*he author defines orthomolecular psychiatry as the achievement and
preservation of good mental health by the provision of the optimum molecular
environment for the mind1 especially the optimum concentrations of substances
normally present in the human body1 such as the vitamins. ,e states that there is
sound evidence for the theory that increased intake of such vitamins as ascorbic
acid1 niacin pyrido3ine1 and cyanocobalamin is useful in treating schizophrenia.*he negative conclusions of A/A *ask 0orce rthomolecular *herapy in /sychiatry1 he says1 result not only from faulty
arguments and from a bias against megavitamin therapy but also from a failure to
deal fully with orthomolecular therapy in psychiatry# *hree psychiatrists

>rthomolecular psychiatry is the achievement and preservation of mental health
by varying the concentrations in the human body of substances that are normally
present1 such as the vitamins# It is part of a broader sub?ect1 orthomolecular
medicine1 an important put because the functioning of the brain is probably more
sensitively dependent on its molecular composition and structure than is the
functioning of other organs 7"8 . After having worked for a decade on the
hereditary hemolytic anemias1 I decided in "$2% to work on the molecular basis
of mental disease. I read the papers and books dealing with megavitamin therapy
of schizophrenia by ,offer and >smond 7'1%8 as well as the reports on studies of
vitamins in relation to mental disease by 5leckley and :ydenstricker 721;8 and
others. In the course of time I formulated a general theory of the dependence of
function on molecular structure of the brain and other parts of the body and
coined the ad?ective 6orthomolecular6 to describe it 7"8.
*here is no doubt that the mind is affected by its molecular environment. *he
presence in the brain of molecules of 9:+1 mescaline1 or some other
schizophrenogenic substance is associated with profound psychic effects. Mental
manifestations of avitaminosis have been reported for several vitamins. A
correlation of behavior of school children with concentration of ascorbic acid in
the blood 7increase in 6alertness6 or 6sharpness6 with increase in concentration8
has been reported by @ubala and @atz 7=8.
A striking abnormality in the urinary e3cretion of ascorbic acid after an oral
loading dose was reported for chronic schizophrenics by ander@amp 7&8 and by
,er?anic nd Moss#,er?anic 7$8. My associates and I 7"!8 carried out loading tests
for three vitamins on schizophrenic patients who had recently been hospitalized
and an control sub?ects. *he percentage of schizophrenic patients who showed
low urinary e3cretion of each vitamin was about twice as great as that of the
controls( for ascorbic acid1 % percent of the schizophrenic patients showed low
urinary e3cretion versus ' percent of the controlsB for niacinamide1 &" percent

versus %; percentB and for yrido3ine1 2' percent versus '% /ercent. *he
possibility that the low values in urinary e3cretion of the vitamins for
schizophrenic patients resulted from poor nutrition is as unlikely by the
observation that the numbers of sub?ects low in one1 two1 or all three vitamins
corresponded well with the numbers calculated for independent incidence.
*here are a number of plausible mechanisms by which the concentration of a
vitamin may affect the functioning of the brain. >ne mechanism1 effective 5>*
vitamins hat serve as coenzymes1 is that of shifting the eCuilibrium for the
reaction of apoenzyme and coenzyme to give the active enzyme. An e3ample is
the effectiveness of yanocobalamin 7vitamin D"'8 given in amounts "1!!! times
greater than normal to control the disease methylmalonic aciduria 7""#"%8. About
half of the patients with this disease are successfully treated with megadoses of
vitamin D"' . In these patients a genetic mutation has occurred and an altered
apoenzyme that has a greatly reduced affinity for the coenzyme has been
produced. Increase in concentration of the coenzyme can counteract the effect of
the decrease in the value of the combining constant and lead to the formation of
enough of the active enzyme to catalyze effectively the reaction of conversion of
methylmalonic acid to succinic acid.
In the human population there may be several alleles of the gene controlling the
manufacture of each apoenzymeB in conseCuence the concentration of coenzyme
needed o produce the amount of active enzyme reCuired for optimum health may
well be somewhat different for different individuals# In particular1 many
individuals may reCuire considerably higher concentration of one >r more
coenzymes than other people do for optimum health1 especially for optimum
mental health. It is difficult to obtain e3perimental evidence for gene mutations
that lead to only small changes in the properties of enzymes. *he fact that genes
that lead to large and more easily detectable hanges in the properties of enzymes
occur1 as in individuals with methylmalonic aciduria1 for e3ample1 suggests that
mutations that lead to small changes also occur.
:ignificant differences in enzyme activity in different individuals have been
reported by many investigators1 especially by Williams "2F1 who has made many
studies of biochemical individuality. It is likely that thorough studies of enzymes
would show them to be similar to the human hemoglobins. A few of the
abnormal human hemoglobins1 most of which involve only the substitution of
one amino#acid residue for another in either the alpha chain or the beta chain of
the molecule1 differ greatly in properties from normal adult hemoglobin1 leading
to serious manifestations of disease.

It was in the course of the study of one of these diseases1 sickle cell anemia1 that
the first abnormal hemoglobin was discovered 7";8. Most of the abnormal human
hemoglobins1 however. differ from normal hemoglobin in their properties to only
a small e3tent1 so that there is no overt manifestation of disease. *here is1
nevertheless1 he possibility that even the small changes in properties of an
abnormal hemoglobin associated with a mild hemoglobinopathy will havedeleterious conseCuences. An e3ample is the intolerance to sulfa drugs associated
with the substitution of arginine for histidine in the locus 2& in the alpha chain or
; in the beta chain. It is likely that individual differences in enzyme activity will
in the course of time be shown to be the result of differences in the amino#acid
seCuences of the polypeptide chains of the poenzymes.
More than "!! abnormal human hemoglobins are now known1 and the human
population may be e3pected to be similarly comple3 with respect to many
enzymes1 including those involved in the functioning of the brain. A tendency to
schizophrenia is probably polygenic in origin. I have suggested 7"8 that the genes
primarily involved n this tendency may well be those which regulate the
metabolism of vital substances such as the vitamins.
:ome vitamins are known to serve as coenzymes for several enzyme systems.
We might ask if the high concentration of coenzyme reCuired to produce the
optimum mount of one active enzyme might not lead to the production of far too
great an amount of another active enzyme. *he answer to this Cuestion is that the
danger is not very great. 0or most enzymes the concentration of coenzyme and
the value of the combination constant are such that most 7$! percent or more8 of
the protein is converted to active enzyme. Accordingly1 a great increase in
concentration would increase the amount of most active enzymes by only a few
percentage points1 whereas t might cause a great increase for a mutated enzyme.
The Orthomolecular Treatment of Schi#ophrenia
In the book >rthomolecular /sychiatry( *reatment >f :chizophrenia 7"=8 my
colleagues and I pointed out that the orthomolecular treatment of schizophrenia
involves the use of vitamins 7megavitamin therapy8 and mineralsB the control of
diet1 especially the intake of sucroseB and1 during the initial acute phase1 the use
of conventional methods of controlling the crisis1 such as the phenothiazines. *he
phenothiazines are not1 of course1 normally present in the human body and are
not orthomolecular. ,owever1 they are so valuable in controlling the crisis that
their use is ?ustified in spite of their undesirable side effects.
,awkins 7"&8 stated that his initial combination of vitamins for the treatment of
schizophrenia was I gin. of ascorbic acid1 I gm1 of niacinamide1 2! mg. of

