snow peasTo buy Snow peas are crisp in
texture, with a slightly sweet flavour.
Look for bright green snow peas, with
no yellow or black tinges. They should
look crisp and firm. The whole pea
can be eaten – both the pod and the
immature peas it contains.

raw in salads, or cooked whole in
stir-fries and vegetable dishes.

Asian noodle salad with prawns & peasPreparation: 15 minutes Serves: 4
250g rice noodles
100g punnet snow pea sprouts
2 long red chillies, deseeded and
thinly sliced
100g snow pea sprouts, trimmed
4 green shallots, thinly sliced
750g Cooked Australian King Prawns,
peeled, tail intact and deveined
1 cup coriander leaves
⅓ cup sweet chilli sauce
¼ cup lime juice
¼ cup toasted hazelnuts, roughly chopped
1 Soak noodles in hot water for 10 minutes
until soft. Drain and rinse. Cut snow peas
into long thin strips.
2 Combine noodles, snow peas, chillies,
snow pea sprouts, green shallots, prawns
and coriander in a large bowl. Whisk sweet
chilli sauce and lime juice in a small bowl to
combine. Pour dressing over noodle mixture.
Toss to combine. Divide between serving
plates and top with hazelnuts.

Per serve: 29g protein, 7g fat (0.5g saturated

Tangelo & melon muddlePreparation: 15 minutes Serves: 6
3 tangelos
1 red grapefruit
½ rockmelon
2 tbs honey
2 cups vanilla-flavoured greek yoghurt
3 passionfruit
1 Peel tangelos and separate segments.
Roughly cut each into thirds, discarding
any pips. Place into a bowl. Cut peel and
white pith from grapefruit. Cut down both
sides of membranes and remove segments,
allowing any juices to be caught in the bowl.
Halve segments and add to bowl. Scoop
out seeds from rockmelon, peel and dice.
Combine in bowl with other fruit.
2 Stir honey into yoghurt and add any
juices from the prepared fruit. Spoon fruit
into serving glasses, top with yoghurt and
passionfruit pulp.

Per serve: 7g protein, 2.5g fat (0.5g saturated
fat), 35g carbohydrate, 4.5g dietary fibre,
810 kJ (195 Cals).

tangelosTo buy A tangelo is a cross between the
grapefruit and the mandarin. Usually about
the size of an orange, with a thinner neck at
the top, the tangelo has deep orange
coloured skin that is quite thin. Look for
deep-orange coloured tangelos that feel
relatively heavy for their size, with no
discoloured or wrinkled patches on their skin.
Best in This fruit can be used anywhere
you would normally use mandarins or
oranges. They’re delicious juiced, in salads,
or cooked in sweet and savoury dishes.
Storage Tangelos are best stored at room
temperature, out of direct sunlight, for 3-5
days or in the fridge for 1-2 weeks.

Crusty ham rollsPreparation: 10 minutes
Serves: 4
275g baby roma truss tomatoes
1 tbs shredded basil leaves
splash of balsamic vinegar
4 crusty sourdough bread rolls
6 bocconcini
1 tbs dijon mustard
350g ham off the bone, sliced
30g baby rocket leaves
1 Place tomatoes into a bowl and using the
back of a spoon or your thumb, squash
gently until they just break releasing their
juices. Add basil and balsamic and season
with salt and freshly ground pepper. Set aside.
2 Slice the rolls in half, down from the
top, but don’t cut all the way through.
Slice bocconcini. Spread rolls with mustard,
if desired. Fill with sliced ham, bocconcini,
squashed tomato mixture and baby rocket.

Per serve: 28g protein, 8g fat (3.5g saturated

Look for cutlets that are light red in colour
and a rounded eye muscle that is equal in
thickness.
Storage Refrigerate lamb cutlets in an
airtight container for up to 2-3 days or
freeze if close to the best before date.
Try this Marinate lamb cutlets in 2 tbs
tomato sauce, 2 tbs honey, 1 garlic clove,
crushed, and 1 tsp crushed chilli.
• To reduce oil when cooking chops, don’t
grease your barbecue plate - simply brush
the chops themselves lightly with olive oil.

