Directions

1. Preheat oven to 425 degrees F. Whisk pumpkin, sweet-

ened condensed milk, eggs, spices and salt in medium bowl

until smooth. Pour into crust. Bake 15 minutes.

2. Reduce oven temperature to 350 degrees F and continue

baking 35 to 40 minutes or until knife inserted 1 inch from

Place bread cubes in a lightly greased 9x13 inch baking pan. 2. In a large bowl, beat cream cheese with an electric mixer at medium speed until smooth. Add eggs one at a time, mixingwell after each addition. Stir in milk, half and half, maple syrup, and vanilla until mixture is smooth. Pour cream cheese mix-ture over the bread; cover, and refrigerate overnight. 3. The next morning, remove souffle from refrigerator, and let stand at room temperature for 30 minutes. Meanwhile, pre-heat oven to 375 degrees F (190 degrees C). 4. Bake, uncovered, for 30 minutes in the preheated oven, or until a knife inserted in the center comes out clean. * 18 jumbo black olives,

pitted

* 1 (8 ounce) package

cream cheese, softened

* 18 small black olives

* 1 carrot

Directions

1. Cut a slit from top to bottom, lengthwise, into the

side of each jumbo olive. Carefully insert about 1

teaspoon of cream cheese into each olive. Slice the

carrot into eighteen 1/4 inch thick rounds; cut a

small notch out of each carrot slice to form feet.

Save the cut out piece and press into center of small

olive to form the beak. If necessary cut a small slit

into each olive before inserting the beak.

2. Set a big olive, large hole side down, onto a carrot

slice. Then, set a small olive onto the large olive,

adjusting so that the beak, cream cheese chest and

notch in the carrot slice line up.

Secure with a toothpick.

You Need

6 eggs, separated

1/4 tsp (1 mL) salt

2/3 cup (160 mL) sugar

3/4 cup (180 mL) light rum

1 tsp (5 mL) vanilla extract

2 cups (500 mL) whipping cream

2-1/2 cups (625 mL) milk

Freshly grated nutmeg

Instructions

Beat egg whites and salt until stiff peaks form; set aside. In

another bowl beat egg yolks until light. Gradually add sugar

and continue beating until thick and lemon coloured. Slowly

stir in rum and vanilla.

Whip cream until softly stiff. Fold whipped cream, then egg

whites into yolk mixture. Gently stir in milk.

Serve well chilled with freshly grated nutmeg on top.

* 4 ounces chocolate confectioners coating

Directions

1. Preheat the oven to 225 degrees F (110 degrees C). Line 2 cookie sheets with

parchment paper or aluminum foil.

2. In a large glass or metal bowl, use an electric mixer to whip egg whites until

foamy. Add cream of tartar, salt, and vanilla. Continue whipping until the whites

hold soft peaks. Gradually sprinkle in the sugar so that it does not sink to the

bottom, and continue whipping until the mixture holds stiff shiny peaks.

3. Place a round tip into a pastry bag, and fill the bag half way with the meringue. To pipe the mushroom caps, squeeze out

round mounds of meringue onto one of the prepared cookie sheets. Pull the bag off to the side to avoid making peaks on

the top. For the stems, press out a tiny bit of meringue onto the other sheet, then pull the bag straight up. They should

resemble candy kisses. Do not worry about making all of the pieces exactly the same. The mushrooms will look more natu-

ral if the pieces are different sizes. Dust the mushroom caps lightly with cocoa using a small sifter or strainer.

4. Bake for 1 hour in the preheated oven, or until the caps are dry enough to easily remove from the cookie sheets. Set aside

to cool completely. Melt the coating chocolate in a metal bowl over simmering water, or in a glass bowl in the microwave,

stirring occasionally until smooth.

5. Poke a small hole in the bottom of a mushroom cap. Spread chocolate over the bottom of the cap. Dip the tip of a stem

in chocolate, and press lightly into the hole. When the chocolate sets, they will hold together. Repeat with remaining pieces.

Store at room temperature in a dry place or tin.

