Green is the colour. From Gozo’s valleys to the meadows and hill tops, the islands landscape is a fresh and vivid one. Not that summer is not a nice time to be in Gozo, but from autumn to spring one can really experience the real Gozo. A smaller version of the emerald island, but at the centre of the Mediterranean! As school is back in, many will already enjoy the mid-term holiday coming up this weekend. As many will cross over to Gozo for a short break, many will also choose to pay their respects at the many cemeteries that dot the island. In fact Fr Bezzina has provided us with an interesting feature on Gozo’s November rituals. In our ‘What’s On’ section one can see
the many activities that will be going on throughout the month of November. From opera to dance shows to band concerts, November is panning out to be a busy month. We recommend that you seriously consider seeing the dance show ‘truly unforgettable’ that will be held at the Astra Theatre on 13 November. At Arkadia we’re not getting much sleep as we start gearing up for the Christmas shopping rush. NEXT is now open on level 2. Tom Tailor has just refurbished its shop-in-shop within our department store. And soon ALDO will be the next brand to join our ranks with the latest collection of shoes at Boulevard. At Arkadia newness finds a whole new meaning. Enough said. We just hope that you have a wonderful time in Gozo.

Bone Buns & November Rituals
The month of November was hardly known by its proper name by the old folk of Malta and Gozo. It was simply referred to as Tal-Erwieħ, literally the month of the Souls. The first of November is All Saints’ Day. Many people flock to the cemetery to decorated graves with flowers and candles. For on the morrow is All Souls’ Day, a day during which prayers are offered for all the pious dead.
Christian denominations celebrate the solemnity of All Saints and the feast of All Souls because of the fundamental belief that there is a prayerful spiritual communion between the living and those who have died in peace with God. Those who passed away and
are with God are held to intercede with the Divine on behalf of the living. The living, on their part, pray to the saints and remember all who have died, particularly their deceased relatives and friends, in intercessory prayers to God.
The origin of the festival of All Saints dates back to the year 610, when Pope Boniface IV consecrated the Pantheon at Rome – the temple dedicated to all the gods – to the Blessed Virgin and all the martyrs. The feast, eventually, began to honour all the saints and it has been celebrated at Rome ever since. Many European

The recently introduced festivity of the Halloween on the night of 31 October, the eve of All Saints’ Day, is nothing but an addenda to the Christian custom. The latter is commonly celebrated by children who dress in costume and solicit candy or other treats door-to-door. The name is a contraction of All Hallow Even, the eve of the day of all the Holies.
In keeping food and delicacies with the spirit of the month of November, it dawned to some confectioner to prepare cakes in the shape of bones – għadam tal-ħelu in Maltese. The local name might have originated from the Italian Ossi di Morto, that is Bones of the Dead. This tradition, under one form or another, can be found throughout Europe.
In Cheshire and Shropshire, England, many people used to go out souling on All Souls Day; they went begging a special cake that was once baked on that day. So as to prepare the għadam tal-ħelu, one needs a cup and a quarter of flour, half a cup of sugar, 300 grams almonds, 30 grams pine nuts, one tablespoonful butter, a shot glass full of brandy or grappa, the grated zest of half a lemon, cinnamon, and one egg and one egg white lightly beaten.
First, the almonds are blanched, peeled, and chopped finely. Then all the ingredients, except the egg, are
mixed in a bowl with a spoon until there is a firm dough. One hands and work surface are then dusted with flour and the dough rolled out between one’s palms to make a “snake” about a two centimetres thick. This is cut diagonally into five centimetres-long pieces. They are then placed on a greased and floured cookie sheet, brushed with the beaten egg, and baked in a 330-350 oven for about 20 minutes. They are to be serve cold. As the cake is dry and hard, it is best served with something to drink.
Children were regaled another food treat on 11 November, Saint Martin Day. Young children of yore used to sing Gewz, lewz, qastan, tin, kemm inħobbu ’l San Martin – Walnuts, nuts, chestnuts, and figs, O how I love Saint Martin. It was mandatory for parents to treat children with these dried fruit on that day.
The two customs have been recently revived in some establishments in Gozo – so be on the lookout if you are visiting Gozo these days.

Braised Calves Liver Sat On A Bed Of Stir Fry Vegetable With Balsamic Glaze Mushroom
MethodCut all the peppers, onions, and garlic into strips, cut the mushrooms into quarters. Cut the liver into thin steaks and dust them into flour. Pan fry gently on each sides, heat a wok and place all the strips of vegetable together, cook for few minutes. Remove the liver, leaving it a bit pinkish, place the cooked vegetable on the centre of the plate, add the cooked liver on top of each other. In a pan cook the quartered mushroom with rest of the onion, when the mushroom is soon ready add the balsamic vinegar and stir for few minutes. Dress the glazed mushroom around the liver and place the remaining juices on top of the liver. Garnish with fried thyme and bunch of parsley.

MethodSlice all the vegetables into strips, cut the beef thinly as possible. Heat a wok, start by frying the beef, than add the vegetable continue cooking for few minutes, add the soy sauce and sweet chili keep on stirring. Remove from heat, place the stir fry on the middle of the wrap, and roll. Place the stuffed wrap on a griddle and leave to cook for 2 minutes on each side. Cut in half, plate add some salad and dress with vinaigrette, tomato and olive.

MethodCut the banana into slices, start by filling the first layer of the glass. Than add a layer of yoghurt, next the muesli. Continue filling each layer until the glass is full. Top it off with chunks of banana. Refrigerate for at least 2 hours. Slice the tangerine, grapes and apple and place them at the side, plate some orange compote.