Lamb cutlets in herb marinadewith potato rostiPreparation: 40 minutes
Cooking: 15 minutes Serves: 4
1½ tbs extra virgin olive oil
1 large garlic clove, crushed
¼ cup continental parsley, finely chopped
1 tsp rosemary leaves, finely chopped
2 tsp dried oregano
2 lemons
12 lamb cutlets
2 large desiree potatoes, peeled
sea salt and freshly ground black pepper, to season
40g butter
2 tbs olive oil
green salad, to serve
1 Combine oil, garlic, herbs and juice of 1 lemon in a
shallow ceramic dish. Add cutlets and turn to coat well
with marinade. Set aside for 30 minutes (see Note).
2 Meanwhile, thinly slice potatoes, stack slices and cut
into thin shreds. Season with salt and pepper. Heat
butter and oil in a medium frying pan over medium heat.
Drop spoonfuls of potato into pan and spread out roughly.
Cook for 3-4 minutes each side until golden and crisp.
Keep warm.
3 Preheat a barbecue hotplate until hot. Remove cutlets
from marinade and season both sides well with salt and
freshly ground pepper.
4 Cook cutlets on the hotplate for 3 minutes each side,
or slightly longer if thick. Transfer to a large plate and
squeeze remaining lemon over hot cutlets. Serve with potato
rosti and green salad.
NOTE: If you would like to marinate the cutlets overnight,
leave out the lemon juice. Add this ½ hour before cooking.

2 tsp sesame seeds
2 tbs lemon juice
2 tbs soy sauce
2 tbs water
¼ tsp sesame oil
⅓ cup finely shredded red cabbage
⅓ cup finely shredded wombok cabbage
1 green shallot, finely sliced lengthways
2 dozen fresh oysters on the half shell
1 Dry fry sesame seeds in a non-stick pan
over medium heat for about 2 minutes
until golden. Set aside. Combine lemon juice,
soy sauce, water and sesame oil in a bowl.
2 Combine both cabbages and shallot
together. Arrange a little of the salad
on top of each oyster. Spoon 1 tsp of
dressing onto each and garnish with
toasted sesame seeds.
TOP TIP: These oysters also look great
served on Asian spoons. Slide each
oyster onto a spoon and top with salad
and dressing.

1½ cups dried risoni pasta
1 bunch asparagus, trimmed, cut into 3cm pieces
1 frozen lobster, thawed
600g Fresh Cooked Australian Crystal Bay Prawns,
peeled, deveined and chopped
1 avocado, diced
1 Lebanese cucumber, halved lengthways,
seeds removed, diced
8 small butter lettuce or baby cos lettuce leaves
⅓ cup thousand Island salad dressing
1 Cook risoni in a large saucepan of boiling salted
water until just tender as per packet instructions.
Add asparagus and cook for 1 minute or until bright
green and tender. Drain and rinse under cold water.
2 Remove meat from lobster tail and thinly slice.
Combine lobster, prawns, avocado, cucumber, risoni
and asparagus in a large bowl. Arrange lettuce cups on
serving plates. Spoon risoni salad into cups and top with
dressing and freshly ground black pepper. Serve.

