TOMATO AND MOZZARELLA SALAD WITH FRESH GADREN GREENS

The best way to eat tomatoes fresh from the garden is as simple as possible. This salad is just that and with the great garden greens of the dry… Serves 3-4

INGREDIENTS • 5-6 Roma tomatoes fresh from

the garden

• A handful of Mizuna, Rocket, spinach and other dry season garden greens

• About 250g Local or other

mozzarella or boccocini cheese • A splash of oil • Salt an pepper • Sprouts

WHAT TO DO Cut the tomatoes, wash the greens and split them, cut the cheese Pour over the olive oil, salt and pepper. Add in the sprouts and mix it all up very gently. Add in herbs like basil if you have them too. That’s it. Too easy. Remember the most important thing about recipes is they are something to inspire you, not strict instructors, use whatever you have and your imagination!
