As the holiday season reawakens to the timeless
narrative of Clara and her Nutcracker Prince
– an endearing ballet set to Tchaikovsky’s
beloved score more than a century ago, we are once
again reminded of yuletide charm and grand holiday
traditions through the sanguine eyes of a child; not
to mention legendary visions of an enchanted forest
wonderland and a beautifully choreographed Pas De
Deux between the Sugar Plum Fairy and the Cavalier.
Co-directed by Robin Sherertz-Morgan and Javier
Velasco of the San Diego Ballet Company, the ever-
iconic ballet features an international cast of more
than 100 – a corps of professional dancers from the U.S.,
as well as Russia, China, Japan and Mexico, along with
an ensemble of children from the San Diego School of
Ballet. Per formances are slated for December 3rd and
4th at the Birth North Park Theater [also featuring the
Grossmont Symphony Orchestra and Master Choral],
and again on December 17th and 18th at the UCSD
Mandevil le Auditorium in La Jolla.
Q: In terms of holiday performances that you’ve performed in or choreographed, how does “The Nutcracker” rank?
Robin Sherertz-Morgan: “The Nutcracker” is unique in
that it has so many different resonances for so many
different people.
Javier Velasco: For years, I worked on productions of
“A Christmas Carol” at the San Diego Rep. It was a
unique production, in that the theatre felt that every-
other-year they wanted to re-imagine it. I remember
that audience members would rank the productions as
in “Oh well, this year’s ‘traditional’ version was better
than last years ‘gospel’ version or the ‘swing’ version
from the year before that.” You don’t really get that
with “The Nutcracker” because so much of it has to
do with the joy of seeing children on stage – some
per forming for the first t ime. While the heavy l ift ing is
done by the professional dancers, some of the most
memorable moments in the show come from some of
the smallest per formers.

The Nutcracker
Q: In celebrating your 22nd Season at the San Diego Ballet, how do you keep “The Nutcracker” fresh and somewhat renewed for audiences – while keeping to the tradition of the production?
Morgan: We get this question often. And I guess I would
have to answer it in three different ways. The first is that
when the choreography is re-interpreted by different
dancers, it becomes different. every year’s cast brings
cast changes. Sometimes it is in the principal dancer
roles, sometimes in soloist roles. And in some cases,
parts are double cast. So you could see two different
interpretations of the Sugarplum Fairy in the same year.
Just as Garth Brooks, Celine Dion, and Lady Gaga can all
sing the exact same song and give you a totally different
experience.
The second answer is, in the big scheme of things, we
really don’t do the ballet all that much. In a one year run,
any show on Broadway wil l be per formed more than we
per form “The Nutcracker” in 12 years. And yet, I do not
hear the question, ‘how does “The Lion King” stay fresh?’

Which brings us to answer number three: to some
extent, people want to see a repeat experience.
They want the Christmas tree to grow, they want to
see snow fall ing from the sky, and in our production,
they want to see a horde of tiny marzipan sheep zoom
across the stage.
Q: Do you have a favorite scene?
Morgan: My favorite “scene” would probably have to
be the snow scene at the end of Act One. The dancers
are dancing full out. There is snow fall ing everywhere.
The stage turns blue and the music sounds l ike a
cross between a heavenly choir and a blizzard. Then
everything sort of crystall izes into what could be a
scene inside a snow globe.
Q: Why do you think “The Nutcracker” has remained a timeless holiday tradition for so many (of all ages)?
Morgan: I think because it is something that begins
when people are very young. And music is such
a strong l ink to memory. You could say that it has
something to do with the fact that so many l itt le gir ls
take ballet classes and are exposed then, but I think
that there is more to it than that.
We per form “The Nutcracker” throughout the west.
One year, we were in Colorado Springs. I was in the
lobby signing autographs as my character in the
ballet. A very well dressed older woman came up to
me to thank me for the per formance. She had two
sons in the mil itary, on leave from serving in Iraq. As
a surprise, they had flown her out to visit them and to
see our show, because she had always taken them to
see it as children. Just then two young men in dress
whites came up on either side of her and thanked me.
I always wonder what happened to them. I think that
there IS an element about “The Nutcracker” that while
it is FUN, it is also an introduction to “culture,” more so
than a show like “The Grinch.” Get dressed up. Be on
good behavior. Be a better person.
Q: Can we expect any new twists in this year’s “Nutcracker?”
Morgan: When you are working with so many young
per formers, anything is possible. u

