet Potato Tomales Plate. To do this, first select the entree and then select Unfulfill.

If you would like to unfulfill an entire ticket, highlight all items on the ticket by using the Select All button. This feature is useful for restaurant’s using Single Item Fulfillment and that would like to unfulfill a ticket.

KDS All Day Display

All Day Display is perfect for high volume kitchens that want to quickly churn out orders. This view allows your kitchen to easily see how many of each item needs to be prepared. All Day Display can be used in two different modes: Yes, enable All Day Display, grouped by item only or Yes, enable All Day Display, grouped by item and sub-grouped by modifiers. We’ll dive into each setting in the following section.

To configure All Day Display, navigate to Kitchen Setup under the Kitchen/Dining Room section of the Toast back-end.

From here, scroll down to the All Day Display section under the Ticket Screens header and select how you would like your All Day Display to be sorted. Depending on your kitchen’s preference you can sort All Day Display by how an item is grouped, by how an item is grouped and sub-grouped by modifiers, or All Day Display can be disabled.

Grouped by item

When using All Day Display and Yes, enable All Day Display, grouped by item only is enabled, tickets will be grouped based on item. This is the default setting for Toast.

Grouped by item and sub-grouped by modifiers

If Yes, enable All Day Display, grouped by item and sub-grouped by modifiers is enabled in All Day Display, items without modifiers will be listed first with items that are broken down into subgrouped by similar modifiers listed below the item.

Note that the large number at the top of the ticket shows the total number of orders placed for that menu item, while the small numbers to the left of each modifier indicates the number of orders for that specific modified.

If this setting is enabled and orders are sent to the kitchen without modifiers, only the number of items and the course will be on the ticket.

Likewise, the same item that is ordered for different courses will be grouped together with the course noted on the ticket. In the example below, one Torta Adobada is an appetizer and the other is an entree.

When either All Day Display option is selected in the Toast back-end, a Show All Day View button will be displayed. This can be selected to enable All Day Display.

If All Day Display is selected and the kitchen would like to turn it off, they can simply select the Hide All Day View button.

Disable All Day Display

If you don’t want your kitchen to use All Day Display then select No, do not enable All Day Display in the back-end and tickets will appear as they normally would on the KDS. The Show All Day View button will not be an option.

Production Item Count

Similar to All Day Display, Production Item Count shows a running total at the ingredient level of items that need to be fulfilled when each order is sent to the kitchen. This ensures that high volumes of orders can be quickly fulfilled without having to read through each KDS ticket.

While All Day Display requires you to select the Show All Day View button, Production Item Count is always displayed at the bottom of the KDS.

Configuring Production Item Count

In this example, a restaurant wants to add Pork to their Production Item Count in addition to chicken, avocado, tuna, and sweet potato as these items are in their most popular dishes.

1. To set this up, navigate to the Kitchen/Dining Room section of the Toast back-end and select Production Items.

2. Select the + Add button to add additional production items to track. Select Save and Publish Now when you have finished adding items.

Adding Production Items to Menu Items

Once you have created your production items, they will need to be attached to specific menu items.

1. To do this, navigate to Menu in the Toast back-end and select Menus.

2. Navigate to the desired item that you would like to track by sorting through your menu groups.

3. Locate the Preparation header and navigate to the Production Items section. Select the + button to add this item to your production item count.

Repeat this step for each production item that you would like tracked on your KDS.

Configuration on the Device

After production items have been created in the Toast back-end and attached to each menu items, you’ll need to set up your KDS to show production items.

1. To do this, navigate to Setup from the Main Menu Dashboard and select Device Setup.

2. Scroll down to the Kitchen Setup section and select Production Items.

3. From here, select the production items that you would like shown on the KDS. After selecting the items you would like displayed, select Continue to save your choices.

Once production items have been configured in the Toast back-end and on the device, your production items will appear at the bottom of your KDS. The numbers next to your production items will only include fired items. However, if you’re using Course Firing or Item Fire by Prep Time and an item hasn’t been fired, the Item Count will not include that item.

Note that as items are fulfilled, the item count will decrease for the related item.

Prioritized Printing

The use of Prioritized Printing allows you to arrange and print individual menu items to a prep station or KDS in a specific order, such as urgency or prep time. Toast offers prioritized printing by seat number, sort order, or input order. Note that if courses are enabled, by default, Toast will sort items by courses first and then by option selected.

To start, navigate to Kitchen Setup under the Kitchen/Dining Room section of the Toast back-end.

From here, scroll down to the Item Sorting Priority section and select how you would like your items sorted. The three sorting options are By seat number, sort items sequentially by assigned seat numbers, By sort order, sort items by the assigned sort order, or Neither. Sort items by input order. We’ll dive into each of these options in the following sections.

