Goshen Family,

It is no secret that this is a new and unusual time that we are all in. We are adjusting to new

schedules, adjusting to being home, learning to homeschool, finding new ways to connect

to friends and family members, praying endless prayers, wondering about job security,

worrying about friends and families who are sick, recovering, or are essential workers and are

on the front lines, learning how to grocery shop differently. The list of these “new” ways we’re

learning is endless. We have all experienced fear, worry, stress and anxiety at some point

during this quarantine. We have all felt the comfort and peace in trusting in the Lord. We

have all enjoyed the break from the hustle bustle that was the old “normal”. We have

enjoyed slowing down and spending extra time with family. This time of quarantine is new,

overwhelming, tiring, and refreshing. It’s a mix of emotions that we’re all learning to process.

But one thing that is the same, is that we’re all in this together. Our situations may be different

from one another but we are not alone in this.

We’re all in this together I have reached out to you all asking four questions. 1. What is your favorite family recipe? 2.

What is your favorite worship song? 3. What is a verse that you’ve found encouragement in?

4. What is something “fun” that has come out of this (activity, game, pastime, etc.)? I have

loved reading all of your responses and have been encouraged by them, as well as looking

forward to trying out the recipes you’ve shared. Take time to try each other’s recipes, listen

to some new worship songs (or some old time favorites), and connect with one another.

Share your experiences, what you’ve enjoyed doing, what you’ve found encouragement in,

or even share what your struggling with. Lets continue to build up our community and church

family. Can’t wait to gather with you all again soon. Enjoy.

I’m surprised by how much they look forward to it. Someone is on a bike, scooter, or pushing dollies in a stroller. I’ve also noticed that during these walks I’ve been able to pay attention to the little things more. Being so isolated has made me see these little moments as so blissful. Also witnessing their sibling bonds growing is a beautiful thing. They’re together all day and then begging to have sleepovers in each others’ rooms every night.

Recipes

SUTTER FAMILY: AUNT KELLY’S NOODLE PIE INGREDIENTS: 28 oz. Can of Whole Tomatoes (break up with hands, peel away skins) 1 ½ lbs. Ground beef 1 8 oz. Bag of egg noodles 12 oz. Grated cheddar cheese 2 Onions, chopped and divided 1 Tsp. Sugar 1 Tsp. Salt ½ Tsp. Pepper 1 Tbs. Yellow Mustard 1 Tbs. Worcestershire Sauce 2-4 Tbs. Butter DIRECTIONS: Brown beef with 1 onion. Start water boiling for egg noodles. Drain beef, season with mustard, Worcestershire sauce, salt & pepper. Cook tomatoes with other onion, butter and sugar for about 15 minutes. Assemble the casserole - mix noodles, ground beef tomatoes and half the cheese in 9x12 casserole dish. Top with remaining cheese, bake at 350 until hot and bubbly. (15 minutes approx.)

STANLEY FAMILY: CARL’S BEER BREAD INGREDIENTS: 3 Cups of flour ½ Cup of sugar 12 oz. Beer of choice DIRECTIONS: Combine flour and sugar. Pour in beer and combine into a dough. Pour into greased bread pan and bake at 350 for 55 minutes

EK FAMILY: “CHILI MAC” INGREDIENTS: 1 Large can of diced tomatoes 1 Pound of hamburger, cooked and crumbled 1 Box of Velveeta Mac and Cheese (*no “chili” in it)

DIRECTIONS: Cook and crumble hamburger meat. Make Mac and Chees according to the instructions on the box. Mix altogether in large ovenproof bowl, and bake in oven at 350 for about 30 minutes/until it bubbles.

BUCKBEE FAMILY: CHEESY TATERS INGREDIENTS: 32 oz. Southern hash browns 1 Stick butter, melted ½ Cup grated onion 2 Cups shredded cheddar cheese 1 Can cream of chicken soup 1 Tsp. Salt 8 oz. Sour Cream 1 ¼ Cup corn flakes + ½ stick of butter DIRECTIONS: Mix all into a buttered 13x9 pan. Corn flakes and butter on top. Bake at 325 for 60 minutes.

BOBBY FAMILY: SHRIMP SCAMPI INGREDIENTS: ¾ Pound angel hair pasta 4 Tbs. unsalted butter 2 Tbs. extra-virgin olive oil, plus extra for drizzling 2 Tbs. minced garlic, more or less to taste ¼ Tsp. crushed red pepper flakes 1 Pound shrimp, peeled and deveined Salt and freshly ground pepper ½ Cup dry white wine Juice of ½ lemon 3 Tbs. finely chopped parsley leaves 10 - 12 thin stalks of fresh asparagus cut into 2-inch pieces 1/2 - 2/3 cup chopped tomatoes, seeds removed Grated Parmesan for garnish, if desired DIRECTIONS 1. Bring a large pot of water to a boil. Reduce the heat to a low simmer while preparing the

shrimp. 2. In a large skillet melt 2 tablespoons butter and 2 tablespoons olive oil in a large skillet

over medium-high heat. 3. Sauté the garlic and red pepper flakes for about 2 minutes. Season the shrimp with salt

and pepper and add them to the butter and garlic mixture. Cook the shrimp for about 2 minutes on each side, or until they have turned pink. Remove the shrimp from the pan using a slotted spoon. Set aside and keep warm.

