    Spain Toro - January

    It is difficult to envision Spains culture without their famous icon thebull or Toro as it is known in Spanish. A Toro is bold, aggressive and

    intense - a fitting name for this unforgettable and powerful wine.

    Red ripe fruits with a little bit of anise, hay/straw, dried prune, cherries

    and blackcurrant entice the nose. Coffee with black pepper or dried

    leaves are layered with the sweetness of fresh cherries and strawberries.

    Spanish Culture

    Bullfighting is considered an art in Spain, and is the most controversial

    sport in the world. It draws international spectators with bull rings in all

    major cities. It is truly a part of the Spains history, art and culture.

    Spain, using rapid passages and intricate footwork. Spain likes its

    sports, but in particular soccer!

    A significant portion of Spanish cuisine derives from Roman, Jewish, and Arab traditions.

    The essential ingredient for real Spanish cooking is olive oil, as Spain produces 44% of the

    world's olives. A Spanish cook could not do without potatoes, tomatoes, peppers, and beans.

    These are staple ingredients in a typical meal.

    Spaniards are credited for inventing paella and sangria.

    Spotlight on TempranilloWe are in the darkest days of winter so

    what better time to indulge yourself with a

    wonderful rich red wine: Tempranillo.

    Tempranillo is a Spanish noble black

    grape variety that is the main grape used

    in Rioja.

    Tempranillo wines are widely touted as

    being wonderful when consumed quite

    young; however, Tempranillo wines age

    beautifully and expensive Tempranillo

    wines are aged for many years in oak bar-

    rels.

    Tempranillo wines are typically ruby in

    colour and have aromas and flavours of

    berries, plum, tobacco, vanilla, leather and

    herb.

    Ingredients:

    1 tbsp peanut oil

    1/2 cup onions, sliced

    2 tsp chopped garlic

    7 oz beef steak, sliced

    1 cup bell peppers, sliced1 lime, juiced

    1 tsp chili

    1 tsp cumin

    4 small flour tortillas

    Salt & pepper to taste

    Instructions:

    Preheat oven to 325. Wrap flour tortillas in

    foil & place in oven to warm for 5 mi min-

    utes. Meanwhile prepare filling

    In a large saut pan set over high heat, heatthe oil for approximately 2 minutes. Add the

    peppers & the remaining ingredients. Cook a

    further 1 to 2 minutes. Taste & adjust sea-

    soning. Remove from heat. Remove and

    divide mixture over 4 warm tortillas, roll up and

    serve with desired garnish.

    Garnish suggestions: Salsa, grated cheddar, gua-

    camole & sour cream

    Makes 8 servings.

    Instructions

    1 oz orange chocolate port

    1 oz triple sec

    Twist of orange

    Shake with ice and serve in a martini

    Our orange chocolate port is

    sweet, creamy, decadent, with

    hints of citrus and vanilla.

    Typically served as a dessert

    wine, try this refreshing cocktail

    for a unique pre-dinner drink.

    Tempranillo is native to northern Spain.

    The two major regions that grow Tem-

    pranillo are the famous Rioja region and

    the lesser known Ribera del Duero regionlies to the south. In other growing regions,

    such as in the Douro, Tempranillo is used

    in blends to make port wine.

    While Tempranillos heritage can be found

    in the Rioja region, we are seeing fabulous

    Tempranillo wines coming from Argentina,

    Chile, Mexico, and California. There are

    even some plantings in the Dominican

    Republic!

    This winter, enjoy Tempranillo paired withtapas, pork, slow-cooker beef stew or any

    grilled or roasted entre.

    So we are having an event to help him on his

    way to a full recovery!

    A steak and stein and auction is being held at

    the 3 Mile Entertainment Complex in Saint

    John, NB on Friday, January 20th, 2012.

    chicken breast) with veggies and potatoes with a

    nice ice cold Moosehead Beer!! ***

    *Tickets will be 20$ and a maximum of 100 will

    be sold. There will be an auction as well where

    all the proceeds will go to helping Greg and his

    family pay for treatments and commuting to

    and from Halifax, as well as any before and

    after medications to help him become cancer

    VALLEYWINE CELLAR

    Greg Halpin, is a 20 year old Quispam-

    sis resident who is suffering from can-

    cer. He was diagnosed back in March

    2010, where he received treatments and

    responded well to them leaving every-

    one, after several months, including the

    doctors thinking he was cancer free. In

    November of this year Greg had a bone

    marrow aspiration done where they

    found out, unfortunately the leukemia

    had returned.

    His bone marrow was 60% leukemia. As

    a result of this Greg has since had to

    take a leave of absence from the UNB

    Nursing Degree program, which he

    started this September 2011. Greg will

    have to go to Halifax, N.S to endure a

    bone marrow transplant in March,

    which is very costly, and none of which

    Medicare covers.
