Bioagricoop s.c.r.l. is an Italian non-profit organization born in 1984, which operates for the promotion, training and research in organic agriculture and sustainable development with different teams of experts and universities, both at national and international level. Bioagricoop organizes training on national and international organic standards and regulations, organic and sustainable agriculture, targeting operators, technicians and inspectors. It also promotes networks of organic operators, consortia and temporary companies associations. Bioagricoop participates, as project leader or project partner, in national and international projects, usually co-financed by the Italian government or by the European Union, such as Organicity.BIOAGRICOOP.IT

Polska Ekologia is a Polish non-profit organization born in 2006, which contributes to the promotion and development of organic farming, producing and processing of organic food both at national and international level. Polska Ekologia organizes seminars, conferences and training activities on national and international organic standards and regulations, organic and sustainable agriculture. PREPARATION Combine all ingredients and blend them into a smooth, fairly dense mass. Our suggestion is to start by

adding a pinch of salt to the flour, followed by the eggs, the yogurt and the baking soda. Add the apple, diced or cubed, as much as you prefer. Heat up the pan, pour in the oil.

When the oil gets hot, reduce the heat to medium, place scoops of paste on the pan with a ladle and fry the crumpets. Make sure the oil sizzles during the frying, but be careful not to burn it. The crumpets should have a

PREPARATION At first, it may seem quite simple to prepare carbonara, but this dish is actually one of the most difficult

among the typically Italian ones - and you can easily spoil it.

Boil at least two liters of water in order to prepare the spaghetti. They need to be full covered. While the water is warming up, it is time to prepare your carbonara sauce. Dice the bacon and start frying it with some extra virgin olive oil in a pan, over moderate heat. Once the bacon is crispy, put away the pan from the heat. When

the bacon and the pan have cooled down, add one egg yolk for person: this is a very important step, in order to prevent the egg yolks from coagulating.

Leave your cream for a while and when the water is boiling, prepare your spaghetti. They need to be cooked for 11 minutes. After drain them, mix your yellow cream and pour it on the spaghetti.

Although some recipes do not include the Parmigiano Reggiano, this ingredient is strongly suggested as key element of the carbonara. So feel free to add your organic Parmigiano Reggiano in the amount you prefer, and

PREPARATION Put some salt on your goose breasts. Dice the apples and one of your oranges and prepare your special spicy stuffing adding oil, garlic and marjoram to the fruit. Mix everything and add it to the meat. Cover the meat

and leave it in the fridge for the whole night: the special taste of the marinade worths the wait.

On the next day, when the meat is marinated, place the breasts with the stuffing into the cooking sleeve and roast them at 150°C for about 1 and ½ hour.

In the meantime, bake the potatoes in the oven wrapped in aluminum foil (hence the expression “jacket potatoes”). Use your tasty organic chokeberry juice to cook the red cabbage along with the dried fruit.

Add salt, pepper and a pinch of brown sugar.Squeeze the orange juice into the pan, add green pepper and a bit of butter in order to prepare your orange

sauce; add the chopped apple to it.

In the meanwhile, slice your mozzarella and tomatoes, put them on a plate and put your favourite grill on the fire for the eggplants. Squeeze, dry and grill the eggplants for a few minutes on both sides,

adding them to the plate with the tomato slices one by one.

Open up the jar and pour the organic basil pesto on top of your salad, then add salt, oregano, basil leaves and olive oil to your vegetables.

PREPARATION Prepare a water bath to melt chocolate, sugar and butter. Take a metal bowl and then place it on the top of a pot with boiling water: when your ingredients have melted, add the eggs and mix, in order to create the

special liquid heart of your soufflè. At the end, add the flour and combine it with the mixture.

Pour the mixture into the molds - preferably aluminum ones - and bake at 200°C for 10 minutes.

You can serve the soufflè with your favorite add-ons, directly after baking; alternatively, cool in the refrigerator and heat up just before serving so that the center becomes liquid.

PREPARATION Dice your cherry tomatoes, add salt, extra virgin olive oil, oregano and basil.

Take six slices and slightly rub the garlic on both sides. You can add a gluten free option by using mini crackers with rosemary flavour. Dress your bruschetta with the tasty juice formed at the

PREPARATION Marinade the steaks in rosemary for at least 2 hours, then grill them.

Boil the asparagus, carrots and chanterelles and then sear the butter with the garlic. Add spices as required.

Peel the shallots and glaze them in the butter. Pour in the wine and add spices,cooking on low fire.

PREPARATION Grate the pumpkins in flakes. Dice the apple and let it wilt in a casserole with 2 olive oil spoons; add the pumpkins and cook for some minutes. Add the rice, toast it for a couple of minutes, then start adding the

vegetable broth in little doses until the rice is completely cooked.

At the end, add some salt as you prefer. Warm up 4 spoons of balsamic vinegar in a small casserole and make it dry until it halves. Add some Parmigiano Reggiano and some butter to homogenize the risotto. Cover the

casserole for a few minutes and... call your tablemates, because the risotto will be served soon!

Dish up your risotto and pour the balsamic vinegar on top - your masterpiece is finally ready!

INGREDIENTS

500 g ORGANIC SPELT FLOUR12 g DRIED BREWER’S YEAST300 cl WATER5 g SUGAR10 g SALT250 g MOZZARELLA400 g ORGANIC TOMATO SAUCE300 g ORGANIC PICKLED VEGETABLES 50 g PARMIGIANO REGGIANO2 TABLE SPOONS EXTRA VIRGIN OLIVE OIL

PREPARATION Take a large pan and put the spelt flour and salt in it.

Melt the brewer’s yeast in some warm water with sugar until it dissolves completely, then add it to the flour at the centre of the pan. At this point, start kneading by hand with strength - and passion - at least 10 minutes,

until the dough becomes smooth and soft. Put it apart and let it rise for almost 3 hours - and relax. If you have time, you can also use a 24 hours, slow rising in the fridge: the result will be amazing. Otherwise, if you want to prepare your pizza and eat it right away, after three hours of rising, when the pizza dough is swollen

enough, just stretch it gently with your fingers on a baking tray. Be sure to grease it with extra virgin olive oil, in order to make your pizza crispy. Put the tomato sauce on top and bake in the oven for 30 minutes at 180°C. Be sure to check if the bottom of the dough is well-cooked and crispy enough. After that, remove it from the oven and place the mozzarella cubes, pickled vegetables and Parmigiano Reggiano on it, then put it back in

the oven and let it bake for 5 minutes more, in order to melt the cheese. For a gluten-free organic version, you can use the prepared gluten-free pizza dough from the Organicity products.
