WHO WE ARE
Pastificio Carmiano has been founded from the combination of
passion for taste and tradition, with wisdom and the feeling of those
who each day works and creates the pasta. The fair and balanced
mix of emotions and experience takes shape in the different profiles
of pasta coming out daily by our workshop.
Our commitment is to create products that satisfy the absolute
pleasure of the most refined and demanding palates, in order to
make unique the gatherings of the lovers of good taste and good
food.
Our duty is to operate following a natural link with the past, of which
we are meticulous custodians of the secrets of wheat's
manufacturing, handed down from generation to generation, in over
500 years of history of art of making pasta in Gragnano.
WHAT WE DO
Pastificio Carmiano devotes its attention to the production of
special pasta shapes in durum wheat semolina, bronze drawn and
slowly dried.
Our product range consists of long and short pasta and more of
some special productions flavored addicted.
The durum wheat semolina used is one of the high quality product
made by Mininni Spa, company based in Altamura (BA) and italian
leader in the production and wheat processing.
The dies used are all in bronze and drying is carried out in static
cells at moderate and controlled temperature for a period never
lower than 14 hours.
Daily production is about 800 kg to ensure the high end of our
pasta. We prefer to make a few items but excellent!
HOW WE DO
Pastificio Carmiano sets its own processing phases calling the
dictates of experience and methods of Gragnano pasta tradition:
the dough and the kneading take place under the strict
supervision of the chief pasta maker that regulates the basic
ingredients, the water sources of Gragnano and semolina selected,
so that the compound is present at the touch elastic and compact,
ready to "put into shape "of the pasta.
the bronze drawing guarantees the roughness and irregularity of
refined products, traditional craftsmanship, to facilitate the perfect
match between the pasta and its dressing.
the manual spreading of the product is achieved by spreading the
dough on special rods of steel, for long pasta, or on frames made of
fir wood, for short pasta. The "spannatore" performs unique
movements with precision and mastery, taking care to put wires or
different formats pasta close to each other, avoiding the danger of
fusion during the next drying phase.
the drying process once adjusted by opening windows or with
exposure to the sun, to find the right balance of temperature and
humidity, it is now left to the task of modern static cells, that allow
you to replicate, in key technologically advanced the experience of
the past. The process takes a min. of 14 hours up to a max. 60
hours, depending on the shapes, and the temperature is contained,
between 40 ° and 60 °.
AWARDS AND PARTNERSHIPS
Pastificio Carmiano is included in the list of the operators of the
circuit "Pasta of Gragnano PGI”, as approved by European
Commission on October 11, 2013, to guarantee the consumer
about the origin of the product as well as from counterfeiting and
abuse.
Pastificio Carmiano is a partner member of the consortium,
"Gragnano Città della Pasta”, founded in 2003 with the aim of
protecting and enhancing the product "Gragnano pasta PGI” in Italy
and worldwide, as well as be an ambassador of Made in Italy and of
a sustainable, healthy and natural way of life.