pyrido3ine1 and %!! I.. of vitamin E four times a day. >ther vitamins may also
be given. A larger intake1 especially of niacinamide or niacin may be prescribedB
the usual amount seems to be about & gm. a day after an initial period on % gm. a
day.
*he vitamins1 as nutrients or medicaments1 pose an interesting Cuestion. *heCuestion is not1 +o we need themH We know that we do need them1 in small
amounts1 to stay alive. *he *eal Cuestion is1 What daily amounts of the various
vitamins will lead to the best of health1 both physical and mentalH *his Cuestion
has been largely ignored by medical and nutritional authorities.
9et us consider schizophrenia1 >smond 7"$8 stated that about %! percent of
schizophrenics hospitalized for the first time are treated successfully by
conventional methods in that they are released and not hospitalized a second
time. *he conventional treatment fails for about ;! percent in that the patient is
not released or is hospitalized again. 5onventional treatment includes a decisionabout vitamin intake. sually it is decided that the vitamins in the food will
suffice or that a multivitamin tablet will also be given. *he amounts of ascorbic
acid1 niacin pyrido3ine1 and vitamin E may be appro3imately the daily
allowances recommended by the 0ood and 4utrition Doard of the .:. 4ational

important substance necessary for optimum functioning of many organs. If we
desire1 in the treatment of mental illness1 to provide the 6optimum molecular
environment16 especially the optimum concentration of substances normally
present in the human body 7/auling1. "$;& 7"881 ascorbic acid should certainly be
included 7'8.
*here is1 moreover1 a special reason for an increased intake of ascorbic acid by
patients with schizophrenia or any other disease for which there is only partial
control. About ;! mg. of ascorbic acid a day is enough to prevent overt
manifestations of avitaminosis 5 7scurvy8 in most people. ,owever1 there are
several significant arguments to support the thesis that the optimum intake for
most people is "! to "!! times more than ;! mg. *hese arguments are
summarized in the papers and books of Irwin :tone 7''8 and myself 7'1'%8.
*hey constitute the theoretical basis for the customary use of about % gin. of
ascorbic acid a day in the orthomolecular therapeutic and prophylactic treatment
of schizophrenia. A significant controlled trial of ascorbic acid in chronic
psychiatric patients was reported in "$; by Milner 7'28. *he study1 which was
double#blind1 was made with %! chronic male patients( % had schizophrenia1 %
had manic#depressive psychosis1 and ' had general paresis. *wenty of the
patients1 selected at random1 received " gm. of ascorbic acid a day for three
weeksB the rest received a placebo. *he patients were checked with the
Minnesota Multiphasic /ersonality Inventory 7MM/I8 and the Wittenborn
/sychiatric

>f the three indices of therapeutic effects1 global improvement in

for Inpatient #Evaluation8 scores was seen in all three groups( the number of days
of hospitalization during the period of the clinical study was lower in both the
nicotinic acid and the combined treatment groupB and only in the combined
treatment group was the daffy average dosage of phenothiazine medicationdecreased. *hus1 improvement in all three indices was noted in the combined
treatment group. ,owever1 several side effects were observed during the
therapeutic trials1 indicating that the vitamins used are not completely safe 7'=8.
*he investigators reached the conclusion that 6on balance1 these results suggest
that the addition of pyrido3ine may potentiate the action of nicotinic acid. *hus
pyrido3ine seems to be a useful ad?unct to nicotinic acid therapy6 7'=8. ,awkins
7"&8 commented on this work in the following way(
*he therapeutic effect was demonstrable even though the patients had beenhospitalized for an average of "!.$ years1 were not on hypoglycemic diets1 and
the doses of both pyrido3ine 7=2 mg. daily8 and vitamin D 7 gm. a day8 were
considerably below the dosages we routinely prescribe 7"&8.
'yanocobalamin
A deficiency in cyanocobalamin 7vitamin D"'81 whatever its cause1 leads to
mental illness as well as to such physical manifestations as anemia. *he anemia
can be controlled by a large intake of folic acid1 but the mental illness and
neurological damage cannot. A pathologically low concentration of
cyanocobalamin in the blood serum has been reported to occur in a much largerpercentage of patients with mental illness than in the general population. Edwin
and associates 7'&8 determined the amount of vitamin D"' in the serum of every
patient over ! years old admitted to a mental hospital in 4orway during a period
of one year. >f the $; patients1 ;" 7"2#% percent8 had a subnormal or
pathologically low concentration of vitamin D "'1 less than "2! pg. per ml. 7the
normal range is "2! to "1!! pg. per ml.8. *his incidence is ! times as great as
that estimated for the population as a whole. >ther investigators have reported
similar results and have suggested that a low serum concentration of vitamin
D"'1 whatever its origin1 may cause mental illness. In addition1 of course1 mental
illness may accompany some genetic diseases1 such as methylmalonic aciduria1
which can be controlled only by achieving a serum concentration of
cyanocobalamin far greater than normal.
Minerals and Other Vitamins
*here is some evidence that mental illness may result from deprivation of or
abnormal need for minerals and other vitamins. 7:ee1 for e3ample1 /feiffer1 Iliev1

