RIESLING, GEWÜRTZ, VIOGNIER AND THE WHITE PINOTS
Traditionally, Riesling and its other Noble Alsatian friends are bottled in tall, narrow glass; commonly
referred to as “flutes”. They might better be called megaphones, for these varietals (Riesling in particular)
shout of their origins and purity at the top of their lungs. Plant Riesling on slate in Germany or limestone in
Australia, plant Pinot Gris on alluvial soil in Oregon or schist in Austria, they will tell their tale clearly and
concisely from start to finish: master storytellers, who never break from the plot and never lose your
attention. Few wines are as worthy as these when it comes to attention from wine drinkers. All of these
(especially Riesling) can be dry (as most of those represented on our list are) or can be fruity. The nose can be
dominated by crushed rocks and petrol or by peaches, white flowers and spice. What remains constant is
balancing acidity and flavor purity. Don’t be fooled by lifelong prejudices against Riesling or Muscat or
Gewürtz: they are not all sweet and certainly not just for your great aunt's Bridge partners. These are often
wines of truly aristocratic pedigree. And they offer unprecedented intensity and complexity across the
spectrum. As a result, they’re dynamite with a vast array of food.

Sauvignon Blanc has found a home in the hearts of the world's wine drinkers. And while many feel it easily-
understood and quickly identified, the reality is that Sauvignon is quite the chameleon. True, it grows in a
wide range of climates and places across the world, but the secret is its versatility. Only Riesling can rival it
in terms of flexibility with regards to style. Chenin Blanc is likewise a remarkable grape. It can be found in
some of the same places as Sauvignon, most notably the Loire Valley. Its interpretations are widely varied as
well; terse and tense in Savennieres, ripe and fruity in Vouvray and apple-driven and steely in certain parts
of the New World. And of course both can also withstand extended ripening and produce exotic dessert
wines sought after the world over. They are important grapes as exciting as any other in the world.

The Gold Standard, from Burgundy's Golden Slope
CHARDONNAY
It is not hard to love Chardonnay. But it is hard to learn to leave it alone. Among the white varietals,
Chardonnay is perhaps the easiest to manipulate. It is also one of the most expressive of its origin. The
challenge of making beautiful Chardonnay comes in knowing when thoughtful improvement ends and
noisome meddling begins. For when oak, butterscotch and vanilla become the dominant tones, the harmony
of earthiness and acidity are quickly overpowered. Nowhere is this balancing act more skillfully executed
than in Chablis, and the string of villages running from Dijon to Lyon that make up Burgundy. From this
mesmerizingly complex swath of land comes such a variety of interpretations of Chardonnay that a whole
lifetime won’t yield enough days to learn them all.

All over the world, producing Chardonnay has been seen as a rite of passage in new wine regions. Almost
any wine producer with ambitions to belong to the great international club of wine grown-ups has to prove
that he or she can make a Chardonnay, preferably a Chardonnay fermented and matured in new(ish) oak
barrels the Burgundian way, with the best of them. The fact is that most of this sort of wine is far more a
product made in the cellar than in the vineyard. Or, to put it another way, skilfully-made barrel-fermented
Chardonnays tend to taste very much the same wherever they are made. Indeed when many people say they
like the taste of Chardonnay, what they often mean is that they like the taste of oak, or at least the qualities
of oak maturation.

Domaine François Raveneau was founded in 1948 in the wake of the second World War, when Chablis was
not a place for distinctive wines to be found. Although the family had owned vineyards and grown grapes for
years, Monsieur Raveneau made a point of selling off the family's finest parcels during the run-up to the war.
This may have been a hedge against the potential lean times he worried they might encounter as the shadow
of war crept across Europe. What is certain, however, is that with the union of François and his wife (a
Dauvissat), the great vines added to their domaine insured that over the ensuing six decades, the family
would come to be known as stoic, fanatical, quality-driven vignerons. Painfully small amounts are made each
year (a great vintage will yield 3,000 cases, barely enough to satisfy the demands of France's Michelin-starred
restaurants) and every bottle allocated to the United States is bitterly fought over. Over the years, Mizuna
has manged to collect a lovely array of Raveneau wines and we are pleased to offer them now, as the time
has never been better to enjoy great Chablis.

