The Livingston Manor Chamberof Commerce and the CatskillArt Society will throw a grand

opening party for “Trains on Main,”the seventh annual holiday trainspectacular, at the CAS Arts Center at48 Main Street, Livingston Manor onSaturday, November 29 from 1-4 p.m.

This nostalgic trip back in time fea-tures handmade model trains on viewin windows up and down Main Street.To kick off our favorite local tradition,a special Grand Opening party will beheld for you to see the miniaturetrains up close, talk to the modelbuilders, and listen to live music fromPaul Lounsbury and Friends!

At 1 p.m., model train maker CharlieIrace and speakers from the O&WMuseum will gather for a talk at theLaundry King at 65 Main Street, Liv-ingston Manor. They will unveil thehistorical display of real train arti-facts, gear, signage, clothing, andmore. Their discussion will bring tolife the evolution of train travel and its

impact on Sullivan County life in itsheyday.

At 2 p.m., the debut of the model

trains at the CAS Arts Center willresound with free candy for kids.

At 3 p.m., musician Paul Lounsbury

and Friends will play a special set ofsongs inspired by the romantic trainculture at the Laundry King.

All ages are welcome for this rare setcelebrating the timeless wonder oftrains.

Bring the kids and enjoy this spec-tacular holiday treat! Trains on Mainwill be on display at the CAS Arts Cen-ter, Morgan Outdoors, and otherbusinesses around Livingston Manorthroughout December.

Visitors can enjoy the show up closeor looking in the windows even whenclosed to experience the magical nos-talgia of the season.

Gallery hours at the CAS Arts Centerare Thursdays–Saturdays from 11a.m.–6 p.m., Sundays from 11 a.m.-3p.m., and Mondays from 11 a.m.-6p.m.. The CAS Arts Center is wheel-chair accessible.

CAS will be closed on Thursday,December 25 for Christmas break andwill remain open through Monday,December 29.

Callicoon Trading on a theme by Dickens

he newly opened CallicoonTrading is located on Upper MainStreet in a historic 1862 Victorianbuilding and was inspired by tra-

ditional goods vendors that were oncea part of the celebrated railroad town. The store is dedicated to beautiful

products that honor technique andtradition, including jewelry, ceramicsand wood pieces produced by localartisans. Owner Irene Nickolai also creates a

line of jewelry including earrings,bracelets and necklaces made fromsemi-precious stones and beads. Candles, antiques, soap and popu-

“The Giving Tree” will have

Dana Distributors Inc. as a host location this Holiday season.The Giving Tree will put clothing and gifts in the hands

of children in need across Orange & Sullivan Counties.

As a host site Dana Distributers will display a non-denominational holiday tree,drawn by the Club kids, with ornaments that list a child’s first name, age,

and size/hobby information.

From November 21 through December 15,donors can sign up, take an ornament and return a gift for the child listed on their ornament.

From December 15-19th,the Club staff and volunteers will collect and distribute the gifts to Club kids

and other children in need in our Counties.

Ethnic foods are one of thosethings which many differentgroups of people can identify

themselves. I believe those tradition-al meals we prepare; especially atcertain times of the year arereminders of grandma and grandpaand the family heritage gifted to usby our ancestors who bravely trav-eled to America.

To those of us with German rootswe are all familiar with Sauerbraten,pot roast, and homemade sauer-kraut, among many other Germandishes. Do you know how many dif-ferent varieties of sausage that aremade in Germany? The number isstaggering. And did you know thatthe potato was not accepted as atable vegetable until the mid 1800s?The Germans simply regarded thepotato as livestock feed – interesting,don’t you think?

Compared to many of the Germanfamilies who settled in this region,

ours are relatively newcomers toAmerica. I can’t remember anyprocessed food in our house andeverything we ate was virtually madefrom scratch. I still prefer to cook thegood old-fashioned way. My motherhad a very heavy accent and if some-time I didn’t understand her attemptto grind out the word in English, Iwould just respond “ya mom,” but Ialways knew that when she cookedsomething special the stories werereminders about her hometownback in Kaulback, Germany.

My oldest son Stephan recently vis-ited some family in Kaulback andcooked a dinner that my cousinMagaretha made for him. So I tried itand frankly it was horrible, though itdid however look familiar to me, andI got this neat idea for a recipe toshare with you folks out there.