and Goldstein 7'$88. 0urther work in this field by psychiatrists and biochemists is
needed.
The $$ Tas( )orce *eport
In uly "$= an A/A task force of five physicians and one consultant issued a
2%#page report titled Megavitamin and >rthomolecular *herapy in /sychiatry7!8. In this report the *ask 0orce on itamin *herapy in /sychiatry purports to
present both theoretical and empirical reasons for completely re?ecting the basic
concept of orthomolecular psychiatry1 which is the achievement and preservation
of good mental health by the provision of the optimum molecular environment
for the mind1 especially the optimum concentrations of substances normally
present in the human body.
Some Errors in the *eport
It is mentioned in the report that in the treatment program of the orthomolecular
psychiatrists 6each patient may receive as many as si3 vitamins in large dosesindividually determined by the treating physician as well as other psychotropic
drugs and hormones whose doses are also individually determined for each
patient6 7p. %;8. *he assumption is made by the task force that the optimum
intake of vitamins for mental health is the conventional average daily nutritional
reCuirement1 with growth and development as the criteria( 6In schizophrenia
there is apparently an adeCuate vitamin intake for growth and development until
the illness becomes manifest in the teens or early adult life6 7p. %!8. Mention is
made in the report of the well#known genetic diseases with both psychic and
somatic manifestations that can be controlled by an intake of a vitamin "!! or
"1!!! times the usually recommended daily allowance1 but the possibility that
less obvious genetic differences could result in an increased individual need for a
larger intake of vitamins in order to achieve good mental health1 as discussed in
my "$;& publication 7"8 and in the earlier sections of this paper1 is re?ected on the
basis of arguments that have little value or pertinence. >ne such argument is the
following(
*he two theoretical bases adduced by megavitamin proponents for the
effectiveness of 4A therapy 7nicotinic acid as a methyl acceptor and 4A+
deficiency8 are in fact generally incompatible1 because 4AA nicotinamideF1
when functioning as a vitamin1 is bound to the remainder of the coenzyme
molecule by the nitrogen of its pyridine ring and hence can no longer accept
methyl groups. Essentially1 then1 the two views of 4A as a vitamin precursor of
4A+ and as a methyl acceptor are incompatible1 e3cept for the possibility that
there is in schizophrenia double deficit # both a vitamin deficiency and a
transmethylation defect and that nicotinic acid has the happy fortune to serve two
purposes simultaneously 7pp. %!#%'8.

*here is an obvious error in this task force argument. *here is no incompatibility
between two functions of nicotinic acidB some molecules may engage in one
function and others in the other. A defect in either function might be controlled
by increasing the intake of the vital substance. A 6double deficit6 is not needed.
*he authors of the report would have won the fallacy in their argument if they
had set up some eCuilibrium and reaction rate eCuations1 as was done in my "$;&paper 7"8. *he task force e3presses an interesting misunderstanding of the nature
of vitamins1 in the following words( 6Dy common definition a vitamin is not only
an essential nutrient1 but it is essential because it is transformed into a coenzyme
vital for metabolic reactions6 7p. %"8. In fact1 this is not the common definition of
a vitaminB it is wrong. :ome vitamins1 including vitamin 51 are not known to be
transformed into a coenzyme. *his misunderstanding by the task force may have
contributed to the misinterpretation of the evidence for and the theoretical basis
of orthomolecular psychiatry. 4icotinic acid as a methyl acceptor is referred to in
the report( 60rom :tudy 4o. "'( nicotinic acid in the dosage of !!! mg. per day
can neither prevent nor counteract the psychopathology induced by the combined
administration of a monoamine o3idase inhibitor 7tranylcypromine8 and
methionine6 7p. ";8. In fact1 the molecular weights of nicotinic acid and
methionine 7a methyl donor8 are nearly the same1 "' and "%$1 respectively.
Instead of gm.1 ";.2 gm. of nicotinic acid would have had to be given each day
to accept the methyl groups donated by the '! gm. of methionine that was given
each day. *he study referred to as number "' 7"81 which resulted in an
e3acerbation of the illness of ! schizophrenic patients who participated in it1 has
no value as a test of the methyl acceptor theory of nicotinic acid. 5onsideration
of ethical principles may have kept the investigators from repeating the studywith use of the proper eCuimolar amounts of nicotinic acid and methionine.
The )ailure To +iscuss $scorbic $cid and yrido&ine
In several places the A/A task force report mentions the use of " to ! gm. of
ascorbic acid a day by orthomolecular psychiatrists. *here are1 however1 no
references to the literature. Milner-s double#blind study 7'28 is not mentioned1 nor
is there any discussion of the many papers in which a low level of ascorbic acid
in the blood of schizophrenics was reported. 4either the general theory of
orthomolecular psychiatry1 as presented in my "$;& paper 7"8 nor any of the
special arguments about the value of ascorbic acid is presented or discussed inany significant way. *here is1 moreover1 no discussion in the report of pyrido3ine
and no reference to the "$= work by Ananth1 Dan1 and 9ehmann 7'=8 on the
potentiation by pyrido3ine of the effectiveness of niacin in controlling chronic
schizophrenia. *he title of the report1 Megavitamin and >rthomolecular *herapy
in /sychiatry1 is completely inappropriate1 and the general condemnation of
megavitamin and orthomolecular therapy is un?ustified.

given niacinamide showed a 2%#percent greater improvement than the children
who were given placebo. *he groups were too small1 however1 for the difference
to be significant at the $2#percent level of confidence. *his study does not prove
that niacinamide has no value. smond
+iagnostic *est 7,>+8 7%81 which has no special connection with megavitamin
or orthomolecular psychiatry e3cept that it was devised by the originators of
niacin therapy. *he report should have been given the# title 4iacin *herapy and
the ,>+ *est1 or published as two reports1 one on niacin and one on the ,>+
test. It would have been still better for the task force to have discussed
megavitamin and orthomolecular therapy in psychiatry fully.
The -uestion of 'ontrolled E&periments
*he report refers to the low credibility of the megavitamin proponents1 whose
published results were not duplicated in studies carried out by one of the task
force members 7p. %&8. *he penultimate sentence of the report is1 6*heir
credibility is further diminished by the consistent refusal over the past decade to
perform controlled e3periments and to report their new results in a scientifically
acceptable fashion6 7p. %&8. I have talked with the leading orthomolecular
psychiatrists and have found that they feel the principles of medical ethics
prevent them from carrying out controlled clinical tests1 with half of their patients
receiving orthomolecular therapy in addition to the conventional treatment and
the other half receiving only the conventional treatment. It is the duty of the
physician to give to every one of his patients the treatment that in his best
?udgment will be of the greatest value1 :ome psychiatrists1 including ,offer and
>smond1 carried out controlled trials '! years ago. *hey became convinced that
orthomolecular therapy1 along with conventional treatment1 was beneficial to
almost every patient. 0rom that time on their ethical principles have reCuired that
they give this treatment and not withhold it from half of their patients. *he task
force is wrong in criticizing the orthomolecular psychiatrists for not having
carried out controlled clinical trials during the last few years. Instead1 it is thecritics1 who doubt the value of orthomolecular methods1 who are at fault in not
having carried out well#designed clinical tests. It is also the duty of a physician to
give to a patient a treatment that may benefit him and is known not to be harmful.
*he incidences of to3icity and other serious side effects of the doses of vitamins
used in orthomolecular medicine are low. *here is significant evidence that an
increased intake of certain vitamins may benefit the patient. It is accordingly the
duty of the psychiatrist to prescribe these vitamins for him.