What at first may seem an arbitrary grouping, the “Italian and Iberian” section of our wine list reflects
southern Europe’s place in the history of wine production and global proliferation. Referred to as enotria, or
“Land of Wine”, Italy was the progenitor to commercially viable wine production in Europe in ancient times.
Richly diverse in both grape varieties and winemaking styles, this perfectly positioned peninsula was
remarkably well suited to kickstart the trade of Western civilizations first true commodity; wine. Along the
most trafficked trade route west was the Iberian peninsula – modern day Portugal and Spain -, shrouded in
its own traditions of winemaking and distillation. Below you will find wonderful and exotic representations
from this historically integral piece of the winemaking world.

The world of red Burgundy is mystifying, provocative and sexy. It is filled with walled vineyards, hallowed
sites and storied domaines passed down from generation to generation, in some cases for more than 500
years. Nowhere is this story of pedigree and heritage more pronounced than in the wines of the Domaine de
la Romanee-Conti. Established in 1869 and under the same ownership since then, the DRC tends only to
Grand Cru vineyards, wholly owns two of the greatest Grand Crus in Burgundy (La Tache and Romanee-
Conti) and produces wines of astounding grace and complexity. We are pleased and proud to represent a

Sun-drenched and delicious, the wines of the Rhône Valley, whether from the roasted slopes of the North or
the gently rolling hills of the South, are wines of immense pleasure. Syrah makes a variety of wines with
incarnations as diverse as the soils on which they are planted; the taciturn-while-youthful Côte Rotie, its
wild and untamed cousin Cornas or the thoroughbred of the stable, Hermitage. And while Grenache may
find its origins in Spain, for most wine drinkers it will always be at its best in Châteauneuf-du-Pape and
Gigondas. And of course there are the intense, delicious examples of Syrah, Grenache and their bedfellows
that are found throughout the New World. Whether cool-climate Australian examples or broad and dense

BORDEAUX
There is a reason that Bordeaux found a place in the hearts of collectors the world over from its first days of
production. These earthy, dry and densely-packed wines possess the ability to age for immensely long
periods of time, are exceptionally intense and concentrated in their youth and able to reach heights of
nuance and sex appeal that is rivaled by almost no other red wines. Along the "Left Bank" of the Gironde
river on France's Atlantic coast, Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Malbec grow
in idyllic conditions in communes like Pauillac, St-Julien and Margaux. The appellations referred to as the
"Right Bank" are the Merlot-driven wines of Pomerol and St-Emilion. While the region is most known for
the wines of the famed Classification of 1855, there is much to explore outside of the Left Bank's Medoc
district. These pages provide the opportunity to explore both the famous chateaux and the less-known
domaines.

We have a thing for Cabernet Franc. While it is certainly worth conceding that some of its representations
are, well, “esoteric”, this misunderstood grape is truly capable of greatness. This little subsection is a
byproduct of our passion for Franc and for the winemaking processes that allow for its most expressive and
exalting flavor profiles. These wines are plush, structurally sound, approachable in their youth and built to
appease a great many drinkers.

Vega Sicilia has long been considered Spain’s “First Growth” and most prestigious wine estate. Located in the
famed Ribera del Duero, Vega-Sicilia was founded in 1864, popularized in the early twentieth century and
anchored in the illustrious history of one of Spain’s truest growing regions. Among the wines produced, the
Valbuena 5° is described as an “ambitious” endeavor and a “synthesis of all things original and traditional”.
Each of the below listed wines are aged for 5 years in both French and American oak, and produced with
“extraordinary care for its life rhythms and cycles”. Each of the vintages offers a distinctly styled wine.
Some are rich, powerful and exalting while others are seductive, polished and restrained. In either case, they
are an exercise in both precision and indulgence.