Chicken yakitori with wok-tossed vegetablesPreparation: 45 minutes
Cooking: 15 minutes
Serves: 4
(You will need 12 presoaked bamboo skewers)
½ cup salt-reduced soy sauce
⅓ cup chicken stock or water
¼ cup rice wine or mirin
¼ cup caster sugar
3cm piece fresh ginger, peeled,
finely grated
¼ tsp white pepper
850g chicken thigh fillets, cut into
3cm pieces
6 green shallots, cut into 3cm pieces
1 tbs vegetable oil
1 large carrot, thinly sliced on diagonal
150g beans, trimmed, halved diagonally
½ small Chinese cabbage or wombok,
finely shredded
2 tbs water
1 tbs toasted sesame seeds
1 Combine soy sauce, chicken stock,
rice wine, sugar, ginger and pepper in
a small saucepan over medium heat. Stir
until sugar is dissolved and mixture comes
to the boil. Reduce heat and simmer for
5 minutes or until sauce is slightly thickened.
Cool. Pour into a glass or ceramic bowl.
Add chicken pieces, cover and marinate
for 30 minutes if time permits.
2 Thread chicken pieces and green shallot
onto prepared skewers. Preheat a
chargrill over a medium-high heat. When
hot, grease with 1 tsp oil. Cook skewers
for 3-4 minutes each side or until cooked
through, adding more oil if required.
3 Meanwhile, heat a wok over high heat.
Add 1 tsp oil and swirl around wok.
Add carrot and stir-fry for 2 minutes. Add
beans and stir fry for 1 minute or until just
tender. Add cabbage and water. Cover and
cook for 1-2 minutes or until cabbage just
wilts. Spoon vegetables onto serving plates.
Sprinkle with sesame seeds. Serve with
yakitori chicken skewers.

750g small new potatoes, halved
500g pumpkin, peeled, cut into 4cm pieces
olive oil cooking spray
1 bunch watercress, sprigs removed
1 small red onion, halved, thinly sliced
1 large avocado, diced
2 tbs baby capers
⅓ cup Woolworths Select 99% Fat-Free
French Dressing
1 Preheat oven to 200°C. Line 2 baking
trays with baking paper. Put potatoes
onto one tray and pumpkin onto other tray.
Spray with olive oil. Season with salt and
pepper. Bake potatoes on top shelf of oven
for 40 minutes or until golden and crisp.
Cook pumpkin for 25 minutes or until tender.
2 Combine watercress, onion, avocado and
capers in a large bowl. Add potatoes and
pumpkin and transfer to a large platter. Drizzle
with dressing and serve.

variationPotato & rosemary pizzas
Serves: 4
Preheat oven to 220°C. Lightly grease
2 large baking trays or 4 pizza trays.
Place 4 Lebanese bread onto prepared
trays. Spread each with purchased
sweet chilli hummus. Thinly slice
8 small washed potatoes. Arrange
potato slices over hummus, overlapping
slightly. Spray well with olive oil spray
and sprinkle with fresh rosemary
sprigs, sea salt flakes and freshly
ground black pepper. Bake for
10-15 minutes or until potatoes are
tender and light golden.

Mexican piesPreparation: 20 minutes
Cooking: 30 minutes Serves: 6
1 tbs olive oil
1 red onion, finely chopped
1 green capsicum, deseeded,
finely chopped
500g Heart Smart Beef Mince
2 tsp ground coriander
1 tsp each ground cumin and dried
oregano
½ tsp ground paprika
300g Woolworths Select Chunky Salsa
½ cup water
6 Woolworths Select Tortillas
1 small avocado, halved, stone and
skin removed
½ cup light sour cream
corn chips, to serve
1 Heat oil in a large saucepan over medium
heat. Add onion and capsicum. Cook
for 4 minutes or until tender. Increase heat
to medium-high and add mince. Stir with a
wooden spoon, breaking up any lumps, until
mince is well-browned. Add coriander, cumin,
oregano and paprika. Stir until well combined.
Pour salsa and water over mince, stirring
until mixture is combined and comes to the
boil. Reduce heat to low and simmer for
15 minutes or until thickened. Cool slightly.
2 Preheat oven to 200°C. Lightly grease
a 6-hole Texas muffin pan. Place tortillas,
two at a time, into microwave and cook on
high for 5 seconds to soften. Using a pair
of scissors, make a cut from the edge to
centre. Shape into a cone and ease into
muffin hole to form a pie shell. Repeat
with remaining tortillas.
3 Divide mince mixture into tortilla shells.
Bake for 10 minutes or until tortillas are
crisp. Meanwhile, roughly mash avocado
flesh. Combine with sour cream. Transfer
pies to serving plates and top with a little
avocado cream. Serve with corn chips.

