Devouring the
Squid. It doesn’t sound so appealingright off the bat, now does it? Butwhat if I told you it was breaded
and deep-fried? Don’t tell me that doesn’tspark your interest, because we all knoweverything tastes better that way! Well, theproof is in the pudding. Calamari has beena favorite among diners for decades, andfor good reason! It consists of batter-coat-ed, deep-fried squid (usually fried for lessthan two minutes to prevent toughness)served plain, with salt and lemon, or witha special dipping sauce for seasoning.
The word calamari is the plural form ofthe Italian word for squid, calamaro, andcalamari itself is quite popular inMediterranean cuisine. However, over theyears it’s crossed cultural boundaries aswell, and today you can find calamari atthe forefront of many restaurant menus.
Therefore, this week, craving all thingscalamari, I decided to pay a visit to a fewof my favorite Ono, You Know establish-ments eager to take a bite out of simplecalamari goodness! It doesn’t get muchbetter than this!
Eggs ‘n ThingsEggs ‘n Things
makes waking upbefore the crack ofdawn a walk in thepark — because,really, who canresist everythingfrom pancakes to
crepes, omelets, wafflesand more? No foodie I know of, and cer-tainly not me! But don't think this break-fast lover’s paradise only caters to earlybirds, because here at Eggs ‘n Things,you’ll find many alluring dinner specials(available from 5 to 10 p.m.) as well. Andbeing a self-proclaimed food enthusiast, I
will admit that I have an undying affectionfor the eatery’s Calamari Steak ($13.95).If you haven't tried it yet, you must! It’ssuperb!
General manager Michael Skedeleskipresented me with not one, but threestyles in which this most sought-aftersteak can be prepared: Sauteed, Cajun-style or Furikake-style.
“Cajun Calamari Steak is most request-ed by our customers,” Skedeleski says,noting that the Cajun seasoning undoubt-edly provides a bit of a kick.
“Locals love Furikake Calamari Steakbecause it has a nice Asian flair to it,”adds nighttime kitchen manager PeterKauleinamoku.
So, whatever your choice, do know thatEggs 'n Things Calamari Steak is bound tostir up an appetite, as the steak itself ispan-seared and ever-so tender, and servedwith potatoes, pancakes or rice, and yourchoice of potato or tossed salad.
“We not only serve Calamari Steak hereat our Saratoga restaurant, but also atWaikiki Beach Eggspress on KalakauaAvenue,” Skedeleski explains. Keo’s Thai CuisineContinuing on my trek through Waikiki,
I decided to pay a visit to Keo’s ThaiCuisine on Kuhio Avenue. You can’t missthis divine establishment as it welcomes
all patrons with its open-air atmosphereand garden setting, which features alush array of fresh floral arrangements,and Thai statues and décor.
Keo Sananikone owns the restaurant,which has been named as a kamaainafavorite for years and prides itself onserving the best in authentic Thai cuisine.My favorites on the menu run the gamut,however, a few that stand out includeEvil Jungle Prince (Keo’s signaturedish), Sa-Teh Chicken, Garlic Shrimpwith Mushrooms and none other thanCrispy Calamari Salad ($14.95).

“Our main draw is ourseafood,” says Chris Mitchell,general manager of operations.“We have Snow Crab, HalfMaine Lobster and MisoButterfish that you can order offthe dinner menu, and on week-ends we offer snow crab duringlunch as well,” he explains. “Wealways change things up andlook for new ideas and newopportunities, but our goal willalways be to make our cus-tomers happy.”

“People always ask me what’s thedifference between lunch and dinner,and I always tell them that the higher-quality items are always served atdinner. You can also order off ourmenu, too.”

