SPICE UP THE GARDEN WITH HERBS…

Add some variety to your garden...and to your dinner...by growing herbs! A great warm-season herb that comes in a variety of flavors is basil. Add color to the garden with the Red Rubin, Purple Ruffle or the Osmin Purple basil. Spice up a grilled meat or veggie with Sweet, Lemon, Lime or Boxwood basil.

Other perennial herbs that do well in our warm climate are mints, lemon verbena, lemon balm, rosemary, Mexican tarragon, sorrel, society garlic, garlic chives, oregano, monarda, catmint, anise hyssop, mountain mint, French bay, pineapple sage and rue. Thyme, sage, catnip, lavender and many of the scented geraniums are perennial herbs that require excellent drainage to survive the summer. They may be more successful when grown in containers and placed in a location that gets some shade during sum-mer afternoons. Even grown under good conditions, they tend to be short-lived and often succumb to root and stem rots in the hot, wet late summer season.

Herbs should be harvested frequently and regularly, being careful not to deplete all of the plant’s foliage. Generally, take no more than one-third of the total foliage at any one time. When harvested regularly, herb plants remain more uniform and compact in size, which makes them more desirable as garden plants. Harvesting and using herbs fresh is best for seasoning because the full, rich flavors are at their peak.

Pesto Cheese Torte Recipes by Janis Poche

2 8-ounce packages of cream cheese, softened and one recipe of Basil Pesto Sauce

Shape cream cheese into a square. Place on serving dish. Prepare pesto using the recipe given below. Spoon the

pesto on to surface of cheese. If desired, garnish with roasted red peppers or sliced green olives. Serve with

crackers or crusty bread slices.

Basil Pesto Sauce

2 cups fresh basil leaves, washed and thoroughly dried

2-3 cloves garlic

½ cup extra-virgin olive oil

¼ cup pine nuts (pecans or walnuts)

Salt and pepper to taste

½ cup freshly grated Parmigiano-Reggiano cheese

Place first five ingredients into a food processor and whirl until finely chopped. Transfer sauce to a bowl and stir in

cheese.
