Ask The Bartender

First of all, humor us. Tell us a Joke.“Why do bees have sticky hair? Because they use honey combs.”

What is your advice for the ‘singles’ when they come into the bar.Interact with people. JT’s is like Cheers, everyone is friends. Even if you come alone, next thing you know, you will be playing dice for drinks.

What can costumers do to get on a bartenders good side?Well...tips always help! But seriously; when you see us busy, be patient, we will get to you.

When is a good time to come see you at JT’s?I am there every Thursday night when we have 2-4-1 rums till close.

We want another Joke? What do you call a flower under your nose? -Tulips

What annoys bartenders? Two things really get me; If I’m making a drink and happen to glance your way, it is not an invitation to scream your drink order at me. Nothing is worse than trying to make a drink with some clown screaming, “Ya, I need 2 Morgan diets, a vodka-cran, Bud-Light, and two Coors!” Cause now I have to remem-ber the drink order I was just working on. And, Please do not yell your drink order from across the bar. We cant hear a damn word you are saying with the music, bar noise and everything else... Unless, of course, you want

me to just guess your order.

Kent’s Tax Tips

Do you have any advice for keeping my tax documents organized?Maintain a file and keep everything that says “Important Tax Document.” Use last years tax return as a guide. If you have a concern, call your tax advisor.

What are some common misperceptions about filing your taxes? It doesn’t have to be scary like going to the dentist, proper planning and year round thought about your taxes makes it a simple process.

When I get my tax returns every year it seems like it is always too low of a return. Is there a way to check to see if I am doing my taxes correctly? How?We offer a free review of your last 3 tax returns, if opportunities were missed, we can amend suggestions for tax planning offered.

Take advantage of tax deferral programs that you may have the

opportunity to participate. Maximize 401(k) or Simple retirement Accounts, review and utilize flexible spending accounts, pre-tax health insur-ance benefits.

Exclusive Interview with

Jill Samuelson

Jewelry

FMSExclusive

15 FM Spotlight

I’ve been in the jewelry business for almost nine years. I took a few classes here and there on diamonds and gemstones in the beginning and truly fell in love with my job. In 2007, I began taking gemology classes through the Gemological Institute of America where I got very in-depth training on grading and identifying diamonds and gemstones. Finally, in December of 2010, I received my Graduate Gemology Degree through GIA.

What is a tip for guys when shopping for valentines day?Traditionally, Valentine’s Day belongs to Hallmark, chocolate boutiques, and flower shops. But jewelry is your chance to be a HERO. (PS--You also become a hero in the eyes of all her friends)

What are some unique gifts? We have a great collection of Chopard jewelry and watches with “floating” diamonds, and Swarovski binoculars make great gifts for the outdoor enthusiast in your life.

Michael M 18kt White Gold Engagement Ring

For those who need a little sparkle in their lives......Michael M engagement

rings are all about making bold but classy statements. Crafted in California, these rings truly are a

sight to see. Prices vary by style and diamond weight.

Chanel Ceramic 29mm Diamond WatchChanel is one the hottest brands on the market right now, and we can’t keep their watches in the store. Scratch-resistant ceramic, sapphire crystal and loaded with diamonds, who wouldn’t want one of these?? Retail: $9600

David Yurman Sterling Silver Sculpted Cuff Bracelet

Cuff bracelets basically work with any outfit, day or night. You

really can’t go wrong with such a versatile piece. Retail: $750

Tacori 18k925Tacori’s new line of sterling silver and 18kt fashion jewelry is a modern take on iconic glamour. With prices starting at $250, it’s easy to build a fabulous collection of high-quality fashion jewelry.

Tip for the girls? Guys LOVE having the toys with the coolest gadgets.....this includes watches.

Explain what a “Carat” is for all of us who don’t know? Carat Weight is just that: the weight of the dia-mond. But here’s a little history lesson on WHY we call it a “carat:” The modern carat system started with the carob seed, which comes from the locust tree. The seeds grow in pods that are used primarily for flavoring and for livestock feed. Since the seeds are fairly uniform in size and weight, they provided a pretty consistent basis for gem weight. Early gem merchants and

jewelers used them as counterweights in hand-held balance scales.

Ask the Beer Guy at www.fmspotlight.com

Why are beer bottles colored differently?Honestly, fashion. Light is bad for beer and it has been proven that over time, green and clear bottles can negatively affect the profile of the beer.

What is a good seasonal beer to try in February?Flying Dog & Garde Dog, which is a Bier de Garde, a French style of beer.