By seat number

1. Select By seat number, sort items sequentially by assigned seat numbers then save and publish your changes.

2. In order for this feature to work, Seat Numbers must be enabled. To enable Seat Numbers, navigate to UI Options under Other Setup in the Toast back-end.

3. Locate the Order Screen header and under the Additional Modifier Groups section, enable Seat Number (Table Service only). Once checked, select Save and Publish Now to save your changes.

Now when an order is placed, menu items will appear on the KDS ticket in order of the seat numbers.

If sort ordering is used by your kitchen in addition to seat numbers, then menu items will appear on the KDS ticket in terms of sort order with the seat number shown on the right side of the ticket.

By sort order

The second option for prioritized printing is ordering by sort order. To set this feature up, choose By sort order, sort items by the assigned sort order in Kitchen Setup under the Kitchen/Dining Room section of the back-end.

This setting will sort menu items on the KDS in terms of sort order, which is used to show items in order of urgency or prep time. Sort order will also cause similar items to be grouped together on the ticket, regardless of input order or seat number.

The following steps can be used to configure the Sort Order of your items.

1. Navigate to Advanced Properties under the Menu section of the back-end.

2. Use the Show/Hide dropdown menu to select the Sort Order option.

3. Once this option is turned on you will be able to assign each menu item a Sort Order. In this example, we used the Sort Order to sort appetizers by how long they take to prep.

Note that you can also view or change an item’s sort order by selecting the item and navigating to Sort Order.

Now when two items are sent to the kitchen on the same ticket, the one with the higher sort order will appear first.

By input order

The third option for prioritized printing is by neither seat number or sort order. To set this feature up, choose Neither. Sort items by input order in Kitchen Setup under the Kitchen/Dining Room section of the back-end and then save and publish your selection.

When this feature is enabled, items will be shown on the ticket in terms of the input order. If seat numbers are enabled, they will be shown after the item but they will not affect the sort priority.

It’s important to note that if either of the first two options are enabled but their corresponding sort order or seat number setting is disabled, then sorting will default to this option and menu items will be sorted by input order.

Item Fire by Prep Time

Menu items with different prep times can be configured to be sent to the kitchen at one time but fired at different times. The use of individual items firing to the kitchen is based on their configured prep times so that all items on a single order are ready at the same time.

Example Use Case:

A restaurant serves NY Strip Steak and a Crab-Stuffed Lobster Tail. The steak takes 12 minutes to cook and the lobster takes 20 minutes. If guests at the same table order these entrees, the steak should not be fired to the kitchen until 8 minutes after the lobster has been fired. This ensures that both are served hot and fresh at the same time.

1. Navigating to Advanced Properties under the Menu section of the Toast back-end.

2. Next, select Prep Time from the Show/Hide dropdown menu in the upper right corner.

3. From here you can mass-enter prep times for each item. In this example, we’ll focus on our entree prep times.

Note that prep times are entered in seconds, so an item that takes 10 minutes to prep would be entered as 600 seconds.

Another way to enter an item’s prep time in the back-end is by directly selecting the menu item and under the Preparation header, filling out the Preparation Time section.

If an item has a blank prep time then it will be fire right away. Items with a 0 second prep time will fire after everything else has fired.

Enable Item Fire by Prep Time

Once prep times have been added to all of the menu items you want your KDS to schedule, Item Fire by Prep Time can be enabled in the Toast back-end.

1. To enable this setting, navigate to Kitchen/Dining Room and select Meal Pacing.

2. From here, scroll down to Item Fire by Prep Time under the Item Pacing header and choose Enable Item fire by prep time. Once this is checked you can save and publish your work.

Now when a ticket is sent to the KDS it will have a different appearance on the expediter KDS:• Unfired items (items not yet sent to prep stations) will appear in greyed-out, italic text.• Fired items (items that the system has sent to prep stations) will appear in black text.• Fulfilled items will appear as black text with a green checkbox next to it.

However, prep stations will still need to manually fulfill items.

Manually Firing Items

Expediters can still manually fire items on KDS tickets when the Item Fire by Prep Time feature is configured.

1. To enable this setting in the back-end, navigate to Kitchen Setup under the Kitchen/Dining Room section of the back-end.

2. From here, navigate to the Override Item Prep Time section and select Yes. Then select Save and Publish Now to save your changes.

Now when there is a ticket in question, it can be selected and the item can be chosen and further adjusted. Adjustment options include the following:

• Unfired items can either be fired (sent to the prep station ahead of schedule) or fulfilled.• Fired items can be fulfilled.• Fulfilled items can be unfulfilled.

