• 1and1/3cups(160g)all-purposeflour• 1/4cup(32g)cornstarch• 1/2teaspoonbakingsoda

• 4teaspoons(6g)naturalunsweetenedcocoapowder

• 1/4teaspoonsalt

• 1/4cup(60g)unsaltedbutter,softenedtoroomtemperature

• 1cup(200g)granulatedsugar

• 1/2cup(120ml)canolaorvegetableoil

• 2teaspoonsvanillaextract

• 1/2teaspoondistilledwhitevinegar

• liquidorgelredfoodcoloring• 1/2cup(120ml)buttermilk,roomtemperature• creamcheesefrostingfortopping

Directions(ContinuedonNextPage):

1. Preheatovento350°F(177°C).Linea12-countmuffinpanwithcupcakeliners.Thisrecipemakes14cupcakes,soyouwillhave2cupcakestobakeina2ndbatch.

2. Withahandheldorstandmixerfittedwithawhiskattachment,beat2eggwhitesonhighspeedinamediumbowluntilsoftpeaksform,about2-3minutes.Seephotoatthebottomofthispostforavisual.Setaside.

3. Sifttheflourandcornstarchtogethertomakesureitisevenlycombined.Whiskthis,alongwithbakingsoda,cocoapowder,andsalttogetherinamediumbowl.Setaside.

Add2eggyolksandthevanilla.Beatonmedium-highspeeduntilcombined.Scrapedownthesidesandupthebottomofthebowlwitharubberspatulaasneeded.Beatinthevinegarandthefoodcoloring--untilyoureachyourdesiredcolor.Iuse2Tablespoons.Withthemixeronlowspeed,addthedryingredientsinthreeadditionsalternatingwiththebuttermilk,beginningandendingwiththedryingredients,andmixingeachadditionjustuntilincorporated.Donotovermix.Foldwhippedeggwhitesintocupcakebatterwitharubberspatulaorwoodenspoon.Thebatterwillbesilkyandslightlythick.(Iftherearestillpiecesofbutter-andtherewerein1testbatchforme-again,thisisok.Theywillmeltinsideasthecupcakesbake.Makingthemevenmorebuttery.)

6. Spoonbatterintocupcakelinersfilling1/2-2/3ofthewayfull.Bakefor20-21minutesoruntilthetopsofthecupcakesspringbackwhengentlytouchedandatoothpickinsertedinthecentercomesoutclean.Don'toverbake;yourcupcakeswilldryout.Allowtocoolinthepanfor5minutes,thentransfertoaracktocoolcompletely.

7. Preparecreamcheesefrosting.Frostcooledcupcakesimmediatelybeforeserving.

Makeaheadtip:Cupcakescanbemadeahead1dayinadvance,covered,andstoredatroomtemperature.Frostingcanalsobemade1dayinadvance,covered,andstoredintherefrigeratoruntilreadytouse.Decorate/assemblecupcakesimmediatelybeforeserving.Leftovercupcakeskeepwellcoveredtightlyatroomtemperatureorintherefrigeratorfor3days.Unfrostedcupcakescanbefrozenupto2-3months.Thawovernightintherefrigerator.
