I am currently living just off the Gulf
Coast. So, with all the other problems
going on in the world, I decided to do a
little pre-hurricane disaster prep. One of
the things I did was purchase a couple of
extra jars of peanut butter. Well, being
under quarantine and basically losing
track of the days, I was totally not keeping
track of the amount of peanut butter I had
been eating! Anytime I felt a little growl in
my tummy, my spoon landed in the jar.
Fortunately, I was at least eating it as an
unplanned meal replacement. Since I was
eating this delicious creamy peanut butter
straight out of the jar, before I knew it, I
had scarfed down the “emergency” jars of
peanut butter as well?! Slightly
embarrassed that I had somehow eaten
my way through the “emergency” stash of
peanut butter, I made an executive
decision…

Crust: Oven: 350 | Bake: 15 Mins
• 1/2 c. Almond Flour • 1/2 c. Shredded Italian Cheese Blend • 1/2 tsp. Garlic Powder • 1/2 tsp. Onion Powder • 1 tsp. Extra Virgin Olive Oil • 1 Medium Egg
Preparation:
1. Place all of the dry ingredients in a small mixing bowl. Stir until the ingredients are mixed well.
2. Add the extra virgin olive oil and egg to the dry mixture. Stir until a doughy paste forms.
3. Use a spoon to scoop and spread the pizza dough evenly on a small cookie sheet.
4. Place in the oven to bake for 15 minutes.

▪ Allow the pizza toppings to melt in the oven for about 7 – 9 minutes.

First, I decided that the “back-up” jars
of peanut butter were going to need
some orange cones and yellow tape
around it to remind myself not to eat it!
: ) And second, I went on a peanut
butter fast to break the newly developed
habit of eating it every day?!
Well, after about the second or third day
of not having any peanut butter, I felt
moody, perhaps even sad for seemingly
no apparent reason. Since I have
generally always been a “seize the day”
with my 3 cups of coffee kind of person,
I immediately recognized that
something was a little off. This was not
at all normal for me.
The Executive Decision
After doing a quick little self-
assessment, I realized that the only
thing I had done differently was stop
eating peanut butter. So, I jokingly said
to myself – “maybe I am having peanut
butter withdrawals or something.”
I totally laughed it off while using my
feeling “sub-par” as an excuse to dive
into the peanut butter again. And what
an interesting little experiment that
turned out to be!

THE CULTURE The culture of Vietnam is one of the oldest cultures
in Southeast Asia. However, for a period of time,
the Vietnamese culture was heavily influenced by
Chinese culture. This was due to their being ruled
by China for a thousand years.
In the 10th century, Vietnam became independent
from China. During this time, Vietnam began to
expand southward to include modern day Central
Vietnam and Southern Vietnam. Each of these
regions already had their own culture and
language which resulted in there being significant
regional differences in the Vietnamese culture.
THE LANGUAGE Vietnamese (Tiếng Việt) is the national and official language
of Vietnam. It is a Mon-Khmer language that is spoken by
an estimated 90 million people. Like many other languages
in the Southeast part of Asia, it is an analytic language that
uses tones, modifiers, and classifiers. Their vocabulary is
influenced by both the Chinese and French culture.
Historically, the Vietnamese alphabet was written in
Chinese characters. However, French colonial rule led to the
modern day Latin-based Vietnamese alphabets.

Sour Red Cherries

If you have been on a ketogenic diet
for a while, you may be thinking –
cherries?! “I was told that I can only
eat the “berry” fruits in moderation.”
Well, this is true, the “berry” fruits are
lowest in carbs. And it is a simple way
to remember what kind of fruits you
can eat when you are out shopping.
However, there are other comparably
low carb fruits that you can eat in
moderation on a keto, diabetic, or low
carb diet like the sour red cherries.
Blueberries are one of the allowed
keto-approved “berry” fruits. Half a
cup of fresh blueberries equal 8
grams of carbohydrates. Similarly,
half a cup of fresh sour red cherries
equal less than 8 grams of
carbohydrates. So, sour red cherries
are another countable low carb fruit
that can be eaten in moderation.
Keep in mind that there are two major
cherry categories — tart and sweet
cherries. Cherries vary in color from
yellow to deep blackish-red. With the

Can I Eat That? If you ask 5 different diabetics this question, you might get
5 different answers. So, how would you respond?
• No – you cannot eat hamburgers, pizzas, and donuts.
• Yes – but you will have to adjust your insulin.
• Yes – but drink a lot of water and exercise afterwards.
• Yes – but not all at the same time.
I have type 2 diabetes…
As a diabetes management coach, I would
say: “You Can Eat That!” – but only if it is
made with the right ingredients!
The main goal with diabetes management
is to keep your blood sugar levels within a
normal range. And a secondary goal is to
keep you feeling good physically, mentally,
and emotionally after receiving a life-
changing type 2 diabetes diagnosis

