Considered by the Incas as the “Mother of all Grains”, quinoa (“keen-wah”) is a complete protein that is gluten-free and easy to digest. Quinoa comes in red and brown varieties and has a nutty taste. When preparing quinoa, it is important to wash it several times if it’s not pre-washed. Quinoa can take the place of rice, couscous, or be mixed into a salad.
greek Quinoa salad 1 C. Raw Quinoa 2 C. Water 3 Celery Stalks, diced 2 Tomatoes, diced 1 Red Bell Pepper, diced ½ of a Red Onion, finely chopped 12 kalamata Olives, pitted and sliced lengthwise ¼ C. Fresh Parsley, chopped 1 C. Feta Cheese, crumbled
Rinse the quinoa under running water. Heat med-high saucepan and add quinoa to toast for 3-4 min or until the quinoa turns golden. Add water, cover, and bring to a boil. Then lower the heat and simmer for 15 min. Place the next seven ingredients into a large bowl and toss. Whisk the dressing together, set aside. Once the quinoa is cooked, fluff with a fork and add to large bowl and drizzle the dressing over the salad, toss lightly to mix and chill it for a 1-hour.