Robin Sherertz-MorganA native of San Diego, Ms. Morgan began her dancing career with the original San Diego
Ballet Company under the guidance of Richard Carter and Nancy Johnson. In 1971, having
been awarded a full Ford Foundation Scholarship to the School of American Ballet, she
trained under such notables as Alexandra Danilova, Stanley Williams, Muriel Stuart and
others. She later danced with the New York City Ballet under the direction of George Bal-
anchine and toured with Suki Schorer’s New York Lecture Ensemble. Since 1986, Ms. Mor-
gan has been developing her reputation in San Diego, first as a notable dancer and later as
a teacher. She has served on the faculty of the School for the Creative and Performing Arts
in Chula Vista, as Rehearsal Assistant for San Francisco Ballet’s San Diego productions of
“The Nutcracker,” “Swan Lake” and “Sleeping Beauty,” and as an officer for the San Diego
Dance Alliance. She founded the San Diego School of Ballet in 1989 and has been building
on successful performances and talented dancers since then.
Javier VelascoMr. Velasco currently serves as artistic director of the San Diego Ballet, having created over
70 original pieces for the company since its inception, including 10 pieces in collabora-
tion with composer, David Burge to commissioned scores. His ballet set to the poems of
Kenneth Fearing, “Love: 20 Cents the First Quarter-Mile,” was given the award for Best
Choreography by the San Diego Dance Alliance, the third time he was been honored by the
organization. He has supplied dances for productions at the La Jolla Playhouse, Old Globe
and has a long-standing relationship with the San Diego Repertory Theatre, where he has
directed and choreographed productions of “A Christmas Carol,” “Cabaret,” “Hairspray,”
“Tommy,” “SUDS,” and many others. Most recently, Mr. Velasco wrote and directed “The
Toughest Girl Alive,” a biographical musical based on the life of blues artist Candye Kane;
the piece was premiered at Moxie Theatre in January 2011 and had a successful run at the
New York International Fringe Festival in August.

Christmas is a many splendored thing; the
crackling of a fire, the scent of a fresh cut ev-
ergreen, and twinkling l ights amid a menag-
erie of ornaments and keepsakes. It is the hustle and
bustle of holiday greetings, a skinny Peppermint Mo-
cha to warm the chil l , along with the opportunity of
hosting family and friends both near and far.

year interior designer [specializing in distinguished
custom projects] of the Coastal home Design Cen-
ter, best reflects the comforts and joys of the season
– from the first impression of an entry, to a memorable
mantel and vignettes through the home.
This is the splendor of the season with both heart and
home in mind.
FiRSt iMpReSSionS: CReating an inViting entRy way
The entry way to any home is just that – a grand en-
trance into the very place in which you l ive l ife, where
memories are created daily with beloved family and
friends. Constituting both the exterior entry and the
foyer, it gives guests that first impression and invitation
to your home.
Broyles: My desire during the holidays is to transform
my porch into a magical experience where my guests
feel welcomed as they arrive. I always start with fresh
garland that wil l wrap around the entire entryway – it
can be hung around the door frame and even the
garage entry. The aroma from the greenery is sure to
capture memories of ol’; and this, to me, is as tradi-
tional as having a tree.
Topiary trees with miniature white l ights add beau-
ty to your walkway or steps; l ining them with lanterns
fi l led with tea l ights and fresh flowers adds a beau-
tiful layer. Lighting comes in an array of color, from
one solid theme (of blues, reds and greens) to multi-
colored. Traditional clear l ights, when accented with
ornaments and/or garland, present a dazzling scene
that exudes warmth and elegance. I also love to use
large wreaths with lots of layers to add that finishing
touch.
At the end of the day when my entry is complete,
I love to sit with a glass of wine as I welcome in the
sights and sounds of the season; fondly remembering