The ias of the Tas( )orce
*he last sentence of the report reads as follows(
nder these circumstances this *ask 0orce considers the massive publicity which
they promulgate via radio1 the lay press and popular books1 using catch phrases
which are really misnomers like 6megavitamin therapy6 and 6orthomoleculartreatment16 to be deplorable 7p. %&8.
*his sentence1 like others in the report1 shows the presumably unconscious bias
of the task force. 6/romulgate6 7misused here8 is a pe?orative word1 and 6catch
phrases6 is a pe?orative e3pression. I do not understand why megavitamin therapy
and orthomolecular treatment should be called misnomers. *his concluding
sentence1 like many others in the book1 seems to me to have been written in order
to e3ert an un?ustifiably unfavorable influence on the readers of the report. I have
written two popular books1 4o More WarJ 728 and itamin 5 and the 5ommon
5old 7'%8. I feel that each of them was worthwhile and that neither would havebeen easily replaced by a more technical book. *he second book 7'%8 was written
because I had discovered in reading the medical literature that there was much
evidence there about the value of ascorbic acid in decreasing both the incidence
and the severity of the common cold and that this evidence had been suppressed
or misrepresented by the medical and nutritional authorities. :ince publication of
the book1 eight new studies have been reported. Every one of these has verified
the value of ascorbic acid. *he A/A report shows the same sort of negative
attitude as that shown by the authorities toward ascorbic acid in relation to the
common cold. *here seems to be a sort of professional inertia that hinders
progress.
'onclusions
>rthomolecular psychiatry is the achievement and preservation of good mental
health by the provision of the optimum molecular environment for the mind1
especially the optimum concentrations of substances normally present in the
human body1 such as the vitamins. *here is evidence that an increased intake of
some vitamins1 including ascorbic acid1 niacin pyrido3ine1 and cyanocobalamin1
is useful in treating schizophrenia1 and this treatment has a sound theoretical
basis. *he A/A task force report Megavitamin and >rthomolecular *herapy in
/sychiatry discusses vitamins in a very limited way 7niacin only8 and deals with
only one or two aspects of the theory. Its arguments are in part faulty and its
conclusions are un?ustified.

Con el nuevo milenio se abre una nueva era respecto a la medicina. Cada da ms personasoptan por tratarse con nutricin ortomolecular, y una y otra vez, los resultados demuestranla eficacia de sus tratamientos. Esta terapia ha adquirido un privilegiado papel preventivo yteraputico en pases como EE.UU. e Inglaterra, y poco a poco, en nuestro pas ya se estempezando a conocer.
Aunque la nutricin ortomolecular, todava, es considerada por muchos como una terapiapara perder peso y eliminar celulitis, su poder teraputico va ms all. Las investigacionesde la nutricin ortomolecular se dedican al estudio de la salud ptima, su objetivo principal,en contraposicin con la medicina aloptica que se dedica a la investigacin de lasenfermedades. Ambos polos son igualmente importantes y necesarios para la evolucin ybienestar del Ser Humano. La definicin de salud ptima no es simplemente la ausencia deenfermedad, sino un estado natural de energa, vitalidad, y sobre todo armona con nosotrosmismos y con la vida.
Cuando una persona alcanza su estado ptimo de salud, instintivamente sabe cmo
comportarse para preservarlo. Esto hace que la persona opte voluntariamente por unaalimentacin y unos hbitos de vida sanos.
Nutricin ortomolecular significa proporcionarle a las clulas los nutrientes adecuados paraque stas funcionen lo mejor posible. Para entender mejor su importancia es necesariohacer un breve y sencillo repaso de bioqumica.
BIOQUMICA DEL ORGANISMO
El Ser Humano est compuesto de unos elementos bsicos: oxgeno, carbono, hidrgeno,
nitrgeno y minerales. Es la determinada combinacin de stos, lo que forma los materiales"base" de cada una de las clulas del organismo y lo que le proporciona su caracterstica deSer Humano.
Por ejemplo, la combinacin de:
Oxgeno + hidrgeno = Agua
Hidrgeno + carbono + oxgeno = Carbohidratos
Hidrgeno + carbono + oxgeno (en menor cantidad que los carbohidratos) = Grasa
Hidrgeno + carbono + oxgeno + nitrgeno = Protenas
Ciertos minerales como el fsforo y el sulfuro tambin forman parte de algunas protenas.
La frase "somos lo que comemos y lo que absorbemos" no podra ser ms cierta. Lamembrana exterior de la clula est compuesta principalmente de grasas y protenas; en elinterior de la clula se encuentra un lquido (citosol o fludo intracelular) compuesto