What are some new beers out on the market?Keep an eye out for Tall Grass

Brewery and any craft seasonal coming out soon!

What beers are coming out in the future for

us to look forward to?Any beer from Tall Grass Brewery. Also, any one-off specialty small brew beers.

FM Spotlight 21

What is a misperception people have about beer?“All beer tastes the same” - There are over 1,500 breweries in the United States alone. What is the best way to pour a beer? From the bottle, pour straight down the middle of the glass allowing the beer to foam up. Foam is a good thing! Foam releases CO2 and allows the beers full flavor to come out.

How long can you keep beer in the fridge before it gets too old?Lagers and Ales differ but to be on the safe side, 3 to 4 months.

What is a good tip for the beginning brewer out there?Sanitize, sanitize, sanitize!

From Musician to AgentGary Bitzer has came, saw, and conquered Fargo-Moorhead when it comes to the music scene. Gary started out playing gigs around the mid 60’s. Now in his 60’s, Gary has taken on the agent role. He provides his services to about 15 bands including local favorites 32 Below, At the Emporium, Skyline, and more. Cover StoryFMSExclusive

Where are you from? Born In Cincinnati, Ohio (1948) Lived in Mississippi (1952 - 1981) Fargo-Moorhead since May of 1981

Age: Old enough to know better (do the math)

What did you do before you were an Agent? Started playing in a band in 1964. Started the Agency in 1995.

How did you get started? Musically: (1964) Went over to some friends and sang with their band. Started doing gigs in garages. Hired a manager / agent and never looked back. The Agency: (1995) Decided to start an agency and go after all the bands that didn’t have an agent.

Tell us about the bands you played in before. Joined Johnny Holm in 1981 / Put Icebreaker together in June 1983 - June 2009 / Retired from playing / Started play-ing again in August 2010 with the Shakers. Play just enough to satisfy that craving. Still having fun.

How long have you been in business? Since 1995

How many clients do you have now? Around 15 exclusive bands

Who was your first client? 3 Minute Hero & Ded Walleye were probably the first real challenges. There were plenty of others doing the club circuits at that time as well.

Who is in the studio this month? 8th Hour, Karli Rodgers, Peter Niblock, Carmen The Cactus.

Bam Recording Studio

involved in the studio itself, so my long time friend and fellow musi-cian, Paul Rasmussen, runs that part of the business for me. We relish any challenge and welcome artists to check us out.

What are some fun facts about your studio? Let’s just say our price is affordable. We are always upgrading our equipment, and the list is always growing. Not to men-tion, we can get our hands on stuff we may not have (vintage gear).

Tell us a story about the studio? Any famous people? We have had some heavy hitters and a lot of

Where do you want to see your business go? I am happy with the agency. I personally want to be a part of helping a few bands do much bigger and better things. I think I have the connections to do that now.

What is next for the studio? Samples of what we can offer will soon to be up on our web site.

Tell us about BAM Studio. The studio was put together to give my bands the opportunity to record and sell records affordably. It has been an ongoing process. I really don’t have the time to be that

really cool bands and artist record in our studio. We are not a muiti-million dollar studio that would have a national act hire out, but we make the best with what we have. I can’t say I have ever made a dime from the studio since all the dollars go back into making it a better facility.

What’s your opinion about the local music scene in Fargo-Moorhead? I was traveling approxi-mately 23 states in the seventies and couldn’t get into Fargo. They didn’t need to hire road bands, be-cause they had so many good bands locally. That hasn’t changed much in the last 40 years. To be a successful band here, you had better look at the past and even current history of artist from this area. A standard was set decades ago that is still in place, regardless of being a touring band or even recording music. After all, it is a business, so treat it as one.

“Gary represents the top bands in the area, and he works

hard for them.”

More at FMSpotlight.com

How long have you been with Bitzer? 6 months.

What made you want to use Gary as your Agent?Gary represents the top bands in the area, and he works hard for them. We knew that if we wanted to expand to new venues and cities we needed Gary to handle the business side of things dealing with club owners and promoters. Plus, He is fun and easy to work with.

Describe Gary in Skyline’s Words?Gary is hard working and well respected. He also has a great personality that makes it hard to disagree with him (this is a great quality for an agent).