get the garland; whether it is simply draped or neatly
fitted to the mantel top, garland adds that touch of
natural greenery to any holiday theme with the abil ity
to generate some added drama.
Broyles: I l ike to weave in my collection of nutcrack-
ers along the mantel; but no matter what your collec-
tion offers, display them proudly as family keepsakes
[whether it be antique ornaments, a selection of rein-
deer or snowmen, possibly a menorah, a vil lage or
even Santa Clause figurines]. Placing a collection to-
gether wil l give it a substantial presence in the room,
but also exudes continuity and visual appeal. In addi-
tion, it is always important to use different heights on
your mantle for added depth and that “wow factor.”
Next to the fireplace, I l ike to fi l l glass vases half way
with cranberries and holly, then fi l l ¾ with water; lastly,
place a floating tea l ight on the sur face. Too often we
forget to add a special touch to the hearth.
ADDITIoNAl IDeAS:
•Present a monochromatic scene of ornament balls, candles and collectables.
•Add varied fruit (including apples and pears) or f lorals to the display for a more rustic appeal.
•With different sized glass jars, place unequal amounts of pinecones and cinnamon in each for a burst of holiday scent.
SugaR & SpiCe: CReating SeaSonalFlaVoRS in the KitChen
There is no doubt that the kitchen warms the home
for the holidays; from baked goods and family dinners,
it somehow always becomes a gathering place for
great conversation and fellowship. The key, of course,
is to l imit the number of decorations as to not add
clutter to the space.
Broyles: The kitchen is a place where people love to
gather, but is most forgotten when decorating for the
season. My favorite design tip is to l ine an artif icial,
yet beautiful garland along the top of my cabinets.
I place decorations and small l ights throughout to
customize it and blend elegantly with the rest of my
home; in addition, the small white l ights add a won-
der ful glow all night long.
TABleTop TIpS
•Adding groupings of candles always il luminates and adds a special touch.
• Fill varied sizes of vases with Baby’s Breath; small sprigs can be added to food displays and be placed inside the napkin ring for a more organic feel.
•Do not be afraid to add in color with choice of glassware or serving pieces.
•Using white or off-white linens gives the table a more luxurious presence. Patterns or solid colors can often appear too busy – but can be downplayed with white dinnerware.

•Pick a theme (such as candy canes, baking or tea); allow the theme to be displayed on a small table-top tree, garland across a window or a possible hutch.
•Placing an advent calendar on the fridge or bul-letin board is a fun, interactive activity for kids of all ages.
•hang a cranberry or boxwood wreath as a focal point – above the sink or on a main window. A round shape is more classic, whereas a square is more modern.
•Oranges or pinecones make great visual additions to tabletops, window ledges and countertops; not to mention the presence of a fresh seasonal aroma.

More than just a tree with l ights and garland, con-
sider the entire home when selecting and planning
holiday décor for a burst of festive spirit throughout;
from a grouping of nativity scenes atop a desk to a
cluster of glittered stars [or possibly star f ish], dangling
mistletoe and layered swags of greens, branches and
bows along the staircase.
Broyles: Garland around your door is as traditional as
a tree. But, perhaps this year try a contemporary flare
by using white garland with clear glass ornaments.
I might also suggest taking ornaments and hanging
them on the ends of si lk r ibbon, mingling contempo-
rary as well as traditional; hung at a variety of lengths
– along the staircase, the ceil ing or even the window.
ADDITIoNAl IDeAS for your home
•Choosing three coordinating colors wil l help pull a look together, while gold and si lver are classic tones; try turquoise, cocoa and burgundy for a rich and sophisticated look; for something a bit more fresh and coastal, try green, blue and white; or possibly grey, red and cream for something more
modern and clean.
• For the i l lusion of snow capped branches, use wispy pieces of cotton batting to l ighten the overall look of the tree.
•Place crumpled newspaper under your tree skirt to bulk it up and eliminate that flat look.
• elevate your tree; place it on a low table for eleva-tion, add a skirt and topper for height.
• For looks without a tree skirt, try placing the tree in a large decorative pot, a wicker basket or even an orchard basket with walnuts, batting or ball orna-ments as fi l ler.