primordialmente de agua, pero tambin de protenas, carbohidratos y grasas; el ncleo, quecontiene los genes y controla la actividad celular, contiene principalmente protenas... Sinembargo, el hecho de juntar todos estos compuestos no crea un Ser Humano. Para que estoocurra hace falta energa y sta se fabrica en el interior de las clulas (en la mitocondria)gracias a unas enzimas que para ser activadas dependen, a su vez, de vitaminas. Esta
energa es la que pone en funcionamiento la clula. Para que el cuerpo disfrute de una saludptima, las clulas que lo forman deben estar sanas. As pues, stas deben recibir agua,carbohidratos, grasas, protenas, minerales y vitaminas, a travs de una nutricin ptima.
NUTRICIN PTIMA
Un aspecto muy importante de la nutricin ortomolecular es respetar la individualbioqumica. Cada persona nace con una bioqumica determinada, la cual puedepredisponerle al desarrollo de ciertas enfermedades o sntomas. Es por esto que no todo elmundo se beneficia de la dieta tpica recomendada basada en ensaladas, frutas y aguafresca; algunas personas, por el contrario, se sienten mejor comiendo comida cocinada y
bebiendo lquidos calientes. Por ejemplo, una persona con candidiasis crnica se puedesentir peor al comer fruta; la que sufre de bajones de azcar no suele tolerar bien la comidafra, como las ensaladas; un intestino irritable puede empeorar al consumir granos... Aspues, para conseguir una salud ptima es vital descubrir las necesidades individuales delorganismo. Debido a esta individualidad bioqumica, es prcticamente imposible disearuna dieta estndar saludable para todo el mundo, en general. Sin embargo, s se puedehablar de unos alimentos base para ayudar a mantener sano el organismo, los cules sirvende "cimiento" para construir un programa de nutricin ortomolecular a medida.
ALIMENTOS PTIMOS
AGUA
Un mnimo de 1 litro y medio de agua mineral embotellada al da (ms en das de calor o sise practica algn deporte). Ver captulo "Recupera tu salud gota a gota: Los misterios delagua".
CARBOHIDRATOS COMPLEJOS
Los carbohidratos complejos (no refinados) son los que nos proporcionan glucosa o, enotras palabras, la energa que nuestro organismo necesita. Estos incluyen frutas, vegetales y
granos. Alimentos que nos proporcionan vitaminas, minerales, fibra y agua, principalmente.
Los carbohidratos complejos se metabolizan de forma lenta, alimentando poco a poco lasangre de glucosa. Esto hace que el nivel de energa sea constante y que el sistemahormonal y nervioso no sean estimulados innecesariamente. La glucosa obtenida de loscarbohidratos es tremendamente importante para el buen funcionamiento del cerebro, elcual usa alrededor de un 25% de toda la glucosa del cuerpo. Cuando los carbohidratos se

metabolizan, dejan muy poco residuo qumico, al contrario que las protenas y grasas. Unavez quemados slamente producen agua, la cual se elimina a travs de la orina, heces ysudor; y dixido de carbono, el cual se expira en la respiracin. Es por esta razn que loscarbohidratos deben formar la mayor parte de nuestra dieta, alrededor de un 60% de ella.Los que recomiendo son:
Frutas
Come unas 3 piezas al da. La fruta nos aporta, principalmente, vitaminas y mineralesantioxidantes, fibra, agua y enzimas. Su contenido en fibra atrapa las toxinas, y el agua lasarrastra hacia fuera del organismo. Las enzimas, a parte de ayudar a digerir la propia fruta,deshacen toxinas intestinales y activan reacciones qumicas en el organismo. Los nutrientesque nos aportan nos protegen de desequilibrios cardiovasculares, cncer y otros problemasdel sistema inmunitario, adems de ayudarnos a producir energa durante el da y a prevenirel envejecimiento prematuro.
Otro de los grandes beneficios de la fruta es que alcaliniza el organismo, ayudando aeliminar y prevenir dolores y enfermedades relacionadas con un exceso de acidez (causadopor una dieta alta en carne, azcar y alcohol, principalmente). Tambin es muy alta enpotasio, el cual ayuda a eliminar el exceso de agua depositado en los tejidos (retencin delquido), y aumenta la oxigenacin de las clulas. Es importante comerla cruda y escogerlade temporada. Evita la fruta demasiado madura o con parches de moho. Escoge piezasfirmes al tacto y de aroma fresco. No desperdicies las semillas de la sanda, manzanas,peras, uvas, naranjas y otros ctricos, ya que son ricas en magnesio y altamente energticas,y asegrate de que las masticas bien.
Vegetales
Al igual que las frutas, los vegetales nos aportan la fibra, agua y nutrientes que nuestroorganismo necesita para mantenerse sano. Los vegetales crudos estimulan elfuncionamiento de las clulas, mejoran la comunicacin entre el interior y exterior de stas,favoreciendo su alimentacin y limpieza, y aumentan el nivel energtico del organismo,tanto a nivel mental como fsico. Una gran ventaja para nuestra salud es su alto contenidoen clorofila. Esta sustancia tiene, prcticamente, la misma composicin molecular que lasangre humana, con la diferencia de que la clorofila se compone de molculas de magnesio(las cules le dan su caracterstico color verde), mientras que la sangre contiene molculasde hierro (las cules le proporcionan su color rojo). Es por este motivo que los vegetales
son tremendamente beneficiosos para regenerar la sangre y aportar vitalidad. La clorofila,adems, elimina bacteria y depsitos de toxinas, reduce inflamaciones, activa enzimas yaumenta la flora intestinal "buena".
Es importante comer un mnimo de 5 vegetales al da. Escoge siempre los de temporada. Ano ser que tengas problemas digestivos, como candidiasis crnica, parsitos o cualquier tipode inflamacin intestinal, es recomendable consumir los vegetales en estado crudo, ya queal cocinarlos se destruyen sus enzimas y parte de sus nutrientes. Si se opta por no

consumirlos crudos, se pueden cocinar muy ligeramente para ablandar su fibra y hacerlosms digestibles.
Quinoa
Es una semilla que crece en los Andes a altas latitudes y en clima fro. Adems de ser uncarbohidrato, tambin tiene un alto contenido protenico, adems de fibra, vitaminas B y E,cidos grasos esenciales y minerales hierro, fsforo, calcio, magnesio y silicona. Esbeneficiosa para fortalecer el organismo, adems de tonificar los riones y las funciones delcorazn. Mezcla muy bien con cualquier tipo de vegetales y granos, y se cocina igual que elarroz. Puede encontrarse como "grano", en forma de copos para el desayuno o mezcladocon trigo en diferentes tipos de pasta.
Trigo sarraceno
Al igual que la quinoa, el trigo sarraceno es una semilla. Su origen proviene del Lejano
Oriente. A pesar de su nombre, no tiene nada que ver con el trigo, y no contiene gluten. Es,tambin, rico en protena, vitaminas B, minerales potasio, magnesio y hierro, y en elbioflavonoide rutina. ste ayuda a fortalecer los capilares y vasos sanguneos, previniendoproblemas cardiovasculares, varices, hipertensin y celulitis, entre otros. Por otro lado,ayuda a alcalinizar el organismo, combatiendo los efectos negativos de nuestra dieta actual,alta en azcares, grasas, refinados y carnes. Es muy til para combatir los daos causadospor los rayos-x y la radiacin. Estimula el apetito en personas convalecientes, limpia yfortifica el intestino, y proporciona niveles ptimos de energa y vitalidad. Se hierve conagua durante unos 20 minutos y se puede encontrar en forma de "grano", harina, copos ocomo pasta.
Granos como el mijo, arroz y maz
Estos granos no contienen gluten y es por esta razn que los recomiendo. El gluten es unaprotena que puede interferir con la absorcin intestinal y producir inflamacin. Los granoscon un alto porcentaje en gluten son el trigo (altamente irritante), cebada, centeno y avena.En mi opinin, estos cereales hay que usarlos en pocas cantidades, a excepcin del trigo,que suelo aconsejar eliminarlo de la dieta por completo.
Por el contrario, el mijo, arroz y maz se pueden usar ms a menudo. El mijo es muy alto enprotena, es uno de los cereales ms rico en los aminocidos que el cuerpo necesita para
cumplir sus funciones de reparacin, produccin de hormonas y activacin de enzimas,entre otras. Es, adems, muy alto en hierro, silicona y calcio. Al igual que el trigosarraceno, el mijo tiene la propiedad de alcalinizar el organismo, ayudando a combatir losproblemas de salud tpicos de un exceso de acidez en la sangre (artritis, gota y dolores engeneral). Es, tambin un gran diurtico y un reforzante de los riones, adems de ser ungrano excelente para combatir la candidiasis, ya que tiene propiedades antifungales. Elarroz es excelente para el sistema nervioso por su alto contenido en las vitaminas B. Es

