INTRODUCING OUR NEW CHAIR J.P. Northrop has been the
Technical Sales Represen-
tative and Specialist for An-
ton Paar for over six years. He
is responsible for sales and
assists the technical support
group throughout the Mid-
Atlantic and Northeastern
United States primarily focus-
ing on the beverage and
chemical production indus-
tries.
Prior to Anton Paar, J.P.

rep for Shimadzu Scientific as
well as (Teledyne) Isco, Inc.
Before Isco, he worked
in the lab as a medicinal
chemist for the Metabolic
Diseases Group of Bristol-
Myers Squibb in Hopewell,
NJ.
J.P. has an ACS-certified
Bachelor's Degree in Polymer
Chemistry from The College
of William and Mary in Vir-
ginia (1996). He has a Mas-
ter’s Degree in Organic
Chemistry from the Universi-
ty of Delaware (1999) as well
as a Master’s of Business
Administration in Finance
from the Fox School of Busi-
ness, Temple University,
Pennsylvania (2004).
In addition to the ACS, J.P. is
a member of the Master
Brewers Association of the
Americas and has presented
many papers, posters and
talks to both organizations
over the years. He has been
married to his wife, Katrina,
for 11 years and they live
with their two sons, Rafe
(three years old) and Gage (6
months) in North Wales, PA.

From
The
Chair
J.P. Northrop
It was with trepidation that I
agreed to run for Chair-Elect
of the Board of Directors last
year. At that time, my family
was expecting our second
child and, needless to say, I
had some serious concerns
about the time that the added
obligations would entail. Now
I sit at my desk writing my
first “From the Chair” column
with my four-month-old in
one arm as I type with the
other hand… Like each of
you, I have multiple commit-
ments that pull me in multiple
directions. I, like you, also
only have 24 hours in a day,
but dedicating some of that
time to the ACS is important.
We all spend good money
maintaining our membership
with the Society. Let’s start to
get something more than
C&EN and JACS out of it.
Let’s use our membership to
network, drive interest in fu-
ture generations, and use our
collective voices to help all
chemists in our region. With
many of us putting in a bit of
effort, we can have a huge
impact on our region.
What kind of work can be
done? Where do our efforts
make an impact? In which ar-
eas can you volunteer? That’s
easy:
Judging Science Fairs/Post-
er Sessions – The ACS Phil-
adelphia Section has multi-
ple science fairs and poster
sessions throughout the
year. Judges are often need-
ed and volunteers to assist
during the program itself.
The first of these poster ses-
sions will be the Under-
graduate Poster Session at
Drexel University on
Thursday, February 21st.
PAGES™ – Philadelphia
Area Girls Enjoying Science
– This program specifically
encourages young girls in
grades 5 through 7. Mini-
conferences are held twice a
year and volunteers are al-
ways needed.
Career Services Division –
Quarterly networking events
and biannual workshops
help our members learn new
skills and develop their net-
works. Speakers for work-
shops are always needed.
Philadelphia Science Fest-
ival – This weekend fair on
the Parkway is a great way
to get local people interested
in science, especially kids.
They love to paint with
shaving cream, make self-
inflating balloons, etc. Vol-
unteers are needed to assist
during the one-day event.
All of these programs and
many others have been going
on for years. Most of them are
run by the same dedicated
(small) group of people. A bit
of effort on our membership’s
part could have a huge impact
on our members and chemists
(including future chemists). If
even just 1% of our 5,201
members became more active,
it would mean over 50 new
people helping the ACS Phil-
adelphia Section become a
more influential and active
organization in our local area.
Every little bit helps and I am
calling on each of us to spend
a few minutes this next month
volunteering and helping. I
look forward to seeing and
hearing from members as the
year progresses and please do
not hesitate to contact me di-
rectly if you have any com-
ments.

SPEAKER’S ABSTRACT AND BIOGRAPHY
Dr. Michael H. Tunick
US Department of Agriculture, Eastern Regional Research Center, Wyndmoor, PA
Molecules to Mozzarella: The Chemistry of Cheese
Abstract: Coagulation of milk, removal of whey, and ripening are all required in making
cheese, and chemistry is involved in each step. This talk describes the procedure from raw milk
to final product, and illustrates the differences between cheese types, including the development
of the many flavors in cheese.
Biography: Dr. Michael H. Tunick received a BS
in Chemistry from Drexel University in 1977. As
an undergraduate, he was a student trainee at the
Eastern Regional Research Center of the US De-
partment of Agriculture in Wyndmoor, PA, and
worked on cocoa butter substitutes from beef tal-
low. He was hired as a chemist after graduation
and performed research on treatment of leather
tannery waste with the Hides and Leather Labora-
tory until 1983, when he was transferred to what
is now the Dairy and Functional Foods Research
Unit. He pursued a PhD in Physical-Analytical
Chemistry on a part-time basis during this period,
receiving the degree from Temple University in
1985. He became a research chemist in that year
and has been involved in a number of projects,
including detection of mislabeled cheese, devel-
opment of low-fat Mozzarella for the National
School Lunch Program, and research on Hispanic
cheeses and extruded whey proteins. He is cur-
rently looking at bioavailability of active com-
pounds in milk and is also investigating com-
pounds in milk from cows fed conventionally and
on pasture. He is Secretary and Past Chair of the
American Chemical Society’s Division of Agri-
cultural and Food Chemistry.

