EVOO Head JudgeEVOO Head JudgeEVOO Head JudgeEVOO Head Judge’s Report’s Report’s Report’s Report I would like to extend my thanks to the Australian Olive Association for inviting me to once again chair the Australian National Extra Virgin Olive Oil Competition. Now in its 18th year, it is the longest running extra virgin olive oil competition in the world, and the worlds’ largest National Competition. The Australian National Competition is unique in that it attracts entries from a diverse set of olive growing regions from all sectors of the industry: from Australia’s largest and technologically sophisticated producers, to some of the smallest and passionate family owned concerns. The competition therefore is a good indicator of the quality progression of our industry. The average free fatty acidity (FFA) was 0.23 % (median 0.20%) which is the same result as in 2013. However, the average FFA recorded at this competition has generally increased over the last 5 years from a very low 0.19% (median 0.15%) in 2010. From an industry perspective this trend is somewhat disappointing. The reasons for this trend are unclear given that the distribution of entry types have not appeared to have significantly changed over this period. On a positive note, the average peroxide value this year at 6.6 meq/kg was significantly lower than the 7.2 recorded last year, as was the UV measure of primary oxidation (1.802 in 2013, 1.76 in 2014). The average polyphenol level at 280mg/kg was at the upper end of the long term range. While it is becoming increasingly rarer to encounter oils that are overtly N/Aive, a number displayed a number of minor N/As which were often difficult to categorise with complete certainty. However, in my opinion many showed an underlying muddy sediment character (smoky, salami, cheesy and barn-yard, medicinal) suggesting a lack of attention to detail during bulk storage. The flavoured oil classes continue to improve in overall quality being true to their stated flavour and with a fresh oil base. In particular, there were some high quality flavoured oils of the Alluim type which is a difficult genre to master. Hopefully we will continue to see further improvement in this commercially important class of olive oils. The generous support of the highly experienced judges in giving their time and expertise over two days to the service of the industry is greatly acknowledged. The AOA has recruited a significant number of associated judges through their judge training program. Their performance was exemplary and I’m confident that most will soon be promoted to full judges in the near future. It was a pleasure to participate as Chief Steward in the 18th National EVOO Competition for 2014 and to organise the judging and awards. Considering the varied crop across the country this year, we were delighted to receive 186 oil entries received from 91 exhibitors.

TThhee EEnnttrriieess The States represented out of the total number of entries were: VIC – 78; NSW – 54; SA – 24; WA – 19; TAS – 10; and QLD - 1. There was a 13.4% decrease in entries compared to 2013’s 215 entries, however only a 1.5% decrease on 2012’s 186 entries which indicates that 2013 was an exceptionally good year for a lot of growers. In 2013 the average number of entries per exhibitor was 2.0 and this year it stayed the same. There were 91 exhibitors this year compared to 107 last year; this may be caused by the earlier Competition and Conference dates prohibiting some growers from being able to enter due to some unusual weather patterns which resulted in late harvests. There was an increase in the percentage of medals awarded this year (80.1%) compared to 2013 (74.4%). There were 148 medals awarded in total including 75 bronze, 54 silver and 20 gold. The average Free Fatty Acids level was 0.2 and the average polyphenol count was 278 mg/kg. Four oils failed the organoleptic analysis and 2 were disqualified due to FFA’s of 1.3 which exceed the 0.8 limitation for the extra virgin" classification.

In Class 1 there were 12 oils entered, which received a total of 8 medals with 6 bronze, 1 silver and 1 gold. In Class 2 there were 79 oils entered, which received a total of 67 medals with 36 bronze, 19 silver and 12 gold. In Class 3 there were 43 oils entered, which received a total of 35 medals with 14 bronze, 17 silver and 4 gold. In Class 4 there were 11 oils entered, which received a total of 10 medals with 5 bronze, 4 silver and 1 gold. In Class 5 there were 16 oils entered, which received a total of 12 medals with 7 bronze, 4 silver and 1 gold. In Class 6 there were 24 oils entered, 10 citrus infused oils, and 14 ‘other’ flavoured oils which received a total of 16 medals with 7 bronze, 7 silver and 2 gold. Once again, a thorough scrutiny of entries took place this year. On numerous occasions olive varieties, oil volumes, locations of oil, labelling and classes entered were questioned and investigated to confirm entry validity. This was necessary to avoid deceiving entry behaviour and to continue the integrity of the Australian National Competitions.