casa de Amparo’s 13th Annual crystal Ball gala – directly sup-
porting the organization’s programs and services to treat and
prevent child abuse and neglect – raised more than $290,000.
The black tie masquerade-themed event welcomed over 200
guests, including honorary chairs jerry and sharon stein, sup-
porters of casa de Amparo for over 25 years.
jordan perez, a 16-year old casa de Amparo volunteer,
entertained on piano during the silent Auction/cocktail recep-
tion. guests danced to the music of Atomic groove following a
sumptuous meal prepared by chef jeffrey strauss of pample-
mousse grille. A highlight of the evening was a presentation by
dominique cleveland, formerly a client of casa de Amparo’s
children’s shelter, and currently a participant in the organiza-
tion’s New directions program for former foster youth; she
spoke of the abuse she suffered as a child and how her life has
changed for the better since coming to casa de Amparo.

The holiday season is always interesting for the
top toques of San Diego County. Although busy
and hectic, the season provides an opportunity
for chefs to help their guests rekindle comfort and joy
this t ime of year; it is this spir it of festivity that also
over flows into their personal l ives, allowing them to
reflect on past, present and future.
During recent conversations with some of San Diego’s
finest, I sought insight from Chef Jeffrey Strauss of
Pamplemousse Gril le, Chef Jesse Frost of Fairbanks
Ranch Country Club, Chef Bernard Guil las of The
Marine Room, and Chef Paul McCabe of Delicias
[previously of 1540] – who just recently became a
partner. These are their thoughts…
Q: What gives you the most pleasure in the kitchen?
Jeffrey Strauss [pamplemousse grille]: When guests
come in and say “make a great menu for me.” That is
when we shine our best. I consider myself one of the
luckiest people alive. I get to wake up and do what I
love to do every day. I am surrounded with people I
love to work with.
Jesse Frost [Fairbanks Ranch Country Club]: One of
the great things about being a chef is taking raw food
and creating art and then having people ingest it. [he
also indicated that he l ikes being a mentor to young
chefs, aiding them in their culinary development.]
Bernard guillas [the Marine Room]: endless creativity.
Chefs are l ike scientists, artists and magicians. A white
canvas is replaced with a sleek white plate. On our
palette, we use the natural color of ingredients and
textures to awaken all of the senses. It is a journey
through the magic of cooking.
paul McCabe [delicias]: Watching my team grow and
learn, and become completely invested in what we
are doing and watching them grow as chefs. I love
to cook.
Q: What chef had the most influence on you in your training?
Strauss: Jean Claude Nedelec of New York City, the
chef and owner of Glorious Food, who opened my
eyes to remarkable ingredients of quality and what
can be done. This was after stints at restaurants in
France. Nedelec was the first chef that I became
disappointed when he was not in the kitchen cooking
side-by-side with me.
Frost: Roland Passot at La Folie in San Francisco [who is
ski l led, creative, and steeped in culinary tradition that
he learned in Lyons, France.] he taught me a lot about
discipline and having respect for ingredients.
guillas: [Indicated that he did an apprenticeship in
the Michelin two star ‘Restaurant Le Bretagne’ under
the tutelage of Georges Paineau.] It was a fantastic
platform for me to embrace my passion. For three
weeks I would be working at the restaurant and then
go to the Chamber of Commerce Cooking School in
Vannes [France] for a week each month. This is where
I discovered the art of cooking.
McCabe: Michel Blanchette at hermitage. he saw
something in me and brought it out and without that,
I don’t know where I would be.

