    the Swift epSb is easy toinstall. However, there are several important considerationsto keep in mind. The SWIFT

    epSb requires a grounded 110v, 15 amp (or 220v, 7.5 amp) power supply. It alsorequires a minimum 16” x16” (406 mm x 406 mm)

    space on the counter. Since the unit is 26” (660 mm) in height,allow at least 30” (762 mm) of vertical clearance sothere is sufficient space to

    allowtheeasyremovalofthebean hoppers and lids. the Swift epSb weighs about 75 lbs(34kg),somakesureyourcounter will support this.

    (1) install the bean hoppers and tighten the safetyscrews.

    (2) plug the Swift epSb into a grounded 110v or 220v single phase power supply.

    The portafilter engagesdirectly to the SWIFT EPSb. Since the Swift epSb has no watertight seal, it is

    not necessary to force theportafilter intoplace.Engagethe portafilter with only alight amount of force. if the

    grinder shiftson the countertop, you are using toomuchforce.

    5. Engaging the Portafilter

    there is no need to force it intoposition.

    (5) Turn on the grinder byengaging the main power switch. the red light will come on.

    6. Operating the SWIFT EPSB6.1 Swift EPSBOnce the portafilter isengaged, press one of the start buttons located at thefront of the Swift epSb. The right and left buttonscorrespond to the right and leftbean hoppers. Coffeewill

    be ground, dosed, and tamped from one of these locations,depending on which buttonyou press.The red indicatorlights located above the start buttons are illuminatedwhen the Swift epSb is grinding and tamping. Once

    the red light corresponding to the button selected is nolonger illuminated, you mayremove the portafilter fromthe Swift epSb and engage it into the espresso machine.the Swift epSb tamps the coffee as it is ground.When

    the volumeof ground coffeein the portafilter reachesthe set level, the grinding motorturnsoff.Thetampingmotor continues to run for1-3 seconds, “polishing” the tampedcoffee.

    6.2 Swift S/Dthe Swift is now available in a Single/Double dose version which permits dosing and tamping into specific filtersfor either single or double doses.

    • The safety timer has runout due to an emptybeanhopper, a closed bean gate, or a plugged bean hopper chute.

    • There is no portafilterengaged in the Swift epSb.

    standardfiltersthatare normally supplied withespresso coffee machines orwith standard Swift models(doubleonly).

    The filters designed for thisspecific model of the SWIFThave a different placementofholesthanstandardfilters.This difference makes itpossible to obtain an elevated qualityintheconsistencyofbrewing in spite of a grinder-doser with automatictamping.

    Todoseandpresscoffeewhenusing a double filter, thereis a cushioning cylindricalring next to the externalcircumference of the impeller (see image here below).

    Using the S/D Swift The S/D Swift grinder isactivatedbypressing the“S”switch ONCe to prepare a singlefilter(L115/A/S),and twiCe in a row to prepare adoublefilter(L116/A/S).As previously explained, thefilters used for the SWIFTEPSB are different from the

    Blinkingindicatorlightsrelayinformation.

    Swift S/D- in version Swift S/D the red indicator lights will flashwhen working the grinderfor a double doses.

    7. Adjusting Coffee GrindToachieveyourdesiredbrewtime and coffee consistency,a manual adjustment can be made to the grinder to modify the grind of thecoffee.(Thetampingpressureis not adjustable and remains constant). Rotate the adjustor knobsasdescribedbelow.(1) Locate the grinder adjustor

    knobthatcorresponds totheleftorrightsideofthegrinder.

    (2)Grindingthecoffeemorefinely will result in aslower pour. to achieve a slower pour, adjust the knobsasfollows:

    Leftbeanhopper: turn the knob counter-clockwise.Right bean hopper: turn theknobclockwise.

    (3)Grindingthecoffeemorecoarsely will result in afaster pour. to achieve a faster pour, adjust the knobsasfollows:

    Left bean hopper: turn theknobclockwise.

    clockwise.When makingthis adjustment, remember to turn the knob in a minimum ofhalf-turn increments.brew one or two shots to test the adjustment.

    8. Adjusting Dose Quantity8.1 Swift EPSBthe Swift epSb is set to dose approximately16to18gramsof coffee in 22mm basket

    provided with the grinder. it is possible to change the dosage quantity by raisingor lowering the height of the impeller. Additionally, the

    Swift epSb is able to dose different quantities usingother baskets, availablethroughyourretailer.