I don’t remember the actual namefor this dish but mom would usuallyprepare this kind of thick sauerkrautstew in mid winter. So I’ll justAmericanize the name with a trans-

INGREDIENTS:Fresh Garlic: 8-10 pieces, crushedBacon: 6-8 strips cut into 2-inch piecesBoneless Pork Chop: 5-6 pieces, the thicker

the better.Carrots: 6 sliced on an angleSweet Potato or Yams: 2 large, cubedOnion: 1 sweet, dicedSauerkraut: 1 can (16 oz.) or freshBeer: 1 12/16 oz. can, do not use light beer.Red Wine Vinaigrette: 4 tablespoonsApple sauce: Homemade or store bought

“chunky,” half jar or 12ozGinger snap cookies: 6-8 crushed (your

choice)DIRECTIONS

Will serve 5-6 people. Make sure to use a largedeep skillet with cover

Prepare all ingredients prior to cooking.Place bacon pieces on bottom of skillet and

add crushed garlic. Cook at medium heat untilbacon is just rendered. Slightly stir bacon andgarlic with a wood spoon.

Place pork on top of bacon and garlic – do notbrown meat.

Immediately put carrot on top of meat fol-

lowed by sweet potato or yams cubes followedby onions, then sauerkraut, maintaining medi-um heat.

Add beer over contents. Cover and simmerfor half hour. Remember do not stir.

After the first half hour reduce heat and con-tinue to cook for half hour. Remember you willbe about at the halfway point of the cookingtime. (1 hour)

Using a large spoon gently lift meat to aboutcenter of mixture so it is covered on all sides byvegetables. I watched my mother do it this wayand it works fine. Now add Vinaigrette andcover, using low heat for half hour. Rememberdo not stir. The surface should continue tobubble.

At the end of the half hour add apple mixturecovering entire surface and sprinkle gingersnap crumbs on top. Cook another 20 minutesor until surface bubbles. Remove from heatand let rest for 10 minutes and then serve.

Remember, do not stir or it will wind up look-ing like a massive train wreck.

This is a layered dish, so imagine it as a stackof pancakes cooked from the bottom to the top.

And for those who are afraid of animal fats –they add flavor to this kind of dish, and thesauerkraut and apple enzymes neutralize mostof the fat anyway. Did you ever wonder whyapple sauce is served with pork? This is the rea-son why.

‘A look at our Economy’

Over the last year, the County of Sullivan Industrial Develop-

ment Agency (IDA) has been actively involved with assisting

three major tourism and development projects within Sullivan

County, New York. These projects are the EPT Concord II project

located in the Town of Thompson, the Veria Lifestyle project also

located in the Town of Thompson, and the Vodas project located in

the Town of Fallsburg.These three proposed projects have the potential to have a trans-

formational impact on established patterns of employment, devel-

opment, and investment in Sullivan County. Because of their size

and scope, they will have the ability to act as a catalyst for the area

by providing market-driven, modern day resort destinations while

revitalizing the local economy. The impact will be substantial. The

projects will attract residents and visitors to the area, which will

translate into economic benefit not only from dollars spent, and

property, hotel, gaming and sales tax revenue, but also by creating

jobs. The three together propose well over 3,000 new full time

equivalent jobs, not including construction, indirect, and induced

jobs.

•An application was received by the IDA from EPT Concord II

in February of 2013. EPT Concord proposes to develop a

world-class, four-season master planned destination resort commu-

nity on approximately 1,583 acres of land located on portions of the

site of the former Concord Hotel just north of Monticello. When

complete, the project will include an 18-hole golf course, Casino

Resort, harness horse racetrack, grandstand/showroom, simulcast

facility, hotels, an RV Park, and an entertainment village with a mix

of residential unit types and a civic center. Proposed to be devel-

oped over 10 years, Phase I is expected to generate an estimated

1,143 full time equivalent jobs, and at full build-out EPT Concord

Resort estimates that it will create in excess of 2,600 full time equiv-

alent jobs.