Q: Anything new in the kitchen you have been playing with?
Strauss: I took a lamb belly and made lamb bacon and
then used it for a recent wine dinner.
Frost: I have been using veal cheeks; braising them in
red wine, and then serving them with Branzino.
guillas: Global spice such as fennel and dil l pollen,
Middle eastern blends including zaatar, dukkah,
baharat and island spice are the hot trends. Wattleseed
– an Australian outback bush seed traditionally used by
the Aborigines; grounded, I create a blend with spices
and use it as a crust on elk and venison medall ions
on my menu. I also use it with vanil la crème fraîche
gelato. [he also discussed using] lemon myrtle oil, red
quinoa from ecuador and plum powder.]
McCabe: [Indicated that he is using “ultra tex3.”] It is
a modified tapioca starch with zero flavor, does not
need to be heated to activate and can work into
puree and other dishes as well.
Q: What is the most interesting meal you have ever prepared?
Strauss: I have cooked for seven different presidents.
however, my two favorite meals are ones I prepared
for Sugar Ray Leonard in his home and the other was
feeding carrots to my horse, Pamplemousse. [The dish
that he served to Leonard, of which he was very proud,
was a roasted acorn squash with a casserole made of
lobster, scallops, blue prawns and jumbo lump crab.]
Frost: A state dinner for Columbian President Uribe.
[he described a frozen ice plate that he prepared,
featuring a trio of Baja seafood, including abalone
frite served in abalone shell, sea urchin with white
foam and white prawns ceviche.]
guillas: The first dinner that I prepared at the James
Beard house in New York City with Chef Ron Oliver. It
was a seven course tasting menu prepared in a very
small kitchen for 110 of the most influential culinary
aficionados in the City. [McCabe commented about
similar experiences in that venue, as the kitchen is
so tiny it creates a real logistics challenge for chefs;
however, the honor of preparing a dinner at The Beard
house was greatly appreciated and savored by each
of them.]
McCabe: eddie Murphy – who is a big snacker and
loves green M&M’s. however the most challenging
dinner was prepared for Barbara Streisand featuring
a spa-inspired tasting menu with vegan dishes and all
biodynamic wines.
Q: What gets you excited about the holidays?
Strauss: The hustle and bustle; not having enough hours
in the day and watching our whole team (both front of
the house and back of the house) come together and
put out an amazing amount of food of terrif ic quality.
That gets me excited.
Frost: I enjoy how festive the [Fairbanks Ranch Country]
Club is, with decorations and everything else. The
whole Clubhouse is transformed and it is very special
with carolers and lots of festivit ies. I enjoy the family
aspect, famil ies spending special t ime together and
then my opportunity to be with family [as well].
guillas: The buche de noel is my zen way of relaxing
in the kitchen.
McCabe: The change of season really gets me
going! The aromas coming out of the kitchen are
l ike aroma therapy taking me back to my childhood
cooking with my grandmother and gathering with my
family!
Q: What have you planned for your holiday menus?
Strauss: [Indicated that dishes with white truffles from
Italy or black truffles from France – depending on
availabil ity, wil l be featured; especially a dish with
sautéed gnocchi with parmesan cream, served with
either white or black fresh truffles. he also noted that
he wil l have an acorn squash, and one dish that he
prepares that is terrif ic is roasted acorn squash fi l led
with a casserole of lobster, scallops, blue prawns and
jumbo lump crab.]
Frost: [Indicated a whole range of dishes for all of the
special functions at Fairbanks that occur during the
holidays as well as in the dining room for the Club’s
members and their guests.]
guillas: For Christmas, a roasted whole goose with
chestnuts and cipoll ini and, of course, my Uncle
Gilbert’s [the baker] signature recipe – buche de noel
with Griottes and Callebaut chocolate. For New Year’s
eve it wil l include Champagne, caviar, oysters, baked
whole spiny lobster, venison loin with cassis glaze, St.
Agur blue cheese and absinthe chocolate soufflé
and, of course, super wine to pair with and a great
port with cheese.
McCabe: [Indicated that menu planning for the
holidays is a work in process, but] for the family it wil l
be Christmas ham with a glaze and sweet potatoes.
Q: What holiday ingredient is a must for the kitchen?
Strauss: Truffles; but with their cost, they are not for
anyone watching their spending.
Frost: Fresh nutmeg grated with a micro planer.
guillas: A divine fennel pollen blend that I created
a couple of years back. It is amazing and fantastic
for the holidays. This quintessential vibrant aromatic
blend of ancient spices and herbs wil l create a culinary
explosion of f lavors. It can be used for seasoning baked
goods, pie, puddings, cookies, muffins, coffee cake
and it is fantastic to season pot roasts, vegetables,
preserves and pickling.
McCabe: Chestnuts are a must; you have got to have
them. They are so versati le.
Q: Any plans for the holidays?
All of the chefs responded with their work schedules
and lots of holiday festivit ies.
Strauss: Now that I am homeless [as a major remodel
of his home is underway], I am going to spend my days
watching them rebuild my house when I am not in the
restaurant.
Frost: No plans yet. however, my Dad has a 25-acre
ranch in Jamul. All of us go there for Christmas. I have
seven brothers and sisters. All the males are very good
cooks [Jesse is the only professional among them], so
we wil l prepare some wonder ful food.
McCabe: The day after the holidays is when I get to
be with my family! [he also commented about his
new restaurant locale, at Delicias, and that he wil l be
working on new menus to be available in February]. u