(legumbres, frutos secos, semillas y algas). Yo suelo aconsejar a mis pacientes tomar algo(pequeas dosis) de protena en cada comida. Si la persona no es vegetariana, y deseaconsumir protena animal, le aconsejo que la acompae con una ensalada o un buen platode vegetales para contrarrestar la acidez metablica que se pueda crear debido almetabolismo de este tipo de protena. Personalmente, opino que las protenas deben formar
alrededor de un 25% de nuestra dieta. Las mejores protenas son:
Algas
Son los vegetales ms antiguos que se conocen. Existen ms de 1700 variedades, aunquelas ms usadas son: agar-agar, arame, hijiki, kombu, nori, wakame y dulse. Las algas sonricas en aminocidos, vitaminas y minerales, especialmente calcio, magnesio, hierro,potasio, selenio y yodo. Su alto contenido de este ltimo mineral, las convierte en unalimento fabuloso para activar la tiroides y regular el metabolismo. Las algas cumplenmuchas funciones importantes en el organismo, por ejemplo, son ideales para: desintoxicarel cuerpo de metales pesados y radiacin, ya que contienen cido algnico (un potente
desintoxicante); tratar quistes y ndulos; reducir los niveles de colesterol y grasa de lasangre; y rejuvenecer los pulmones y el aparato digestivo. Se pueden usar en sopas, guisos,ensaladas, o pasadas por la sartn. Si se cocinan junto con las legumbres, ayudan a questas sean ms fciles de digerir.
Frutos secos, semillas de ssamo, lino, calabaza y girasol
Son una fuente excelente de protena, cidos grasos esenciales, lecitina, vitaminas B y E,minerales zinc, calcio, magnesio y hierro. Son altamente recomendados para tratar yprevenir problemas cardiovasculares, hipoglucemia reactiva, falta de energa, desequilibrios
menstruales, inflamaciones, problemas de piel y huesos, entre otros. Es muy importanteasegurarse de que, tanto las semillas como los frutos secos, estn frescos. La rancidezpuede causar irritacin de estmago e intestino, adems de destruir las vitaminas A, E y loscidos grasos del organismo. La mejor forma de consumir las semillas es molindolasligeramente con un molinillo de caf elctrico. De esta forma se digieren mejor. Este tipode alimento combina muy bien con frutas cidas y vegetales verdes. Tanto las semillascomo los frutos secos deben guardarse en un contenedor de vidrio en la nevera, y siempreser consumidos en crudo. Evita las versiones tostadas y saladas.
Legumbres
Son ricas en protenas y fculas, y parece ser que es por esta razn por la que son difcilesde digerir, a parte de que algunas contienen una sustancia que bloquea la accin de ciertasenzimas que digieren la protena de los alimentos. Sin embargo, esta sustancia inhibidoraqueda destruda cuando las legumbres son cocinadas adecuadamente o al ser germinadas.Para favorecer su digestin, es conveniente cocinarlas con jengibre o algas, o una vez en elplato aadirles un chorrito de aceite de oliva crudo. Las legumbres mezclan muy bien conlos cereales, por ejemplo, lentejas con arroz. De esta forma, se consiguen los ocho

amincidos esenciales tan necesarios para la salud. Dentro de la variada seleccin de laslegumbres, se encuentra la soja y sus productos (leche, yoghures, miso, tempeh, tofu...).stos son una excelente fuente de protena (entre las legumbres, la soja es la ms proteica).Adems de tener propiedades similares a cualquier otra legumbre, la soja tiene cualidadesestrognicas. Por esto se recomienda consumirla en desequilibrios relacionados con la
mujer, como son el sndrome premenstrual, menopausia, osteoporosis, endometriosis ydems (ver captulo "Equilibra tus hormonas y disfruta de ser mujer").
Huevos
Durante aos se les ha considerado como un alimento nocivo para las personas con elcolesterol alto. Sin embargo, adems de proporcionarnos colesterol (sustancia que elcuerpo, de todas formas, produce por s mismo), es tambin una excelente fuente deprotena, adems de las vitaminas colina, biotina, A, B, D y E, del mineral sulfuro, hierro,fsforo y zinc, lecitina, cidos grasos esenciales, y los aminocidos cistena y metionina.Estos nutrientes ayudan a que el colesterol sea convertido en tiles hormonas esteroides que
nos ayudan a protegernos de enfermedades. Adems, los huevos son un alimento excelentepara desintoxicar el hgado de estrgenos, metales pesados y toxinas en general.
Pescado
El pescado ms recomendado en un programa de nutricin ortomolecular es el atn,caballa, arenque, anchoas, salmn y sardinas (aunque los dems no son descartados). Estetipo de pescado es rico en cidos grasos esenciales, especialmente los de la familia Omega-3, adems de ser una excelente fuente de protena y minerales como el fsforo, hierro yyodo. El pescado es recomendado para tratar y prevenir todo tipo de problemas
cardiovasculares, artritis e inflamaciones crnicas, migraas, desequilibrios hormonales,trastornos de piel e infecciones frecuentes, por mencionar unos cuantos (ver captulo "Fobiaa las grasas").
Carne blanca (a ser posible biolgica)
Es importante comer, siempre que sea posible, carne biolgica, ya que los animales deconsumo son tratados con una gran cantidad de hormonas (para que crezcan y engorden),pesticidas (en los piensos con los que se alimentan) y antibiticos(para combatir lasinfecciones que desarrollan debido a las condiciones en las que viven). Sin embargo, larealidad es que es difcil encontrar carne biolgica en la mayora de supermercados y
carniceras. Por otro lado, es posible encontrar personas en el campo que cran sus propiosanimales de forma biolgica y los venden sin hacer uso de la publicidad. Es cuestin desalir de excursin y buscarlos, hablar con ellos y llegar a un acuerdo. Otra forma interesantede conocer el mercado de productos biolgicos es ir a las ferias de alimentos artesanales yaveriguar los distribuidores, tiendas y particulares que venden este tipo de alimentos en turea.

