Corn Starch Cornstarchisafine,powderystarchthatismadeoutofcorn.Thecornstarchisactuallymadefromtheendospermofthecorn,whichmakesupmostofthekernelsthatweeatwhenenjoyingpopcornorcornonthecob.Cornstarch,alsosometimescalledcornflour,isproducedbygrinding,washinganddryingtheendospermofthecornuntilitreachesthatfine,powderystate.Cornstarchisglutenfree.

Thepowderisactivatedwhenliquidisadded,producingcarbondioxideandformingbubblesthatcausethemixturetoexpand.Forthisreason,itisimportanttogetyourcakemixtureintotheovenquicklyoncethe'wet'ingredientshavebeenaddedtothe'dry'ingredients.