Festive Cracker SpreadIngredients

* 1 (8 ounce) package cream cheese, softened

* 1 (8 ounce) package finely shredded sharp Cheddar cheese

* 1/2 cup mayonnaise

* 3/4 cup chopped pimento-stuffed olives

* 1/2 cup chopped celery

* 1/3 cup chopped onion

* 1/4 cup chopped green bell pepper

* 2 teaspoons dried parsley

Directions

1. Beat the cream cheese, Cheddar cheese, and mayonnaise with an

electric mixer in a bowl until smooth. Fold in the olives, celery, onion,

bell pepper, and parsley; mixing just enough to evenly combine. Cover

and chill for at least 1 hour.

Ingredients

* 3/4 cup graham cracker crumbs * 1/2 cup ground pecans

* 2 tablespoons white sugar * 2 tablespoons brown sugar

* 1/4 cup butter * 3/4 cup white sugar * 3/4 cup canned pumpkin

* 3 egg yolks * 1 1/2 teaspoons ground cinnamon

* 1/2 teaspoon ground mace * 1/2 teaspoon ground ginger

* 1/4 teaspoon salt * 3 (8 ounce) packages cream cheese

* 3/8 cup white sugar * 1 egg * 1 egg yolk

* 2 tablespoons heavy whipping cream * 1 tablespoon cornstarch

* 1/2 teaspoon vanilla extract * 1/2 teaspoon lemon extract

Directions

1. Preheat oven to 350 degrees F (175 degrees C).

2. Combine the graham cracker crumbs, ground pecans, 2 tablespoons white sugar, 2 tablespoons brown sugar, and the

melted butter or margarine and mix well. Firmly press mixture into one 9 inch springform pan.

3. Combine 3/4 cup of the white sugar, the pumpkin, 3 egg yolks, ground cinnamon, ground mace, ground ginger and salt

in a medium bowl. Mix well, and set aside.

4. Beat cream cheese with an electric mixer until light and fluffy; gradually add 1/4 cup plus 2 tablespoons white sugar and

mix well. Add the whole egg, remaining egg yolk and the whipping cream, beating well. Add cornstarch and vanilla and

lemon flavorings, beat batter until smooth. Add pumpkin mixture and mix well. Pour batter into the prepared pan.

5. Bake at 350 degrees F (175 degrees C) for 50 to 55 minutes. Do not overbake. Center may be soft but it will firm up when

chilled. Let cheesecake cool on a wire rack, then refrigerate.

Directions

1. Preheat oven to 170 degrees.

2. Open the bags of pretzels and remove all the unbroken pretzels.

3. Place them on waxed paper-lined cookie sheets in a single layer.

4. Unwrap Hersheys Kisses, place one on each pretzel, repeat for an entire

cookie sheet.

5. Place cookie sheet in the preheated oven and bake for six minutes.

6. Immediately upon removing from the oven, place one M-n-M on top of

semi-melted Hersheys Kiss.

7. Place entire cookie sheet in refrigerator until cookies are set.

Cranberry SauceIngredients

* 12 ounces cranberries

* 1 cup white sugar

* 1 cup orange juice

Directions

1. In a medium sized saucepan

over medium heat, dissolve the

sugar in the orange juice. Stir in

the cranberries and cook until the cranberries start to pop

(about 10 minutes). Remove from heat and place sauce in a

bowl. Cranberry sauce will thicken as it cools.

Rib RoastIngredients* 1 (5 pound) standing beef rib roast* 2 teaspoons salt* 1 teaspoon ground black pepper* 1 teaspoon garlic powderDirections1. Allow roast to stand at room temperature for at least 1 hour. 2. Preheat the oven to 375 degrees F (190 degrees C). Combine the salt, pep-per and garlic powder in a small cup. Place the roast on a rack in a roastingpan so that the fatty side is up and the rib side is on the bottom. Rub the sea-soning onto the roast. 3. Roast for 1 hour in the preheated oven. Turn the oven off and leave theroast inside. Do not open the door. Leave it in there for 3 hours. 30 to 40 minutes before serving, turn the oven back on at375 degrees F (190 degrees C) to reheat the roast. The internal temperature should be at least 145 degrees F (62 degrees C). Removefrom the oven and let rest for 10 minutes before carving into servings.