Showing Held Tickets at Prep Stations

If your kitchen is using meal pacing, Toast gives you the option to view held courses and tickets at prep stations. For example, a line cook might want to see the tickets that have been sent to the kitchen but not fired so that they can start preparing to cook the items at their prep station.

1. To enable this feature, navigate to the Kitchen/Dining Room section of the back-end and select Meal Pacing.

2. Next, navigate to the Held Tickets section and select Show at expediter only if you don’t want your prep stations to be able to see held tickets. If you want your prep stations to see held tickets then select Show at both expediter and prep stations.

Note that if Show at both expediter and prep stations is selected then prep stations don’t have the ability to fire a held ticket but they do have the ability to fulfill it. By default, Toast automatically selects Show at expediter only.

Assigning Printers to Prep Stations

The process of assigning printers to prep stations allows your restaurant to efficiently operate once menu items have been sent to the kitchen. While this step may have already been completed, feel free to reference this section if you need to reconfigure what printers your prep stations print to after setting up your KDS.

1. To configure printers to prep stations, navigate to Prep Stations under the Kitchen/Dining Room section of the Toast back-end.

2. For each prep station listed under Station Name, choose the printer that it corresponds with from the Ticket Printer dropdown menu.

Configuring Prep Stations to Send Tickets to Expediter

Your restaurant might have prep stations that prepare specific items from your menu. If so, you should assign a prep station in Toast to each of these stations. For example, if your restaurant has a separate station for appetizers then you should create an appetizer prep station. This will result in the station cooks receiving a ticket for any order that includes appetizers.

1. To configure this feature, navigate to Prep Stations under the Kitchen/Dining Room section of the Toast back-end.

2. Use the Send to Expediter option if you want the prep item to be sent to your expediter or to show up on the KDS. This option should be disabled if you have a prep station that you do not want to send to the expediter or shown on the KDS. For example, the kitchen may not need to see what items are being prepped by the bar, so this option would be disabled.

Enabling Two Level Fulfillment on a KDS

Using an additional KDS as an expediter screen allows orders to be fulfilled in the kitchen once they have been made and fulfilled on an expediter screen when they have been delivered to the table or guest.

1. To set this feature up, first navigate to the Kitchen/Dining Room section of the Toast back-end and select Kitchen Setup.

2. Next, navigate to the Expediter header and under the Two-Level Fulfillment section select Two levels.

3. Great work! You’re halfway to setting this feature up. Next you’ll want to navigate to the Main Menu Dashboard of your device and select Device Setup.

4. From here you’ll want to double check that the Primary Mode is set to Kitchen Display Screen.

5. If this is not the default setting simply navigate to Primary Mode and select Kitchen Display Screen, then select Continue.

6. From here you will be asked Is this an expediter screen? and select Yes, then select Continue.

7. The last question that you will be prompted to answer is What level of expediter? It’s important to note that the use of two level fulfillment is typically only used when there is a KDS for food runners. To help determine what level of expediter you should set your KDS as, use the following example:

You’re the owner of an Italian restaurant that features both pizza and salad. In your kitchen you have a prep station specifically for pizza and a prep station specifically for salad. Let’s say that an order is placed and sent to the kitchen for one large cheese pizza and one house salad. When this happens, a ticket will appear on the salad prep station, pizza prep station, at the expo station (known as Expediter 1), and on the food runner’s screen (known as Expediter 2).

Now when the salad is completed at the salad prep station and the pizza has been completed at the pizza prep station, the chefs will fulfill the tickets on their respective prep station screens. Upon fulfillment, the tickets will disappear from the two prep station screens and will only remain on Expediter 1 and Expediter 2. At the expo station (Expediter 1), the expediter will assemble the pizza and salad onto the same plate and fulfill the ticket on the Expediter 1 screen. At this stage in the process the ticket only remains on the food runner’s screen, or the Expediter 2 screen. Now when the meal is ready to be brought to the table, the food runner can fulfill the ticket on the Expediter 2 screen.

Note that if Two-Level Fulfillment is set to Single level then you will still have two levels of fulfillment since you have a prep station and an expo screen but your food runners will not have their own KDS. If your restaurant is configured this way then you will not be prompted to answer this question.

8. Once you have finished these steps your Primary Mode will be set to Kitchen Display Screen and your setup will be complete!

Auto print tickets when an order is fulfilled on a KDS

When you fulfill an order on the KDS, a ticket can be set up to automtically print.

1. To configure this setting, navigate to Device Setup under the Setup section of the Main Menu Dashboard.

2. From here, select Auto-print Fulfilled Tickets.

3. Next, choose the type of tickets that should be printed and select Continue.

Once your device is configured and the kitchen staff double taps the KDS ticket to fulfill an entire order, the ticket will automatically print. It’s important to note that if the kitchen uses the KDS to fulfill individual ticket items, that the ticket will not auto-print until all items on the ticket are fulfilled.

