Equipment Description

The Groen TD/FPC electrically heated braisingpan provides a 40 quart, stainless steel pan bodymounted for tilting and equipped with electricheating elements and a thermostatic control.The braising pan serves as a braising unit,griddle, fry pan, kettle, or bain-marie, and withoptional equipment may be used also as an ovenor food warmer/server.

The pan body Is made of heavy-duty stainlesssteel welded into one piece with a polishedinterior and semi-deluxe finish on the exterior. Apouring lip is molded into the front wall. Thecooking surface is stainless steel clad plate fittedwith clamped-on electric heating elements toprovide efficient heat transfer over the entiresurface.

The heating elements and all other electricalcomponents of the unit are enclosed for safety.The thermostat and indicator light are containedin a compact control console mounted to theright of the pan body. Installation requires onlyone electrical connection.

The pan body and control console are mountedon a base plate. A convenient handle on the rightside of the pan body facilitates tilting.

Optional equipment includes:

Installation

WARNINGTHE BRAISING PAN MUST BE INSTALLEDBY PERSONNEL WHO ARE QUALIFIED TOWORK WITH ELECTRICITY. IMPROPERINSTALLATION COULD RESULT INPERSONAL INJURY OR EQUIPMENTDAMAGE.

Internal wiring for the Braising Pan is suppliedcomplete. When you receive the unit, it is readyfor connection. A wiring diagram is locatedinside the console on the side of the pan, as wellas in this manual (pp. 14-21).

Your pan was performance-tested at the factoryto confirm that its controls and heating elementswere functioning correctly.

Installation is as follows:

1. Set the unit in place on a level surface. Theunit must be level to avoid uneven cookingacross the pan.

2.Provide the proper electric power supply asspecified on the electrical information plate.Observe local codes and/or The NationalElectrical Code in accordance with ANSI/NFPA70 - latest edition.

3.Bringing the electrical service through theentrance in the control box, make a waterproofconnection with the incoming lines. A BXconnection is not recommended. GROUND THEUNIT ELECTRICALLY AT THE TERMINALPROVIDED.

Initial Start-UpNow that the Braising Pan has been installed,you should test it to ensure that it is operatingcorrectly.

1. Remove all literature and packing materialsfrom the interior and exterior of the unit.

2. Turn on the electrical power to the unit.

3. Put enough water into the pan to cover itsbottom to a depth of ¼” to ½” (6 to 13 mm). With the pan body in the horizontal position,note how the water covers the pan bottom. This is a good method to use for confirmingthat the unit is properly leveled.

4. Set the thermostat to 235o F. The heatingindicator light should come on to show thatthe pan is heating. Heating should continueuntil the water boils.

5. To shut the unit down, turn the thermostatdial to “OFF.”

CAUTIONSTAND AWAY FROM THE HOT WATERWHILE TILTING THE PAN TO EMPTY IT.

6. Position a container for the pour-off. Turnthe handwheel clockwise to pour the waterout. This will confirm that the pan body tiltsfrom horizontal to vertical.

OperationThe operator controls braising pan operationwith the thermostat dial, which is located on theright front of the unit. Setting the dial sendselectric power to turn the heaters on or off andsets the operating temperature of the pan.

A. To Start Pan

1. Turn on the electric power supply to the unit.

2. Turn the thermostat dial to a desired settingbetween 100 and 400°F (38 and 204°C).The red indicator light will glow, showing thatthe pan is heating. The light will cycle onand off, which indicates that the pan is beingheld at the set temperature. Once in eachcycle the contactors in the control box willmake a clicking sound. This is normal.

3. For best braising or frying results, preheatthe pan before you put in any food. To getan even temperature across the pan,preheat at a setting of 300° F (149° C) orless for 15 minutes (several thermostaton/off cycles).

WARNINGDO NOT HEAT AN EMPTY PAN FOR MORETHAN FIVE MINUTES AT SETTINGS ABOVE300oF. DAMAGE TO THE PAN COULDRESULT.

B. Cooking

1. To simmer or slowly heat an item, set thedial at about 210o F (99° C) or lower. Put theoptional cover on the pan to keep moistureloss at a minimum, or leave it off to help dryor reduce the product. Set the thermostathigher to cook or drive moisture off faster. The thermostat may be adjusted to anysetting in its range to cook exactly as youwish.

2. When using the optional cover, leave thecover vent open to allow excess steam toescape. For longer simmering, you maywish to close the vent to retain moisture.

3. Be careful when lifting the optional cover. Liftits rear edge a few inches to allow anysteam or and hot vapor to escape the pan. Then tilt it further to allow any hotcondensate to roll off the cover and backinto the pan.

4. To pour or dump product, remove grease, orassist cleaning, first remove the cover, thentilt the pan. Be careful!

WARNINGAVOID ALL DIRECT CONTACT WITH HOTEQUIPMENT SURFACES. DIRECT SKINCONTACT COULD RESULT IN SEVEREBURNS.AVOID ALL DIRECT CONTACT WITH HOTFOOD OR WATER IN THE BRAISING PAN.DIRECT CONTACT COULD RESULT INSEVERE BURNS.

