To be in to win, write your name, address and daytime phone number on the back of an envelope and post to Sensational Salads, Hibiscus Matters, Unit G, Tamariki Plaza, 18 Tamariki Ave, Orewa 0931. Lovers of Asian flavours will enjoy this delicious salad from my book with Simon called Sensational Salads (Hyndman Publishing). The rump steak can be replaced with sirloin, rib-eye or fillet steak if you prefer.

For 2 servings:200-250g rump steak cut 2cm thick1 Tbsp fish or soy sauce1 Tbsp canola oilmixed salad leavescucumber chunkscherry tomatoessliced cooked green beansavocado slicesbasil leavesDressing:1–2 cloves garlic, finely chopped1 tsp finely chopped lemongrass2 Tbsp sugar1 Tbsp fish sauce2 Tbsp fresh lime juice2 Tbsp water¼ tsp salt1/8 tsp chilli powder or minced red chilli2–3 Tbsp chopped coriander1 chopped spring onionTrim fat from the steak. Coat steak with a little soy sauce and oil and leave to marinate for at least 15 minutes, or up to 24 hours in the refrigerator. Prepare salad ingredients – if necessary make two salads in shallow bowls. About 15 minutes before serving, preheat a heavy pan over high heat and pan-grill steak in the dry pan for 1–2 minutes per side until brown on the outside but pink in the middle. Put steak on a carving board and leave to cool.To make the dressing, finely chop the garlic and thinly sliced lemongrass in a food processor or blender. Add the remaining dressing ingredients and process until coriander and spring onion leaves are chopped.Just before serving, slice the cooled meat thinly into strips and coat with part of the dressing. Arrange slices on the individual salads and drizzle over extra dressing. Serve with crusty bread or bowls of Basmati or Jasmine rice.

Did you know that there are 450 Probus Clubs in New Zealand involving some 43,000 Probians? Each Club was sponsored by Rotary’s Community Service Programme. All Clubs meet monthly on a week day morning. We hear quality guest speakers on interesting topics and participate during the year in regular trips to places of local interest and various other social activities. Annual membership fees vary between $15 and $30 with some clubs charging a nominal joining fee. Probus, unlike many other Clubs, has no community service obligations, we are simply there for entertainment and self-enjoyment.

Here on the Hibiscus Coast, there are now seven Clubs to choose from: Ladies Only (3 Clubs) Men Only (1 Club) and Mixed (3 Clubs).

If you are an active “Senior,” enjoy social interaction and would like to see which Club might best suit your needs, call 424 7115 or visit the website for the seven

Winter has well and truly arrived, and among those feeling the chill are the parishioners and others who use Red Beach Methodist Church.Heating is badly needed for the church and, at the end of last year, a fundraising drive was initiated by church-goer Kate Armon of Hatfields Beach.A total of $15,000 is needed to provide heat pumps for the church, and so far $2600 of that has been raised. The next fundraiser is an Art & Craft Fair, to be held at the church in Red Beach Road, which Kate is hoping will raise a further $1000.The fair will be held on Saturday, July 27 and is on track to include more than 50 stalls as well as a small indoor café serving soup and home baking.Among the crafts on offer are jewellery, greeting cards, retro cushions, children’s clothing and toys, candles and recycled glass works.Around a dozen artists will be selling their work, including Rev Robyn Allen-Gouge’s husband, Geoff Allen, who paints Van Gogh reproductions. The multi-talented Rev Allen-Gouge is also pitching in, making dolls

clothes for a church stall. She will also be singing and playing the harp while people browse the market. The Reverend, who also plays the piano, says her singing skills were honed by lessons with Dame Sister Mary Leo. She took up harp playing in 2000 and plays with the Devonport Folk Club and at Folk Festivals as well as entertaining local community groups.Info: email Kate Armon email [email protected] or phone 021 170 8513. The first steps to extend Orewa Craft Market & Bazaar were taken on June 22, and organiser Annamaria Berek says the positive response from shoppers bodes well for future markets. A total of 13 stalls were set up on the pavement outside Orewa Community Centre and shoppers were entertained by guitarist Danny Morris. As the market grows, stalls will continue down towards Moana Court, as well as in the other direction towards Hillary Square. The next outdoor market will be held on July 20. by Pauline StockhausenThe school holidays are fast approaching and every parent and caregiver will be looking for ideas that will keep their children entertained. The winter holidays can be the hardest to plan for, as you’re limited in what you can do especially if there is bad weather. However after searching the internet, I have found some apps that allow the young ones to explore their creativity while the adults take a break. The key to keeping children occupied is finding a creative app that will keep them interested and challenged enough to carry on unsupervised whilst you do with the mundane household chores, however it will be hard for you to keep your nose out once they’ve mastered these apps as you’ll definitely want to have a go yourself. Here’s a tip: If they have friends over, hold a competition for the most creative piece of work – the most well made project or even the funniest, but make sure that they all get a prize or even just a certificate to mark their achievements.Muzy This app is especially for the budding amateur photographer. The kids can take their own photos, then edit them, add text frames or stickers

and then arrange them into a scrapbook collage. It’s possible to make black and white images and then add colour, there is so much that you can do with this app – you can even make posters or send friends personalised notes.Vijay This is another fantastic app; however you do need the latest Smartphone to be able to use it. This app is so good that it can turn anyone into a semi-professional movie maker. It has the ability to mash videos and music together. The children can make their own movies and then import into Vjay. Once loaded, they can add transitions, video effects, looping tools and music. This will keep the kids busy for hours and you can guarantee that there will be a few surprises in store for you once they’ve complete their film project. Istopmotion for iPad This is a fabulous app for the Nick Parks wannabe. If your child is into animation then this will inspire them. It’s so easy to bring Lego and Plasticine figures to life; the children can let their imaginations run riot, making stop- start movies; this really is a great way for children to learn how animation is made.Pauline Stockhausen of Social Soup NZ runs Hibiscus Matters’ Facebook page.