Per serve: 33g protein, 24g fat (8.5g
saturated fat), 31g carbohydrate, 5.5g
dietary fibre, 1970 kJ (470 Cals).
variationBeef mince tacos
Serves: 6
Finely shred ½ small iceberg lettuce and
dice 4 tomatoes. Make mince filling as
per pie recipe. Heat 12 Woolworths
Select Easy Fill Taco Shells as per packet
instructions and fill with lettuce, tomato and
mince mixture. Top with grated tasty cheese
and avocado sour cream mixture. Serve.
Pear & sultana crumblePreparation: 15 minutes
Cooking: 30 minutes
Serves: 6
5 pears, peeled, quartered, core removed
and sliced
¼ cup water
2 tbs caster sugar
⅓ cup sultanas
¾ cup plain flour
¼ cup shredded coconut
125g butter, cubed, chilled
⅓ cup flaked almonds
⅓ cup firmly packed brown sugar
1 tsp ground cinnamon
thick cream or ice-cream, to serve
1 Preheat oven to 200˚C. Place pears,
water and sugar into a saucepan over
medium heat. Bring to the boil, cover and
reduce heat to low. Simmer for 8-10 minutes
or until pears are tender. Drain. Stir in
sultanas. Spoon mixture into a 6-cup
capacity baking dish.
2 Place flour and coconut into a bowl
and using your fingertips rub butter in
until mixture resembles fine breadcrumbs.
Stir in almonds, brown sugar and cinnamon.
Sprinkle crumble mixture over pears. Bake
for 20 minutes or until golden. Serve with
cream or ice-cream.

Jelly Crystal Pack
1 cup boiling water
¾ cup apple juice
2 tbs lemon juice
1 bunch mint, leaves removed,
finely chopped
½ bunch rosemary, sprigs
removed, finely chopped
1.5kg leg of lamb, trimmed
4 garlic cloves, sliced
750g potatoes, peeled, cut into
pieces
500g sweet potatoes, peeled,
cut into pieces
3 parsnips, trimmed, peeled,
cut into pieces
1 tbs olive oil
1 tbs plain flour
1 cup stock or water
1 Place jelly crystals into a
heatproof bowl. Add boiling
water and stir until dissolved.
Add apple and lemon juices.
Cool. Cover and refrigerate for
45 minutes or until mixture is
starting to set and resembles
egg white. Stir mint and
rosemary into jelly. Season with
salt and white pepper. Spoon
into a sterilized 2-cup capacity
screw top jar. Chill overnight or
until set.
2 Preheat oven to 200°C.
Using a small sharp knife
make small incisions into lamb.
Insert garlic slices. Season
with sea salt flakes and freshly
ground black pepper. Place
into a roasting pan and roast
for 45 minutes. Toss vegetables
in a large bowl with oil to coat.
Add to roasting pan around
lamb and cook for 1 hour.
3 Remove lamb and
vegetables from pan and
cover to keep warm. Drain most
of the pan juices from the pan,
leaving 2 tbs. Add flour and stir
well over medium heat for
1 minute. Gradually stir in stock
or water until smooth. Boil,
stirring until thickened. Slice
lamb. Serve with vegies, gravy
and mint and rosemary jelly.

Preheat oven to 180°C. Line a 20cm x 30cm
cake pan with baking paper. Prepare 1 Home
Brand Chocolate Cake Mix 340g as per
packet instructions. Pour into pan and cook
for 30 minutes until cake is cooked when
tested with a skewer. Cool for 5 minutes,
transfer to a wire rack to cool completely.
Remove 2L Home Brand Vanilla Ice Cream
from freezer and allow to soften slightly. Cut
out 6 x 7cm rounds from cooled cake and
cut each in half through the centre. Place 6
rounds onto serving plates. Top each with
a good scoop of ice-cream and flatten with
a knife. Top with the remaining cake rounds
and drizzle over Home Brand Chocolate
Flavoured Topping. Serve immediately.