El pollo y pavo son ricos en las vitaminas B1, B5, B6, B12, y minerales cromo, magnesio,manganeso, zinc, hierro y selenio, adems de ser una fuente completa de aminocidosesenciales. Este tipo de carne es bajo en grasa y muy beneficioso para casos de falta deapetito, retencin de lquidos, diarrea, diabetes, y para estados dbiles, despus de un partoo en convalecencias. A pesar de que el pollo y pavo son las carnes ms recomendadas para
su consumo habitual, no veo ningn inconveniente en consumir carne rojaespordicamente.
GRASAS POLIINSATURADAS Y MONOSATURADAS
Las grasas son fundamentales para nuestra salud, y deberan formar un 15% de nuestradieta. A pesar de tener mala reputacin entre los partidarios de las dietas deadelgazamiento, las grasas poliinsaturadas, si se saben usar bien, nos pueden ayudar aregular el metabolismo y a perder peso, entre sus otras muchas funciones. Los aceites msindicados para conseguir una salud ptima son los de aceite de oliva (para cocinar y encrudo) y los de semillas (consumidos nicamente en crudo). El tema de los aceites es
complejo y requiere que se le dedique todo un captulo (ver captulo "Fobia a las grasas").
En un programa de nutricin ortomolecular se crea el tipo de alimentacin ms indicadopara cada individuo, siempre usando como base estos alimentos mencionados. Para unaspersonas es recomendable no mezclar las protenas y los hidratos altos en fcula; para otras,es necesario evitar ciertos alimentos que, aunque estn en la categora de alimentos sanos,pueden causar, intolerancias o alergias; por otro lado, hay personas que necesitan aumentarel consumo de los aceites poliinsaturados, huevos e incluso carne. A pesar de no poderhablar en trminos generales de una dieta sana, por el contrario, s se puede hablar de qusustancias no forman parte de una nutricin ptima.
CUATRO SUSTANCIAS NOCIVAS PARA LA SALUD
Azcares
Estos incluyen azcar blanco y moreno, miel, siropes, sacarina, glucosa, maltosa ydextrosa. stos se encuentran en productos refinados e integrales de pastelera, galletas,algunos cereales y panes, refrescos, salsas y embutidos, entre otros. Para entender bien elefecto de estas sustancias en el organismo, es importante hacer un repaso de cmo funcionala regulacin de la glucosa de la sangre: El organismo necesita glucosa (azcar) paracumplir todas sus funciones. sta proviene de los carbohidratos complejos que consumimos
durante el da. Por ejemplo, cuando nos despertamos por la maana nuestro nivel deglucosa es bajo puesto que hemos estado sin comer, aproximadamente, 8 horas desde lacena. Al levantarnos y tomar un desayuno basado en carbohidratos completos, protenas ygrasas como, por ejemplo, leche o yoghurt de soja, copos de quinoa, semillas, frutos secos yuna pieza de fruta...la fibra y combinacin de nutrientes que se encuentran en estosalimentos, hacen que su digestin y metabolismo generen una produccin constante deglucosa y, por lo tanto, de energa. Es normal que poco antes de la hora de comer sintamos

sensacin de hambre y un ligero "bajn" propio del desgaste de esta energa. Al ingerir unacomida basada, por ejemplo, en una sopa de verduras, lentejas con arroz y una ensalada consemillas y frutos secos, volvemos a generar una produccin de glucosa y energa constantey duradera que nos acompaar hasta la hora de la cena, donde este proceso se volver arepetir. El resultado es una energa, mental y fsica, equilibrada durante el transcurso del
da.
Si, por el contrario, para desayunar optamos por un caf con azcar, galletas y zumo denaranja, los niveles de glucosa de la sangre suben desproporcionadamente y de formarpida. Esto es debido a que el azcar presente en el desayuno pasa rpidamente a la sangre,aumentando exageradamente los niveles de esta sustancia en la sangre. Cuando esto ocurre,el pncreas produce insulina, la cual se encarga de bajar la glucosa. Sin embargo, lareaccin es rpida causando un bajn y unos sntomas tan desagradables comoagotamiento, irritabilidad, falta de concentracin, somnolencia, malestar, mareo, ynecesidad de comer algo dulce, tomar un caf o fumar un cigarrillo. Si en ese momentovolvemos a comer algo dulce, la glucosa volver a subir desproporcionadamente
produciendo otra descarga de insulina, y el ciclo volver a producirse. Estos altibajos, a lalarga, pueden causar un desequilibrio generalizado en todo el organismo.
Por si esto fuera poco, cuando los niveles de glucosa de la sangre estn bajos, la produccinde histamina aumenta. sta, en exceso, es una poderosa substancia producida por lasclulas que puede causar inflamacin crnica y sntomas tan variados como asma, artritis,migraas, problemas intestinales, alergias, depresin y un largo etctera. Por otro lado, elazcar no nos aporta nutrientes, sino que, por el contrario, nos "desnutre" de sustancias tanimportantes como la gama de las vitaminas B y de minerales como el calcio, magnesio ycromo, entre otros.
Grasas saturadas, hidrogenadas y aceites fritos de semillas
stas se encuentran en el queso, leche y carne roja, margarina, comida "prefabricada" ybollera, respectivamente. El cuerpo necesita un cierto tipo de grasas para sobrevivir ycumplir una serie de funciones vitales para el organismo. A estas grasas se les denomina"cidos grasos esenciales". Se les llama "esenciales" porque el cuerpo no las puede fabricar,sino que las adquiere a travs de la dieta. Este tipo de grasa reduce el peligro de cncer,enfermedades cardiovasculares, artritis, problemas de piel y hormonales, depresin, yalergias, entre otros. Estos cidos se dividen en dos familias: Omega 3 y Omega 6. Y seencuentran en las semillas, frutos secos y pescado. La persona que no come estos alimentos
regularmente, corre el riesgo de sufrir sus deficiencias. Las grasas o aceites poliinsaturadosque se encuentran, por ejemplo, en el aceite de girasol, ssamo o lino, se presentan lquidosa temperatura ambiental y son extremadamente frgiles a la luz y calor. Cuando se lessomete a altas temperaturas, como, por ejemplo, al freirlos, su estructura molecular cambiay pasan a convertirse en radicales libres o toxinas. Igual ocurre cuando se les aadehidrgeno para hacerlos slidos (grasas hidrogenadas), como la margarina. En este estadomolecular, el cuerpo no los reconoce como nutrientes y, por consiguiente, no puede haceruso de ellos. Por otro lado, estas grasas txicas bloquean la habilidad del organismo para