H is taste is impeccable. And his style, always
fitt ing. With more than 35 years of expertise
as a master tailor, Gary Sanfir – proprietor of
GSB Men’s Clothier, a European boutique for men’s
fashions in Rancho Santa Fe [since 2008], along with
his wife, Bella, are widely known and respected for
their craft; a notion echoed with recent accolades
including “Best of: Men’s Clothing Store” from a
number of local publications.
Enjoying a nature rapport with clientele, “I count
it a privi lege to educate [our clients] about our
fabrics, patterns, and the designs,” Gary remarked.
“Clothes can make a strong impression on others, so
of course, it is nice to help people make it a good
[one]. We l isten, and take extra care to pamper them
with a comfortable and relaxed setting. We [also
enjoy] making sure the customer feels involved in the
process.”
In getting to know more about the master tailor and
his craft, here is a recent conversation between FINE
magazine and Gary.
Q: Tell us about yourself and your background.
Gary Sanfir: My family has always been involved in
the fashion industry, so naturally I grew up around
various fabrics and designer outfits. My father owned
a large scale production and distr ibution factory
of men’s clothing and when I was 13-years-old, he
arranged for me to learn from the best tailor in town.
My grandmother would sew amazing outfits at home
and so as a young child I was always trying to imitate
her creations.
It was the 1960’s and gentlemen would only wear
custom-made tailored clothing because wearing
factory clothing was considered low-class. By the time
I turned 15, I was sewing clothes for myself and a few
outfits for fr iends. I would experiment and redesign my
dad’s old shirts, grandpa’s l inen suits, fabrics for shoe
insoles, etc.
I’ve been involved in fashion and men’s clothing all
my l ife, tailoring for top designers and men’s clothing
stores in Europe and Los Angeles, and working with
a host of celebrit ies, models and professionals; unti l I

f inally had a chance to open the first GSB retailer in
Los Angeles, and now we have one in Rancho Santa Fe.
Q: What brought you into the tailoring trade?
Sanfir: After graduating from the university with a
degree in business, I began to manage my father’s
clothing factory, and had a lot of success; but
naturally, I wanted to expand, and do something
more creative and use my own hands.
At 26, I started my own design studio producing men’s
neckties, which immediately became a tremendous
success, because I completely redesigned the more
traditional ties into high-end fashionable items.
Fashionistas from all over the country wore my designs
and each installment in the “T ies by Gary” series was
highly anticipated.
Q: What is most rewarding for you?
Sanfir: It’s a real joy to see our clients looking amazing
in their suits, and seeing how happy it makes them is
also incredibly gratifying. Clothes can make a strong
impression on others, so of course, it is nice to help
people make a good impression. Also, when our
clothes are featured in magazines and on television,
we feel rewarded because we are growing and more
people are learning about our store and services.
Q: How has tailoring changed over the years?
Sanfir: Since the 1950s, ready-made clothes have
replaced the “hand tailored suits” in the majority of
men’s clothing trends. The fast pace of modern city
l ife has made it diff icult for customers to go back and
forth to a tailor f ive times for f itt ing, and to wait over
two months for items to be tailored.
As times changed, men have gradually come to
accept clothes and designs that are ready-to-wear.
In response to this new demand, most of the attire
available through the store is ready-made for the
convenience of our customers. These ready-made
suits are stitched together from the world’s f inest
fabrics, and come in sizes to fit any body type. We
think it is of the utmost importance that any customer