Acommon opinion held bythe majority of local culi-nary connoisseurs is the
notion that small, hole-in-the-wall establishments offer upsome of the most eclectic — anddelicious — eats.
Ert’s Grill fits the bill to per-fection as its unassuming loca-tion in Aiea offers up a greatselection of plate lunches, break-fast items and assorted pupusthat pair perfectly with one’sfavorite pau hana beverage. Therelaxed, family-style atmosphereand excellent customer servicehave driven Ert’s popularity eversince co-owners Stephen Ichiokaand Clyde Higa opened theeatery opened last August.
“You’ve got to do things withlove: cook, serve — everything,”says Ichioka.
Ichioka, a flight attendant atAloha Airlines for 22 years, andHiga, who currently continues towork during the day as an automechanic, have fostered a lovefor cooking since their childhooddays as friends growing up inWahiawa. The pair developed apassion for food, both throughcooking and eating, and theexperiences played a key role indeveloping Ert’s menu.
“We’ve been best friends sincewe were 6 years old; we’veknown each other forever,”Ichioka says. “We decided toperfect our menu first, and makeit how we want it to be.”
“We’re such a small place, andyet, somehow everyone findstheir way here,” adds Higa.
Smoked Meat ($12.50 perpound, $5 for a mini plate lunch
and $8 for a regularplate lunch) hasemerged as the best-seller as the dynamicduo marinate the suc-culent pork buttovernight and smokethe meat in house forfive hours until theideal combination oftaste and texture isachieved. The meat isserved with grilledonions, and is perfectas both a satisfyingmeal or an appetizeramongst friends andfamily.
“We’re fromWahiawa, and therecipe is based onwhat we eat when our
friends hunt,” says Ichioka. “It’sa long process, we do ‘em right.We also make chicken andpipikaula in the smoker.”
Ert’s also serves up succulentSteak ($12.50 per pound, $5 for a

With more than 50 dif-ferent types of sushion its menu, Genki

Since opening its first Hawaiilocation in Kapahulu almost 20years ago, Genki Sushi hassince grown to nine locationson Oahu, two on Maui, one inKona, one on Kauai,four in Washingtonand most recentlyone in California(Santa Ana).

for Genki Sushi,” saysDavid Moon, directorof purchasing. “It’s amayonnaise, sesameseed oil base, and thetaste is tailored to the localmarket. For me, it’s on themedium side. And the namegunkan means battleshipbecause it’s supposed to looklike a battleship.”
The unagi sauce, which has asweet, teriyaki flavor, also wasmade exclusively for GenkiSushi and is used not just for the
Unagi Roll but on several otherdishes as well.
Other must-try items includeKabocha Tempura ($2.20);Stuffed Mushroom ($4.80),which is baked with a crab mix-ture and topped with a garlic
mayonnaise sauce;Vegetarian Roll($2.20) with carrots,cucumber, lettuce,oshinko and kanpyo in
a reversed sushi roll and sprin-kled with sesame seeds; andOnion Salmon ($2.80).
In addition to sushi, therestaurant offers a variety ofitems such as Agedashi Tofu,Gyoza, Miso Soup, ChawanMushi, Somen Salad and a lotmore. If you don’t see what youwant on the revolving belt, youcan always order straight fromthe menu.

