Hello again Sea Pines! Finally
we get a taste of some beautiful
fall weather that we have long
been waiting for. As I drive
around I see lots of people work-
ing on their homes and some are
already decorating for the holi-
day season which is just around
the corner. At the last meeting I
assigned Cookie Miller as the
chairman of the Events/Activities
Committee. She will be the focal
point for the upcoming annual
Christmas party to be held at the
club house on December 13th.
This should be a fun weekend
with the Christmas party on Fri-
day night and the boat parade on
Saturday. I encourage those
with a boat to join the parade by
contacting Jeromy Gamble at 352

tion to the Christmas party is

The Sea Pines residents are
blessed to have a community
with access to the Gulf of Mexico.
For those of you who are active
boaters I want to remind you
that the Sea Pines canals are a
No Wake (idle speed) zone all the
way out to the entrance to the Gulf.
I have received a couple of com-
plaints recently by residents who
are upset that folks on personal wa-
tercraft and boats are cruising way
too fast, and in some cases reckless-
ly through the canals. This puts
others in danger and causes wakes
that can be damaging to sea walls
and moored boats. Please be cour-
teous to other boaters and water-
front property owners.

and Saturday November 15 & 16.
Remember to mark your calendar
for the upcoming SPCA General
meeting on November 20th. At this
meeting members will vote on in-
stalling an electric meter box in
Southwind Park as a first step to-
wards improving the park for the
enjoyment of our residents. Also at
the meeting we will close the nomi-
nation process for the upcoming
election of officers (Pres., VP,
Treasurer, and Secretary) and one
representative to the SPCA Board.

The meeting was called to order at 7:00PM
We had a roll call of officers and all were present, so there was a quor-
um. A motion was made and approved to accept the minutes from the
September general meeting.
Jerry Sweet presented the treasurer’s report. There was a question
regarding the boat ramp expense of $254.10, and he explained that it
was to purchase additional fobs and have more trailer decals printed.
STANDING COMMITTEE REPORTS
Boat Ramp
The boat ramp committee reported that the new security cameras have
been installed at the boat ramp. They have been observing unauthor-
ized use of the boat ramp. This is private SPCA property and violations
of the restrictions (posted on the website) will result in deactivation of
your fob. The current boat ramp restrictions are going to be revised by
the board to clearly spell out the approved usage of the boat ramp.
Sunshine Committee
We are in need of someone to head up the Sunshine Committee. That
position is currently vacant. The main purpose of this committee is to
send a card when someone has a health issue or a death in the family.
There were no volunteers at the meeting.
Mowing Committee
We are also in need of someone new to head up this committee. Pat is
retiring from the mowing team at end of year. As a courtesy of SPCA, a
list of lawn service businesses has been compiled and sent out to those
currently using SPCA lawn services. If you have a lawn/landscaping
business please consider advertising in the newsletter (very cheap
rates).
Adopt A Road
There was a very successful clean-up of Old Dixie Highway on Septem-
ber 21st. Roughly 14 people showed up to help out. This is the kind of
volunteer support we need! We have also spotted some individuals out
picking up trash on their own. This is greatly appreciated, as well.
Membership Committee
The Board approved a change in annual dues from $45 to $50 for next
year (2020). This is still a very low annual fee compared to other asso-
ciations in the area. Rainbow Palms charges $100. The boat ramp fee
will stay the same. Through September 30, we have 798 members.
Newsletter Committee
Any items being submitted for the newsletter should be turned in by
the 20th of the month.
Parks Committee
There were no issues or changes regarding either park.
Welcoming Committee
The Welcoming Committee has been busy. Many new residents have
moved into Sea Pines over the summer. They also reported that they
are running out of things to give to the new residents. If you have gift
cards or coupons to local businesses, please contact Donna Hodnicki.
Website Committee
Please check out the new website (www.SeaPines-FL.com). Visitors to
the site are going up (roughly 390+ visitors to the site each month). We
welcome any ideas for improvements or requests for information you
would like to see included. There was a suggestion that the sign at the
entrance of Southwind Drive be updated with the new website address.
Unfinished or Old Business
Southwind Park.
The first boat lift has been installed on the sea wall (by AVCO Marine
Construction). This boat lift is solar-powered.
We have a new dusk-to-dawn street lamp near the gate which provides
security at the gate and electricity to the park. The next step is to have
a meter box installed. We have obtained a quote from a commercial
electrician (Kazar’s Electric) in the amount of $2,360. The board has
voted and approved the purchase and installation of the meter box.
The benefits of having electricity in the park are as follows:
Enables us to add security cameras to the park (full view includ-
ing the mooring lots along the sea wall). We will install a set of
cameras like those placed at the boat ramp.
Allows us to install an electric sliding gate in the future that
works with a fob providing added security to the park.
Provides power to a planned picnic pavilion near the end of the
park.
Other possible uses include providing power to the individual mooring
slips at the owner’s expense.
The vote to approve this expense will go before the member-
ship at the next meeting in November.
New Business
Cookie Miller has agreed to head up our Events Committee. She will
organize and plan social activities and events such as the annual
Christmas party, and she will need some help. If you would like to
participate on this committee, please contact a board member.
Upcoming SPCA Board elections. The SPCA By-Laws (Article 7, Sec-
tion 1) states that the president must appoint a Nominating Commit-
tee Chairman at the October general meeting. Article 7, Section 2
states that the Nominating Committee Chairman shall present a list
of candidates for each office at the November general meeting. Donna
Hodnicki agreed to chair the nominating committee again this year. If
you are interested in joining the board of Sea Pines or running for an
office, please contact her.
There are currently several home improvement projects and new
homes under construction in our neighborhood. Randy has received
two phone calls from people interested in buying a lot and building a
new home in Sea Pines. If you are planning on adding a new structure
to your property, please contact Randy or Ernie so they can review the
plans before you submit the permit application to Pasco County.
There was damage to a drainage pipe on Mako and that has been re-
paired.It was reported that there is an erosion problem on the corner of
Southwind Park. We will take a look at it and determine what action
needs to be taken.

