OCTOBER 15, 2011 HIGHLIGHTS • Three levels of record books: Junior, Intermediate, Senior •Forms may be completed through online entry system (www.4hreports.com) or maybe downloaded from the Texas 4‐H website • Reference to 4‐H objec ves in the report form no longer required • Photo cap ons no longer required • Resume for Seniors no longer required • Training material (both print and short video series) will be available to Coun es for local training 

Pizza Ranch will be happening on October 5 & 6 at the Brazos County Expo Complex.

4‐H ENROLLMENT IS OPEN ON 4‐H CONNECT! 

August 1st started the enrollment process for the 2011‐2012 4‐H year in Texas. All 4‐H families, new and returning, are encouraged to log and get enrolled as soon as possible in order to take advantage of the $20.00 par cipa on fee. As you enroll in 4‐H for the year, here are some ps in using 4‐H CONNECT: • If you already have a profile DO NOT create another one! • If you lost your email and password ‐ call your county office they can tell you your e‐mail address and reset your password! • To be an official 4‐H member in Texas 4‐H you must have an ACTIVE profile in 4‐H CONNECT! • An ac ve membership will not be granted un l par cipa on fee is paid • You cannot register for an event un l your profile is ACTIVE.

2011 4-H Billboards Across Texas For the second year, Lamar Adver sing has partnered with the Texas 4‐H and Youth Development Program to spread the word about 4‐H across Texas with the dona on of up to 100 billboards on Texas highways and roads. In 2010, the billboard campaign reached an es mated 52 million viewers through 74 billboards across Texas. While the billboard and installa on is free, a minimum cost is required to cover the expense of prin ng each of the billboards. Sponsorship is $150.00 per billboard and will be limited to the first 100 sponsorships.

All sponsors will be official donors to the 2011 Na onal 4‐H Week Campaign and be listed on the Texas 4‐H website for recogni on. For order form and info go to h p://texas4‐h.tamu.edu/news/na onal4Hweek/nat_4h_week_billboard.php

Texas 4‐H Logo & Theme Contest Submissions must be received no later than October 3, 2011

2012 TEXAS 4‐H BEEKEEPING ESSAY CONTEST  DEADLINE FOR ESSAY : JANUARY 13, 2012 

TOPIC:  “The Results of Honey Bee Pollina on in My Community”  Honey bees pollinate a wide variety of plants. The food crops that benefit from honey bee pollina on have been said to contribute one‐third of the American diet. In addi on, many non‐food plan ngs and natural environmental plants benefit from honey bee pollina on. The 4‐H’ers are en‐couraged to inves gate the plants in their communi es that benefit from honey bee pollina on and determine the results of that pollina on. The scope of the research is an essen al judging criterion, accoun ng for 40% of your score. The number of sources consulted, the authority of the sources, and the variety of the sources are all evaluated. Personal interviews with beekeepers, farmers and others familiar with the subject are valued sources of informa on and should be documented. Sources, which are not cited in the endnotes, should be listed in a “Resources” or “Bibliography” list. Note that “honey bee” is properly spelled as two words, even though many otherwise authorita ve references spell it as one word. NOTE: FOR 2012, ONLY ESSAYS SUBMITTED ELECTRONICALLY WILL BE ACCEPTED.

Let’s Cook Something!!!

Mango Chicken Salad 

 Ingredients  

2/3 cup plain low fat yogurt

3/4 cup chopped fresh cilantro

2 Tablespoons fresh lime juice

1 Tablespoon fresh lime zest

2 teaspoons Dijon mustard

1/4 teaspoon dry cayenne pepper

1/4 teaspoon ground black pepper

2 cups shredded cooked chicken

1 large fresh mango, diced

6 cups fresh spinach leaves

Direc ons  In a small bowl, whisk yogurt, cilantro, lime juice, lime zest, Dijon mustard, and spices to make a dressing. Mix chicken and mango in medium bowl. Add dressing to chicken salad and mix well. Serve ½ cup chicken salad on top of 1 cup of washed spinach leaves. Prepara on Time: 15 minutes Cost Per Serving: $0.95 Servings: 6 Serving Size: 1/2 cup salad, 1 cup spinach This slimmed down salad goes great with some whole wheat crackers or stuffed into a whole wheat wrap. If you are looking for some fresh, affordable fruit options in September try adding apples, canta-loupes, honeydew melon, peaches, or watermelon to this dish as well.