By mid-morning on a recent week-day, there was already a bustlingcrowd at Patisserie La Palme
D’Or. The small shop in Ala MoanaCenter filled up with customers orderingpastries, stopping in to pick up specialorders and chatting with friends over teaand sandwiches.
Executive Chef Akiko Kimura and thestaff remain unfazed by the crowd as theywelcome each of the guests.
“It's often busier than this,” Kimurasays, smiling.
A few of the customers stare at themany decorative desserts for minutesbefore placing their order, seeminglyunable to choose just one option fromthe bunch. Their dilemma is understand-able; Patisserie La Palme D’Or offers avariety of desserts, and each is an artfuldesign filled with an intricate blend ofingredients.
One of the most popular dishes is thesignature strawberry shortcake, GateauAu Fraise ($4.95 for a slice; $35 for a 6-inch cake), with layers of light and moistsponge cake with fresh whipped creamand sliced strawberries. Another customerfavorite is Cheese D’Or ($4 for a slice,$24 for a 7-inch cake), which is aJapanese-style souffle cheesecake. Both
are light and easy to eat.Other tasty treats include La Macha
($4.45), which is chocolate cake toppedwith green tea mousse, and Chocolat($4.30), a tantalizing treat that featureslayers of chocolate mousse, soft chocolatesponge and vanilla cream.
For even more tasty options, you’d bet-ter stop in soon. The fruity chocolate treatRaspberry Amor ($4.95) and PassionDelight ($4.95), which features layers ofwhite chocolate and banana, are both partof a seasonal list that may be switched outfor other items in the coming months.
Now through Easter Sunday, LaPalme D’Or offers the Chick Cake($36), a special treat for Easter that fea-tures a strawberry shortcake with layersof custard cream.
La Palme D’Or also offers House MadeCroissant Sandwiches ($4.15), whichinclude two options, Tuna or BLT.
“The croissants are hand made everyday,” Kimura says, “and these are some ofour most popular items in the morning.”Be warned, though, these are so popularthat they often sell out by early afternoon.
With all of these decadent treats, you’vegot to have something to wash it all down.Luckily, La Palme D’Or offers some ofthe tastiest and most creative beverages
around. Drinks include Plantation TeaJelly ($4), which features pineapple juicejelly with sweetened black tea, and LavaFlow ($4), a creamy blend of condensedmilk, milk and strawberry puree.
And perhaps the most interesting drinksthat La Palme D’Or has are Coffee JellyAu Lait and Tea Jelly Au Lait, which fea-ture coffee or Earl Grey tea with a layer ofsweet jelly. A Jelly Au Lait is $3.25 with-out milk, $4.55 with milk, $5.25 with soymilk and $5.55 for a mocha. Although aseemingly strange combination, the jellyperfectly complements a coffee or teadrink to create a sweet, refreshing treat.

Patisserie La Palme D’Or offers amenagerie of tasty treats colorful, deli-cate creations that are so beautifully
crafted you almost don’t want to eat them — almost being the keyword. Once you’re done admiring the food, you’ll find that the taste ofeach dessert lives up to its appearance.
Dessert enthusiasts can thank the creative combination of Japaneseand French influences for the cuisine at La Palme D’Or. The ingredients,too, hail from a range of places.
“We have many ingredients from Japan,” executive chef Akiko Kimuraexplains. “The chocolates are from Europe, and then we also haveother local ingredients that we use.”
Kimura, who joined La Palme D’Or in 2009, got her start in Japan,where she worked for 12 years. She explains that in Japan, it is com-mon to integrate the European style into pastries.
“I am constantly thinking about creating dishes, and sometimes I willhave a little lightbulb that goes off,” Kimura says. “I am constantlythinking about what I can do to make everything better.”
In addition to its daily menu items, Patisserie La Palme D’Or alsooffers special order cakes. Kimura explains that customers often spe-cial order treats, which can feature customized images or words, for a vari-ety of special occasions, including weddings and birthdays.

Jade Dynasty Seafood Restaurant, conve-niently located in Ala Moana Center, hastransformed your typical Chinese fare into
something a bit more unconventional with theunveiling of two new dishes, Shrimp Mixedwith Bamboo Fungus and Cheese and WalnutCustard Tart.
“Both of these dishes aren’t listed on our menu,but customers can request them,” says generalmanager Gary Chan.
Priced at $16.95, Shrimp Mixed with BambooFungus features savory pieces of shrimp nestledinside hollow bamboo fungus. It’s then toppedwith a clear chicken broth gravy and hints of car-rot. Shanghai bak choy is served on the side. Asfor Jade Dynasty’s Cheese and Walnut CustardTart ($3.50 for three pieces), Chan says this is aunique take on the average Custard Tart dim sum.
“We take the Custard Tart and top it withAmerican cheese, and inside the custard tart arebits of walnut,” he explains. “It’s sweet, but thecheese gives it a bit of a bite. It’s something verydifferent. I think we’re the only restaurant tooffer this.”