Women’s Club luncheons: See the interactive calendar on the web-
site to learn more.
Trunk or Treat: Trunk-or-Treat at the Woodlands Park on Satur-
day, October 26th.
The community Garage Sale will be held on November 15 & 16,
8:00AM to 4:00PM.
It looks like we have found someone to coordinate the Christmas Par-
ty. It is scheduled for Friday, December 13. Additional details will be
coming soon.
The Christmas Boat Parade will be held on December 14th.
Raffle tickets were distributed at the beginning of the meeting and
there was a drawing for a mani/pedi at CA Nails, 4 tickets to Congo
River Golf and a $50 gas card. Thank you to the businesses that donat-
ed these door prizes.
There was a motion made and approved, and the meeting was ad-
journed at 7:53.

The Pasco Sheriff’s Office’s annual Feeding Pasco’s
Kids food drive will soon be accepting both monetary
and food donations.
The proceeds from this worthy cause will be given di-
rectly to local organizations whose mission is to provide
support for homeless children and students. This year
those recipients include the Pasco School system and
Metropolitan Ministries, who we are partnering with to
distribute our food and funds collection to many worthy
organizations throughout Pasco County.
According to the District School Board of Pasco County,
there are 962 homeless students from 513 homeless
families living in Pasco County alone. This includes
those that are “doubled up,” or living in another’s
household; living in shelters; or unsheltered. Unfortu-
nately, our deputies all too often see the results of mal-
nourished children in our community, whether they are
homeless or not. As you can imagine, school can be
hard enough for students without the looming distrac-
tion of hunger.
Every year, we collect thousands of non-perishable
boxed or canned food items, such as instant potatoes
and canned vegetables. Please do not donate any food
in glass containers, which break easily. We also collect
monetary donations, which we calculate to be an equiv-
alent of 2 food items for every dollar collected.
Beginning Monday, November 11, there will be dona-
tion boxes placed in the lobbies of Pasco Sheriff’s Office
buildings throughout the county. Several area church-
es have also agreed to have boxes located in their
buildings to assist in the collection of food. Monetary
donations can be made by check or money order to Pas-
co Sheriff’s Charities, with Food Drive in the “For” line.
They can be mailed to Food Drive Donations, Pasco
Sheriff’s Charities, 8700 Citizen Drive, New Port Rich-
ey, FL 34654. The collection of food and monetary do-
nations ends on Friday, December 13.

