THIN MINT COOKIES & CREAM PIEIn a food processor, finely grind 24 cookies. Pulse in 1⁄4 cup melted butter; press evenly into a 9-inch pie plate. Refrigerate for 30 minutes. Whip 1 cup heavy cream with 3⁄4 cup confectioners’ sugar until stiff peaks form; fold in 12 crushed cookies and spread mixture into the crust. Top with softly whipped cream and some more crumbled cookies. Slide whole cookies into the filling around the edges. Serves 6.
PEANUT BUTTER PATTY PARFAITLayer 1 cup vanilla or chocolate ice cream in a parfait glass with 1⁄4 cup chopped roasted nuts (such as peanuts or walnuts), 2 tbsp. warmed hot fudge sauce and a few crushed cookies. Top with whipped cream. Serve immediately. Makes 1.

APPLE CRISP Slice 4 apples into 12 wedges each; spread in an 8-by-8-inch baking dish. Using a fork, mix 12 crushed cookies (about 1 cup) with 1 stick room-temperature butter, 1 ⁄2 cup packed light brown sugar, 1 ⁄2 cup granulated sugar and 1 ⁄2 tsp. cinnamon; sprinkle over the apples. Bake at 375° until the topping is golden and the apples are tender and caramelized, about 1 hour. Serves 6.