who walks into the store should be able to find the
clothes they need immediately and, most importantly,
that they have access as well to the feedback of any
staff in the store.
While technology and the emergence of mass-
production clothing manufacture systems have had a
significant impact on the tailoring industry, celebrit ies
and fashion magazines have done much to restore
the demand for tailored clothing. This trend is actually
growing now, and more and more designers are
introducing “couture” labels.
Q: What are the advantages of having a tailor over buying machine made clothes?
Sanfir: I’ve had clients tell me they felt 20 years younger
when they put on our suits, and others have said that
the suits helped correct their posture. Customers say
that my suits give them another avenue to express
their individuality.
Q: What is the difference between Italian and American/English approaches?
Sanfir: Well, they are certainly both distinct, though
each has borrowed heavily from the other.
It all began in Great Britain and later in Italy, and
everything else was a derivative of these two. Brit ish
designers dominated the scene unti l the mid-1950s,
and known experts of men’s fashion [would] only shop
at stores located in the affluent Savile Row in London.
The motto of the Brit ish tailor has historically been
“nothing personal.” A suit would take the exact form
of the host, and not much personal information would
be exchanged between the tailor and the customer.
The fit would be exceptional, and the suit would be
made from the finest fabrics and the best patterns.
After World War I I, Italian designers — especially
those in Rome and Milan — began to experiment with
the soft si lhouetted look, which symbolized the longing
for a peaceful t ime. They aimed at making clothes
that projected individuality and strong masculinity.
Light and soft fabric, styles in color and figure, and
refinements in the cut were all used to manifest
elegance, which was the aesthetic priority in post-war
fashion. This approach sti l l exists today and has done
much to shape industry standards.
The American-cut suit originated in the late 19th and
early 20th century. It was similar to the English-style
suits, but more explicitly preoccupied with comfort.
The jackets are shorter than European models, with
rounded natural shoulder l ines and a pinch at the
waist l ine. Many European immigrants have shaped
what is known as today’s American style, but American
consumers had the most influence on what styles
and designs they were wil l ing to purchase – further
boosting the trade for American apparel.

Q: How do you do things differently from your competitors?
Sanfir: I always consider and treat my clients as my
equal partners, and my goal is to see that their needs
are met. We engage with our clients, we invest our
time and effort into understanding exactly what the
client does or does not l ike, which helps us cater
to their needs and makes their experience more
enjoyable and rewarding.
Advice from a tailor can go a long way to helping
shape a client’s own fashion tastes and preferences,
and customers are often encouraged by positive
feedback about the way they look. It is very important
that customers feel confident about the way they
look in their attire. Part of a tailor’s job is to insti l l this
confidence.
Customers are our l ifel ine, and we cherish and reward
our loyal customers and always str ive to make new
clients by offering services such as at-home/office
styl ing sessions and consultations, ongoing promotions,
and special exclusive pre-release invitations to
preview new arrivals.
Q: How do you determine the perfect fit?
Sanfir: Please come and see for yourself by ordering
a suit, jacket, or shirts and I wil l personally walk you
through the entire process. It is a very meticulous
step-by-step process that includes understanding
the occasion (formal or casual), establishing a
working timeline, l ikes and disl ikes, posture and
height correction, and of course, the custom-touch
approach to carefully tailoring the needs of the client
and their budget.
Q: Do you use any innovative techniques to fit your customers? Is there an aspect or technique of the trade that you feel is absolutely integral to success that most tailors generally overlook?
Sanfir: My greatest professional assets are my fashion
sense and my attention to detail, which are unique to
me, and the product of nearly 50 years of experience.
Other tailors overlook the importance of the client’s
needs and simply rush them out the door in the
attempt to get more and more business, and they
miss the most important aspect, which is to custom
shape the wardrobe and capture the sophistication
of the individual. It’s sad, but true that random
people struggle so much in the men’s fashion industry,
because you have to be in love with this l ine of work in
order to bring joy to your clients, and I truly appreciate
and love my clients and this work. u

Q: What first attracted you to real estate?
Jeff: I was first attracted to real estate as an investor
back in 1984 and started buying single family homes. The

that has always made sense to me. The fact that there is
only so much of it –and as something tangible you touch

Q: How does your approach differ from others?
Jeff: My approach is vastly different than many of

ing and offer, properly positioning my l ist ings to best
achieve the price and terms desired. I seldom take no
for an answer and love the art of negotiation. I have a
highly efficient and talented group of support but am
personally involved in all of my client’s transactions.