WHAT’S HAPPENING IN NOVEMBER
Well, it seems that we are approaching the holidays once again.
How did this year go by so quickly, it feels like I was just in the
kitchen making turkey, stuffing and mashed potatoes, and get-
ting those pumpkin pies baked, and then eating all of it! And we
are about to do it all over again this holiday season. The family
and friends gathering together and the wonderful aromas coming
from the kitchen and floating thru the house.... inviting all in for
friendship and love. The holidays are such a special time. Please
remember those who may be spending the time alone, and share
some time with them. The women's club is all about meeting
new people, making new friends, and finding common interests.
It is a great place to relax and enjoy friendships. Come and join
us!
We have some fun things planned for November so come and
join us. All you need to do is contact Betsy!

The holidays are upon us, and there is no time like the present for some
sweet treats!
Please check out the monthly newsletters for information regarding the
Sea Pines Women’s Club activities. We would love to see you at any of our
activities
COOKIES & COCONUT CUSTARD PIE
SCOTCH SHORTBREAD-- Set oven to 350.
Cream together: ¾ cup butter & ¼ cup sugar
Add gradually : 2 cups flour (all purpose)
Roll dough ½ to 1/3 inch thick. (between wax paper) Cut into small
shapes. Prick tops w/fork. Place ½ inch apart on un-greased baking sheet.
Bake for 20 minutes. Be careful not to over-bake… they will be just turn-
ing tan and they are done! Remove from cookie sheet & Eat… They will
save in air tight container (tin or plastic bag for a week… if they last that
long)! Actually better second day.
These will not last long… they are just too yummy!
COCONUT PIE….
PIE CRUST (for 9” single crust-double recipe for deep dish) -- Set oven
to 475.
Mix 1 cup all purpose flour & ½ teaspoon salt in bowl.
Cut in 1/3 cup + 1 Tablespoon butter flavored Crisco. (use 2 knives, or
pastry cutter to do this- shortening should be size of peas).
Add 2 to 3 Tablespoons COLD water.
With hands create a dough….Do not handle more than necessary, as this
will lead to a tough pastry. Roll dough between wax paper until very
thin. Remember the more you handle or roll this the tougher it will
get…. So, less is better.
Place in pie tin, and prick bottom & sides with fork all over! This will
allow the steam to escape and the dough to become flaky & tender. Bake
for approx 10 minutes… check along the was so that it does not become
overdone, a very light tan is what you are looking for. Remove from oven
and let cool totally! It is ready for filling.
COCONUT CUSTARD FILLING: (for single pie…. For deep dish, double
recipe)
Mix together in sauce pan: ½ cup sugar, 1/3 cup cornstarch, & ¼ tea-
spoon salt.
Whisk in: 1 cup milk, 1 (14 oz) can of coconut milk, & 4 large egg yolks
Cook over medium heat, stirring continually, until large bubbles appear.
(approx 5 minutes).. Reduce to low for 1 minute.
Take approx 1/3 cup sweet shredded coconut & use food processor to cut
it even smaller. Stir this into the cooked custard. Fill the pie crust.
Take approx 1/3 cup sweet shredded coconut & place on aluminum foil
in oven @ 350 for approx 5 minutes… watch it does not burn,
you only want it brown for the top of your pie.
This pie needs to refrigerate overnight…. Do not cover, as the
hot custard will create steam, and make the crust soggy. Af-
ter it is fully cold you may cover. Or eat it if you can’t wait!
Enjoy serving them & eating them too!

The Veterans Corner

On October 21st I was part of a Pasco County presentation of Vietnam Era Certificates to Veterans gathered at VFW Post 1680 , in Hudson Florida. Mike Fasano; our County Tax Collector, was the presenter.
The presentation of a Certificate and pin is part of an ongo-ing national effort to commemorate the 50th anniversary of the Vietnam War and recognize veterans who served during that time.
All veterans serving in the military between Nov. 1, 1955 and May 15, 1975, regardless of where that service oc-curred, will be honored and given a certificate and commem-orative pin in recognition of their service.
This is an ongoing program. If interested in a future presen-tation and info on how to apply to be honored for you ser-vice in Vietnam or Era call: 727 -847-2411.
NOV. 11TH is Veterans Day.
Happy Veterans Day to all our Sea Pines Veterans. A veteran is any person who has served honorably in our Armed Forces for 180 days or more other than for training. A veteran is a military person who has been discharged from active duty.
