Anyone leaving Santiago on course for the Colchagua Valley must first pass through the Cachapoal Valley. There, you should stop for a visit at the small winery Tipaume, owned by Frenchman Yves Pouzet. The production follows the principles of organic and biodynamic ag-riculture and is certified by the German agencies Demeter and BCS-Öko, as well as the Swiss agency IMO. Pouzet treats the diseases that appear in the plantation with homeopathy and leaves the wines — a mixture of Cabernet Sauvignon, Merlot, Lacryma Christi and Viognier — aging in the basement of his house, in oak barrels and large clay amphorae.

Sua produção segue os princípios da agricultura orgânica e biodinâmica e é certifi-cada pelas agências alemãs Deme-ter e BCS-Öko, além da suíça IMO. Instalada aos pés da Cordilheira dos Andes, próximo à cidade de San Fernando, a Casa Silva continua o trabalho da família de origem francesa Bouchon (em francês, a palavra significa ro-lha), que iniciou o cultivo de vinhedos na região em 1912. Possui rótulos premiados, como o Gran Terroir de Los Andes Angostura Merlot, vencedor do prêmio francês Challenge Inter-national du Vin 2013. Além de proporcionar degustação aos visitantes, a Casa Silva conta com um hotel com suítes amplas em estilo colonial, restaurante e atividades como passeios a cava-lo e de bicicleta pelos vinhedos. Também é possível assistir a partidas de polo, já que a viníco-la mantém um haras, oferece aulas de hipismo e tem sua própria equipe do esporte. O patriar-ca, Mario Silva, mora ali com seus filhos e é a prova do ditado que diz que é o olho do dono que engor-da o gado (ou, no caso, que faz as vinhas crescerem). Installed at the feet of the Andes, nearby the city of San Fernando, Casa Silva continues the work of the French family Bouchon (the word means cork in French), which began cultivating grapevines in the region in 1912. It has award-winning wines, like Gran Terroir de Los Andes Angostura Merlot, winner of the French prize Challenge International du Vin 2013. In addition to providing tasting sessions for visitors, Casa Silva also has a hotel with spacious colonial-style suites, a restaurant and such activities as horseback riding and biking through the grape plantation. It's also possible to watch polo games, being that the winery has a stable, offers classes in equestrianism and has its own polo team. The patriarch, Mario Silva, resides there with his children and is living proof of the old saying that the owner's eyes fat-ten the herd (or, in this case, make the grapevines grow). Before taking over the business from his wife's family, he worked as a dentist. Relaxed and quick to smile, he says that switching professions wasn't hard and that he found his true vocation at the winery.

Foram necessários quatro anos e 10 milhões de dólares para concluir a construção que se eleva na paisagem do Vale Apalta, próximo à cidade de Santa Cruz. Projetada pelo arquiteto chileno Roberto Benavente, a edificação lembra um barril e abriga em seus oito andares (seis deles subterrâneos, escavados em uma rocha gigante) a produção premiadíssima de Alexan-dra Marnier Lapostolle, dona da Lapostolle e descendente da família francesa criadora do fa-moso licor Grand Marnier. Em 2012, seis dos rótulos da casa constavam do relatório Insider, publicado pela americana Wine Spectator, uma das mais conceituadas revistas sobre vinhos do mundo. Entre eles está o Clos Apalta 2009, que recebeu nota 96 em uma escala que vai até 100 pontos. No grande salão de entrada, as uvas, produzidas com técnicas orgânicas e biodinâmicas, são retiradas dos cachos manualmente e levadas aos enormes tonéis onde se transformam em vinho pelo processo gravitacional: o líquido vai “descendo” os andares da vinícola conforme sua fase de produção, evitando, assim, a manipulação. Na sala onde se faz a degustação, uma belíssima mesa de vidro se abre e dá lugar a uma escada para um subter-râneo que abriga a chamada “biblioteca de madame Marnier Lapostolle”. Ali estão centenas de garrafas de todas as safras da bodega e outros vinhos especiais guardados pela empresária. A vinícola também oferece hospedagem luxuosa em sua Lapostolle Residence, formada por quatro casas encravadas no bosque da propriedade.

It took four years and USD 10 million to build the structure that stands in the middle of the Apalta Valley landscape, nearby the city of Santa Cruz. Designed by Chilean architect Roberto Benavente, the building resembles a barrel and contains, in its eight stories (six of which are underground, carved in a gi-ant rock), the award-winning production of Alexandra Marnier Lapostolle, owner of La-postolle and descendent of the French family that created the famous Grand Marnier li-queur. In 2012, six of the house's wines were listed in the Insider report published by the American magazine Wine Spectator, one of the most renowned wine publications in the world. Among them, Clos Apalta 2009, which was given a score of 96 out of 100. In the large entrance hall, the grapes, produced with organic and biodynamic techniques, are removed from the bunches by hand and brought to the enormous casks where they are transformed into wine by a gravitational pro-cess: the liquid “descends” the winery's floors according to its phase of production, thus avoiding manipulation. In the room where the tasting sessions are held, a beautiful glass table opens up and gives way to a staircase that leads underground to a cellar where the so-called “library of Madame Marnier Lapos-tolle” is located. It is home to hundreds of bot-tles from all the bodega's harvests and other special wines stored by the businesswoman. The winery also offers luxury accommoda-tions at its Lapostolle Residence, comprised of four houses embedded in the grounds' woods.