RESULTS OF THE CATALYST READERSHIP SURVEY
In 2012, a survey was done of the Catalyst readership and the Communications Committee re-
viewed the results and comments. One of the most prevalent themes was readers wanting more
information about members from the Philadelphia Local Section. Since 2009 the American
Chemical Society has been selecting members as ACS Fellows. Starting with this issue a short
write up of a Philadelphia Local Section ACS fellow will be included in each issue.
There was also some interest in providing profiles of local chemical companies and some local
history of chemistry. During 2013 the Committee will be soliciting some articles in both areas
of interest. Anyone interested in submitting articles can email them to Libby Harper, Adminis-
trative Assistant for the Philadelphia Local Section, at [email protected].
There were some requests for descriptions of some of the local organizations. In each issue of
the Catalyst a Calendar of Events is provided on the last page. Most of these events include up-
coming meetings for many of the organizations. Along with the meeting information a URL of
the organization’s Web Site is included. The Web Sites provide a wealth of information about
the organization.

Your Expertise: How Much to Give Away
A Panel discussion, led by Dr. Marc Halpern
Abstract: Nearly every consultant has encountered prospects that try to get as much help as
they can without paying for it. To some extent, one has to share some information in order to
convince a prospective client to hire him or her. So the issue becomes how much should you
give away, and how do you handle prospects that appear to be trying to get something for noth-
ing. This is particularly a problem for engineers who must write detailed proposals. This has
been the subject of an ongoing discussion on CCN’s LinkedIn site. We hope to have some of
those in this discussion as part of the panel, as well as our own members.
Biography: Dr. Marc Halpern is the founder and president of PTC Organics, Inc. He has pro-
vided phase transfer catalysis services at 238 industrial sites in the US, Europe and Asia. Dr.
Halpern authored several books including the best-selling PTC book Phase-Transfer Catalysis:
Fundamentals, Applications and Industrial Perspectives and is editor of the journal Industrial
Phase-Transfer Catalysis. Marc received his PhD from The Hebrew University of Jerusalem.
Prior to becoming a consultant, he was Director of R&D at Sybron Chemicals.

B. Chair–Elect J.P. Northop [email protected].
The Ullyot Committee began considering 38 names but had reduced the list to 4 choices. The
Committee has received no response to date from the Committee’s first choice and is considering mov-
ing along to the second choice.
The Ullyot Committee consists of representatives of the Philadelphia Section, the Delaware Sec-
tion, University of Pennsylvania Chemistry Department, University of the Sciences and the Chemical
Heritage Foundation.
J.P. is continuing to look for speakers for next year’s meetings.
J.P. is looking for a speaker for the April 18th
Undergraduate Award who can talk to students
about careers in chemistry.
The January meeting will be on the Chemistry of Cheese at DiBruno Bros., 2nd
Floor, 1730
Chestnut Street, Philadelphia, PA 19103, (215) 665-9220. www.dibruno.com.
Cheese and finger foods.
ACS members and the general public are invited. Need to determine how much to charge.
C. Secretary A. Heldon
Noting National’s newly created Recognition of Local Section Outreach Volunteer of the Year,
A. Heldon inquired as to nominating Deb Kilmartin. R. Ewing noted that the award was not retrospec-
tive beyond the past year. Who and how the awardee would be determined was discussed. It was decid-
ed to invest R. Ewing and J.P. with authority to make a choice after consultation with the Awards
Committee, and that the Chair would advise National of the choice. It was so moved and passed with-
out nays or abstentions.
D. Treasurer D. Cichowicz
We received $1080.00 commission from National for signing up new members. Officer’s ex-
penses are a bit over budget. We received reimbursement for the August National Meeting. Our in-
vestments are doing well.
Pursuant to Motion, the Treasurer’s report accepted without nays or abstentions.
Note: Reimbursement requests must be submitted to the Office by December 20, 2012.
E. Next Year’s Budget
A number of known expenses do not appear in the proposed budget.
Funding for the poster session should appear as a separate line item.
Delete the grad. school forum line item.
January 2013 Page 23
the Catalyst
Money for the poster awards should not come out of the endowment.
Appropriation(s) for the Bylaws mailing should appear as one or more items.
Funding for the Bylaws mailing should come through the Tellers Committee.
A physical mailing, to every member of the Section, of a package containing the proposed by-
law changes, ballot, return envelopes and instructions will encompass postage, printing and bulk mail
service costs and will be very expensive.
4. Other Business
A. Cost of ACS Journals for Undergraduate Institutions D. Cichowicz
The costs of ACS journals for undergraduate institutions is going up from $11K to $20K next
year and to $30K the year after. These costs are for electronic editions. The increase for graduate insti-
tutions is substantially less. Archive access will only go back to 1996.
Journals are required for ACS certification of a university’s chemistry program.
It was the consensus that the Section needs to formulate a plan of action. 1) Collect relevant in-
formation, 2) determine who to contact at National and 3) devise a response.
B. Hands-On Chemistry Event at 2013 Boy Scout Jamboree
D. Cichowicz [email protected]
D. Cichowicz reported that there will be a Hands On Chemistry Event at the Boy Scouts of
America (BSA) National Jamboree in 2013. About 43K are expected to participate. The Jamboree will
be in West Virginia. Given the large audience, this is an important opportunity to attract future chem-
ists and educate young minds about the scientific method and about chemistry.
D. Cichowicz is looking for funding for the event from the ACS. The bulk of funding is hoped
to come from National as a grant such as an Innovative Program Grant. D. Cichowicz also requested
$1000.00 “seed money” from the Philadelphia Section to be used to pay the food, supplies, shelter and
travel of participants in the Chem. Event who will be coming from the Philadelphia area.
Some Board members expressed reservations as to the propriety of appropriating funds to this
event because of controversial BSA policies. After pious discussion among the Board the request was
withdrawn.