and then quickly pass them off to someone else on
their team.
Danny: I love helping people obtain their goals and
dreams and real estate is a great vehicle to do so.
Q: In your opinion, what is the status of the market in
San Diego County?
Jeff: The Status of our local market though sti l l faced
with challenges and pressure from distressed inven-
tory is poised per fectly to rebound. With interest rates
at historic lows which we may never see again, sev-
eral of my most savvy investor clients have recently
increased their buying interest.
Q: What are your general thoughts about real estate
investing?
Danny: I f irmly believe that owning real estate is one

With more than 150,000 visits annually here in San
Diego, the USO – otherwise known as the United Service
Organization – dedicates its very being to serving the
U.S. Armed Forces and their families worldwide [Army,
Navy, Air Force, Marines, Coast Guard and Reserve
Component]. Hosting both a Downtown Center – where
in-kind donations and resources are collected and
distributed to military families in need, as well as the
Neil Ash Airport Center – a location that supports new
recruits, deploying units and homecoming celebrations,
the non-profit faithfully defends its mission to simply “lift
the spirits of [American] troops and their families.”
Sara Pagano, the director of programs and
public affairs for the usO’s san diego down-
town center, recently recalled a heartfelt
moment when a young girl – whose father was over-
seas on deployment – selected a watch from one of
their holiday programs known as santa’s store; it was
a special present to send her dad who was away from
home during the holidays. “the significance of the
watch meant so much to him, that since receiving this
gift, he has brought it with him on every deployment,”
Pagano noted.
as the new year fast approaches, along with holiday
festivit ies and the season for gift-giving, we begin tak-
ing time from our hectic schedules to consider how
we can help others and give back to the community.
However, the usO provides assistance to all active
mil itary professionals and their famil ies year round; of-
fering a sense of comfort through a number of services
and programs, and making it easier for those in the
mil itary to adapt and acclimate to a new living envi-
ronment or without a close family member who is on
deployment abroad.
the upcoming santa’s store and the Giving tree
are just two of the many programs that the usO hosts
during the holidays; giving famil ies an opportunity to
bond individually and with the community, to feel
less displaced as they deal with the daily challenges
of mil itary l ife. the santa store welcomes more than
1,000 active duty mil itary famil ies over the course of
three days in december each year; children ages
4-10 are given an opportunity to shop for mom and
dad [or their guardians], visit with santa and share a
home-cooked meal with their family. such programs
i l lustrate the type of support the mil itary community
receives locally, but also extends a sense of belonging
to so many in the process.

activit ies including tuesday dinners [a weekly gath-
ering designed for mil itary famil ies to enjoy a family-
style dinner amidst the company of others in similar
situations] – fondly noted how “the usO has been our
home away from home. We have three sons in the
service, [and] they [all] received care packages and
support. the Holiday Program helped my large mil itary
family have a fabulous christmas. Words cannot ex-

tal anniversary – their 70th year of service within the
community; f irst established regionally in 1941. and,

forces, ironically, their resources do not come from the
government; however, as a congressionally-chartered
effort, the organization is recognized by the depart-
ment of defense, congress and the President, who
serves as Honorary chairman. the local chapter is pri-
marily funded through financial contributions from san
diego area businesses and the generosity of individu-
als who participate by donating to help keep its pro-
grams alive; in addition, both centers are supported
through the assistance of 250 dedicated volunteers
annually.
as with the endearing story of the young girl who sent
her father a simple watch as a christmas gift, making
him feel loved and thought of while he was away dur-
ing the holidays, Pagano reminisced and comment-
ed, “seeing firsthand the impact of this program and
knowing that we truly brought a smile to that family
during [the holidays] by continuing to provide ‘our
touch of home’ [with] every deployment is just one of
the many reasons i am proud to [be part] of and work

Care Packages // Offering a way to reach out to loved ones who are about to deploy or those who are already deployed, care packages can be requested for a single military member or the entire unit or command. The packages include a uSO camouflage toiletry kit, non-perishable snacks, entertainment items such as decks of cards and crossword puzzles, and other useful items such as baby-wipes and band aids. Additional items vary based on season.