Com duas medalhas de ouro e quatro de prata na edição 2013 do Concurso Mundial de Vinhos de Bruxelas, na Bél-gica, a Viu Manent está entre as bodegas mais antigas do país: começou em 1935, quando o imigrante catalão Miguel Viu--García se estabeleceu em San Carlos de Cunaco, no coração de Colchagua. Para quem vai com a família, uma das atrações é o passeio de charrete para conhecer os vinhedos. Os turistas também podem participar da colheita e fazer seu próprio vinho. Mas a experiência mais deliciosa está no estúdio da chef Pilar Rodriguez, que oferece aulas de gastronomia e de harmonização com vinhos para grupos de até 16 pessoas. Entusiasta dos ingre-dientes locais, como a pimenta merken e o sal da Lagoa de Cahuil, Pilar surpreende com pratos que levam frutos do Pacífico, como machas, queijos frescos da região de Marchigüe e um delicioso sorvete ar-tesanal de murta, uma fruta nativa. “Um dos princípios para fazer refeições har-monizando a comida com os vinhos é op-tar por pratos simples, que não misturem muitos sabores, para não anular o paladar da bebida”, conta Pilar. E se o prato for muito apimentado ou gorduroso? “Então, vá de cerveja”, diz ela.
With two gold medals and four silvers at the 2013 International Wine Competition in Brus-sels, Belgium, Viu Manent is one of the country's oldest bodegas, founded in 1935, when Catalonian immigrant Miguel Viu-García settled in San Carlos de Cunaco, in the heart of Colchagua. For those traveling with family, one of the attractions is the carriage ride through the plantations. Tourists can also participate in the harvest and make their own wine. But the most delightful experience at the locale is at chef Pilar Rodriguez's studio, which offers lessons in culinary arts and wine harmonization for groups of up to 16 people. An enthusiast of local ingredients, like Merkén peppers and salt from the Cahuil Lagoon, Rodriguez surprises guests with dishes made with seafood from the Pacific, like machas, fresh cheese from the Marchigüe region and delicious artisan ice cream made with murta, a native fruit. “One of the principles in making meals match with wine is to opt for simple dishes, which don't mix too many fla-vors, in order not to annul the beverage's taste,” says Rodriguez. What if your dish is especially spicy or fatty? “Go with beer then,” she says.

Quando Tomas Moore era cri- -ança, seu avô costumava lhe dar uma moeda quando ele recitava a ordem correta dos planetas do Sistema Solar. Hoje, aos 76 anos, esse senhor apaixonado por astronomia é quem orienta os turistas na visita ao observa-tório astronômico que é uma das atrações da Viña Santa Cruz. Depois de provar os vinhos da bodega — como o Tupu Edición Limitada, vencedor de quatro medalhas de ouro em concursos na Europa e na América Latina —, os turistas podem pegar o te-leférico que leva ao observatório e às reproduções de casas dos povos ancestrais do Chile, como os mapuche, os aymara e os rapa nui. A vinícola também mantém um museu de automóveis, onde está o famoso DeLorean, o carro usado no filme De Volta para o Futuro.
When Tomas Moore was a kid, his grandfather used to give him a quarter whenever he re-cited the planets of the Solar System in correct order. Now 76, this gentleman who's pas-sionate about astronomy is the one guiding tourists on visits to the observatory — one of the attractions at Viña Santa Cruz. After sampling the bo-dega's wines — like the Tupu Edición Limitada, winner of four gold medals in Europe and Latin America —, tourists can take the cable car which leads up to the observatory and reproductions of the hous-es of Chile's ancestral peoples, like the Mapuche, Aymara and Rapa Nui. The winery also has an automobile museum, in-cluding the famed DeLorean, the car featured in the movie Back to the Future.

Em um anfiteatro com iluminação reduzida, um “público” especial re-pousa ao som de cantos gregoria-nos. São as barricas de carvalho dos vinhos mais selecionados da bode-ga Montes. A vinícola, conhecida por seu logotipo com figuras de an-jos, foi toda estruturada segundo os princípios do feng shui. Além de “ou-vir” música, os vinhos ficam de fren-te para salas onde impera a cor ver-melha, para atrair o sucesso. Na entrada da bodega, uma passagem foi construída sobre água corrente – que, acredita-se, emite boas energias. A degustação dos vinhos da casa é feita numa gigante sala com janelões para o belo Vale Apalta. Ali os turis-tas têm a oportunidade de conhecer rótulos como o Montes Classic Series Cabernet Sauvignon 2011, que no início deste ano ganhou medalha de ouro na competição internacional de vinhos de Chengdu, na China.
Inside an amphitheater with dimmed lighting, the special “audience” relaxes to the sounds of Gregorian chants. They are oak barrels of the Mon-tes bodega's most renowned wines. The winery, known for its logo with figures of angels, was entirely struc-tured according to the principles of feng shui. In addition to “listening” to music, the wines are placed in front of rooms done completely in red, in or-der to attract success. At the bodega's entrance, a passageway was con-structed above running water, which supposedly emits positive energy. The house's wine tasting sessions are held in a large room with giant windows facing the lovely Apalta Valley. There, tourists get the opportunity to try such wines as the Montes Classic Se-ries Cabernet Sauvignon 2011, which won the gold medal at the interna-tional wine competition in Chengdu, China, at the beginning of this year.