RReemmiinnddeerr ttoo aall ll eennttrraannttss!! When entering you must ensure that all entries are sent with their commercial labels attached and your unique ID number clearly marked on each item (Class 4: Non-Packaged does not require a commercial label). The judges never get to see your commercial label, however the Chief Steward must sight a copy to satisfy the Competition Entry Condition “Exhibits must be commercially packaged and labelled and intended

to be available for sale in the Australian marketplace at the time of entry” your entry(s) will not be accepted until a copy of your commercial label is provided. Once your entry has been received, the Chief Steward will decant a portion of your oil off for testing which is sent in a plain bottle only identifiable by a unique code known only to the Chief Steward. This code is also used during judging and is the only code the Judges get to see.

AAbboouutt tthhee HHeeaadd JJuuddggee Dr Michelle Wirthensohn a Horticulture Australia Research Fellow and Program Leader: Australian Almond

Breeding Program at The University of Adelaide - School of Agriculture, Food & Wine was again chosen to

be the Head Judge, with judging taking place at the University of Adelaide Plant Research Centre, Waite

Campus on Saturday 23rd of August 2014.

AAbboouutt tthhee CChhiieeff SStteewwaarrdd The competition was Stewarded by Peter McFarlane, who has consulted for the AOA Board since 2010;

Peter is also Chair of the National Table Olive Committee, Project Chief Investigator of Australian Olive

Industry Code of Practice Implementation, and has assisted the AOA to introduce Table Olive Standards

into the Code; he is also AOA Chemical Permits Co-ordinator.

AAbboouutt tthhee eexxhhiibbiittss As a condition of entry, all entries needed to be 100% Australian (i.e. Australian grown olives processed &

packaged in Australia) – no issues were reported with these criteria.

This year a total of 13 entries were received and assessed, which is down on the 19 received last year, and

27 in the previous year. It is of concern that the number of table olive exhibits is declining, indicating steps

need to be taken by AOA to encourage broader industry participation in future years.

This year there were 4 entries in Class 11 - Green Olives, 1 entry in Class 13 - Black Olives (other than

Kalamata), 8 entries in Kalamata, 2 entries in Class 15 (wild olives), and 1 entry in Class 18 - (speciality

olives), demonstrating once again the popularity of the Kalamata olive.

EEnnttrryy TTeessttiinngg Prior to the judging the olives were sent to a NATA accredited testing laboratory and tested to ensure they

were fit for human consumption and to ensure that the pH levels were with normal parameters (pH max 4.3,

salt min 6.0 g/100ml, E coli (below level of detection < 3 cfu); for the 3 pasteurised products we also

measure Lactobacillus to test the effectiveness of pasteurisation (below level of detection < 10 cfu ).

Pleasingly NO problems were detected with any of the exhibits.

TThhee JJuuddggiinngg All 13 exhibits were judged on characteristics such as absence of blemishes, appealing colour, good flesh

texture, olive flavour, acidity, saltiness and overall flavour balance, with a total of 5 bronze, 4 silver and 2

gold medals awarded across the National Table Olive Competition this year, in comparison with last year’s 3

bronze, 9 silver and 1 gold medals.

NNeeww iinnnnoovvaattiioonn One innovation this year was to include in the blind tastings 11 commercial green, black and Kalamata table

olive products (all pasteurised) purchased from local supermarkets. The brands were Coles (3), Woolworths

(2), Black and Gold (2), Siena (2), and Always Fresh (2) products. Whilst these products were not eligible for

awards, there was 1 product of silver medal standard and 3 of bronze medal standard; however the other 7

scored much lower than the Australian competition exhibits, with several bordering on inedible. Of interest

the imported product average score was 18 points (below medal contention) compared to the Australian

product average score of 22 points (which is the cross over score between bronze and silver medal

contention).

The encouraging message to Australian table olive producers and consumers is that locally produced table

olives are generally superior to products currently available on supermarket shelves - which are mostly

imported from Greece and Spain. Pleasingly we note that Sandhurst Fine Foods are now producing a range

of Australian sourced table olive products - we look forward to including these in our blind tasting next year.