    Key to performance:The3figureshereshowhowthe Single/Double Swift operates. Coffee drops through thechannels linked to the burrsinside the dosing chamber where it is deposited and tamped in layers by theimpelleruntilobtaining,onelayer at a time, the requiredamount. Single filter:The coffee is deposited andpushed downward, therefore tamped in a uniform manner bytheimpeller.The setting of the time forgrinding will determine the amount of ground coffeereadyforextraction.

    Double filter:

    The coffee is deposited andthen tamped in a uniform fashion by the impeller and

    the cushioning cylindricalring, whose springs push downwards with the same force as the impeller.The quantity in this case is

    determinedbythevolumeofgroundcoffeethatpushestheshaft upwards,which, at theend of the process, will arrest the motors of the grinder

    and tamper through a switch connected to an electronic board.

    Setting up the Swift Grinder S/DRegulation of single anddouble doses: to establishthe doses on this specificgrinderitisnecessarytoreadthrough the procedures for the standard Swift under the section “Regulation of quantity for dosing” as well as follow these procedures.BOtH MOtORS AND HOPPERS CAN DELiVER SiNGLE AND DOUBLE DOSESItismandatorytoproceedasfollows:Double dose:1)Turn off the machine and

    remove the front tower cover to access to the screwsthatfixtheshaftofthe impeller.

    2)Set the quantity of thecoffeinthefilterasonthestandard Swift model.(see image A)

    3) Adjust the grind (double):

    adjust thegrind toextract60ml in 25 seconds.

    4) Set the height of the cylindrical ring: thecylindrical ringnext totheimpeller should be at a height that allows to obtain a coffeepuck surface thatiscompletelyeven.

    NOtE: The regulation of theheight of the cylindrical ring(moveable part or tamper) is carried out by rotatingthe part clockwise to lift thering and rotating it counterclockwisetolower.

    The cylindrical ring is heldinplaceby twobrass screws(see image b) so that the vibrations caused by therotation of the impellers donotalteritsposition.

    Remove the two screws and manually rotate the part,graspingitfromthebottom.the distance between the impeller and the cylindricalringcanvaryfromaminimumof 4 mm to 6 mm, a length that permits to obtain a perfectly even coffee puck(see picture below).

    Single dose:Thequantityofcoffeeforthesingle dose is regulated bytime.By turning the screw at theleft blue trimmer positionedatthebackofthekeypaditispossible to vary the grindingtime. Turningthescrewsclockwise,thetimeincreases,increasingthe dose.

    Daily cleaning of theSwift epSb is important to the quality of yourcoffee beverages and tothe mechanical life of the equipment. when the

    cleaning instructions arecarried out each day, therewill be little chance of oldcoffee residue spoiling theflavor of your espressodrinks,orinterferingwiththe

    mechanicaloperationofyourmachine. there are three areas that must be cleaned:the bean hoppers, the burr chamber, and the impeller.

    9. Daily Cleaning

    Close the bean gate Disconnect

    (1) to clean the bean hoppers, close the bean gate to stop the flow of coffee beansto the grinding burrs.

    (2)Grind coffee into theportafilter to clearthe remaining coffee.

    Thismayrequiretwodoses.

    (3) Disconnect the Swift epSb from its power supply.

    (4) the bean hoppers are locked into position bysafetyscrew.Loosenthesafety screwand lift thebean hopper from its mount.

    (5)Lift the bean hopperfrom its position. (Holdthe bean gate closed while removing the bean hopper.)

    (6) with a small brush, clean the burr chamber.

    (7)Vacuumcoffeefragmentsand loose grounds from the burr chamber.

    (6) Reinstall the impeller by turning counterclockwise.

    (7) Reconnect the Swift epSbtoitspowersupply.

    11. Burr Change-Outperiodic burr replacement is required. while the ceramic burrs used in the Swift epSb have a much longer life expectancy than normal

    steelburrs,itisstillnecessaryto watch your coffee forthe tell-tale signs of burr wear. these signs include inconsistent shot extraction

    times, and the absence ofnoticeablechange in yourespresso when adjustments are made to the grinder.

    12. Chute Clean-Out toolOccasionally the chutebetween the grinders and tamping chamber maybecome clogged, causing thefuse (resettable orreplacable)totrip.Inaddition

    to replacing or resettingthe fuse, it is important to remove the clogged grounds. On machines with serial numbers above 656, a chute clean-out tool is included.

    this tool is used to loosen compacted grounds and alleviate clogging.