•Veria Lifestyle submitted an application to the IDA in October

of 2013. Veria Lifestyle is proposing to build an upscale holis-

tic health and wellness center based on Eastern natural medicine

sure the water is not able to leakthrough the wrapping. Submerge yourwrapped turkey in cold tap water.

Change the water every 30 minutes.Cook the turkey immediately after it isthawed. Do not refreeze.

In the Microwave Oven• Check your owner's manual for the

size turkey that will fit in yourmicrowave oven, the minutes perpound and power level to use for thaw-ing.

• Remove all outside wrapping.• Place on a microwave-safe dish to

catch any juices that may leak.• Cook your turkey immediately. Do

not refreeze or refrigerate your turkeyafter thawing in the microwave oven.

REMINDER: Remove the giblets fromthe turkey cavities after thawing. Cookseparately.

Roasting Your Turkey• Set your oven temperature no lower

than 325 °F.• Place your turkey or turkey breast on

a rack in a shallow roasting pan.• For optimum safety, stuffing a turkey

is not recommended. For more evencooking, it is recommended you cookyour stuffing outside the bird in a casse-role. Use a food thermometer to checkthe internal temperature of the stuffing.The stuffing must reach a safe mini-mum internal temperature of 165 °F.

• If you choose to stuff your turkey, theingredients can be prepared ahead oftime; however, keep wet and dry ingre-dients separate. Chill all of the wetingredients (butter/margarine, cookedcelery and onions, broth, etc.). Mix wetand dry ingredients just before fillingthe turkey cavities. Fill the cavitiesloosely. Cook the turkey immediately.Use a food thermometer to make surethe center of the stuffing reaches a safeminimum internal temperature of 165°F.

• A whole turkey is safe when cookedto a minimum internal temperature of165 °F as measured with a food ther-mometer. Check the internal tempera-ture in the innermost part of the thighand wing and the thickest part of thebreast. For reasons of personal prefer-ence, consumers may choose to cookturkey to higher temperatures.

• If your turkey has a "pop-up" tem-perature indicator, it is recommended

that you also check the internal temper-ature of the turkey in the innermost partof the thigh and wing and the thickestpart of the breast with a food ther-mometer. The minimum internal tem-perature should reach 165 °F for safety.

• For quality, let the turkey stand for 20minutes before carving to allow juices toset. The turkey will carve more easily.

• Remove all stuffing from the turkeycavities.

It is safe to cook a turkey from thefrozen state. The cooking time will takeat least 50 percent longer than recom-mended for a fully thawed turkey.Remember to remove the giblet pack-ages during the cooking time. Removecarefully with tongs or a fork.

Optional Cooking Hints• Tuck wing tips under the shoulders

of the bird for more even cooking. Thisis referred to as "akimbo."

• Add ½ cup of water to the bottom ofthe pan.

• If your roasting pan does not have alid, you may place a tent of heavy-dutyaluminum foil over the turkey for the

first 1 to 1 ½ hours. This allows for max-imum heat circulation, keeps the turkeymoist, and reduces oven splatter. Toprevent overbrowning, foil may also beplaced over the turkey after it reachesthe desired color.

• If using an oven-proof food ther-mometer, place it in the turkey at thestart of the cooking cycle. It will allowyou to check the internal temperature ofthe turkey while it is cooking. For turkeybreasts, place thermometer in the thick-est part. For whole turkeys, place in thethickest part of the inner thigh. Oncethe thigh has reached 165 °F, check thewing and the thickest part of the breastto ensure the turkey has reached a safeminimum internal temperature of 165°F throughout the product.

• If using an oven cooking bag, followthe manufacturer's guidelines on thepackage.

REMEMBER! Always wash hands,utensils, the sink, and anything else thatcomes in contact with raw turkey and itsjuices with soap and water.

Storing Your Leftovers• Discard any turkey, stuffing, and

gravy left out at room temperaturelonger than 2 hours; 1 hour in tempera-tures above 90 °F.

• Divide leftovers into smaller por-tions. Refrigerate or freeze in coveredshallow containers for quicker cooling.

• Use refrigerated turkey, stuffing, andgravy within 3 to 4 days.

• If freezing leftovers, use within 2 to 6months for best quality.

Reheating Your TurkeyCooked turkey may be eaten cold or

reheated.

• To keep the turkey moist, add a littlebroth or water and cover.