his Laotian roots with French flair, are appetiz-ingly presented with attention to detail and —drum roll, please — can be modified to suityour tastes. Yes! That's such good news forthose who don’t eat meat or fish. And it makessense to treat guests well so they’ll want toreturn again and again.
For example, JJ Bistro and French Pastry’smenu lists a number of gourmet pasta dishes,

Big City Diner also has $10weekly specials on rotation that areserved from 11 a.m. Mondaythrough Friday while supplies last,and the restaurant is adding onanother week of Grilled Asian FishOriental (Swai). It was originallyonly served during Week 3, butbecause customers raved about the

“It’s simple to say we ‘keep itauthentic,’ but what does thatmean?” Takei asks. “To us, thatmeans authenticity of not justtaste, but authenticity of hospi-tality and service. A lot of ourcustomers are repeat tourist cus-tomers; we’ve been compli-mented that our food is just like(food in) Japan. Our job,though, is not just to giveJapanese food to Japanese peo-ple and make them happy; it’s toshow this authenticity to peoplewho aren’t as familiar withJapanese cuisine.”
Located in King’s VillageShopping Center in Waikiki,Odoriko opened in 1978. Theeatery was the sister restaurantof the former Maiko Restaurantat Ilikai Hotel, which opened in1972. The restaurants wereunder the same family business,which is celebrating its 40thanniversary this year.
“Maiko was open from 1972to 1995,” Takei shares. “Maikomeans ‘geisha’s disciple.’ Thetranslation of odoriko is a danc-ing or performing arts girl, so itruns along the theme of tradi-tional Japanese performance,
arts or culture.”Although Odoriko is an iza-
kaya-style eatery, it is uniquebecause it features a fullcourse menu.
“(Izakaya restaurants) usuallyput as much emphasis on drinksas they do food and the menu isusually big, filled with lots ofsmall tapa (appetizer) dishes toshare,” Takei explains. “But wehave a full sushi bar; our menuis more comprehensive than atypical izakaya menu so there’ssomething for everyone.”
The seafood items onOdoriko’s menu are customerfavorites, as well as any itemthat has the eatery’s name init. The Odoriko Roll ($11.50)
— comprising salmon, squid,avocado and tuna — and TheOdoriko Set ($39.95) — half alive lobster, New York steak,crab legs, salad, edamame,rice and miso soup — are sig-nature dishes. Also popular isthe restaurant’s variety of hotpot dishes.
“We have four different types— Sukiyaki ($35), Chanko-nabe($38), Shabu Shabu ($35) andLive Lobster-nabe ($45),” Takeisays. “It’s (the hot pot orders) fortwo people, but hopefully we canfind a way to have it for one (per-son) also.”
Other popular menu itemsinclude Kalbi ($12.50),Tempura ($9.95 for vegetable;$13.50 for shrimp and veg-etable), Handmade Tofu ($6.95)and Tofu Salad ($9.75).
There are several upcomingchanges at Odoriko, accordingto Takei. Odoriko will soon kickoff its Happy Hour from 4 to 6p.m. and 10 p.m. to midnight.
“It’s 50 percent off our beerand sakes, and 25 to 50 percentoff about 25 of our most popularmenu items,” Takei says.
Another possible changemight be a revised parkingstructure so Odoriko customerscan park anywhere.
“The King’s Village parkinglot requires customers to pay $8up front and we give back $4,”Takei says.
Takei notes that Odorikocan seat more than 200 peopleand offers customers privaterooms for parties, tatamirooms — where customers siton straw mats — and karaoke.
He clarifies that Odoriko isnot a karaoke restaurant;karaoke is merely an optionfor larger parties.
“It’s (karaoke) offered after9:30 p.m.; the rate is $30/hourfor fewer than 10 people and$40/hour for 10 or more,”Takei says.
Odoriko also provides largeparty menus, ranging from$25/person to $45/person. Theeatery features three types ofparty menu courses, accordingto Takei, and customers usuallysubstitute items on the menu.
“There’s two ways we bringout the party dishes,” heexplains. “One way is buffet-style, so we bring it out on largeplatters; the other way is we putit on smaller plates to shareamong three or four people.”