have great flavour. T-bones are
best cooked medium-rare.
Cooking them more than this
tends to dry out the meat,
making it tough.
fresh tips:❋ Cooking time will vary depending on
the thickness. Cook a 2cm-thick piece
of steak for 2-3 minutes each side for
rare, 4 minutes each side for medium,
and 5-6 minutes each side for well-done.
❋ Only turn the steak once! Repeated
turning will dry it out. Always use tongs
not a fork to turn the meat. When you
pierce the meat the juices escape. Turn
the steak when the juices start to bead
on the surface.
❋ To test if your steak is done, press
the centre with the back of the tongs.
Don't cut with a knife. The steak will feel
soft if it's rare, slightly firmer and springy
when it's medium and very firm when
it's well-done.
❋ Transfer steak to a plate, cover loosely
with foil and set aside for 3-5 minutes to
rest. The juices will settle and the muscle
fibres relax, which ensures the steak is
tender.
❋ If you like the criss-cross pattern often
seen in steak restaurants, it’s not hard to
do. As soon as the first side has cooked
to a golden brown colour, lift the steaks
and spin 90° or a quarter turn. Cook for
30 seconds to 1 minute before turning
over and cooking the other side.

Beef farmer David Brown
is a man who knows how
he likes his steak cooked.
“Medium rare and turned
only once. And i don’t put
salt or anything else on it
otherwise you can’t taste
the beef,” is his immediate answer.
David, who enjoys cooking his favourite
steak himself on the barbecue, is just as
particular when it comes to producing
beef for the retail market.
“My aim is always to produce the
best beef for the customer,” he says.
“Woolworths really understand the
problems of farming and the efforts I go
to so I can produce good quality beef.”
David and his wife Diane live on
‘West Talgai’, a 2500-hectare property
in Queensland’s eastern Darling Downs
district. “We picked this area because
it had the ideal climate for cattle — the
frosts are not too severe,” he explains.
“We are having a wonderful season at the
moment which is great to see. The last
two have been the best for 20 years, the
best since we’ve owned the property.”
The Browns specialise in producing
cattle for Woolworths — last year they
fattened approximately 5,000 head of
British Cross Beef steers. Fed a diet that
includes grains such as corn, wheat and
oats, the meat has a rich marbling which
ensures it is full of flavour and doesn’t dry
out during cooking.
But not all of the Brown’s property is
dedicated to farming beef cattle. “We
lease out about 50 hectares to another
farmer who is supplying Woolworths with
onions,” says David.
It would be hard to find a better
example of paddock-to-plate cuisine —
a perfectly barbecued steak with a pile
of crisply fried onions on the side.
“Yes, it’s a good combination,” says
David with a laugh and it’s not hard to
guess what might be on the dinner table
at the Brown family’s place tonight.
HOW TO COOK
❋ Heat a frying pan or barbecue until hot.
It should be hot enough so that the meat
sizzles when you place it in the pan or on
the grill.
❋ Don't crowd the pan or barbecue.
Leave some space between steaks as
crowding reduces the heat and the steaks
can stew as the juices are released.
HOW TO PREPARE
❋ Steaks should be near room temperature;
cold meat straight from the fridge takes
longer to cook.
❋ Oil the meat and not the pan or barbecue.
This will prevent it from sticking. Season
just before cooking.

Smoked salmon mousse Preparation: 10 minutes Makes: 2 cups
Dissolve 1 tbs powdered gelatine in
¼ cup boiling water. Cool. Combine
250g Woolworths Select Spreadable
Cream Cheese, 250g smoked salmon
slices, ¼ cup lemon juice, flesh of
1 avocado and ½ tsp Tabasco sauce
in a food processor. Process until smooth.
Add cooled gelatine and process until
well-combined. Stir through 1 tbs finely
chopped chives and freshly ground black
pepper. Spoon into a serving bowl and
refrigerate for 1 hour. Serve with crackers.
Prawns in pyjamas (top)Preparation: 25 minutes Makes: 24
Peel 24 Australian Cooked Black Tiger Prawns and devein. Spoon ½ tsp
Wattle Valley Chunky Dips Exotic Thai with Cashew onto the centre of
24 Shanghai Wanton wrappers. Top with a prawn and brush edges with
a little water. Fold over to form a triangle, pressing edges together to seal.
Pour enough canola oil into a saucepan to half fill and heat over medium heat
until hot. Lower prawn parcels a few at a time into oil and cook until golden.
Remove with a slotted spoon and drain on paper towel. Serve immediately.