What is new for Skyline? We’ll be playing in new venues, new cities, and new states in the upcoming months. Also, our first album is in it’s infancy which we’ll be recording at BAM Studio. What are you working on now?Gary is working on getting us out and around the area more to new venues. Also, we are currently in pre-production of our first album. We are looking to get into the studio with Buck and Gary soon and put some tracks down. In the meantime you can find our demo songs on the Skyline page at Fmspotlight.com.

uan and Annelle Nelson Mondragon have been busy in the restaurant business in Fargo-Moorhead. The husband and wife met in California and moved to Fargo fifteen years ago. Since then Juan has opened several Mexican Restaurants he named “Juano’s” , and Annelle opened a fine dining restaurant and martini bar called “John Alexander’s” four years ago. Juan and Annelle welcomed the FM Spot-light team to get to know our feature restaurant, John Alexander’s more. For pictures, information, interview answers, and more visit www.fmspotlight.com.

How did you and Annelle meet? We met in Southern California while I was continuing my education in business and attending college on a tennis scholarship. I am from Mexico City. We met at a tennis court. She was changing careers from interior design to script-writing at the University of California, Riverside.

What made you move to Fargo? Our plan was to open an upscale Mexican restaurant in Fargo, Annelle’s hometown called Juano’s. The process was moved up in speed because of the explosion of L.A. gangs in Southern California. That restaurant (Juano’s) has now been open fifteen years.

What made you think of opening a restaurant like John Alexander’s?It had been a dream of Annele’s to open an American Classics restaurant for some time, with the same characteristics of our Mexican restaurants , cuisine being made fresh, from scratch daily, and in an urban setting. Both restaurants are in old historical downtown settings.

What is Your opinion on Fargo-Moorhead and why it’s good for your businesses? The Fargo-Moorhead community is very

much a “foodie” community; they travel, they are open to different kinds of cuisine, and also keenly aware of quality in product and service. They know it when they see it and let you know how much they appreciate it. They have welcomed us and we feel gratified and greatful.

What makes the dining unique? We have strived to be upscale but not pretentious. We like urban settings, and historical downtowns that provide a feel-ing of the city’s history. Guests can dine in casual attire or dress up for an evening celebration. It is all appropriate. The food is American classics cuisine with top-quality ingredients leaving room for a chef’s creativity without becoming “silly”.

Explain John Alexander’s menu and what makes it special? One aspect of our menu that has been greatly appreciated is the availability of “day fare” food at all times. One guest may dine on a wild salmon dinner while another enjoys a comforting grilled cheese sandwich or macaroni and cheese.

Exclusive Interview with owner Juan Mondragon

DINING

Page 34: Febuary FM Spotlight 2011

How about the staff and atmosphere?Above all it is having a staff that under-stands the true meaning of professional hospitality, that they are there to work toward one common goal, to insure that each guest has a first-rate dining experi-ence from food taste to service. After that we like aesthetics that are clean design, soft colors, somewhat minimal in decor. Music playing is soft jazz. We think these things create a warm, easy ambience.

As owners what role do you need to take? As owners we are extremely hands-on. We are committed to high standards maintained at every (literally every) bite, service, and taste. You can only hope to achieve that by being there as much as you can. When we do miss a beat, we want our guests to let us know. We are sincere in wanting to correct any mistake. We believe strongly in investing in our clientele.

Take us through some of your favorite dishes. For dinner, if we are in the mood for seafood, the Ahi Tuna we fly in from Hawaii every week is outstand-ing. The Steak Alexander, a tenderloin pan-seared in garlic-herb-shallot butter is our choice if we are craving a steak. As for lunch time, one of our made-from-scratch soups is always a favorite. For a hot sandwich, The Philly Steak Sandwich with extra hot peppers is great, or our “oozing” burger with molten cheese inside two beef patties is crazy good. Finally for Dessert, The “tres leches” cake (three milks) is the most moist white cake you’ll ever eat, but any of our house desserts are deca-dently delicious.

What’s next?Soon, we will begin late-night dancing on week-ends. The music will be classic, pop, and rock from many different eras. This will keep up with the classics theme of the restaurant. We will also continue the daily happy hours: Classic “Blue Plate” $8 lunches daily, oysters on the half-shell on week-ends, and special nights of music with jazz and blues. “Trying to take the “blues” out of the winter.”

What sporting events are you going to attend in Feb?

One game that I’m definitely going to go to is the NDSU vs SDSU basketball game.

On top of the fact that it’s the rivalry game, it is the regular season finale

and Summit League Tournament seed-ing will be on the line.

How are the Tri College Sports doing this Winter?NDSU’s Men’s and Women’s Basketball teams are both in the middle of the pack, trying to put together all of their tools to make a run.

