Otis McAllister Attends the 2012 Sweets and Snacks EXPO

Travel Retail Attends ASUTIL

Otis McAllister’s Travel Retail division attended the ASUTIL Conference in Puerto Iguazú, Argentina this past June. The ASUTIL Conference is one of the biggest Duty Free trade shows in South America. It annually attracts airport operators, world-wide suppliers and operators of duty free shops to one central, networking location. The Travel Retail division of Otis McAllister met with their suppliers and store operators, boosting current sales and progressing business in other facets. The main attraction at this event are the Iguazú Falls, similar to Niagara Falls in NY, connecting the borders of Argentina, Paraguay, and Brazil. The natural wonder and geographical borders make this place one of the most premier tourist locations in South America. Over 2,000 visitors a day in a region with over 8.5 million inhabitants contribute to a bustling duty free environment and puts Iguazú Falls on the map as one of the best Travel Retail locations south of the Equator. Nick Tamma and Marc Panara worked earnestly to open doors for Jelly Belly at Iguazú Falls. Marc Panara placed an ample General Cigar order for Paraguay’s duty free and domestic sectors. They also closed with a new customer, NEUTRAL, in Uruguay for Café Crème cigars.

From Otis McAllister’s Travel Retail team, Justin Nee and Matt Panara attended the 2012 Sweets & Snacks EXPO®, held this past May 8 -10 in Chicago, IL. The event broke growth records for the second straight year. Nearly 15,000 professionals with global participation from 70 countries took part across 3 acres of showroom floor. This year was the largest show with the most exhibitors in the EXPO’s 16-yr history. Billed as the largest confectionery, cookie and snack event in the Americas, Otis McAllister went to represent their confectionary brands, networking with various suppliers while exploring new, potential partners. This networking was highlighted by meetings with Martin Thompson - CEO of Ghirardelli, Octavio Garza - owner of Turin Chocolates, and Sharon Duncan - Jelly Belly’s Vice President of International Business. This event also allowed Justin and Matt to coordinate a confectionary tasting and training event in Chicago O’Hare’s duty free stores.

Dina Graves Joins the Rice Division Dina Graves was born and raised in "Wild and Wonderful" West Virginia. Although she lived on a farm, she wasn't strictly a country girl. She spent her summers in New York City, where she participated in a program called Feed America First. With a pastry chef mother, it's no wonder she started baking early and putting it to good use. Her duties at Feed America First included baking muffins and serving meals to the homeless in the parks. Upon graduating from high school, she left West Virginia to study political science, art, and French at Duke University. During her time at Duke, she played trombone in the marching and pep band, performed in musical theater productions, wrote for the arts section of the school paper, volunteered with Durham children, studied Jazz dance, was president of the vegetarian club, and spent a semester abroad in Paris. After receiving her degree, she followed in the footsteps of her mother and became a pastry chef at a local bakery, 9th Street Bakery, in Durham, North Carolina. She focused mostly on laminated pastries, also known as viennoisseries-- i.e. croissants, danish, cinnamon buns, cream puffs, pain au chocolate, etc. After researching the laws of North Carolina, she took a big step and left the 9th Street Bakery to open up her own home-based pastry business, the Dharma Bakery (www.dharmabakery.com), named after her mother. She continued her interest in community service by working in the daycare at a local church. In the summer of 2010, Dina decided it was time to take a leap of faith, shut down her bakery, and moved to California. After working a short time as a legal assistant in a small trademark law firm in Mountain View, she moved to the Google campus and worked as a Policy Associate for YouTube and served as a team leader for Google's annual volunteering week, GoogleServe. With pastry and legal experience under her belt, Dina is thrilled to find a company that fulfills all her interests. Dina says that, “It is a joy to be surrounded by a team who cares as much about food as I do and who dedicates time and energy to giving back to the community.” She is also happy to give assistance with trademark matters and finds that she can draw on her experience at Google to give insight into web marketing and social media to benefit the many brands at Otis McAllister.

Janet Wong Joins the Rice Division Otis McAllister welcomes Janet Wong, Sales and Marketing Assistant on the Village Harvest Team. Janet will be supporting Mary Lobaugh and Joe Gozzi on building the Village Harvest rice and grains retail business for US. On Janet’s off hours, she enjoys cooking, fishing, hiking, and seeking out hot new food spots in and around the San Francisco Bay Area (she’s a foodie). She lives in San Francisco with her dog, Bella.

Otis McAllister Quality Assurance in the Field – Peru In a recent visit to Peru, Jacqueline Acuña was able to visit two of Otis McAllister’s quinoa suppliers and see the fields where this great healthy grain in farmed. The group from Alisur S.A. has been in the grains and beans business since 2000 and Jacqueline Acuña flew to an area close to Ayacucho to see the co-op field they manage. With Alisur’s technical knowledge and supervision they are helping these farmers diverse their fields from potatoes and cattle to a less protein soil absorbing crop. The nature of the quinoa is a very natural one. These farmers prepare the land and plant for harvesting in January – May. As the rains were a little late this year the harvest was done at the end of May through June. After harvesting the quinoa it is taken to a pre-process facility in town where it is peeled and washed thoroughly with clean filtered water. Later taken to Lima for further sorting and bagged.

Jacqueline Acuña’s other host was Inca Health. She flew south to the city of Arequipa, second largest in Peru, and then drove to Inca Health’s own 12 hectares farm in San Luis. This arid countryside is a green oasis when in river valleys that they use drip irrigation for growing two harvests of quinoa (July-September and December-February). They also rent other farmland close by for more planting and are able to have a close supervision of these lands. They use their own seeds

which they are patenting this coming year so they will be exclusive to Inca Health. The land around this area is rich with natural potassium and iron because of volcanic mountains surrounding it.

The Process The product goes through a seeding process (manual and machine), followed by cultural works (weeding, fumigation), and trite (manual and machine). Then the de-saponing is carried out, which may be done with the following methods:

1. Washed by agitation and turbulence (the quinoa is soaked for 30 minutes at ambient temperature, washing was performed with steam heating jacket and wet friction shaker);

2. Friction or Chalking (Combined action of paddles or rotating drums and stationary screen, which allows a constant scraping of the quinoa grain against the walls of the mesh);

3. Thermo mechanical dry (Subjected to dry heat of 80 ºC to 90º C for 10 minutes, the skin is removed by friction);

4. Chemical method (The grains are subjected to a solution of sodium hydroxide 10% at 100 ºC for 1,5 min.)

5. Combined (the grains are subjected to mechanical abrasive peelers and polishing); then passes to the drying process (where the grain is runs in blankets and exposed to sunlight throughout the day, removing it and turning it until it reaches the desired humidity).

Once completely dry the grain is passed to the selection and classification process, this phase allows better the use of grains and they are used for different products such as flour, flakes, etc., classified as large or small. The product obtained from the raw material, various types of white quinoa: Kiwicha, Sajama, Junín, and Real (smaller to biggest grain), black quinoa and red quinoa, then goes through the following process steps: sizing, removal of stones by machine, sizing selection, optical cleaning selection and packaging so that we can obtain a quality product in optimal conditions for consumption.