2cm wide strips and wrap around the centre of each of 14 peeled Australian

Moroccan magic Combine 1 cup Black Swan Low-
Fat Greek-Style Natural Yoghurt,
2 tsp ground coriander, 1 tsp
ground cumin, 1 tsp paprika,
½ tsp cinnamon and 2 crushed
garlic cloves in a bowl. Stir until
well combined. Add ¼ cup finely
chopped fresh mint leaves.
Season with salt and pepper. Add
500g diced chicken thigh fillets,
turning to coat well with marinade.
Cover and refrigerate for 30 minutes
if time permits. Thread chicken onto
pre-soaked bamboo skewers then
cook in a non-stick pan or barbecue
hotplate for 3-4 minutes on each side
or until cooked through. Serve with
couscous and lemon wedges.
Indian inspirationCombine 1 cup Black Swan Low-
Fat Greek-Style Natural Yoghurt,
2 tbs purchased Korma curry
paste, 2 tbs lemon juice and ½ cup
coriander leaves, roughly chopped
in a glass bowl. Stir to combine. Add
500g diced lamb, coating well with
marinade. Cover and refrigerate for
30 minutes if time permits. Thread
lamb onto pre-soaked bamboo
skewers then cook in a non-stick pan
or barbecue hotplate for 3-4 minutes
on each side or until cooked through.
Serve with naan bread.
Italian-stylePut 1 cup Black Swan Low-Fat

small food processor with ⅓ cup semi
dried tomatoes and 2 tbs pitted
green olives. Pulse until mixture forms
a thick paste. Transfer to a glass bowl.
Stir through ¼ cup roughly chopped

coating well with marinade. Cover
and refrigerate for 30 minutes if time
permits. Thread pork onto pre-soaked
bamboo skewers then cook in a

cooking with salmonFollow these essential tips and you’ll have perfect salmon every time – whether you want to bake it, pan-fry it or take it outdoors to the barbecue.
BARBECUE• Salmon is delicate, so cook on the
barbecue with care – never use a
high heat.
• Remember, it’s better to slightly
undercook the fish, as it will retain heat
and continue to cook after being removed
from the barbecue.
• Heat an oiled barbecue hotplate or
grill to medium-high heat. Cook salmon,
skin-side down, for 2 minutes, then turn
and cook for 2 minutes for rare or until
done to your liking.
PAN-FRY• For perfect pan-fried salmon fillets,
cook the skin-side of the salmon first
(or the side that will be presented if
using skinless fillets).
• Melt equal quantities of butter with oil
in a non-stick frying pan over medium
heat (don’t allow the pan to get too hot
or the butter may burn). When the butter
has melted and the pan is sizzling, add
the fillets, 2 at a time – don’t overcrowd
the pan.
BAKE• Salmon can be served rare in the centre
or cooked through. Make a small cut to
see if it’s done to your liking, or press in the
centre – it will be firm to the touch when
cooked through.
• Put salmon fillets on a lined tray. Spray
with oil, season and bake at 200°C for
10-15 minutes.
• If desired, mix chopped herbs with butter,
then roll up in baking paper to form a log.
Chill until firm, slice and use to top salmon
before or after baking.

