• Nudge!with!Food:!Offer!choices!of!a!variety!of!color,!textures!and!shapes!each!day.!Not!all!students!will!like!a!specific!fruit!or!vegetable.!Increasing!the!variety!of!available!items!every!day!may!increase!the!chance!that!students!will!select!a!fruit!and!vegetable.!

Researcher%Ann%Ferris%of%the%University%of%Connecticut%uses%the%kind%of%fancy%lighting%techniques%you'd%see%in%the%aisles%of%Whole%Foods%to%“nudge”%students%through%visual%cues.%%

Traffic%Light%Labeling%

Researchers%created%a%simple%traffic%light%system%ranking%for%levels%of%total%fat,%saturated%fat,%sugar%and%sodium.%They%compared%these%labels%against%other%more%detailed%and%complicated%labels,%which%provided%specific%information%on%the%percentage%daily%intake%of%bad%items%like%fat%and%sodium,%and%good%items%like%protein%and%fiber%found%in%each%food%item.%Some%of%the%daily%intake%labels%used%a%traffic%light%color[coding%as%well.%

Results%from%the%study%indicate%that%Traffic%Light%food%labeling%allows%consumers%to%correctly%identify%healthier%food%products,%and%assists%customers%to%make%comparisons%between%products%easily.%

McDonald’s%packaged%foods%were%preferred,%with%children%twice%as%likely%to%prefer%McDonald’s%packaged%carrots%even%though%McDonald’s%doesn’t%offer%carrots%in%their%restaurants.%%Children%who%watch%TV%or%eat%fast%food%often%were%more%likely%to%prefer%the%branded%foods.%

Trayless%Cafeterias%%

“Cafeteria%managers%have%been%taking%a%keen%interest%in%reducing%food%waste.%Seeing%how%easy%it%is%to%load%up%a%tray%with%extra%food%that%often%goes%uneaten%and%extra%napkins%that%go%unused.”%

Curious%managers%and%students%at%Alfred%University%in%New%York%tested%a%trayless%policy%over%two%days.%When%trays%weren’t%offered,%food%and%beverage%waste%dropped%between%20%and%50%percent!%This%amounts%to%about%1,000%pounds%of%solid%waste%and%112%gallons%of%liquid%waste%saved%on%a%weekly%basis,%according%to%the%college.%