Keto Creamy Alfredo Chicken Eggplant Soup
Ingredients:
4 Boneless Chicken Thighs
or 2 Chicken Breasts
1 Small Eggplant
1 C. Alfredo Sauce
1 Tsp. Garlic Powder
1/2 Tsp. Onion Powder
1 Tbsp. Dried Basil
Seasoning Salt
Preparation:
1. Season the chicken thoroughly with garlic powder, onion powder, basil, and
seasoning salt.
2. Place the seasoned chicken in a medium skillet and then cover the skillet with a lid.
3. Cook the chicken on the stove over a medium heat setting. Flip the chicken and add
a little water as needed.
4. Meanwhile, start cutting the eggplant into bite-sized cubes.
5. Once the chicken is cooked, remove the chicken from the skillet and set aside.
6. Add the cubed eggplant to the same skillet with the chicken juice. Then, add about
a cup of water to the skillet. If you decide to use chicken breast, add canned chicken
broth and a tablespoon of olive oil.
7. Season the eggplant with sea salt, stir, and then cover with a lid.
8. Using a fork and a knife, slice the cooked chicken into chunks.
9. Once the eggplant starts cooking, add the chicken and Alfredo sauce. Stir, reduce
the temperature, and let simmer for about 10 minutes until the eggplant is tender.

soon discover the dreaded
low blood sugars that can
result from taking too much
medication. On the other
hand, if a person
consistently does not take
enough insulin to keep their
blood sugars within normal

Over-medication occurs
because taking insulin is
not an exact science – there
are multiple factors in

level of activity before or

When you are learning a
new way of eating, the key
to success is planning – you
should always know what
you are going to eat next.
Ironically, my weight loss
clients are told the same
thing because once you are
hungry, it is hard to think
straight. Then it becomes
easy to relapse into eating
something that you should
not eat or eat more than
you should eat once you
finally figure out what to
eat. So, planning what you
are going to eat will become
a permanent and important
aspect to your success. This
is easy to do when you have
the right tools.
Cooking & Trying New
Foods
If you have never cooked
before, you will likely start
microwaving or cooking at
least a few things just to
add more variety and fill in
some of the meal planning
gaps. However, the diabetes

cooking skills that really
want to manage their

delicious and inexpensive. So, why
bother making your own homemade
peanut butter? Well, many store
bought peanut butters contain added
sugars, unhealthy refined oils,
preservatives, and added salt.

Prepping For The Storm | “Trip To Nowhere”
A storm is in the Gulf of Mexico. It is scheduled to make landfall in just a few more hours about 190 miles away from home. So, we are bracing for the storm.
The decision was made to move the car to another parking space. However, it was already raining. Not warm summer rain, but cold fall rain.
I went to my room, grab my rain shoes, and decided to just make a run for the car as my little nephew stood at the door.
He watched me run for the car in the cold rain through the wet grass.
I got inside the car, cranked up the engine, put it in reverse, and backed out of the long driveway.
As I pulled up to the stop sign on the street, I soon discovered that the parking spot that I had in mind was already occupied with another vehicle. So, I made a quick u-turn in the road and pulled the car back into the driveway.
I grabbed an umbrella, got back out of the car, and made a mad dash back to the door.
My little nephew was still standing at the door. Not knowing the game plan, he was confused and asked, “What, you aren’t going nowhere?”
Already cold, wet, and little annoyed by the blank trip, I had to laugh to myself because, although he was confused, he was correct in his own way – I didn’t go anywhere.

Supplies:
▪ Microwave
▪ Glass Measuring Cup
▪ Small Spoon
▪ Measuring Spoons
▪ Lip Balm Containers, Lip Balm
Tubes, Metal Tins
The Ingredients:
▪ 3 tbsp. White Beeswax
▪ 2 tbsp. 100% Cocoa Butter
▪ 4 tbsp. Pure Avocado Oil
▪ 8 drops Vitamin E Oil
▪ 2 drops Rosemary Essential Oil
▪ 12 drops Peppermint Essential Oil
INSTRUCTIONS | All Natural Lip Balm
Making the Lip Balm:
1. Place the beeswax, cocoa butter,
and avocado oil in microwave safe
glass measuring cup.
2. Prepare whatever container you
will be using for pouring the balm.
3. Put the measuring cup with the
mixture in the microwave.
Microwave the mixture in 30
second increments and use your
spoon to stir the balm at each
interval. (Caution: Once the oils
and butters have melted, the cup
itself may be hotter than
expected.)
4. Once the beeswax and oils are
completely melted, add the
vitamin E oil, rosemary essential
oil and peppermint essential oil.
Stir.
5. Carefully pour the hot balm into
the lip balm containers while the
balm is still hot. If the balm starts
to harden, simply reheat until it is
again pourable.
6. Let the lip balms cool for about 30
minutes or as needed depending
on the temperature of your room.
7. Then, your high-quality all-
natural lip balms are ready to use.