❋❋Men are beginning to bend the rules, as the
number of stay-at-home dads continues to
increase. While they may still be a minority by a
long margin, figures from the Australian Bureau
of Statistics last year showed a 35.7 percent rise
in the number of fathers choosing to stay home
to raise their families (12,000 nationally).
Of course, mums far outnumber them (230,000
across Australia) but the daddy day care
trend continues to grow, as many fathers are
beginning to see just what they’re missing out
on by following tradition as breadwinners.
Caring for kids is a wonderful experience with
challenges, pitfalls and rewards aplenty, but
there are extra hurdles for dads who choose

Society has certain expectations and men
who break the mould are often viewed with
suspicion, at least until they prove themselves.
Most home dads admit to facing difficulties in
the beginning, as the transition from paid work,
to spending long hours alone with children, can
lead to feelings of isolation and a loss of identity.
However, while it may not suit everyone, those
dads who do opt to mind the kids while their
partner works, usually report strongly positive
feelings of bonding with their children and many
valuable life lessons learned.
There’s very little in the way of official help out
there to make their lives easier, so it can be
pretty much trial and error.
While mothers’ groups abound, finding a fathers’
circle, or even a mixed gender organisation,
where dads are openly welcomed, can be tricky.
Helpful websites for mothers are a dime a
dozen, but Australian men have few specific
online resources to fall back on.
Even public facilities can be problematic, as
dads entering parenting rooms to feed or
change babies are sometimes met by wary
mothers, who feel these are exclusively female
environments, especially when breastfeeding.
However, modern males are a hardy bunch
and the home dad bandwagon is slowly
gathering momentum.
Once they have learned the ropes, mastered the
routine of juggling housework with child-rearing
and forged support networks, many dads vow
they’d never have it any other way.

All those extra kisses and cuddles are priceless, but there are other rewards too.
Think about it: you are your own boss, working hours are flexible, you just might
get a siesta (on a good day). Work may be demanding, but it’s often less stressful
and there’s no commuting time. You get to see your kids grow up and share special
moments, such as their first smile, steps and words. You learn more about patience
and yourself than you could ever imagine.
Dr Timothy Sharp, of The Happiness Institute, advises dads facing difficult days
to look at all the good things in life – yourself, your loved ones, your world.
“Actively work on making relationships in your life, all of them, as positive as
possible,” he says. “Focus on the best in others, praise as often as possible,
communicate often and well and practice forgiveness and acts of kindness.
Other people matter, so happiness is not just about feeling good, it’s also about doing
good and engaging with others. Look for people in a similar situation and with similar
interests and find ways to connect with them,” he says.

DO:• Do socialise, seeking like-minded people with children. Even
if you get a frosty reception from a few mums at playgroup, let
them see you’re a devoted parent and watch the ice melt.
• Do accept offers of help and support – no man is an island.
• Do get organised, it makes life so much easier.
• Do treat this as a real job and you’ll be the best you can.
• Do accommodate your partner – remember what it was like
as part of the workforce?
• Do expect flak – being a stay-at-home dad means breaking
down stereotypes and there will always be those who resist.
DON’T:• Don’t feel you have to justify yourself – to anyone.
• Don’t try to be perfect. Cut yourself some slack and lower
your expectations, not even mummy is perfect.
• Don’t forget to play – it is, after all, part of the job!

How to make it:
1 Scoop out the seeds

Spring is finally here. Bare
twigs on trees begin to
show off their vibrant green
sprouts of new growth and
early flowering shrubs such
as azaleas burst forth with a dazzling
display of colour. Now is the perfect time
to shed your winter woolies and spend
time in the garden admiring the wonderful
wonders of nature.
Azaleas are one of the most popular
flowering shrubs in the world, and can
thrive in all but the tropical parts of
Australia. Azalea flowers are classified
as singles with a single row of petals
or doubles with multiple rows of petals
giving a ruffled appearance. They come
in colours of pure white through to soft
blush pink tones, vivid cerise to deep
reds and purples. There are even some
bi-coloured varieties available.
Most azaleas will grow in a sunny
or semi-shaded position. Try to avoid
exposure to hot afternoon sun. The
more vigorous growing single types
perform well in the garden and can be
trained into beautiful flowering hedges.
The pretty double flowering types can
be slower growing and are also well
suited to pots or patio tubs. The variety
“Kirin” which has tiny delicate musk pink
double flowers can be groomed to form
a bonsai. During their flowering period it
can be brought indoors to admire.

