INTRODUCTION

FOOD ADULTERATION It is the act of intentionally debasing the quality of food offered for sale either by the addition of mixture or substitution of inferior substances or by the reoval of some valuable ingredient.

TEA- -> Rub leaves on white paper,artificial colour comes out on

paper.-> Sprinkle tea leaves on wet filter paper.Pink or red spots

on papershow colour.COFFEE--> Gently sprinkle the coffee powder on the surface of

water in glass.The coffee floats over the water but chicory begins to sink down within a few seconds.The falling chicory powder leaves particles behindthem a trail of colour,due to arge amount of caramel they contain.

HONEY--> A cotton wick dipped in pure honey burns when ignited

with a matchstick.Ifadulterated it willnot burn or if it does it will produce a cracking sound.

• MILK-->Put a drop of milk on polished vertical surface.The drop of pure milk

either stops or flows slowly leaving a white trail behind it.Milk adulterated with water will flow immediately without leaving any trace.

->Add a few drops of iodine to the sample.Appearance of bluish black colour indicates the presence of starch.

->Take 5ml of milk in a test tube and add 2 drops of bromothymol blue solution.Development of blue colour after 10 minutes indicate the presence of urea.

SWEETS-->Add a few drops of iodine to the sample.Appearance of bluish black

colour indicates the presence of starch. SUGAR-->Dissolve sugar in a glass of water,chalk will settle down at the bottom.MUSTARD SEEDS-->Argemone seeds have rough surface.Mustrad seeds on pressing shows

yellow inside while argemone seed is white.->Add nitric acid to the sample.Heat for 2-3 minutes.If red colour

appears,adulterant is present.

PREVENTION OF FOOD ADULTERATIONACT,1954 Food is declared adulterated if: A substance is added which depricates or

injuriously affects it. A cheaper or inferior substance is

substituted wholly or partly. Any valuable or necessary constituent has

been wholly or partly abstracted. It is coloured or otherwise treated its

appearance or if it contains any added substance injurious to health.

SAFEGUARDS TO FOLLOWa)Buy standard goods like those with ISI,AGMARK or FPO marks.They indicate that the products are genuine.b)Buy reliable brands from standard companies.c)Before buying an article,note the standardisation mark, manufacturing and expiry date as well as the price.d)Study the label properly to get complete details of the product.e)If you find a shpokeeper indulging in adulteration,boycott the shop and report the matter to the concerned authorities.f)Do not buy loose foodstuffs from roadsides but buy only packed ones.There are more chances of adulteration fro loose foodstuffs.
