Organoleptic Features

An extra virgin olive oil that shows harmony in the different attributes set off together in an excellent overall effect.

Grateful taste, very fresh and crisp, reminiscent of certain nuances of tender raw artichoke. “artichoke” is a refinement that does not belong in the classical virtues. Full-bodied and tactile oil has a good consistency in its average density.

Fruity aftertaste, smell and taste of healthy fruit, fresh and cultured at the opti-mal stage of ripeness. These essences are long-lasting and stabilized.Feeling of lively personality,perceived as aftertaste due to higher content of phenols.

The quality of our oil is influenced by many factors in the entire production chain.Due to the extension of the olive-growing area, the pedo-climatic environment results heterogeneous.The temperature and the mild microclima affect the acid composition of our oil that is collected since the third week of October. The amount of water available in the Calabrian Serre, is guaranteed by technological infrastructures of new gene-ration that facilitate the cultivation system by affecting the phenolic compounds present in the final product.

The fruit ripening occurs earlier compared to other Italian areas, resulting in an advanced processing and marketing compare to the other colder regions.

The organoleptic characteristics of our oil are marked by full-bodied and fruity aftertaste.The harvest is done mechanically, by the use of mechanical shakers that reduce the time of harvest, ensuring the quality of the fruit to the mill for processing.

The mill is built according to bioclimatic principles based on the vernacular tradition, ensuring internal temperatures not above 15° C during the entire working period.The olive processing is performed by mechanical means. Once olives are undertaken to the process, they are freed from the outer material gathered.

The mill hammer used in the extraction system is coupled to a continuous centrifugation system. This type of crushing, leads to greater extraction of phenolic compounds, and therefore the production of a fruity and more durable extra virgin olive.

The kneading process is strictly controlled. short and con-stant temperatures of workmanship are guaranteed to avoid the activity of proteolytic enzymes.

The clarification is accomplished by sedimentation only.The oil conservation is controlled in it’s temperature, light and oxygen.

Our oil is stored in inert atmosphere only.

The collecting method is the mechanical shaker on net.On these low altitudes this type of oil, which does not undergo-ne any treatment, begins to mature in advance than at higher al-titudes and allows the harvest of the pigmented olives (rounded) already in the third week of October, in regular climate condi-tions.In this period, the oil yield is very low about 20% of the fruit, but the quality is very high.The grinding mill occurs strictly on the same day of collection at controlled temperature not higher 27°C also known as “cold”.This oil does not undergo any treatment or filtration; the settle period is in a stainless steel tanks and lasts for a period of about 7/10 days. Because of the short settling period, a laying may be seen at the base of the bottle, synonymous of naturalness .Golden-green veiled, fragrant fruit and full flavoured.