    (1) Clean out the hoppers and burr chambers as described on pages 13-15.

    (2) Remove tamper cover as described on p. 18.

    (3) find the holes located on either side of the lower grounds chamber.

    (4) insert the long end of the clean-out tool into the hole. Repeat on other side.

    (5) Reassemble machine.

    Remove screws (2) pull outpull down

    (1) Disconnect the Swift epSbfrom its power supply.

    (2) Access the fuse area byremoving the two screws located at the lower part of the rear panel door. Do not remove the ground wire screw on the rear panel door.

    (3) pull the panel door down and away, thenunplug the ground wire, to expose the controlelectronics.

    The Swift EPSbhas fourfuses located at the rear of the machine behind the removable panel. these correspond to each of the grinder motors, the tamping motor, and the electronic controls.Occasionally itmaybe necessary to replace afuse. when switching fuses

    besuretouseonlycorrectlyrated replacement fuses. electronics = 1 ea. @ 125m amps (normal); motor, grinder = 2 ea. @ 10 amps GDC;motor, tamper = 1 ea.@1ampGDC.On machines with serial numbers 656 and higher, the 10 amp motor fuses are

    replaced with reset switches ontheexterorofthegrinder.the head of the switch will protrude when it needs to be reset.Note: See page 31-32 for fuse sizesandlocations.

    Replace cover(5) Replace the damaged

    fuse with the correctlyrated fuse. (See electrical schematic,page31-32)

    (4) Remove the fuse using thetoolprovided.Note:Adamagedfuseisidentifia-ble by a broken filamentand discoloration of thefuse glass.

    (6) Replace cover andscrews.

    (7) Reconnect power. turn on and resume use.

    14. Tips and TroubleshootingWhat is the ideal shot time?Shottimevarieswithallroastsand brew temperatures used tobrewespresso.Mostlikely,a minimum shot time is 18seconds and a maximumis somewhere in the 30 to 35 second range. the ideal brew time for your coffeedependsthecoffeeroastanddose size. It is a relationshipof bean solids and oils plus tamping pressure and brew water temperature. Most ofall, personal taste preference shouldcontrolshottime.After brewing, re-engagethe portafilter in the group.Temperature stability at theportafilterwill result inmore

    consistent pour times. Theportafilter mounting area isa source of heat which can benefit the brewing processwhen used to keep theportafilterattemperature.

    Cleangroupsandportafiltersdaily.Clean espresso contact surfaces (screens and inserts) will result in better flavoredcoffee.

    Limit rinsing from the grouphead to one second or less. Excessively rinsingthe portafilter reduces theamount of hot water available for brewing. An infusion of cold water into the brewing

    vesselmaytemporarilylowerwater temperature below the desired level. Since rinsing is usuallyundertakenasawaytocleantheportafilter,considerwipingtheportafilterinstead.Ifyoumustrinse,dosowithaslittlewateraspossible.Watch the espresso youare brewing. Although making espresso is partlya mechanical process, the outcome is determined byorganicfactorslikethecoffee,the weather, the water, and yourabilitytobalancethese.Defining and adhering to aset of fixed parameters likebrewtimeandshotsizehelpsto ensure a beautiful shot.

    However, ultimately the lookand taste of the espresso is the final arbiter of ashot’sacceptability. You mustdeterminewheneverythingisjust right.

    Change of grinding discs1.Disconnect power supply

    from the coffee machine,stopbeanflowing into thegrinder and if necessarydismantle the grinder.

    2. Release clamp [1] and remove it.

    3.Turnstationarydiscsflange[3]anti-clockwiseandtakeitoff.

    4. Unscrew the grinding discs (3 screws [4]) from the stationary- and rotary discflanges.Dohold/block the

    rotarydiscflange[4a]withaplastictool.

    CleaningUse a brush to clean the surfaces of the flanges.Removeallcoffeeparticlesordust from the thread and than lubraca-te it with slight film(spray)ofPanolinTEFGREASEH1, prod. 5975, food grade, NSf listed; www.panolin.com

    5. insert new grinding discs on the cleaned rotary- /stationarydiscflan-gesandtightenscrewscarefully.

    6. Re-install the statonarydisc flange [5] clock-wise(avoid touching of the grinding discs).

    7.Connectpowersupply.8. Calibrate grinder.

    important: All surfaces of the grinding discs as well as theflangesmustbeproperlycleaned in order to ensure a perfect grinding.