usar los aceites poliinsaturados saludables produciendo inflamacin, entre muchos otrossntomas.
Los productos lcteos y la carne, por otro lado, son altos en un tipo de grasa denominada"cido araquidnico". sta favorece la inflamacin y, al igual que acabamos de ver,
bloquea la capacidad del cuerpo de metabolizar adecuadamente los aceites poliinsaturados.
Es recomendable usar aceite de oliva para cocinar y en crudo, y aceites de semillasprensados en fro, exclusivamente, para su consumo en crudo. Por otro lado, se pueden usarsemillas como sustitucin a los aceites vegetales. Es importante guardar este tipo de aceitesy las semillas en la nevera para evitar su deterioro. Productos lcteos
stos, a parte de no ser recomendables por lo anteriormente mencionado sobre su alto
contenido en grasas saturadas y proinflamatorias, suelen producir una gran variedad deproblemas para la salud. El problema ms destacado y poco reconocido es que sonalimentos muy dados a producir intolerancias, que en muchas personas pasandesapercibidas.
Cuando nacemos nuestro aparato digestivo no est formado, y, por este motivo, esimportante que nos alimenten con leche materna. A travs de la porosidad intestinal propiadel recin nacido se absorben los nutrientes de este alimento. Cuando nos empiezan a salirlos dientes, perdemos la enzima que digiere la leche, puesto que ya estamos preparadospara comer ms slido. Es en este momento cuando se empiezan a introducir otros
alimentos con mucho cuidado, ya que nuestro aparato digestivo todava est inmaduro ymuy permeable. Entre estos alimentos uno de los favoritos es la leche de vaca, y con stacomienzan muchos de los problemas de salud que arrastramos durante toda la vida.
La leche de vaca contiene una estructura molecular demasiado grande para el beb. Laleche tiene la capacidad de permeabilizar el aparato digestivo del ternero para que losnutrientes de sta se absorban debidamente. El mismo efecto ocurre cuando se alimenta conleche de vaca a un beb. A travs de esta permeabilidad se absorben las molculas de laleche que son demasiado grandes para el organismo de un beb. Esto pone el sistemainmunitario en estado de alerta, lo cual puede causar inflamacin crnica, alergias y, con eltiempo, debilitar dicho sistema. Estas repercusiones suelen acompaar al individuo durante
toda la vida, aunque sus manifestaciones varan. Por ejemplo, en un principio el beb puedepresentar clicos, problemas de odo y catarros continuos; de nio, los sntomas suelenmanifestarse como terrores nocturnos, asma o hiperactividad; en la adolescencia puedeaparecer acn, depresin y dolores de cabeza; en la juventud, problemas intestinales ymenstruales; en la madurez y vejez, artritis y osteoporosis. Todos estos desequilibrios desalud pueden ser debidos a un mismo problema: intolerancia a los productos lcteos.

Por si esto fuera poco, los productos lcteos producen mucha mucosidad en el organismotaponando el sistema linftico (el que nos ayuda a desintoxicarnos), bloqueando laabsorcin intestinal y congestionando el sistema respiratorio.
Recordemos que slo un escaso porcentaje de la poblacin mundial tolera los productos
lcteos. Por ejemplo, la raza china no la consume, al igual que tampoco lo hacen los indiosde Sudamrica, ni muchas poblaciones africanas, por mencionar algunos pocos.
Como sustitucin a los productos lcteos son recomendables los productos de soja y laleche de arroz y avena. No hay que tener miedo a una posible carencia de calcio cuando seeliminan los productos lcteos de la dieta. La leche es alta en este mineral pero baja enmagnesio, el cual es indispensable para ayudar en la absorcin del calcio en los huesos.Entre los mejores alimentos altos en estos dos minerales, se encuentran los vegetales verdeoscuro, apio, col, brcoli, nabos,soja, higos y ciruelas secas, harina de algarroba, olivas,algas (especialmente la Hijiki), frutos secos y semillas.
Trigo
ste se encuentra en el pan, bollera y pasta, principalmente. Este cereal es un gran irritantedel sistema digestivo, ya que es muy alto en gliadina, una protena que forma parte delgluten. Su consumo, de vez en cuando, no presenta problemas. Sin embargo, en grandescantidades o continuamente puede erosionar la vellosidad intestinal produciendomalabsorcin, dolor, inflamacin, diarrea y/o estreimiento y un sinfn de sntomasintestinales y sistmicos. El trigo adems, le "roba" importantes minerales al organismo,como son el magnesio y zinc, entre otros. Desafortunadamente, nuestros hbitosalimenticios tienen el trigo como base. Por ejemplo: para desayunar tomamos cereales (que
normalmente contienen trigo); a media maana, bocadillo; para comer un plato de pasta ocualquier otro plato acompaado de pan; para merendar bollera; y para cenar, otra vez pan.Esto, sin mencionar las pizzas, sopa de fideos, galletas, pasteles, rebozados etc. Este cerealse puede sustituir por pan de centeno (sin abusar de l, tampoco); harina de maz, arroz osoja; copos de arroz, mijo o quinoa; pasta de trigo sarraceno o quinoa.
Ya sabemos ahora los alimentos base de una nutricin ptima, y los alimentos que debemosevitar. Las personas que coman en restaurantes o que no dispongan de alimentos como laquinoa, algas, tofu, etc, pueden alimentarse perfectamente bien esogiendo los alimentos quenuestra cocina mediterrnea nos ofrece como son las legumbres, verduras, ensaladas,huevos, carne y pescado. Lo importante es evitar los alimentos no recomendados como los
azcares, lcteos, grasas saturadas o procesadas, y trigo.