Enable/Disable Double Tap for Order Unfulfillment

Orders can be both fulfilled and unfulfilled by double tapping the ticket on the KDS. Note that double tapping to unfulfill can also be used when double tap to fulfill is enabled.

1. To configure your restaurant’s Double Tap to Fulfill, Unfulfill setting, navigate to Device Setup in the Setup section of your device’s Main Menu Dashboard.

2. Next, select the Double Tap to Fulfill, Unfulfill option.

3. Here you’ll want to either check or uncheck the double tap to fulfill/unfulfill tickets feature depending on how you want your kitchen to utilize this feature.

It’s important to note that this setting is a device-specific configuration and when adjusted on one device, it will not affect any of your other devices. If you have more than one KDS, you’ll have to repeat these steps for each device.

Notifications for KDS-fulfilled orders

Toast also allows you to send notifications to a server when an order has been fulfilled on the KDS. When this setting is enabled and an order is fulfilled, a notification will appear on the device of the server who initially placed the order. The following steps can be used to either enable or disable this feature.

1. Navigate to Other Setup and select Notification Setup.

2. Check or uncheck Fulfilled Tickets (alerts person who placed the order) if you wish to enable or disable this feature.

3. Select Save and Publish Now to finalize your changes.

4. This feature also requires your kitchen orders to be sent to an Expediter screen. To ensure this is happening, navigate to Prep Stations under the Kitchen/Dining Room section of the Toast back-end.

5. Under the Prep Stations header, select the checkmark under Send to Expediter for the prep stations you would like sent to the expediter. Once checked, select Save and Publish Now to save your work.

6. Notifications will then need to be enabled on your device. Navigate to the Setup section of the Main Menu Dashboard and select Device Setup.

7. Set the Primary Mode to Kitchen Display Screen. If KDS is not the primary mode, then select Primary Mode to change the setting.

8. Choose Kitchen Display Screen and then select Continue.

Now when an order is fulfilled by the kitchen on the KDS, a notification will alert the server who placed the order if they are signed in on the device.

Sending text messages when an order is fulfilled

In addition to notifying your server when an item is ready, Toast also allows you to send an automatic text message to your guest. Note that this feature is only available if you have a KDS.

Configure this feature can be done from the Toast back-end.

1. Navigate to Kitchen Setup under the Kitchen/Dining Room section.

2. Navigate to the Send Text Message section under the SMS when fulfilled header.

3. Once here, you have the option of sending a text message for quick order, table service, or online order. Select the box next to To Guest for the section or sections you would like text messages sent for.

4. Next, you have the option of customizing the message that will be sent to your guests. The default text message created by Toast reads Your order at $RESTAURANT is now ready, where $RESTAURANT will be filled in with your restaurant’s name.

5. If you wish to further edit your message, the following names can be used to customize the order fulfillment message:• $ORDER: Order Name• $RESTAURANT: Restaurant Name• $CUSTOMER: Guest Name• $TABLE: Table Number

Note that a text message will only be sent when an order is marked as fulfilled on the expediter KDS.

Kitchen Reports Overview

The use of a KDS means that you also have the ability to run reports on the amount of time it takes to fulfill orders and on detailed information about kitchen tickets.

With the KDS fulfillment reports you can even track the amount of time it takes from when a chef receives an order on a KDS, completes the order on the KDS, and even the point at which an expediter delivers the food items to the table or to the server’s hands. The KDS fulfillment reports include:

• Tickets by Hour: provides a high level view of the number of tickets fulfilled in a given hour as well as the average time taken to complete those tickets.

• Tickets by Fulfillment Time: breaks down how many tickets were fulfilled by each station within a set time interval.

• Ticket Details: deep dive breakdown of the details of each individual kitchen ticket.

To run a KDS fulfillment report, first navigate to Kitchen under the Reports section of the Toast back-end.

After selecting Kitchen, the following kitchen display/fulfillment report options are available:

Tickets by Hour

This report provides:• An hour-by-hour readout of net sales hour over hour.• The number of tickets fulfilled in a given hour.• The average time taken to complete those tickets.

Tickets by Fulfillment Time

This report breaks down the amount of tickets that were fulfilled by each prep station within a set time interval. In this example, you can see that seven food tickets were fulfilled within 7-8 minutes, but only one of them was fulfilled by the grill.

Ticket Details

This report shows more detailed information for individual kitchen tickets. You can customize the data that is shown in the report by selecting options from the Show/hide columns button.

This report can also be exported as a .csv file.