4. Add the wine, lemon juice and asparagus to the pan and bring to a boil. Add the remaining 2 tablespoons butter. When the butter has melted add the shrimp to the skillet along with the parsley. Stir to combine and remove from the heat.

5. Turn the pot of water to high and bring to a boil. Add the pasta and cook until al dente - about 2-3 minutes. Drain the angel hair pasta and return it to the pot. Toss with a drizzle of olive oil.

6. Toss the shrimp and asparagus with the cooked pasta and add the tomatoes. Season with salt and pepper and drizzle with additional olive oil if desired.

7. Lightly sprinkle with grated Parmesan to serve.

Vanilla Extract 1 Cup Pecans, chopped finely DIRECTIONS: For the cake: Preheat the oven to 350 degrees F. Mix together the granulated sugar, oil and eggs in a large bowl. In another bowl, sift together the flour, baking powder, baking soda, cinnamon and salt. Add the flour mixture to the sugar mixture and combine. Then add the carrots and mix well. Pour the batter into a greased and floured Bundt pan and bake until done, about 50 minutes. Leave to cool completely. Meanwhile, for the icing: In a larger bowl, cream the butter and cream cheese together. Add the powdered sugar and vanilla and blend. Then mix in the pecans. Spread the icing on the cooled carrot cake.

WADE FAMILY: GERMAN CHOCOLATE CAKE INGREDIENTS: CAKE: Butter, for greasing the pans 1 ¾ Cups all-purpose flour, plus more for pans 2 Cups sugar ¾ Cups good cocoa powder 2 Tsp. baking soda 1 Tsp. baking powder 1 Tsp. kosher salt 1 Cup buttermilk, shaken ½ Cup vegetable oil 2 Extra-large eggs, at room temperature 1 Tsp. pure vanilla extract 1 Cup freshly brewed hot coffee Chocolate Buttercream Frosting, recipe follows CHOCOLATE ICING: 6 ounces good semisweet chocolate (recommended: Callebaut) ½ Pound (2 sticks) unsalted butter, at room temperature 1 Extra-large egg yolk, at room temperature 1 Tsp. pure vanilla extract 1 ¼ Cups sifted confectioners' sugar 1 Tbs. instant coffee powder DIRECTIONS: FOR THE CAKE: Preheat the oven to 350 degrees F. Butter two 8-inch x 2-inch round cake pans. Line with parchment paper, then butter and flour the pans. Sift the flour, sugar, cocoa, baking soda, baking powder, and salt into the bowl of an electric mixer fitted with a paddle attachment and mix on low speed until combined. In another bowl, combine the buttermilk, oil, eggs, and vanilla. With the mixer on low speed, slowly add the wet ingredients to the dry. With mixer still on low, add the coffee and stir just to combine, scraping the bottom of the bowl with a rubber spatula. Pour the batter into the prepared pans and bake for 35 to 40 minutes, until a cake tester comes out clean. Cool in the pans for 30 minutes, then turn them out onto a cooling rack and cool completely. Place 1 layer, flat side up, on a flat plate or cake pedestal. With a knife or offset spatula, spread the top with frosting. Place the second layer on top, rounded side up, and spread the frosting evenly on the top and sides of the cake. FOR THE ICING: Chop the chocolate and place it in a heat-proof bowl set over a pan of simmering water. Stir until just melted and set aside until cooled to room temperature. In the bowl of an electric mixer fitted with a paddle attachment, beat the butter on medium-high speed until light yellow and fluffy, about 3 minutes. Add the egg yolk and vanilla and continue beating for 3 minutes. Turn the mixer to low, gradually add the

confectioners' sugar, then beat at medium speed, scraping down the bowl as necessary, until smooth and creamy. Dissolve the coffee powder in 2 teaspoons of the hottest tap water. On low speed, add the chocolate and coffee to the butter mixture and mix until blended. Don't whip! Spread immediately on the cooled cake.

VALENTINO FAMILY: APPLE CRUMB BARS INGREDIENTS: 1 Cup old fashioned oats ½ Cup plus 2 ½ Tbs. flour, divided ½ Cup packed brown sugar 1 ½ Tsp. cinnamon, divided ¼ Tsp. salt ¼ Tsp. baking Powder 6 Tbs. unsalted butter, melted ¼ Cup granulated sugar 1 Tbs. lemon juice 6 Cups peeled and thinly sliced apples (about 3 large Granny Smith apples) DIRECTIONS: Preheat oven to 375. Line an 8 x 8 baking pan with parchment paper so the paper hangs over all four sides. Stir together oats, ½ cup plus 2 tbs. flour, brown sugar, 1 tsp. cinnamon, salt, and baking soda in a mixing bowl. Pour melted butter into oat mixture and stir to combine. Place ½ cup of the oat mixture aside and press remaining into the bottom of the baking pan. Combine apples, sugar, lemon juice, remaining ½ tbs. flour, and ½ tps. Cinnamon. Stir evenly to coat. Dump apples on top of the crust in baking dish and gently even them out. Crumble the remaining ½ cup oat mixture on top of apples. Cover with foil and bake for 30 minutes. Remove foil and bake for another 25-30 minutes until crumble is golden brown. Cool on a wire rack. (I usually lift the parchment paper out of the pan and let cool).