Spring clean your life:Just by organising your personal space,
your bedroom and wardrobes, you will feel
happier and more in control, knowing where
everything is. This inevitably saves time,
but also gives you a boost, a therapeutic
lift, which comes from getting rid of old
things you never use, especially if they go
to a good cause. Even if you don’t manage
to throw out much stuff, you will feel you
have more space when everything is tidily
stacked and stored.
A good way to start is by getting four large
cartons or crates, but you can even just
allocate four spaces on the floor for this.
Begin going through your room and
wardrobes, placing items into the following
categories:
Bin - for anything that’s broken or utterly
useless. Mementoes and items of sentimental
value are allowed, but be realistic.
Charity or sell - This is for items you
barely use, which might be more functional
elsewhere. This one requires a fair amount
of determination. Call upon your generous
nature and ask yourself whether an item
might benefit someone else. If you really
don’t feel like giving it away, consider how
much you’d get for it by selling through
a newspaper advertisement, community
noticeboard, garage sale, or the internet.
Storage - These items are things you
know will be required at some point in the
future, such as out of season clothing and
bed linen. Be sure to write out detailed
inventories and attach them to the storage
box, so you know where to look when
you need them. No matter how much you
think you’ll remember, it’s amazing what
time and a bit of dust can do to disguise
things in boxes. Large clear plastic storage
containers with close-fitting lids are ideal for
storage, as they protect the contents from
humidity (which leads to mildew), pests and
even go a long way towards preventing that
musty smell which affects stored goods.
Depending on what’s inside the box, you
might consider slipping some cotton wool
sprinkled with a few drops of lavender
oil, eucalyptus, tea tree or citronella oil
inside, before securing the lid, to ensure
everything stays sweet smelling. This will
also help ward off insects, including moths
and cockroaches. Vacuum Space Saver
Bags, available at your local Woolworths,
are great for winter woolies, quilts and
blankets, especially in smaller areas.
Find a home - The final category for
sorting should be the smallest, but
inevitably starts out much bigger. It
must include only essentials required
on a regular basis. Organising and finding
homes for these things can take longer, as
there are tough decisions to be made which
will affect you on a daily basis.
Getting organised:By keeping everything it its place, your
bedroom will truly become your sanctuary,
not just a place to fling things out of sight.

• Keep only the clothes you wear regularly
in your wardrobe. These can be regularly
rotated with clothing from storage.
• Get the right coat-hangers for the job.
Better quality hangers result in your clothing
hanging correctly, without becoming

specifically made for the purpose and
you’ll almost certainly save time on ironing.
• Sturdy wooden or metal hangers are
best for heavier items and if you have an
extensive wardrobe, consider colour coding

together, place all black socks in the same
drawer.
• Smaller clear containers come in handy
here too, to sub-divide. For instance, a
large drawer can hold undies as well as
socks and hoisery, separated by a divider or
placed in boxes.
• Boxes are also great for smaller bits and
pieces, such as jewellery, nick-knacks
(though you should definitely limit these)

Baked apple & croissant puddingPreparation: 20 minutes
Cooking: 40 minutes Serve: 8
10 Mini Croissants*
400g can Woolworths Select Sliced Apple
⅓ cup sultanas
2 eggs
½ cup skim milk
500g container lite pouring custard
2 tbs slivered almonds
1 tbs brown sugar
*Only available where made in store.
1 Preheat oven to 180°C. Grease an 8-cup
baking dish. Tear each croissant into thirds
and roughly scatter half over the base of the
dish. Top with apple and sultanas and finish
with remaining croissants.
2 In a large jug, whisk eggs and milk
together until smooth. Add custard
and whisk again until combined. Pour over
croissant mixture, pushing croissants down
into the liquid. Set aside for 15 minutes.
3 Scatter almonds and sugar over top of
pudding and bake for 40 minutes until
golden and custard is just set. Spoon into
serving bowls while warm and serve.
