As a family business, what wouldyou say are the Hotel’s corevalues?Fundamentally we are service orientated.As an independent hotel there isn’t ahead-office who dictates to us. So thatmeans we can be on a first-name basiswith our customers. It is effectively likeentertaining guests in our front room.

How did the hotel come into yourownership?We have owned the hotel for 14 years. Ihave always been in the hospitalityindustry. After I went to hotel school, Iworked with a chain of hotels in SouthAfrica for ten years. It has always been anambition of mine to have my own hotel.When my father retired from BritishAirways, as a family we were in a financialposition to buy The Great Malvern Hotel.We felt the hotel fitted the personality ofour family. Malvern was just the sort ofstable, outdoors environment we wantedour daughters to grow up in.

I’m happy to say that my daughter workshere as a waitress, while my wife cooksbreakfast on Saturdays. And as we speak,my father is working in the bar. My wifeoversees the marketing, PR and socialmedia and my mother is in charge of theflowers. It is an all-round family-runbusiness.

In terms of service, what do youvalue the highest?It depends on how you define personalservice, but to me it stands for customerrecognition and knowledge. The sizemakes this possible: as a small hotel in asmall town we are able to remember acustomer’s favourite red wine forexample.

How do you teach your staff aboutthe hotel’s ethics?In the end it comes down to employingthe right sort of staff. They must want towork here. I believe this is as importantas being trained correctly. In this way ourstaff ensure a hospitable and relaxedatmosphere is upheld.

The origins of The Great Malvern Hotel,(formerly The Beauchamp Hotel) dateback to 1842. It was around that time thatDoctor James Wilson chose Malvern tointroduce hydrotherapy, now morenormally referred to as ‘The Water Cure’,based on its healthy hilly location and anabundance of water. Malvern expandedrapidly over the next 40 or so years, andthe hotel was built to accommodatevisiting patients and an ever increasingnumber of business persons drawn to thisthriving town.

Over the intervening years, the hotel hasmirrored the many changes, fashions andvisitors to Malvern. Built in the days ofstage coaches, before railways and motorcars, The Great Malvern Hotel has had tocontinually embrace change to meet theneeds of visitors to Malvern.

What do you think is the main drawthat brings tourists to Malvern?When it comes to tourism Malvern isn’treliant on one aspect like, for example,Stratford relies on its Shakespeareanheritage. Instead there are many facets thatdraw tourists to it. Firstly its location –people love how it’s firmly in thecountryside but not too far from the M5.Obviously the hills - the inspiration for somuch of Elgar`s music.We are also soprivileged with the Theatre and the world-class shows performed here. Add to this,the Morgan motorcars; the water (and thewhole culture behind it); the Priory; theVictorian architecture and history. On abusiness level Qinetiq, Malvern Instrumentand the Enigma Business Park are alldefinite draws too.

As for visitors to the hotel itself, it would betrue to say we offer, in a nutshell, a family-run, down-to-earth local business, which iswell-located (walking distance from theTheatre as well as the Splash sportscomplex) in a friendly town.

I see from your website your hotelhosts several local meetings such asfor The Civic Society, The MalvernRotary Club and The Green Party. Yes, we allow local meetings to use thehotel free of charge. We also welcome theCAMRA club, a poetry group, a healinggroup, a psychic, the comic club andUniversity of the Third Age meetings.

We also have the Great Shakes Bardownstairs which is available for hire forparties and for big sports matches.

Overall, would you say the roomsare used more for leisure or forbusiness?I would say it’s about fifty percent holiday-makers – walking groups or visitors hiringMorgan cars to test them out before theybuy them – and fifty percent business men.

What is your favourite aspect ofyour role?I think it would have to be the cross-sectionof people you meet. The hotel really is a

melting-pot of regulars, customers that havebecome friends, businessmen, musicians,theatre-goers and national actors.

Could you tell me about the menu?A full pdf of our Menu is on our website. Wehave recently had the menu design updatedby Bubbling Designs(http://www.bubblingdesigns.co.uk/ng/)which have incorporated everything thatmakes Malvern unique: the hills, theMorgan, the wells and the Theatre. We feelit’s very important to embrace everythinglocal businesses have to offer. Suppliersought to be shown the same respect ascustomers. At this time we are all lookingfor way to cut costs and it has never beenmore crucial to support locally.

I hear you have live music everyweekend, how do you find yourplayers?That’s right, the music is fantastic. It’s likefresh air coming though the hotel. Peoplewho’ve come in for a drink often end upstaying the whole evening to listen. There isan open-mic night every Tuesday and if weare impressed with the musicians we invitethem back to play at the weekends. Who has been the most popular?There has been such a variety it’s hard tosay. “Bar Flys” are great. And Clive John’stribute of The Johnny Cash Roadshowalways fills the bar. It’s the lucky-dip natureof it that makes it so exciting.

