andChefAmyDiBiaseastheculinaryleadersatthehighlyanticipatedhotel,openingSeptember2018.Mergingtogether
theirrespectiveindustryexpertise,culinaryflairs,andloyalfollowings,thepowerduowillcollaborateonasignature
restaurantconceptandsolidifyInterContinentalSanDiegoasdowntown’snewestculinaryhotspot.Eachwithgleaming
views overlooking the bayfront, five distinctive dining venues will include the soon-to-be-announced signature
restaurant,thefirst-everCalifornialocationofDelFrisco’sDoubleEagleSteakhouse,19thfloorrooftopbar,4
thfloorpool
bar, and café. Reconnected after briefly working together in years past, McCabe and DiBiase have a history of
camaraderieandstirringupexcitingnewventures.
Inadditiontohelpingshapethesignaturerestaurant,ChefPaulMcCabewilloverseethehotel’scomprehensivefood
andbeverageprogram,includingbanquetsserving95,000squarefeetofeventspace.Aseasonedindustryveteranwith
over30yearsofexperienceandtraininginCalifornian,Mediterranean,SouthwesternandPacificRimcuisines,McCabe
was previouslywith Town andCountry Resort andConventionCenter in SanDiego, Royal PalmsResort and Spa in
Arizona,andismostknownforhisinstrumentalroleinputtingL'AubergeDelMar’sKITCHEN1540onthemap.McCabe
has garnered esteemed industry awards and recognition over the years, including being named as a “rising star of
Americancuisine”bytheJamesBeardFoundation.
SanDiegocelebritychef,AmyDiBiase,willmanageallaspectsofthehotel’ssignaturerestaurant,4thfloorpoolbar,and
in-roomdining.DiBiasebringsoveradecadeofSanDiego-specificexperiencetohernewrole,followinghermostrecent
stintwithGrandRestaurantGroupandtheopeningofTidalatParadiseResort&Spa,whichwonnumerousawardsas
SanDiego’sbestnewrestaurantin2014.Inthekitchen,DiBiaseisknownforputtingaCaliforniatwistonItalianand
Frenchcuisineandplanstobringafreshtakeonsomeofhersignaturedishes.
InterContinentalSanDiego’ssignaturerestaurantandbarwillbelocatedonthehotel’s3rdfloor–adjacenttothelobby
–andwilloverlookthenearbyUSSMidwayandSanDiegoBay.Theoutdoorpoolbarwillcommandthe4thflooropen-
airdeckwithunalteredviewsofthewaterfront.Bothvenueswilldebutuponthehotel’sofficialopeninginSeptember
2018with further concepting details to be revealed later this summer. The ground-level Del Frisco’s Double Eagle
Steakhousewillserveupboldanddeliciouscuisinealongsideanextensiveaward-winningwinelistuponopeninginthe
laterpartof2018.Thehotel’scaféand19thfloorrooftopbarareexpectedtoopeninearly2019withfurtherdetailsto
