Pork & pumpkin stir fry

SERVES 2 SERVES 4 INGREDIENTS2 tsp 1 tbs olive oil 250g 500g pumpkin, cut into 1cm thick pieces250g 400g pork loin steaks, fat trimmed
1 2 carrots, sliced cup 1 cup beans, halved1 2 garlic cloves, crushed
1 tsp 2 tsp finely grated fresh ginger1 long fresh red chilli, deseeded, finely chopped
1 tbs cup (60ml) chicken stock 1 tbs 2 tbs chopped fresh coriander
METHOD1. Heat a wok over medium-high heat. Add half the oil and heat for 20 seconds. Stir-
fry pumpkin, in batches, for 5 minutes or until golden and tender. Transfer to a plate.
2. Reheat wok over medium-high heat. Add 1 teaspoon remaining oil and heat for 20 seconds. Add teaspoon to serve 2. Stir-fry pork, in batches, for 3 minutes or browned. Transfer to a plate.
3. Reheat wok over high heat. Add remaining oil and heat for 20 seconds. Stir-fry carrot, beans, garlic, ginger and chilli for 3 minutes or until softened. Add stock, pumpkin and pork and stir-fry until heated through. Serve sprinkled with coriander.
Serving suggestion: Brown rice. Add 4 SmartPoints® value for cup (85g) cooked rice per serve.