How do you keep your hotel movingforward?You wake up everyday thinking ofsomething new to do. When something’syour hobby, your life-blood, it’s only naturalthat you keep it moving forward. You haveto always listen to the customers and thestaff and take onboard what they say. You also have to review past decisions andre-visit things, and make them right if theyweren’t before. Also, due to its Victorianarchitecture, the building itself neverceases to throw jobs at you. Essentially youhave to carefully think things through, andyou have to love what you do.

Christmas at Parrys“What makes the perfect Christmas present?”asks David Siviter; a question the director ofParrys Jewellers is more qualified than most toanswer, given the reputation of style, traditionand variety that his jewelleryshop has upheld for the last40 years.

This Christmas, to celebrate its 40thanniversary, Parrys window isdisplaying a collection of one of thestars of the jewellery world – theRuby, the gemstone which hastraditionally symbolised thecelebration of this impressiveanniversary. This collection is butone of many that will brighten thestore this Christmas, pink gold and anexciting range of silver jewellery toname a few more.

When I interviewed David Siviter, whotrained as a retail jeweller and agemmologist, and whose family hassubsequently owned this wonderful treasurechest of a shop since he was 22, it seems there is very little he doesn’tknow about jewellery.

As he took me around the store, I was struck by the broad sweep of itemson display – spanning from the timeless diamond rings and Japanesecultured pearls and signet rings, to hand-carved cameos and a gloriousArt Deco-inspired collection, (so in demand with all the Gatsby parties atthe moment,) called Marcasite. Parrys is without a doubt an establishedtraditional jewellery business, but certainly fully aware of the latestfashions, with Troll Bead bracelets and Swiss-made Tissot watches takingpride of place in the window. The diversity of the range is an indication ofthe store’s capacity for individuality and innovation.

Equally striking are the dazzling array of Sapphires, Opals, Citrines andTanzanites set in Yellow or White Gold. He evidently has a passion andextensively trained eye for diamonds. Although he used to source hisjewellery in the Far East, he now buys mainly in Birmingham and London.“I truly believe Britain is the best manufacturer of jewellery in the world.”

As a store where customer service is paramount,Parrysis proud of the fact that the majority of the staff havebeen part of the shop for several years. It is ahallmark of the store’s friendliness, which is of suchimportance to the personable town that Malvern is.

For example George, who has always worked at Parrys,can still be found in the workshop beyond the

display cabinets after fifty years and David’sfather still looks after the books. In terms of

jewellery services there is really verylittle Parrys can’t do for you: repairs,

valuations, re-threading, engraving,custom-design or remodelling oldpieces. He was once asked to createa ring from a piece of meteorite!

With its 40th Christmas not faraway now, Parrys clearly has muchto celebrate, and warmly invitesyou to join in the celebrations this

Christmas too. Nobody can deny, inan age of constantly moving fashion

and rapidly evolving technology, thereis really only one gift that deserves to

Rosemary Roast Potatoes & ParsnipsSERVES 8 AS A SIDE DISHIngredients2kg large floury potatoes1kg small parsnips (if large, halve lengthways)1 tbsp Maldon sea salt10 fresh rosemary sprigs8 tbsp vegetable oil

METHOD1. Preheat the oven to190C/fan170C/gas 5.Halve the potatoes. Placein a large pan of saltedwater. Bring to the boiland cook for 3 minutes.Add the parsnips and boilfor a further 3 minutes. Drain.To freeze: prepare up to the end of step 2, then spread out onbaking sheets to cool. Freeze until solid, then transfer to foodbags. Freeze for up to 1 month. On the day, cook from frozen,adding an extra 15 minutes to the cooking time.2. Meanwhile, grind the salt and rosemary leaves in a pestle andmortar, then sprinkle on the veg.3. Put the oil into a roasting tray and put in the oven for 5minutes. Tip the vegetables into the tray, toss and roast for 1hour. Increase the temperature to 200C/fan180C/gas 6. Turn thevegetables, then cook for 15 minutes, until golden and crispy.Serve and enjoy!

• 1 whole Salmon

• 2 tablespoons olive oil

• Salt & freshly groundblack pepper

• 3 lemons sliced

• 2 spring onions

• 1/2 cup chopped freshherbs - parsley,fennel,thyme

METHOD

• Preheat the oven to200C

• Wash the salmon anddry with paper towels.

• Rub the surface of thesalmon with olive oiland season with saltand pepper.

• Place a very large sheetof aluminium foil insidea baking dish, allowingextra foil for wrappingthe salmon.

. Position the salmon onthe foil, then place thelemon slices, springonions and herbs in thecavity of the salmonand over its surface.

• Fold over the foil toseal completely andbake in the oven for 35- 40 minutes or until thesalmon is just cookedthrough – this willdepend on the size ofyour fish!

Serve with baby potatoesand steamed greenvegetables.