WARNINGIF THE PAN CONTAINS ITEMS IN SAUCEOR MELTED FAT, THEY COULD SLIDEFORWARD SUDDENLY DURING TILTINGAND CAUSE THE HOT LIQUID TO SPLASHOUT.

C. To Shut Down the Pan

1. Turn the thermostat dial to “OFF”.

2. For prolonged shut-down, or before cleaningthe outside of the unit, completely shut offthe power supply to the unit.

D. Routine Cleaning

After each use, turn the thermostat to ”OFF”and clean all food-contact surfaces. At theend of each day, or at least once every 12hours, turn off electric power to the unit, andclean both the interior and the exterior. Seedetailed cleaning instructions in theMaintenance section of this manual.

Sequence of OperationThe following “action-reaction” outline is providedto help you understand how the braising panactually functions.

When you start the pan by turning the thermostatdial from “OFF” to a desired temperature, thethermostat switch closes. This action causes thecontactors to close, allowing power to flow to theheating elements and the indicator light. Whenthe temperature of the pan rises to the value seton the thermostat dial, the thermostat switchopens and causes the contactors to open. Thisstops the flow of power to the heaters andindicator light.

As soon as the thermostat senses that the panhas cooled below the set temperature, thethermostat switch closes, the contactors close,and the heaters and indicator light come onagain.

This on-off cycling continues, holding the pan atthe set temperature. These cycles cause the indicator light to go on and off during normaloperation.

If the pan temperature rises above 425°F 218°C) for any reason, a high-limit thermostat shutsoff power until the pan cools. At that point thethermostat automatically resets and allowsnormal operation to begin again.

Setting the thermostat dial to “OFF” shuts downall control and heating circuits.

The thermostat controls heating by alternatelyfeeding full power and completely cutting offpower. The pan will heat as fast as it can until itreaches the set temperature, no matter what thattemperature is. Turning the thermostat dial to ahigher setting will only cause heating to continuelonger, until the pan reaches the highertemperature. It will not make the pan heat anyfaster.

Use a brush, sponge, cloth, plastic orrubber scraper, or plastic wool to clean.

Don’t use metal implements or steel woolwhen cleaning.

B. Procedure

WARNINGBEFORE ANY CLEANING OPERATION,TURN THERMOSTAT DIAL TO “OFF” TOCUT ANY POWER TO THE HEATINGELEMENTS. BEFORE CLEANING ANY PARTOTHER THAN THE INSIDE OF THE PAN,DISCONNECT ELECTRICAL SUPPLY ATCIRCUIT BREAKER OR FUSE BOX.

1. Clean all food-contact surfaces soon afteruse. It is best to clean the pan before it hascompletely cooled. If the unit is incontinuous use, completely clean andsanitize both the inside and outside at leastonce every 12 hours.

CAUTIONKEEP WATER AND CLEANING SOLUTIONSOUT OF CONTROLS AND ELECTRICALEQUIPMENT. DO NOT SPRAY OR HOSETHE CONTROL BOX OR OTHERELECTRICAL CONNECTIONS. THEY ARENOT WATER-PROOF.

2. To remove any large amount of food left inthe pan, tilt the pan all the way up and flushit with lukewarm water. Do not damage thesurface of the pan by scraping it with a metaltool. Scratches make the surface moredifficult to clean, and provide ideal breedingplaces for bacteria.

CAUTIONMOST CLEANERS ARE HARMFUL TO THESKIN, EYES, MUCOUS MEMBRANES, ANDCLOTHING. PRECAUTIONS SHOULD BETAKEN. WEAR RUBBER GLOVES,GOGGLES OR FACE SHIELD ANDPROTECTIVE CLOTHING. READ THEWARNINGS AND CAREFULLY FOLLOW THEDIRECTIONS ON THE CLEANER LABEL.

3. Following the supplier’s directions, make upa warm solution of the cleaner. Carefullywash the inside and outside of the pan bodywith the cleaning solution.

4. Use a cloth moistened with cleaning solutionto clean controls, the control console, andelectric conduit.

5. Rinse the pan very well with lukewarm water,and drain it completely.

6. As part of the daily cleaning program, cleanall inside and outside surfaces that mayhave been soiled. Remember to check suchparts as the electrical console and otherremote spots. Clean between the pan bodyand the console using the brush provided(P/N 058705).

7. To remove materials stuck to the equipment,use a brush, sponge, cloth, plastic or rubberscraper, or plastic wool with the cleaningsolution. To make washing easier, let thecleaning solution sit in the unit and soak intothe residue, or briefly heat the solution. Donot use any gritty cleaner or metal tool thatmight scratch the surface. Scratches makethe surface harder to clean and provideplaces for bacteria to grow. Do not usesteel wool. Small bits of steel wool left inthe surface of the unit can cause rusting andpitting.

8. The outside of the unit may be polished witha recognized stainless steel cleaner such asZepper from the Zep ManufacturingCompany.

