AN INTRODUCTION TO SHERRY

All sherry comes from Western Andalusia, from within the triangle that is formed by the towns Jerez de la Frontera, Sanlúcar de Barrameda and El Puerto de Santa María.

This is the unique method of blending wines in oak barrels, which are stacked on top of one another in rows of three or four high.

Wine for bottling is taken from the bottom row (solera), and the barrel is topped up from the row above. Over many years this blending process along with even temperature and humidity produces a consistent style.

THE SHERRY TRIANGLE THE GRAPES

PalominoIs by far the most planted, creating a light tasting table wine but transformed into something sublime after undergoing the solera system aging process.

Pedro Ximénez (PX)Used for sweetening some styles, while 100% PX wines are usually extraordinarily sweet.

MoscatelAlso sweetens, while on its own makes a unique, fresh grapey and sweet style.

PALO CORTADO | A rare variety of sherry that is initially aged under flor to become a fino or amontillado, but inexplicably loses its veil of flor and begins aging oxidatively as an oloroso. The result is a wine with some of the richness of oloroso and some of the crispness of amontillado.