Concordia’s women have had a very strong first half of the season and

will look to finish at the top of the conference. The men

have overcome a slow start and have found their groove. The experience of the Moorhead men has shown so far, they have been playing team basketball all year. But the women make the point that experience isn’t everything, as their young players are finding ways to win, too.

Are there any unique sporting events in Feb? Fargo is getting the opportu-nity to host the National Curling Championship. It is being held at Scheel’s Arena, February 12th-19th. Curling takes great skill, balance, and teamwork, and spectators can catch on to strategies quickly. Be a part of the biggest national event for the most watched sport at the Winter Olympics!

Do you have the scoop on the Fargo Force? They are a Force to be reckoned with in 2011 (sorry for the bad pun). With Massa and Gothberg splitting time in goal, either of which could be full time starters on most teams, and the fact that you can count on Jimmy Mullin getting points every contest, the Force are sitting in a good position to finish out the year on top.

Where are some good places to go watch some sports in FM?The most popular place is still Buffalo Wild Wings, but sometimes they get too crowded, so some other places to check out are: Apple-bees has good food and specials, but unless you are in the bar you may not see a TV. So I would go with JT Cigarro or Playmakers for

the best overall experiences.

Broomstacking is not the act of stack-ing one’s broom on another’s until a very neat pile has been created. The term refers to a long-held tradition in the curling world in which two opposing curling teams would get together to so-cialize and partake in a few beverages after completing a draw. In actuality it is more than just a tradition. It is an ex-pectation that still exists today. It dates back to when curling still only took place on outdoor ponds. Teams would stack their brooms by the fire and enjoy a drink or two (usually bought by the winning team) with their opponents in the spirit of comraderie that curling is known for.

On February 12-19, this tradition will come alive at Fargo’s own Scheels Arena as the top ten men’s and top ten women’s curling teams in the country battle it out during the 2011 USA CURL-ING NATIONAL CHAMPIONSHIPS for the right to represent the United States at the the World Curling Championships in Canada and Denmark later this year. Al-though the focus of this highly competi-tive event will be to determine this year’s national champions, the social etiquette of broomstacking will still be observed after each draw. Catch one or all of the draws and do some broomstacking of your own. Tickets are as low as $6. To find out more, visit the event website at 2011usacurlingnationals.com.

Often referred to as a “modern variety band,” Two Days’ Notice has burst onto the music scene in the upper midwest. With a set list as diverse as the members of the band, Two Days’ Notice is bound to keep you on your feet all night. Hailing from Minnesota, North Dakota and California, each member brings their own distinct flavor to the band. They have shared the stage with local favorites 32 Below, and national acts such as Ryanhood and Emerson Drive. Their upbeat style, tight vocal harmonies and on stage joking resonate with country, pop, rock, and oldies fans. FM Spotlight took some time to get to know Two Days’ Notice and for more information log onto www.fmspotlight.com.

Music Covered and What you sound like: Country/Rock/Oldies

How TDN started: Joe and Bryan were playing acoustic shows all around the Midwest, decided to pick up a bassist and make a run at the full-scale band scene. Both had met and seen Cameron play and guessed he would be a great fit, they were right.

When TDN started: March 2010 What is TDN’s Specialty? Our ability to travel across the country in a $250 van.

Favorite place to play in Fargo-Moorhead and why? The Windbreak! We love playin’ at The Windbreak because it is geared toward the live music scene. With that comes full production, great sound, lights and an in-house sound technician. They also pull in crowds interested in seeing bands simply because of their music reputation.

What are you guys working on in 2011? We’ll have an EP coming out later in the year. We’re also work-ing on expanding our tour schedule to include more states. We’ve got shows coming up in Colorado and Wyoming later this year.

How did you come up with your name? Why? New Years 2010 found Bryan and Joe playing an impromptu show at The Fine Line in downtown Minneapolis. Uncertain of which songs they wanted to put on the set for the night, the production manager made an off-hand comment to the effect of “it’s like you guys came in here with Two Days’ Notice.” -It stuck!

Give us a good TDN Story? On our way back from Texas this fall, we had an interesting journey. It included being pulled over in Kansas, twice along with our vehicle being searched. Bryan and Joe also experience grits for the first time. Bryan’s stomach later decided to rid itself of this new-found delicacy/toxin behind the grassy knoll… real deal.

What separates TDN from the other bands in town? We don’t take breaks, it’s a full four-hour show with an acoustic set in the middle.

What song would you play to caress the Ladies? why? Bitch – Meredith Brooks, enough said.