9. When the equipment needs to be sanitized,use a sanitizing solution equivalent to onethat supplies 100 parts per million availablechlorine. Get advice about the bestsanitizing agent from you supplier ofsanitizing products.

10. Following supplier instructions, apply thesanitizing agent after the unit has beencleaned and drained. Thoroughly drain offthe sanitizer.

CAUTIONNEVER LEAVE A CHLORINE SANITIZER INCONTACT WITH STAINLESS STEELSURFACES FOR LONGER THAN 30MINUTES. LONGER CONTACT CAN CAUSECORROSION.

11. After the unit has been cleaned, sanitizedand drained, let all surfaces air dry unlessthe unit must be used again right away.

12. It is recommended that the unit be sanitizedjust before use. Follow the directions of thesanitizer supplier.

13. About once a week (more often if the wateris very hard), use a heavy duty cleaner toremove mineral deposits or film left by hardwater or foods. Follow the supplier’sdirections very carefully, and thoroughlyrinse the unit off as soon as cleaning isfinished.

14. If especially difficult cleaning problemspersist, contact your cleaning productsupplier for help. The supplier has a trainedtechnical staff with laboratory facilities toserve you.

Maintenance

WARNINGUSE OF REPLACEMENT PARTS OTHER THAN THOSE SUPPLIED BY GROEN OR THEIRAUTHORIZED DISTRIBUTORS CAN CAUSE INJURY TO THE OPERATOR AND DAMAGE TO THEEQUIPMENT AND WILL VOID ALL WARRANTIES. SERVICE PERFORMED BY OTHER THANFACTORY-AUTHORIZED PERSONNEL WILL VOID ALL WARRANTIES.

Your Braising Pan is designed to requireminimum maintenance, but some parts mayrequire replacement after prolonged use. Afterinstallation, no user adjustment should benecessary. If a service need arises, onlyauthorized personnel should perform the work.

Service personnel should check the unit at leastonce a year. This should include inspectingwires and connections and cleaning inside thecontrol console. A Maintenance and Service Logis provided at the rear of this manual. Each timework is performed, enter the date on which itwas done, what was done, and who did it.

TroubleshootingYour Groen Braising Pan will operate smoothly and efficiently if properly maintained. However, thefollowing is a list of checks to make in the event of a problem. If the actions suggested do not solve theproblem, call your authorized Groen Service Representative. For the phone number of the nearestagency, call your area Groen representative or the Groen Parts and Service Department. If an item on thelist is followed by X, the work should only be performed by a qualified service representative.

Limited WarrantyTo Commercial Purchasers *(Domestic U.S., Hawaii & Canadian Sales Only)

Groen Foodservice Equipment ("Groen Equipment") has been skillfullymanufactured, carefully inspected andpackaged to meet rigid standards of excellence. Groen warrants its Equipment to be free from defects inmaterial and workmanship for (12) twelve months with the following conditions and subject to the followinglimitations.

I. This parts and labor warranty is limited to Groen Equipment sold to the original commercialpurchaser/users (but not original equipment manufacturers), at its original place of installation in thecontinental United States, Hawaii and Canada.

II. Damage during shipment is to be reported to the carrier, is not covered under this warranty, and isthe sole responsibility of purchaser/user.

III. Groen, or an authorized service representative, will repair or replace, at Groen's sole election, anyGroen Equipment, including but not limited to, draw-off valves, safety valves, gas and electriccomponents, found to be defective during the warranty period. As to warranty service in the territorydescribed above, Groen will absorb labor and portal to portal transportation costs (time & mileage)for the first twelve (12) months from date of installation or fifteen (15) months from date of shipmentfrom Groen.

IV. This warranty does not cover boiler maintenance, calibration, periodic adjustments as specified inoperating instructions or manuals, and consumable parts such as scraper blades, gaskets, packing,etc., or labor costs incurred for removal of adjacent equipment or objects to gain access to GroenEquipment. This warranty does not cover defects caused by improper installation, abuse, carelessoperation, or improper maintenance of equipment. This warranty does not cover damage caused bypoor water quality or improper boiler maintenance.

V. THIS WARRANTY IS EXCLUSIVE AND IS IN LIEU OF ALL OTHER WARRANTIES, EXPRESSEDOR IMPLIED, INCLUDING ANY IMPLIED WARRANTY OF MERCHANTABILITYOR FITNESS FORA PARTICULAR PURPOSE, EACH OF WHICH IS HEREBY EXPRESSLY DISCLAIMED. THEREMEDIES DESCRIBED ABOVE ARE EXCLUSIVE AND IN NO EVENT SHALL GROEN BE LIABLEFOR SPECIAL, CONSEQUENTIAL OR INCIDENTAL DAMAGES FOR THE BREACH OR DELAYIN PERFORMANCE OF THIS WARRANTY.

VI. Groen Equipment is for commercial use only. If sold as a component of another (O.E.M.)manufacturer's equipment, or if used as a consumer product, such Equipment is sold AS IS andwithout any warranty.
